The Charity of The Month for May is: Guardians of Rescue Guardians of Rescue is a 501(c)(3) non-profit organization. Their mission is to facilitate and foster programs and activities that further the unique benefits of interaction between people and animals. They are truly an animal rights and welfare organization whose members work to protect the wellbeing of all animals and their owners, and come to the aid of those in distress. The Guardians are keenly aware that there is no shortage of animal neglect and their goal is to help in as many ways as possible to make sure animals are always taken care of. We are all aware of the toll that this pandemic is having on people, yet the impacts are being felt beyond humans. Animals are also being impacted in numerous ways by this situation. Guardians of Rescue has been dealing with the Covid Crisis in many different ways, such as helping people feed their pets and taking on the responsibility to care for homeless animals. They have even stepped out of their realm of helping animals to assist seniors during these trying times. Recently they received a phone call from the Public Safety at Eisenhower Park, who mentioned that a cat had been stuck in a tree for at least five days and no one was able to get it down. Soon after, the Guardians arrived and climbed over 75 feet to successfully bring the cat down to safety. They not only rescued the cat, but they are now continuing to take care of her the best they can. Guardians of Rescue is overwhelmed by the amount of assistance needed and their phones are ringing non-stop. So many people have had their employment impacted by the virus, therefore donations have been down. This makes it difficult for them to continue feeding the
animals, building doghouses, taking in new rescues and trying to cover all their expenses. “We have been providing our rescue services for over 10 years, but now we are struggling to keep our organization going,” explains Robert Misseri, president of Guardians of Rescue. “We are in jeopardy because of the perfect storm that this pandemic has created for organizations such as ours. Many people are living paycheck to paycheck so pets are in trouble.” “The pandemic has created a host of problem for the animals,” says Misseri. “I hope that we can make it through this difficult time, so that we can continue to help the animals in need.” To help support Guardians of Rescue, please make a donation online at www. guardiansofrescue.org/donate. Woodloch Pines Launches A Series Of Initiatives To Provide Support During Its Temporarily Closure The Covid-19 crisis has hit the hospitality industry particularly hard, and Woodloch Pines, an all-inclusive family resort located in Pennsylvania’s Pocono Mountains, is no exception. The property closed its doors back in mid-March with hopes to reopen on May 22, but with much still unknown, Woodloch refused to simply stand by and wait. Having been in business for 62 years, the Poconos resort has emerged triumphant from its fair share of challenges, never shying away from difficult times and always working to turn negatives into positives. Family-owned and operated since 1958, Woodloch’s core mission is built upon treating guests and staff like “company in our homes.” Although the property remains shuttered, it has been working hard to maintain the Woodloch spirit for guests, staff and the entire community in an effort to spread light in a time of darkness. Initiatives include the following: The launch of Woodloch at Home, a treasure trove of activities and games that can be accessed remotely through both the resort’s website and social media channels. Activities include tried and true guest favorites such as scavenger hunts, “Olympics,” game show and athletic contests, deejay-led dance parties and even a “Concert on the
Couch” series, featuring a diverse array of talent acts performed by both guests and employees. All programming takes place digitally so that individual families can remain in the privacy of their own homes while staying connected with Woodloch’s energetic staffers as well as each other. On March 21, The Woodloch Family gave each of its 950 hourly team members an additional week’s worth of wages to compensate them during the first week of shutdown from March 16 – 22. The Woodloch Family hosted two separate food drives, one on March 26 and the other on April 10, where they distributed over 800 care packages to staff members. These included an assortment of items such as pasta, meat, milk, eggs, juice, canned goods, toilet paper, baked goods from the resort’s in-house bakery as well as salad greens and herb bundles from the organic farm at Woodloch’s destination spa. An additional 300 packages were donated to local Pike and Wayne County food shelters. Woodloch donated all of its available N95 respirator masks to the local community hospital, Wayne Memorial. Additionally, Woodloch’s bakery distributed care packages to hospital staff, local urgent care, and local EMS on Friday, April 17. Woodloch owns and
