Easy Vegan Pasta Bolognese By Marilyn Porzio of Dix Hills, New York

What You Will Need

1/2 cup diced portobello mushrooms 1/2 cup sweet green peas 1 24 oz. jar of Ragu Traditional Pasta Sauce (no sugar added variety) 2 tablespoons red wine 1 pinch of salt 1 pinch of black pepper 1 sprinkle of turmeric 1/4 package of Smart Ground meatless soy crumbles 2 heaping tablespoons dairy-free butter substitute 1 box of your favorite pasta

How To Make It Melt butter substitute in a large or medium sized skillet and add in Smart Ground soy crumbles. Mash up and turn crumbles as they brown (about 4 minutes). Turn off heat and set aside.

Pour jar of pasta sauce into a medium or large saucepan, turn on medium heat and stir in diced mushrooms and cooked soy crumbles. Let sauce simmer and then add in tumeric, salt, pepper and red wine; stire altogether, turn heat to low and cover tightly to re-simmer. Boil water and cook pasta for approximately 10 minutes until al dente. (soft, but slightly firm). Rinse and drain pasta and set aside. Steam peas in the microwave or 2-3 minutes and stir peas into sauce. Remove covered sauce from heat. Plate pasta, pour sauce over pasta and enjoy!

Simple Ways To Be Good To Yourself Years ago, I was roaming the aisles of Costco and picked up a book, titled, 101 Simple Ways to Be Good To Yourself by Donna Watson Ph.D. I’ve been re-reading it ever since. As we grow older and our responsibilities mount, we lose touch with our own needs. Children, spouses, jobs (second jobs), mortgages, car payments, friends in need…the list is endless. The weekdays bleed into each other in a frenetic blur, and on weekends we can barely catch up on sleep, catch our breath and take the kids to their weekend activities. Sometimes “adulting” can make you want to cry “Uncle.” Most likely, you’re running on fumes. If your battle cry of the moment is, “Stop the ride, I wanna get off!” a few small adjustments can recharge a burnt out battery. There are plenty of simple ways to be good to you, which will, in turn, help you be good to others. BREATHE. Wherever you are, whatever you are doing, stop right there and breathe. Breathe out all of the air in your body through your mouth. Count to four and

then breathe in through your nose, filling up your abdomen (not your chest). Hold for four seconds. Then, slowly let the air leak out through your mouth as your belly deflates. Repeat. LAUGH. Make YouTube your friend. I personally love the television show, All In The Family. When I need a good laugh, I cue up a full episode on YouTube and laugh myself silly. Laughing is good for the soul. LISTEN. Nothing soothes me like Jazz music. Did you know that brain surgeons play their favorite music in the operating room to take the pressure off? Sometimes, in order to do your best, you have to actually place your attention elsewhere to remain centered and focused. WALK. Take a walk in nature. Walk briskly, look at the grass, the trees and the sky. Breathe in the crisp air, feel your body move and your heart rate slightly increase. Feel your muscles working to move your body. SPEND TIME WITH ANIMALS. If you have a dog or a cat, spend time cuddling and petting your

animal companion. Really take in their energy. If you don’t live with any animals, consider spending time at a dog park to be around animals, or at a local horse stable. Spending time around animals is healing. TAKE A LESSON. You don’t have to make a commitment, time-wise or financially. You can simply take a lesson or two for fun. It will bring a sense of play and adventure to your life. Do it by yourself, or bring a friend or family member along. TAKE A MINI-BREAK. Look for Groupons or off-season deals for short weekend getaways that are within driving distance, and change your environment for 48 hours...or 24 hours if you must. MASSAGE. Everywhere you go now, there are massage and nail spas. Carve out 30 minutes and go for a shoulder rub or a relaxing foot rub... just because. These are just a few of the simple things you can do to be good to yourself. Being good to yourself is like saving money in the bank. You can then spread the wealth to the ones you love.

Elementary Library Program

The focal point of the Massapequa School District’s dynamic library program is 21st Century skills, and that stood out to librarians from the Smithtown School District.

Two representatives from Smithtown made the 25-mile trip to Fairfield Elementary School on Jan. 30 to learn more. Massapequa English language arts Curriculum

After reading “Balloons Over Broadway” about the founder of the Macy’s Thanksgiving Day Parade, students worked in small groups and made balloons, floats and puppets. They took pictures on iPads in front of different backgrounds using a stop-motion app. The short segments would be combined for a classwide parade video. Ms. Mitchell’s adapts her library curriculum to support the classroom teachers. Students participate in engaging activities that are relevant to lessons in their other subject areas, while developing communication, critical

thinking and problemsolving skills and using their creativity. “Libraries can be such an asset to their academic lives,” Ms. Farrell said. “Our library media specialists, like Ms. Mitchell, keep the idea of libraries so relevant to our students.”

Upon returning borrowed books, students placed them back on the shelves, an activity to help familiarize them with the Dewey Decimal System. Smithtown library media services instructional specialist Catherine Masrour and Tackan Elementary School librarian Michelle Robinson observed students from three different grade levels in action. They explained that they are looking to expand their elementary library program, and were impressed by Massapequa’s innovation. Second-graders used Chromebooks to do research, and Ms. Mitchell showed them how to access information from PebbleGo, a child friendly database. Fifth-graders, who were in the midst of their biography unit, used an app called We Video to create digital reports about their subjects. A third-grade class

Emotional intelligence plays a significant role in education, and the Massapequa School District will be incorporating the Yale RULER approach into the curriculum to better address social and emotional needs in the school setting. RULER, an evidencebased approach to emotional intelligence, will be piloted at Berner Middle School with the goal of eventually expanding to all schools in the district. Several Berner administrators, teachers and support staff members have already been trained through Yale University. By the end of this school year, the entire Berner administrative team will have attended RULER training at the Center for Emotional Intelligence at Yale University. Emotional intelligence is the ability to identify and manage your own emotions and the emotions of others.

