Stony Brook Students led by Jean-Doris Muhuza and the Student African American Brotherhood, put together a makeshift homeless village in the Student Activities Center at Stony Brook. Passersby were able to collect information about Mercy’s Center Ministries services and ask the students about the project which was to raise awareness about homelessness. Mercy provides housing and comprehensive services to homeless young women 16-23 who are single, pregnant or parenting. CELEBRATING OVER 95 YEARS OF CATHOLIC EDUCATION!
As we begin this second month of 2017, let us take stock of the year so far… Mother Nature has been relatively kind, sparing us the worst of winter’s wrath and limiting the hazardous weather to one shovel-worthy pileup of the white stuff. Of course, history has shown February to be among the snowiest here on Long Island, so be forewarned. No matter what that little furry critter says tomorrow, we still have several weeks to go before we can start looking for crocuses. Me, I just purchased three new books and am actually looking forward to some cozy, inclement weather to settle in and start reading. The beginning of the year may not be great for outdoor activities - although, it should be noted,
some of the most exquisite sunrises and sunsets tend to grace our skies during these month - but there are plenty of indoor hobbies to embrace, from movies to bowling to planetarium shows and more. Speaking of pastimes, I was pleasantly surprised to receive quite a bit of feedback to last week’s column on the closing of my yoga studio, with many offering their recommendations for alternative locations and similarly touting the benefits of this spiritual practice. Thank you to all who wrote in – it is certainly nice to know that there is an entire community of fellow “yogis” out there, and that many of you read my column weekly! In line with that feedback, it also occurred to me that I never did share the arrival of a new little finned friend,
“Spud,” who I adopted back at the end of November. While no pet will ever come close to replacing my Buddy and our very special relationship, Spud is certainly an entertaining little fellow with a personality all his own. Just a mere baby betta when I took him in, he is slowly growing into a beautiful boy with spikey blue fins and a penchant for darting to and fro and “playing” with his reflection. Spud’s swimming skills can use a little work, and I’m still crushing his food pellets into tiny, more manageable crumbs for his delicate system; but, overall, he seems to be adjusting to his new home quite nicely. And with that, we head into February, hoping that each passing month brings with it a little more sunshine into our lives.
The Lindenhurst High School Virtual Enterprise firm “Whipped,” led by student Chief Executive Officer Robert Kirkland, recently competed against 180 firms at the Virtual Enterprises International Regional Trade Show at Farmingdale State College. Also participating was “The Wave,” the second virtual company to represent the Lindenhurst Program. Both groups presented their business plans to judges comprised of business teachers,
college professors and business owners. “Whipped,” a virtual bakery specializing in destination-themed cupcake packages, placed among the top 10 percent of the nation and obtained a third-place recognition in the category of “Best Firm Booth.” This was in addition to firstplace recognitions in the categories of “Most Creative Firm” and “Best Company Apparel.” Leading Whipped to this accomplishment
was student Annabella Pena who serves as the company’s vice president of sales and marketing. The Virtual Enterprises International program, now in its second year at Lindenhurst High School, allows students to establish and run individual departments of the virtual companies they create, thus providing the students with an opportunity to learn about the inner workings of the business world firsthand.

Letters Link Districts For several months, second-grade students of Alyson Ferreby’s class at Daniel Street Elementary School and Heather Paglino’s class at William Rall Elementary School in the Lindenhurst Union Free School District have
been writing letters to each other learning about the others’ schools while developing friendships. The two classes came together for the first time to enjoy an afternoon of lunch and activities. Students were directly
partnered with their pen pal, and using a Venn diagram, they worked together to compare and contrast their likes and dislikes in an effort to discover the common ground they share.

Prevent Wedding Day Foot Pain Master the Wedding Save-the-Date While some couples may get cold feet on their wedding days, there’s no reason for anyone, including brides who don high heels in the name of fashion, to endure foot pain. Foot pain is a common complaint for those unaccustomed to wearing stilettos or formal footwear. Wedding attire is not worn every day, so it’s no surprise that wedding footwear may contribute to some aches and pains. Podiatrists warn that heels between one and two inches in height are the best to maintain foot health. But that heel size does not work for all brides. Acrobat Dazzles trick cycling, foot juggling and ribbon dancing. Born in Beijing, China, Liu began her acrobatic training at 6 years-old. She attended the Chinese National Circus School and trained for eight hours a day until she was 16. Liu traveled throughout the world with various touring companies, including Princess Cruise Lines, and
is currently a freelance performer. During her performance, she spoke about Chinese culture and language, teaching the student how to say certain Chinese words. Several students were given the opportunity to attempt some of the acrobatic skills such as juggling, plate spinning and ribbon dancing.

Party-Perfect Pizza
4 slices Black Kassel Speck, cut in half lengthwise
Pizza Dough: 1¾ to 2 cups all-purpose flour 1 cup cake and pastry flour 2¼ teaspoons instant or bread-machine dry yeast (or 1 envelope) 1 teaspoon salt 1¼ cup very warm water Directions: To make pizza dough, stir together allpurpose flour, cake flour, yeast and salt in a mixer fitted with a dough hook; make a well in the center. Add water. Mix on medium speed until all flour is incorporated into dough; add remaining flour as needed to have soft, slightly sticky dough. Alternatively, you can mix by hand. Turn out on a wellfloured surface. Let rest covered for 10 minutes. Divide into thirds. Place a pizza stone or upside-down baking sheet in the oven and preheat to 450º F. Gently flatten dough into a circle or rectangle
on a lightly floured surface, creating a rim. Transfer to a cornmeal-dusted pizza peel or another upside-down baking sheet; slide dough onto the hot pizza stone or baking sheet. Bake for 8 minutes. Meanwhile, combine 2 tablespoons olive oil in a bowl with garlic, rosemary and salt and pepper to taste. Remove pizza from oven. Brush with olive oil mixture and top with ricotta and mozzarella. Return pizza to oven, baking until cheese is golden and bubbly, about 6 more minutes. Toss arugula and shallot slices in a large bowl with lemon juice, olive oil and salt and pepper to taste. Top the pizza with arugula salad, speck and shaved Parmesan cheese. Cut into wedges or squares with scissors; serve immediately.
Tip: As an alternative to speck, you can try Black Kassel Old Forest, Picante or Mustard Seed salami. You can also buy store-made pizza dough and simply layer on the toppings.
