Peacocks & Pretty Things Beauty. They say it is in the eye of the beholder; but truly, it exists all around us, if we take the time to notice. My love of photography has certainly enhanced my ability to appreciate the aesthetics of my surroundings, from interesting cloud formations while waiting for sunsets, to pretty roadside blossoms that would otherwise be characterized as weeds to the undiscerning eye, to the novelty of light and shadow as it plays out upon a surface. Such is the abstract nature of visual “art.” And then there are the moments when it appears before you in its most natural, stunningly striking form. Case in point: several weeks ago, my friend and I enjoyed a late lunch at the famed Milleridge Inn, having both decided that it was the perfect locale after having not dined there in quite some time. To our surprise, the holiday lights were still on full display, with remnants of the Christmas season in every corner of the restaurant and shops. Having just finished dismantling my own decorations the previous week, I was at once

nostalgic and slightly weary of them. As we exited the bakery and made our way to the official Christmas shop located on the property, I spotted what appeared to be a large bird sitting on the railing of the ice cream parlor. “Is that real?” I whispered to my friend, “Or just a decoration?” We stared intently, only to be instantly startled. “It moved! Oh my gosh, it moved!” As we tentatively approached, we realized it was a GIANT peacock. And with that, no less than half a dozen others peered out from behind various corners and crevices, along with several chickens and peahens. Unfazed by the humans before them, they moseyed to and fro, pausing briefly to study us. Thoroughly infatuated, we wandered after them, attempting to snap pictures and even a few short videos of these majestic feathered creatures. As I knelt down and tentatively reached my hand out toward one especially beautiful specimen, my friend grabbed my phone to

capture the sight. The bird cocked his head slightly, examining me carefully, then strode purposefully toward me. Unsure if he was planning to sit on my lap or - more likely - to take a sizable bite out of me, I froze, backing away slightly. “Did you get the picture?” I nervously called to my friend. “Yes, I think I took about 27 of them,” she replied giggling. Alright then, no sense pushing my luck. I quickly stood up as the peacock stared at me, seemingly perplexed. “Sorry pretty bird, thanks for the photo op.” And with that, he fluttered his massive wings and took off, soaring to a nearby tree branch. By that point, a small crowd had gathered around us, amazed that this one bird had taken such an apparent liking to me. A little boy exclaimed to his parents, “Wow, they fly???” Peering up at the bird, now perched overhead, my friend and I looked at each other in utter amazement. “That,” I said, “was clearly the highlight of the day.” Beauty. It’s everywhere.

Few things are more exciting and festive for sports fans than gathering with close friends to cheer on a favorite team. Although a large part of the fun involves watching the game, food and other festivities often round out the day especially when fans gather in the comforts of private homes rather than big stadiums. Having good food nearby is essential when hosting sports fans for a big game, and there are many additional ways to make gameday that much more fun and memorable: Establish The Atmosphere Make the party area more festive by incorporating team colors. Feature these colors on serving bowls, plates, pennants, balloons and more. Remember to ask guests to wear the apparel of their

favorite teams, hang photos of key players and keep a ball on hand so guests can toss or kick it around between plays. Choose Fan-Favorite Foods Game day menu options can include anything from finger foods to more elaborate appetizers to main courses. Games can take several hours from start to finish, so make sure you have enough food to cover the duration of the event. Consider favorites like chicken wings, sliders, mozzarella sticks and deli sandwiches. Use a slow cooker to prepare chili or stew. A slow cooker also can be used to cook ribs or hot dogs in bulk. Party-Perfect Pizza

4 slices Black Kassel Speck, cut in half lengthwise

Pizza Dough: 1¾ to 2 cups all-purpose flour 1 cup cake and pastry flour 2¼ teaspoons instant or bread-machine dry yeast (or 1 envelope) 1 teaspoon salt 1¼ cup very warm water Directions: To make pizza dough, stir together allpurpose flour, cake flour, yeast and salt in a mixer fitted with a dough hook; make a well in the center. Add water. Mix on medium speed until all flour is incorporated into dough; add remaining flour as needed to have soft, slightly sticky dough. Alternatively, you can mix by hand. Turn out on a wellfloured surface. Let rest covered for 10 minutes. Divide into thirds. Place a pizza stone or upside-down baking sheet in the oven and preheat to 450º F. Gently flatten dough into a circle or rectangle

on a lightly floured surface, creating a rim. Transfer to a cornmeal-dusted pizza peel or another upside-down baking sheet; slide dough onto the hot pizza stone or baking sheet. Bake for 8 minutes. Meanwhile, combine 2 tablespoons olive oil in a bowl with garlic, rosemary and salt and pepper to taste. Remove pizza from oven. Brush with olive oil mixture and top with ricotta and mozzarella. Return pizza to oven, baking until cheese is golden and bubbly, about 6 more minutes. Toss arugula and shallot slices in a large bowl with lemon juice, olive oil and salt and pepper to taste. Top the pizza with arugula salad, speck and shaved Parmesan cheese. Cut into wedges or squares with scissors; serve immediately. Tip: As an alternative to speck, you can try Black Kassel Old Forest, Picante or Mustard Seed salami. You can also buy store-made pizza dough and simply layer on the toppings.

