It also funds debt service related to capital bond referendums previously approved by the community. The Charity of The Month for May is: Guardians of Rescue Guardians of Rescue is a 501(c)(3) non-profit organization. Their mission is to facilitate and foster programs and activities that further the unique benefits of interaction between people and animals. We are all aware of the toll that this pandemic is having on people, yet the impacts are being felt beyond humans. Animals are also being impacted in numerous ways by this situation. Guardians of Rescue has been dealing with the Covid Crisis in many different ways, such as helping people feed their pets and taking on the responsibility to care for homeless animals. They have even stepped out of their realm of helping animals to assist seniors during these trying times. They are overwhelmed by the amount of assistance needed and their phones are ringing non-stop. So many people have had their employment impacted by the virus, therefore donations have been down. This makes it difficult for them to continue feeding the animals, building doghouses, taking in new rescues and trying to cover all their expenses. “The pandemic has created a host of problem for the animals,” says Robert Misseri, President of this organization. “I hope that we can make it through this difficult time, so that we can continue to help the animals in need.” Robert is also the President of Paws of War, another non-profit right here on Long Island. This organization trains and places shelter dogs to serve and provide independence to our U.S. military veterans that suffer from the emotional effects of war. In turn, each veteran can experience the therapeutic and unconditional love only a companion animal can bring. Throughout this pandemic, they have been tending to the most at risk veterans. They find that their older senior veterans typically are very prideful and refuse to ask for any handouts. Many live alone and

will still go out and put themselves at risk to get food for their pets. However, Paws of War will at times arrive at their homes with no warning, knock on their door and tell them that they have some items to drop off for them. “You always see that tear in their eye” says Robert. “That someone actually cares enough to come to their home and bring them something is very special.” A lot of these veterans suffered for many years, all of which now have lifelong disabilities due to their service to our country. Paws of War feels that at the very least they can bring them pet food to give them a helping hand during these tough times. Additionally, Paws of War has partnered with Cambridge Catering, who is providing hot cooked meals free of charge to our veterans. Hank, a Smithtown resident and veteran, was someone that Paws of War helped. When they arrived at his home, they noticed a his two very proud flags were destroyed. They handed off the pet food and trays of hot food that Cambridge Catering has provided, but they didn’t stop there. They then went to the hardware store and purchased everything to fix and replace his flags. Guardians of Rescue and Paws of War can both use your support so they can continue to help others. 3. Brush the grill grate and coat it with oil. Put the burgers on the grill, cover and cook for 7 minutes, flipping after about 4 minutes, for mediumdone (150 F, slightly pink). Add a minute per side for well-done (160 F). 4. If you are making cheeseburgers, put 2 slices of cheese on each burger 1 minute before the burgers are going to be done. 5. To toast the buns, put them cut-sides down directly over the fire for the last minute of cooking. 6. If serving the burgers directly from the grill, serve on the buns. If the burgers will sit, even for a few minutes, keep the buns and the burgers separate until just before eating. The best garnishes for burgers are the classics: a slice of ripe beefsteak tomato, a mound of sautĂŠed onions, a leaf of romaine lettuce, a dollop of coleslaw or a few slices of dill pickles.

The YES Community Counseling Center’s PACT Project (Partnering in Action and Change for Tomorrow) collaborates with the Massapequa Takes Action Coalition (MTAC), the Farmingdale ADAPT (Alcohol and Drug Abuse Prevention Team) and the Levittown Community Action Coalition (LCAC) to prevent underage drinking and substance misuse in our communities. Working together, we seek to understand patterns of substance misuse to better address this challenge through targeted prevention, education and outreach.