operates a stand-alone restaurant, The Boat House, in downtown Hawley, PA, and they have been providing a free weekly meal to Pennsylvania State Police from the nearby Blooming Grove station. As part of its new program, “Goodwill Fridays,” the family resort will host charitable acts in the community every Friday during the crisis and beyond. On May 1st, Woodloch supplied four of their local volunteer fire departments with of an assortment of homemade baked goods. “Our tagline, ‘Together is the best place to be,’ has never rang more true. We are a family here at Woodloch, and that sentiment extends not only to our staff but also to our community. When bad things happen, we want to do everything we can to offer a helping hand,” said Brad Kiesendahl, C.E.O. of Woodloch Pines. “We extend our immense thanks to all of the frontline workers out there who are working tirelessly to combat this crisis. “Country cooking” has different connotations depending on where one might be in the world. Many people attest that country cooking involves comfort cuisine foods that originated in the southeastern United States. Quite often such cuisine includes biscuits, gravy, fried chicken, boiled greens, and other delicious items made from simple ingredients. Corn muffins can be another staple of country cooking. Corn meal is a versatile ingredient that is the star of this simple

The Fifth Annual Run for Tomorrow’s Hope, originally scheduled for Saturday, April 4th as a road race on the streets of Garden City has been a virtual success. The event, staged by St. Joseph School in Garden City for the benefit of the Tomorrow’s Hope Foundation, a Long Island charity that provides scholarships for students who attend Long Island Catholic elementary schools, had to adapt very quickly to become a virtual race where competitors chose their own favorite place to run, clocked the distance and time using one of a variety of apps, and took a photo of themselves before, during or after their run. In spite of the unique circumstances, the event had 462 participants in the 5K and 1 mile Fun Run, 312 of them competing in the 5K itself. The event’s Race Director, Dr. Michael Spinelli, a Board Member of the Tomorrow’s Hope Foundation said “I am pleased with the way the community that supports our Catholic schools responded under rather challenging circumstances.” The race, which is run each year in the early spring, is widely supported by the families and friends of Catholic elementary and high schools. This year was no exception, with entries from 7 of the area’s Catholic high schools and with participation from 14 of the island’s Catholic elementary schools. Participating

ground black pepper, plus more as needed to 6 steaks (such as ribeye, New York strip or porterhouse)
Melt 1 tablespoon of the butter in a medium skillet over medium-low heat. Add the shallot and cook until golden and slightly crispy, 7 to 8 minutes. Use a slotted spoon to transfer the shallot to a clean plate. In the same skillet, melt 2 tablespoons of butter, then add the mushrooms, garlic, thyme, salt, and pepper. Stir and cook until the mushrooms are softened, about 5 minutes. Transfer to the plate with the shallot and let cool. In a small bowl, use a rubber spatula to blend the remaining 8 tablespoons of butter with the cooled mushroom mixture until combined. Place the butter in the center of a piece of parchment paper. Bring the edges together and press with your fingers to form the butter into a log. Roll and twist the ends before popping the butter into the refrigerator for at least 20 to 30 minutes. Set the steaks on the counter for 30 minutes to
bring them up to room temperature. Meanwhile, preheat a grill or grill pan to medium-high or about 400 F. Season both sides of the steaks with 2 pinches of salt and a pinch of pepper. Grill each steak for 6 to 8 minutes per side, depending on the thickness and the desired doneness. Tent with aluminum foil and let rest for 5 minutes. Slice the mushroom butter into coins and top each of the steaks with two coins before serving. Baked Beans Serves 10 2
15-ounce cans navy beans, drained and rinsed 4 slices applewood- or pecan wood-smoked bacon, cut into 1-inch pieces 1 cup diced yellow onion 11⁄2 cups ketchup 1⁄4 cup + 2 tablespoons unsulphured molasses 1⁄2 cup packed dark brown sugar 11⁄4 teaspoons ground mustard 1 teaspoon ground cloves 1 teaspoon kosher salt Preheat the oven to 350 F. Combine the bacon and onion in a medium Dutch oven. Slowly cook over medium heat until the onion is tender and the bacon is cooked, 8 to 10 minutes. Meanwhile, in a medium bowl, whisk together the ketchup, molasses, sugar, ground mustard, ground cloves, and 1 cup water to combine. Add the cooked beans and pour the mixture into the pot with the bacon and onion. Stir, cover and bake for 1 hour, stirring every 20 minutes. Add the salt and stir. Uncover and let sit for 15 to 20 minutes before serving.