In education, it creates empathy, accountability, respect and trust. RULER stands for: recognizing emotions in self and others; understanding the causes and consequences of emotions; labeling emotions accurately; expressing emotions appropriately; and regulating emotions effectively. Berner Principal Jason Esposito explained that RULER is not a program, but an approach that is embedded into daily teaching practices. “The purpose is to ensure that students feel comfortable in sharing their emotions and feelings,” Mr. Esposito said. “A strong support system helps students perform better academically, develop leadership skills, manage stress and create meaningful relationships.” RULER includes four anchor tools. The school will create an emotional

intelligence charter that will be the guiding principle for school culture and climate. Classes will also create their own charters. The mood meter, which features red, yellow, blue and green squares, helps students get in touch with their emotions and express their feelings in an appropriate and meaningful way. “Yale RULER is a formalized approach to creating a positive learning climate and developing the emotional skills of all adults and students within the school,” Administrative Associate Lisa Silveri said. “What sets this approach apart from other social and emotional learning programs is that it is a mindset, and provides a common language with which everyone in the school community, grades K-12, can talk about their emotions.

February’s Charity of the Month is: Paws of War

“Helping Both Ends of The Leash” Paws of War is a 501(c)(3) non-profit organization that trains and places shelter dogs to serve and provide independence to our U.S. military Veterans who suffer from the emotional effects of war. In turn, each Veteran can experience the therapeutic and unconditional love that only a companion animal can bring! Since 2014, Paws of War has supported over 100 Veterans with service dogs rescued from kill shelters.

Below is a list of more services that Paws of War offers to Veterans in addition to their Service Dog Program: •

Therapy Dog Program - This is a volunteer based program in which certified Therapy Dogs are brought to visit individuals that would benefit from a dog, but unfortunately cannot have one at the time being. War Torn Pups Program - This program has brought back dogs from Afghanistan, Syria and Jordan that Service Members have found while out on tour. Community Education Program - This program allows Paws of War to work with members of their local community. Through this program, they are able to provide a direct connection between Veterans and the younger population. Vets to Vets Medical RV - This mobile RV provides certain medical services for service animals at no cost to Veterans!

Paws of War is growing and has been recognized by national leaders, national press and some of the larger sporting franchises have even partnered with them to sponsor a dog. The men and women that this organization provides services for have dedicated their lives to serving our great country, and Paws of War strives to help them in every way possible! Patchogue Rotary Animal Assisted Therapy www.PRAATINC.org

PRAAT is a non-profit 501(c)(3) organization that was incorporated in 1993 as a community

service project of the Patchogue Rotary Club. Veterinarian Dr. David Roy Hensen founded this

organization with a belief in the therapeutic potential of dogs! PRAAT screens, trains and eval-

uates all dog-handler teams (the volunteer and their dog). Upon a successful completion of the

PRAAT dog-handler team training, teams become eligible to make visits at over 150 of their contracted and insured facilities across Long Island. PRAAT also runs a Doggie Reading Club. This

program is designed to encourage children to improve confidence with their reading skills, while

The Paws of War Service Dog Program relies heavily on the support of their community and volunteers. Through this program they are able to provide service dogs and their training to Veterans in need at no cost, truly providing them with a miracle! A service dog can help combat the daily symptoms of PTSD. They are trained to pick up stress signals and intervene with their owner to direct their focus back to a positive environment. They can also greatly increase the quality of life for someone suffering from Traumatic Brain Injury. Paws of War trains service dogs to combat the daily issues that someone suffering from TBI has. Each service dog given out is intensely trained before handed off to the Veteran. The lives of many American Heroes have been changed forever because of what this organization has done for them!

Puppets helped raise awareness about endangered species at McKenna Elementary School in the Massapequa School District. Under the direction of teacher Michelle Scott, fourth- and fifth-graders in the Magnet program researched endangered animals and their habitats. The students participated in a live videoconference

with the Buffalo Zoo, and studied how propaganda and advertisements can be utilized to support philanthropic foundations. Students designed and created their own puppets, constructed a stage and made ecosystem backdrops, based upon species of animals that they were interested in. They worked in cooperative teams to write scripts using

factual information, as well as persuasive techniques on why the animals should be protected. As a culminating event, students presented their puppet shows to their parents as well as first- and secondgrade classes to publicize how people can assist in saving animals that are critically endangered and vulnerable to extinction.

Each student in Danielle McCaffery’s class has been assigned a country to research in the social studies project. Children are using Chromebooks to look up facts about their assigned countries such as cultural aspects and geographical features. Reading Challenge Takes Flight Dressed as airplane pilots, Principal Thomas McKillop and Assistant Principal Mary Velte made a special appearance on News from the Nest on January 28th. The captain and co-captain appeared on the daily morning news show to tout the beginning of the Pick a Reading Partner program at East Lake Elementary School in the Massapequa School District. The theme for the three week program is “Travel

the World Through Books.” Using green screen technology, Mr. McKillop and Ms. Velte talked about the program from East Lake Airlines. Computer teacher assistant Susan Corrado superimposed an image of an airplane cockpit. Students will be encouraged to read at home with a parent, sibling or another partner of their choice. They will log their “miles” in their reading passports. The grade levels

will compete for a grand prize, earning points when students read at home, attend literacy events or check books out from the library. Each week, a different pair of fifth-grade students gets to host the show which includes the Pledge of Allegiance, important announcements, weather, lunch menu, student and staff birthdays and fun facts.
