Who Are Your “Toilet Paper & Paper Towels?” As we still find ourselves enduring this pandemic, we are slowly yet surely seeing the light at the end of the tunnel. T h e r e is talk of re-opening businesses, heightened anxiety seems to be diminishing and the curve has begun to flatten. My thoughts and prayers remain with those in need, as well as those serving on the frontlines. We will continue to stand strong and one day this pandemic will fully be behind us.
If we change our thought process from items to people, which two people in your life do you rely on everyday? Who are your “toilet paper and paper towels?” Sometimes the people we love and rely on the most are the people we take most for granted.
As I take a few moments to reflect on who would be my “toilet paper and paper towels”, I find it’s hard to just choose two. There are so many people who I truly lean on, respect, love and treasure. Just like with those paper products, there are moments where I forget just how important they are to me.

This past week, our Publisher was able to purchase toilet paper and paper towels in bulk. He kindly left a large stash of these items in our office and let each employee know that they can take some home as needed. It was a selfless gesture and people appreciated it. However, when I got home I chuckled at the thought of it! Who would have thought that toilet paper and paper towels would ever be viewed as hot items and that employees would get excited over the distribution of paper products? Not me!

Receives Grant from Bethpage Federal Credit Union Ronkonkoma based nonprofit Options for Community Living, Inc. was awarded a $7,500 grant from Bethpage Federal Credit Union. Funding supports Options’ scattered-site supportive housing program for formerly homeless individuals and families with disabilities and those living with HIV/AIDS. “This award couldn’t have come at a better time,” said Yolanda Robano-Gross, Options Executive Director. “As all Long Islanders struggle with the COVID-19 Pandemic, our residents have been greatly impacted. Our staff is a real lifeline for those with compromised immune systems, dropping off donated meals and food, and providing support to help them stay safe and get through this crisis.” Supportive housing provides a long-term solution to homelessness
for vulnerable people. Last year, Options’ supportive housing program for formerly homeless people with disabilities and those with HIV/AIDS provided housing to more than 200 Long Islanders. Bethpage Federal Credit Union grant funds will be used to support expenses including home maintenance and services which are critical to program management, tenant stability, and housing safety. “We are proud of our partnership with Options for Community Living, Inc. and glad that we could support their increased housing and maintenance needs due to the COVID-19 pandemic,” said Linda Armyn, Senior Vice President of Corporate Affairs at Bethpage. Neighbor Pets’ Place
North Shore Animal League America’s Adoption Center is currently conducting adoption by appointment only. Our Adoption Team is contacting pre-approved adopters with a scheduled day and time to complete their adoption. The health and wellbeing of NSALA staff, volunteers, adopters, and the community remains our priority at this time. We currently have over 40 dogs of various ages and sizes on campus, as well as more than 100 felines, from kittens to older cats, all looking for loving homes. As always, the animals on the NSALA Port Washington campus are being well-cared for by our devoted staff. In addition to finding homes for more than 110 canines, some of whom were from our recent Mill Dog rescue (we saved 100 dogs and puppies from deplorable
conditions with some going to our area shelter partners,) we have also placed more than 30 animals into foster homes. During this time, the Alex Lewyt Veterinary Medical Center will remain open to see sick patients and emergency cases only. While we are doing adoptions by appointment, NSALA’s Adoption Center is temporarily closed to the general public in accordance with New York State Governor Andrew Cuomo’s statewide directives and to control the number of people in the Adoption Center at any one time. Pet owners can rest easy that there is no reason to believe that dogs or cats in the United States might be a source of infection for the new coronavirus disease — COVID-19 — or cause its spread according to the Centers for Disease Control (CDC) in Atlanta, Georgia. And so far, according to the CDC, there have been no reports of pets becoming sick with COVID-19. This coronavirus appears to be primarily transmitted from human to human. As a pet owner, you may have heard of canine coronavirus, an intestinal infection in dogs, especially puppies, and feline coronavirus, which can cause feline infectious peritonitis (FIP). These types of coronaviruses have been around for quite some time and are not associated with the current outbreak. To protect yourself, your family, and possibly even
The expansive system of bays and waterways of Long Island serve not only a beautiful respite for residents during the COVID-19 pandemic, but also serve as a way of life and source of income for business owners and boaters, especially as the height of the season gets under way. As part of the Governor’s “New York State on Pause” COVID-19 safety orders, the state had temporarily shut down marinas. But a new Executive Order issued this weekend provides local governments with the ability to re-open them. Today, at the Curtis E. Fisher West Marina in Point Lookout, Supervisor Don Clavin, joined by Councilman Anthony D’Esposito and Councilman Chris Carini, announced the reopening of the town’s marinas, and unveiled a set of safety protocols during the COVID-19 pandemic. The rules include important information about social distancing at the marinas. “Opening our marinas is an important opportunity not only to provide recreational opportunities for our residents, but to inject some energy into the economy that is based here on our bays and waterways during the height of boating season,” Clavin said. “However, in order to keep our marinas open and most importantly protect the health of residents during the COVID-19 pandemic, we must enact and enforce a series of safety measures.” Signage with updated safety information and rules will be on display at all Hempstead Town marinas. In addition, Hempstead Town will also be distributing safety brochures for those who utilize the marinas and publish the information on the town website.