There were a lot of steps to this process but it was well worth it.” Mr. Gavalas feels well suited for the middle school environment, a challenging time for most students and a place he remembers as being “scary” in his youth. “There’s a certain safety that exists in elementary school, but when you leave and enter the middle school you leave that safety,” he said. “Your competencies get questioned and the big message is that you need to use this time to get ready for high school. Consequently, the middle school experience gets lost. I see this time as an opportunity to build resiliency and make students focus on the here and now. I want them to find joy in this growth period of their education.” “I was as much interested in learning about Michael as I was watching our constituents respond to him during the interview process,” said Superintendent Paul Defendini. “He had a way of deeply connecting with the groups even though it was done on a virtual platform. He will make a great addition and I am very excited to welcome him to the Daler family.”
Mr. Gavalas will begin his tenure July 1, 2020, but hopes to get some face time with faculty and staff before that, either virtually, or in meetings that practice social distancing if the school is permitted to do so. “I want to meet everyone, learn what’s on everyone’s minds, and hear about their dreams for the school,” he said. “I was impressed by all the final candidates,” said Board of Education President Michael Goldberg. “They all brought something different to the table but there was an immediate connection that we felt to Michael. The board agreed that he’ll do a great job as our next middle school principal.” “During the time I was under consideration for the position, I took a ride with my family to explore Farmingdale,” he said. “We went into the village and drove around and I got that sense of community I had heard about.” But words spoken during an early conversation with Superintendent Defendini and all the assistant superintendents had already sold him on joining the district. “They told me that their fundamental mission was to do what is the absolute best for the students, the teachers, and the community. Right then, I knew this was where I wanted to be.”

COVID-19 Anxiety Causes Restless Nights
Increased anxiety related to concerns about coronavirus (COVID-19) is causing periods of interrupted sleep or insomnia for some. Catholic Health Services (CHS) experts offer tips on how to cope, saying getting the proper amount of sleep each night is vital to making sure your immune system is at peak performance. They add, a good night’s sleep sharpens mental acuity and leads to reduced stress levels. “During periods of high stress, it’s crucial to get sufficient sleep, because it can increase our chances of minimizing the impact of COVID-19 or other ailments,” explains St. Charles Hospital’s Sleep Disorders Center Coordinator Brendan Duffy, RPSGT, CCSH. “Sufficient sleep can help us reduce the time frame of coronavirus and accelerate recovery.” A good night’s sleep is also vital for those living with illnesses such as diabetes, obesity, high blood pressure, heart disease and depression.
Experts say healthy sleep promotes better management of these underlying conditions. For most adults, generally, seven to eight hours of sleep is required to maintain optimal health. Adolescents need between 8 and 10 hours of sleep nightly and younger children required between nine and 11 hours of sleep each day. For those having difficulty falling asleep, or achieving a proper night’s sleep, Duffy offers several tips. *Reduce alcohol use and smoking *Take a warm shower just prior to bedtime *Take part in a pre-sleep activity such as reading or
meditation *Stay active and exercise at home to “earn” better sleep *Maintain a normal routine and resist the temptation to drastically extend your time in bed. Farmingdale School District is proud to announce the selection of Michael Gavalas for the position of principal of Weldon E. Howitt Middle School. The Farmingdale Board of Education is expected to officially appoint Mr. Gavalas at the next board meeting, scheduled for May 6, 2020. The current principal, Mr. Luis Pena, will be retiring at the end of June. Mr. Gavalas is a veteran educator with over 20 years of experience, most recently as the Assistant Principal of Sanford H. Calhoun High School in Merrick, NY. He served as Assistant Principal at Hauppauge High School from 2012-2017. Prior to becoming an administrator, he taught social studies for twelve years at Hauppauge High School and two years at Grover Cleveland High School in Ridgewood, NY. Mr. Gavalas earned his Master of Science in Education and his Bachelor of Arts in Secondary Social Studies Education from Queens College, NY. He also holds an Advanced Certificate in School Building Leader from Queens College. He is married with two boys, Gianni and Pano, and resides in Astoria, Queens. “The hiring process for such a critical position during a pandemic was challenging,” said Assistant Superintendent Glen Zakian. “We began the process in early February, bringing in a group of candidates for screening interviews with the Superintendent’s Cabinet,” he explained. “The school closing forced us to continue the interview process online. There were four additional rounds of interviews to be completed, with numerous members of the faculty and staff participating in a committee format. The selection committee