Student Accomplishments Copiague School District’s Board of Education recognized 27 students from the district’s six schools during a special ceremony held at Copiague Middle School on January 22nd. The student recognition awards are presented twice a year to students for their noteworthy accomplishments. Copiague School District Superintendent of Schools Dr. Kathleen Bannon noted how the awards are an honor and distinction given to a small group of students. The designated agent form is one of the most important pieces of paperwork in the funeral process. This form is filled out before the deceased has passed away, designating one person to take care of the funreal arrangements. Most people believe that documents such as health care proxy or power of attorney take care of these measures and give the named person power to make funeral arrangements. This is a common misconception. These documents are null and void when the deceased person has passed on. The right of funeral arrangements would then pass to the closest next of kin, and in the case of multiple children it gets evenly distributed. The designated agent form resolves this issue by signifying one person (kin or not) to take care of the arrangements. This is most helpful in situations with cremation, where a person passes away having multiple children spread across the country. In cremation, signatures are needed from all children in order to have the process completed. If one person objects, cremation cannot be done. With the designated agent form, only one signature is needed from the designated person. This makes the arrangement process go much smoother. Danielle Palladino, special education teacher at Susan E. Wiley Elementary School in the Copiague School District, was recognized with the Association of Suffolk Supervisors for Educational Technologies Bright Lights Award. Palladino was presented with the award at a luncheon in Great River on January 18th.

“As a special education teacher, my goal is to create a learning environment that fosters confident, independent learners,” Palladino said. “I use technology to enhance the learning experience for my students, but most importantly I use everyday technology resources to empower my students.” Palladino, who has been teaching in the Copiague

School District for 11 years, was nominated for the award for her use of technology in the classroom by Copiague School District’s director of technology Kelly Urraro. “My students are incredibly motivated by technology,” Palladino added. “They enjoy using the Smart Board, reading on EPIC and completing assignments in Google Classroom. They have also begun to work using our district’s ZSpaces, which provide them with realistic 3-D opportunities. I feel extremely fortunate to be teaching in 2018 with such a vast array of technology at my fingertips. I have seen my teaching evolve as technology continues to advance. Street Renaming

Suffolk County Legislature Presiding Officer DuWayne Gregory was on hand to celebrate the renaming of East Gate, a street off of Great Neck Road in Copiague, as “Everett E. Newman III Memorial Way” in memory of a longtime Copiague resident in recognition of his years of selfless work on behalf of the Copiague community.

Everett E. Newman III, who died on Aug. 30, 2017 at the age of 71, was a man of integrity who gave himself fully to his family and his community. He served as a manager with the U.S. Post Office for most of his life and was a proud veteran of the U.S. Navy. Additionally, he was a 30-year member of the Copiague Board of

Education, a longtime member and past president of the Copiague Kiwanis, leader of Boy Scout Troops 284 and 154, past president of the former Copiague Lions Club, a volunteer in the Religious Education program at Our Lady of the Assumption Church, and a coach for the Copiague Soccer League.

Exploring Geology Cooperative Extension. Building upon their science curriculum studies, the students learned that Long Island was formed by glaciers and then compared the resulting geology of the North and South

shores. Throughout the interactive lesson, students learned new vocabulary, created a 3-D map of Long Island for their classroom and explored how sand migration and wave power are impacting Long Island beaches.

Students at Susan E. Wiley Elementary School in the Copiague School District are challenging themselves to change the world for the better. The school is participating in the worldwide movement – the Great Kindness Challenge – from January 22nd-26th. Students from all across the world are

joining together in the challenge. After watching a short video created by Susan E. Wiley Elementary School Assistant Principal Kristina Biamonte on how random acts of kindness can go a long way, students received a checklist of acts to complete throughout the week.

Up for the Challenge Staff members, students, their families and friends all participated in the weeklong challenge in hopes of inspiring others to be kind. The class that completes the most kind acts at the conclusion of the week will receive a kindness celebration.