Boat operators also must continue to follow vessel distancing. Keep a safe distance of at least 50 feet from other vessels. Understand occupancy requirements along with social distancing. If possible, limit the people aboard to family members you live with and housemates. Keep 6 feet away at all times. It’s a good time to check required safety equipment. Make sure everything is to USCG regulation and is not expired. Take an NYS Boaters Safety Course online. Brianna’s Law went into effect January 1, 2020. This is a phasein-regulation which will require all operators to
complete the course and receive a certificate in order to operate a vessel. The waterways are still cold. Make sure to wear life jackets at all times. The marina is open for personal use as long as strict social distancing and sanitization protocols are followed: Completely clean and sanitize your boat and touch points before boarding guests, during use, and after each use. Clean your hands often and keep them away from your face. Follow all traditional safe boating and US Coast Guard Rules and Harbormaster guidance. Wear masks or face coverings. Maintain social distance. Residents are advised to report violations of these boater and marina safety guidelines or any other
safety concerns to the Town of Hempstead Bay Constables at (516) 8015608 or (516) 801-5609. “We understand that our boating, kayaking and canoeing community is becoming more active with the beautiful weather. It’s a way to get out and enjoy the fresh air,� Clavin concluded, “but there are safe ways in doing so.�

Guardians Of Rescue Is Struggling To Help The Animals Most of us are aware of the toll that the pandemic is having on humans around the country, and even around the world. Yet the economic impacts are being felt beyond humans. The animals are being impacted in numerous ways through this situation, leaving some animal rescue organizations to struggle in being able to provide their services. Guardians of Rescue has had an increase in dogs to care for, while their financial stability to do so declines. Guardians of Rescue is overwhelmed with the hardest hit people who can’t feed their pets and taking in abandoned animals left to fend for themselves which has become a big problem. Now, they are now turning to the people and asking that their organization be rescued amid the pandemic. “We have been providing our rescue services for over 10 years, but now we are struggling to keep our organization going,� explains Robert Misseri, president of Guardians of Rescue, an animal rescue organization. “We are in jeopardy because of the perfect storm that this pandemic has created for organizations such as ours. Many people are living paycheck to paycheck so pets are in trouble.� The pandemic has impacted Guardians of Rescue and other animal shelters in a variety of ways, including: Due to so many people having their employment impacted by the virus, donations to the organization are down. This makes it difficult for them
to continue feeding the animals, building doghouses, taking in new rescues, and trying to cover all their expenses. Some rescue organizations are seeing adoptions and fosters up but this is because people are homebound right now. This leaves the shelters worried about what will happen to the animals when people go back to work. There are some people who fear for their own well-being and financial stability, which motivates them to drop their pets off at the rescue shelter. They feel they can’t adequately take care of their pets during this time, so they surrender them, putting more strain on shelters. Many shelters have to cancel fundraising events that usually bring in a lot of money to fund their programs. Additionally, some shelters offer spring break camps as a fundraising tool, and those had to be canceled due to the pandemic. Many rescue organizations and shelters are trying to help people care for their pets by providing them with food. This helps to keep the person from surrendering the animals to the shelter or rescue organization. Food donations to many shelters are down, simply because people are focused on their own families and are staying home. This leaves shelters scrambling to try to come up with enough money and food to continue feeding all of the animals, as well as providing them with any medical care they may need. “The pandemic has
created a host of problem for the animals,� says Misseri. “I hope that we can make it through this difficult time, so that we can continue to help the animals in need. Our programs have helped countless animals including military members. Serve up homemade salsa this Cinco de Mayo
M
uch like St. Patrick’s Day is celebrated by people with no trace of Irish heritage, Cinco de Mayo has become a day of celebration for people who do not trace their ancestry to Mexico. In fact, History.com notes that Cinco de Mayo is a relatively minor holiday in Mexico, where the day commemorates a symbolic yet not significantly strategic win by a heavily outnumbered Mexican army over French forces sent by Napoleon III to establish an empire on Mexican land. In the United States, Cinco de Mayo has become a day to commemorate Mexican culture, including its much-loved cuisine.
Food is front and center at many Cinco de Mayo celebrations. Those who simply want to enjoy some homemade Mexican fare this Cinco de Mayo can try their hands at this recipe for “Fiery Corn Salsa” from Kelley Cleary Coffeen’s “200 Easy Mexican Recipes” (Robert Rose).
FIERY CORN SALSA Makes 2 cups 1⁄4 3
cup olive oil
tablespoons freshly squeezed lime juice
2
teaspoons minced fresh cilantro
tomatoes, seeded and diced