It's always the right time of year for fresh apple pie

ertain foods are synonymous with particular holidays or times of year. For example, few people can imagine celebrating Valentine’s Day without ample supplies of chocolate on hand. And what summer barbecue is complete without grilled hot dogs and hamburgers? While these foods and others are must-haves during certain times of the year, that doesn’t mean they cannot be enjoyed whenever a craving arises. Apples, and particularly apple pie, are a staple of many holiday season celebrations. But apple pie is just as delicious in March, April, May, etc., as it is during the weeks between Thanksgiving and Christmas. That’s especially true when the apples are fresh. Whether yours is a seasonal or non-seasonal craving for apple pie, be sure to satisfy it with this recipe for “French Apple Pie” from Mollie Cox Bryan’s “Mrs. Rowe’s Little Book of Southern Pies” (Ten Speed Press). FRENCH APPLE PIE

cup light corn syrup teaspoons sugar

DIRECTIONS To make the raisin filling, combine the raisins, water and lemon juice in a heavy saucepan over medium heat. Bring to a boil, then lower the heat to medium-low and cook, stirring occasionally until the raisins are plump, about 15 minutes.

Separately, combine the corn syrup, flour and sugar and mix well, then add to the raisins and continue cooking, stirring occasionally, until thick and syrupy, about 10 minutes. Remove from the heat and cool until the mixture is just warm, about 10 to 15 minutes. Preheat the oven to 400 F. Line a 9-inch pie plate with 1 rolled-out crust.

cup brown sugar

teaspoon ground cinnamon teaspoon ground nutmeg

teaspoons cornstarch

cup confectioners’ sugar

tablespoon butter, softened

tablespoons water

Peel the apples, cut them into thin wedges, and put them in a large bowl. Separately, combine the sugars, cinnamon, nutmeg, and cornstarch, then add to the apples and gently stir until evenly mixed.

Spread the apple mixture in the crust in an even layer, then spread the raisin filling evenly over the apples. Brush the rim of the crust with water, cover with the second rolled-out crust, seal and flute or crimp the edges, and cut a steam vent in the center. Bake for 40 to 50 minutes, until golden brown. Cool on a wire rack for 1 to 2 hours, until completely cool.

To make the icing, combine the sugar and water and mix well. Add the butter and mix until smooth. Brush over the top of the cooled pie before serving.

Sift the flour and salt into a bowl. Cut in the shortening with a pastry blender until it is the size of small peas. Sprinkle 1 tablespoon of the milk over part of the flour mixture. Gently toss with a fork and push to the side of the bowl. Sprinkle another tablespoon of milk over another dry part, toss with a fork and push to the side of the bowl. Repeat with the remaining milk until all of the flour mixture is moistened. Press the dough together to form 2 equal balls, then flatten into disks. Roll out the crusts right away, or wrap the dough tightly, smoothing out any little wrinkles or air pockets and refrigerate for up to 2 weeks. On a lightly floured surface, roll out each ball to a thickness of 1⁄8 inch. Use a light touch and handle the dough as little as possible.

So many of our other members have also been remarkable during this time. Our news publications including the Massapequa Post, Massapequa Observer, All Island Media, Newsday, and South Bay’s Neighbor have kept information flowing to our doors in spite of the obstacles. I know that at YES Community Counseling Center, the organization continues to provide help and support to our vulnerable children and families. Working remotely, counselors continue to be available to help anyone in the community who needs resources and support. Food pantries are open for families, and we are blessed to have those resources available throughout the community - not only through YES, but through our local parishes as well. I would be remiss if I did not acknowledge all those who, in spite of the hardships, are able to donate funds and food so that others can be fed. And so many more are doing such invaluable work so that our community stays strong. For instance, our members Greg and Robin Massimi of TLC Companions are adding 10% to the pay of their healthcare workers to show appreciation for their heroic actions and service. And Karen Gawrych of Mary Kay was able to donate almost 50 bottles of Mary Kay’s Satin Hand Creams to the healthcare workers at St. Joseph Hospital. It is always amazing to watch our members come together and put others first. That is the strength and magic of our community!! Selflessness when others need it most.

