A Hearty Stew Tailor-Made For St. Patrick’s Day Celebrations
St. Patrick’s Day is a festive day in which people from all walks of life embrace Irish culture. Celebrated right in the middle of March, St. Patrick’s Day calls for hearty fare that those who have been to the Emerald Isle know is a staple of the Irish diet. This year, anyone looking to celebrate St. Patrick’s Day, and stay warm in the process, can enjoy this recipe for “Irish Stew With Lamb and Potatoes” courtesy of Lines+Angles.
DIRECTIONS:
1. Heat the oil in a large pot and sear the meat. Remove from the pan and set aside.
2. Cook the onions and carrots in the pan for 3 minutes. Return the meat to the pot, season with salt and ground black pepper and deglaze with the stock. Cover and simmer on a low heat for 40 minutes.
Irish Stew With Lamb and Potatoes
Serves 6
3 tablespoons vegetable oil
1 3⁄4 pound lamb neck, on the bone, thickly sliced
4 small onions, diced
2 carrots, sliced
6 cups beef stock
8 to 10 small waxy potatoes, halved or quartered depending on size
1 to 2 tablespoons chopped parsley
3. Add the potatoes to the pot, cover and cook for another 30 minutes until the potatoes are soft. Season to taste and serve garnished with parsley.

Weckerle Park is named in honor of Lieutenant Edward Weckerle -- a long-time Lindenhurst resident, decorated World War I hero, fire department captain and police lieutenant. The park was dedicated in his honor in November of 1958 when his brother donated the land for the purpose of a park.

Belmont Showcases Diversity During World Languages Week
Belmont Elementary School in the North Babylon School District recently hosted World Languages Week, a celebration designed to showcase the many cultures represented within the school community. Organized by English as a new language teachers Christina Mennuti and Grace Salvagio, the week featured a variety of engaging activities that highlighted students’ cultural backgrounds and traditions. Throughout the celebration, students delivered speaking presentations about different countries, sharing information about traditional foods, customs and cultural practices. They also performed traditional dances for their peers, bringing energy and authenticity to the event. Eagle Scout Lorenzo Napolitano Completes His Eagle Scout Project
Lorenzo Napolitano of Scout Troop 399 North Babylon completed his Eagle Scout project on February 7, 2026, one of the coldest days this winter. The benefactor of the project was St. Paul’s Reformed Church in North Babylon. To aid the food pantry run by the church, Lorenzo designed, constructed, and erected a drop box shelter for food donations to the pantry.
Students Serve Up Spanish In Real-World Speaking Assessment
Students in Ms. Camila Acuna’s Spanish classes at North Babylon High School recently demonstrated their language skills through an engaging, realworld speaking assessment to conclude their food unit.
As part of the project, students performed restaurant-style dialogues, taking on the roles of servers and customers. The classroom was transformed
into a restaurant setting, creating an immersive environment where students practiced ordering food, asking questions and holding conversations entirely in Spanish.
The interactive lesson allowed students to build confidence in their speaking abilities while applying vocabulary and grammar in a practical way. By simulating
real-life scenarios, students strengthened their communication skills and gained a deeper understanding of conversational Spanish. The creative assessment highlighted student engagement and showcased how experiential learning can make language instruction both meaningful and fun.
Babylon And Huntington Winter Senior Advocate Schedules
Suffolk Legislator Tom Donnelly (D-Deer Park) is pleased to inform Babylon and Huntington residents about the local Suffolk County Office for the Aging Winter 2026 Senior Advocate Schedule. Senior advocates are County representatives who come out into the community and assist seniors with information gathering, completion of eligibility or recertification applications and referrals to appropriate community agencies.
“It is so important for us to provide our senior citizens with the assistance and
information they need in ways that are most convenient to them. These visits allow our seniors to connect with our County’s senior advocates right in their own communities,” said Legislator Donnelly. “I hope all those interested in the services that the Suffolk County Office for the Aging provides will take advantage of this opportunity.”

• Paumanack Village 5 & 6, 100 Adriatic Drive, Melville: Thursday, March 26, 8:30 am – 12 pm; residents only Advocates assist with the Supplemental Nutrition Assistance Program (SNAP – formerly known as food stamps), Medicare Savings Program and Heating Emergency Assistance Program (HEAP) applications. They also can provide
information on Medicare, answer questions and make recommendations and referrals. For more information about available services or directions to any of these locations, please call the Suffolk County Office for the Aging at (631) 8538200.