to 3 jalapeño peppers, seeded
11⁄2
cups corn kernels and diced
Salt and freshly ground black pepper
TIP In place of the corn kernels, you can used canned corn, drained; frozen corn, thawed; or corn from the cob, cooked on the stove top. For a smoky flavor, use corn grilled on the barbecue grill.

inco de Mayo celebrates the 1862 defeat of the French by the Mexican army at the Battle of Puebla. That battle occurred during the Franco-Mexican War, which was an invasion of Mexico launched by the French in 1861. The French invaded Mexico as a result of newly elected Mexican President Benito Juarez's decision to suspend interest payments on loans the country took out from foreign countries. France was one such creditor, but the French were not the only country to send troops to Mexico in response to Juarez's decision. Spain and Great Britain also sent troops to Veracruz, but both countries entered negotiations with Mexico and ultimately
withdrew their forces. However, France, under the leadership of Napoleon III, wanted to ensure access to Latin American markets. The French naval fleet's arrival in Veracruz forced President Juarez and his government to retreat. Months later, Juarez's force of 2,000 squared off against 6,000 French troops at the Battle of Puebla. Despite being heavily outnumbered, the Mexican forces claimed victory, losing fewer than 100 men while French casualties numbered nearly 500. While the victory itself did not prove a major win in the war against the French, it symbolized the strength of the Mexican people and served to strengthen the resistance movement. Cinco de Mayo is a minor holiday in Mexico, but has grown into a popular celebration of Mexican culture in the United States.

DIRECTIONS In a large bowl, combine oil, lime juice and cilantro. Add tomatoes, corn and jalapeño to taste. Mix well until corn mixture is well coated. Season with salt and pepper to taste. Transfer to an airtight container and refrigerate, stirring occasionally, for 1 hour or up to 2 days.

East Meadow High School students in grades 10-12 made connections with children across the globe by drawing their portraits as part of the Memory Project. The Memory Project is a youth arts organization that asks high school art students throughout the United States to create portraits for children living in refugee camps, orphanages and
similar situations around the world. Art educator Emily Giglio provided each of her students with a reference photo of the child they would be drawing, along with the child’s name, age and favorite color. The students could choose any artistic medium for their drawing, from graphite to chalk pastel. The photo was attached to the back of the portrait, along with a photo of the
student-artist and a tracing of the artist’s hand. The students worked hard to create the most accurate portraits possible for the children receiving them. “In my observation, it was incredibly rewarding for my class,” said Giglio. “They really felt a lot of pride in their completed portraits.”

long-handled tongs, lightly coat the grill rack. Grill burgers, covered, over medium heat or broil 4 inches from the heat for 4 to 6 minutes on each side, or until a thermometer
reads 165 F and juices run clear. Grill buns, uncovered, for 1 to 2 minutes or until toasted. Place burgers on bun bottoms. Top with salsa. Replace bun tops.

Once the grill has been cleaned, make sure none of the bristles fell off and onto the grill.

Take Heart With Tea An apple a day may keep the doctor away, but a recent study found drinking tea might keep the cardiologist at bay.
The USDA reported that men and women who drank black tea for three weeks reduced their total and bad
cholesterol (LDL) levels by an average of 7.5 percent. Researchers concluded that drinking tea may reduce the
risk of coronary heart disease. Antioxidants called flavonoids, found in both green and black teas, are thought to
be potent weapons in the fight against heart disease. That news may be especially important
for women, given that heart disease kills more women than all forms of cancer combined including breast cancer.