How Memorial Day And Veterans Day Differ From Each Other

Memorial Day weekend as the unofficial start of summer, the weekend should not be celebrated without also pausing to reflect on and recognize the military personnel who lost their lives in defense of freedom and the American way of life. Veterans Day is celebrated annually on November 11 and recognizes all men and women who have served in the military. Veterans Day coincides with Remembrance Day, which is a celebrated by the Commonwealth of

Nations, an association of 53 member states with connections to the British Empire. Though Veterans Day and Remembrance Day are each celebrated on November 11, the latter recognizes armed forces members who died in the line of duty, making it more similar to Memorial Day than Veterans Day. Adolescence can be a trying time for teenagers and their parents. According to the American Psychological Association, parents and caregivers face an entirely new set of tasks to deal with the changing needs of children as they reach adolescence. The changes that accompany adolescence include physical, cognitive and social changes, and parents may need to adopt an entirely new approach to parenting as they deal with the changing needs of their children during their period in their lives. The APA notes that adolescents often crave greater independence and autonomy, and this desire is a natural part of their development process. It’s important that parents of adolescents find a way to maintain the familial bonds they and their children have developed up to this point, while also allowing increasingly mature teens a level of autonomy that can benefit them throughout their lives. According to clinical psychologist William Stixrud, Ph.D., decades of psychological research has shown that a lack of perceived control leads people to feel overwhelmed, helpless, hopeless, passive, and resigned. So adolescents who feel that they have control over the direction of their lives, feelings which can be strengthened when they are given some level of autonomy as teenagers, are less likely to feel overwhelmed, helpless, hopeless, passive, or resigned as adults.

Long Island Community Hospital has raised over $550,000 toward its $1,000,000 goal for the Knapp Family COVID-19 Health Crisis Challenge within ten days of announcing the campaign. The matching grant is made possible by the Knapp-Swezey Foundation, Island Outreach Foundation and Gardener Foundation to help raise vital funding for the community hospital in their fight against COVID-19. “The outpouring of support has been humbling, to say the least. In a short time our community has donated over $275,000, which has been generously matched by the Knapp family to reach over $550,000,” said Richard T. Margulis, President and Chief Executive Officer at LI Community Hospital. “Protecting our staff and responding to our patients needs during this crisis remain the top priority, especially as we see high numbers holding steady, and the Knapp Family COVID-19 Challenge is helping us meet these needs.” On April 8th, the Knapp Family announced that they would match every donation, dollar for dollar, up to $500,000 to directly purchase vital personal protective equipment (PPE), supplies, equipment and other items necessary to keep healthcare professionals safe during this pandemic. These purchases are ongoing and include masks, gowns, eyewear and other protective gear

in high demand. “These past few weeks have been extraordinary for us all. Everyone has been touched by this virus. It knows no boundaries. Imposters call customers, demand immediate payment, threaten to shut off service

National Grid is warning customers to beware of a new phone scam where imposters are demanding immediate bill payment and threatening service disconnection. This latest scam, which is targeting customers already facing hardships due to COVID-19, involves callers who pretend to be National Grid representatives. They tell customers that unless payment is made within 30 minutes, their power will be shut off. The customer is then directed to call “the direct billing department to make a payment and avoid power disconnection.” The scammers use sophisticated phone systems that display National Grid on the customer’s caller ID. Additionally, the phone number customers are instructed to call closely resembles the company’s recorded messaging and phone prompt directions. These elements make it difficult to differentiate an actual National Grid call from an imposter’s call.

When in doubt, customers should hang up and call the National Grid customer service number on their bill. National Grid reminds customers that on March 13, the company temporarily suspended collectionsrelated activities, including service disconnections, to lessen any financial hardship brought on by the COVID-19 pandemic. The company continues to encourage customers struggling to pay their bills to take advantage of bill payment options or to call to speak with one of our Consumer Advocates. Additional Tips to Protect Against Scams • National Grid urges customers to be cautious of scammers and offers the following tips: • National Grid representatives will know your account number; never offer that information to a caller. • Ask the caller to provide the last five digits of

your National Grid account number. If the caller doesn’t know your account number, asks questions about your account balance and associated details, or if you have any doubt the caller is a National Grid representative, please take charge and immediately hang up.
