Virgil’s Smoked Chicken Wings With Blue Cheese Dip Serves 4 Blue Cheese Dip 2 cups blue cheese crumbles, divided 1 cup mayonnaise 1⁄2 cup buttermilk 2 teaspoons hot sauce 1 teaspoon Worcestershire sauce 1⁄2 teaspoon kosher salt 1⁄4 cup finely chopped scallions 1⁄4 cup finely chopped celery Marinade 1⁄2 cup vegetable oil
1⁄2 cup hot sauce 4 tablespoons Virgil’s Dry Rub (see below) 4 tablespoons granulated garlic 4 tablespoons granulated onion Juice of 1/2 lemon Wings 8 large chicken wings 1⁄2 cup Virgil’s Dry Rub (see below) Sauce 10 tablespoons unsalted butter 1 teaspoon cornstarch 4 tablespoons white vinegar 3⁄4 cup hot sauce 1⁄4 teaspoon cayenne pepper 1. To make the dip, combine 1 cup of the blue cheese, mayonnaise, buttermilk, hot sauce, Worcestershire sauce, and salt in the bowl of a food processor and blend on low until smooth. 2. Remove to a medium mixing bowl and fold in the rest of the blue cheese, scallions and celery, being sure to break up the larger blue cheese crumbles. Place in a covered container and refrigerate overnight. 3. Mix all the marinade ingredients in a large mixing bowl. Place the wings in a large container with a lid and pour the mixture over the wings. Toss until the wings are thoroughly coated. Cover and refrigerate for 2 days. 4. Preheat the grill or smoker to 245 F.

5 Ways To Cut Wedding Reception Costs Weddings have a tendency to be expensive endeavors. According to The Knot’s 2018 Real Weddings Study, the national average cost of a wedding is $33,931. Nearly half of that ($15,439) is spent on the reception venue alone. As expensive as wedding receptions can be, couples should know that there are many ways to reduce reception costs without sacrificing fun. 1. Choose Foods Wisely Pour over the details of catering costs. The Knot says the average price for catering will be $68 per person. If you opt for an appetizers and cocktails reception, you may be able to shave several dollars off the bill. Look closely at the pricing for buffet versus plated meals. Buffet service often means having a greater quantity of food on hand, which could drive up the cost. Find out if the catering hall can work
with your budget to provide cost-conscious options, like familiar comfort foods instead of gourmet fare. 2. Serve A Custom-Made Cocktail A themed drink, such as punch or a classic spirit with a reimagined, weddingfriendly name, can be less expensive than offering full open bar service. Some couples also opt to pay for only wine and beer rather than a full open bar that includes liquor and mixed drinks. 3. Book A Weeknight Weekend weddings are easier on guests’ schedules, but not on couples’ budgets. Couples can save thousands of dollars by hosting weeknight weddings instead of weekend affairs. East Islip TV And Video Classes Tour NBC Studios Selected East Islip High School students from James Connell’s broadcast television class and William Lackner’s video production class recently toured NBC Studios in Manhattan, included behind-the-scenes looks into the studios where some of their favorite NBC shows are made, such as “Late Night with Seth Meyers,” “Saturday Night Live” and “The Tonight Show Starring Jimmy Fallon,” as well as NBC’s fully restored art deco rotunda and stateof-the-art 4K theater. Two NBC pages served as hosts, guiding the students through the historic halls of the building. The high schoolers learned about the television production process and had an opportunity to produce their own show at the end of the tour. “This was a great tour for anyone interested in a career in TV production,” said Lackner. “It was so fun to see the

The YMCA of Long Island is a leading non-profit organization that works daily to improve lives through programs and services that nurture youth, foster healthy living and inspire social responsibility. Timber Point Enjoys Visit From A Talented Wizard Harlem Wizards basketball player Patric Massey, also known as “The Artist,” visited East Islip’s Timber Point Elementary School on Jan. 8, sharing personal stories about his childhood and
how he handled bullies and overcame obstacles to be a successful athlete. During the PTA-sponsored event, Massey also enlisted several student and teacher volunteers to participate in basketball tricks
and games. “The entire school was mesmerized by his cheerful personality and talents with the basketball,” said Principal Danielle Naccarato.

Catering Wedding Menus To Your Guests’ Dietary Needs Gone are the days when wedding reception menus were limited to the one-sizefits-all offerings of meat, chicken or fish. Thanks to modern diets, couples hoping to accommodate guests may need to provide a wide array of food choices. It is impossible to pinpoint an exact number, as there are no definitive surveys classifying all dietary preferences, but there are believed to be around 7.9 million people in the United States who follow a vegetarian-based diet. Of those people, around one million are strictly vegan, according to data in The Economist. In addition, NYU Langone Health says onethird of Americans are trying to avoid gluten. The Gluten Free Agency, which is a consulting group dedicated to helping advertisers, says some nine million people in
Canada are going gluten-free now for medical or personal reasons. Toss in the scores of people with peanut or other allergies and even more caution is needed when designing wedding menus. Savvy couples who have guests’ health and comfort in mind recognize the importance of offering a varied meal plan for wedding-related parties and receptions. The following are some ideas to consider when planning wedding menus. • Consider a buffet-style service. Although couples might like the tradition and flair that a seated/plated meal offers, it creates a much more limited selection of meal options. Buffet-style dinner service often provides couples with multiple choices, and it’s much more likely they can come up with a combination that caters to any food allergies or dietary
restrictions guests may have. • Opt for food stations. In lieu of one long buffet table, a modern approach is to have staffed food stations. Foods as well as their ingredients can be clearly stated on food table placards so guests can make appropriate choices. • Offer alternatives for dessert. Wedding cake can be a challenge to someone with a gluten sensitivity or an egg or a nut allergy. While not every guest indulges in dessert, make it a point to offer an alternative to cake. Perhaps a groom’s cake can be revamped into glutenfree cookie bars or a nut-free trifle. Couples who know in advance which types of dietary restrictions their guests have can work with caterers to devise a menu that suits everyone.

Accepted metals, glass, and plastics include aluminum cans, glass bottles, and plastic containers and bottles. Accepted paper and cardboard consist of newspapers, magazines, catalogs, cardboard, paper
bags, and mixed paper. Please DO NOT place recyclables in plastic bags, please place recyclables in your recycling bin. Here is a list of some non-recyclables items: plastic bags, buckets, toys, food take-out containers, styrofoam, pizza boxes, pots, pans, hangers, plastic film, and hoses.
