Shoppers’ guide to Presidents’ Day sales
O
n the third Monday in February, Americans stop to remember the contributions of the many great leaders who have served as President of the United States. Certain Presidents’ Day traditions have developed over the years, including an opportunity for shoppers to find great deals on a host of items. Originally established in 1885 to recognize President George Washington, the day we now know as Presidents’ Day was then known as Washington’s Birthday and was traditionally celebrated on February 22. The holiday became known as Presidents’ Day after it was moved to the third Monday in accordance with the Uniform Monday Holiday Act, which enabled the nation’s workers to enjoy more three-day weekends. In addition, the Uniform Monday Holiday Act served as a way to combine the celebration of Washington’s birthday and Abraham Lincoln’s birthday, which is February 12. In addition to serving as a chance to celebrate and reflect on the contributions of our nation’s past presidents, Presidents’ Day has emerged as a day to rest and shop. Stores across the country advertise special prices to tie into the day and capitalize on the three-day weekend. For many retailers, Presidents’ Day is the first major sales opportunity of the new year. The
following are some ways shoppers can capitalize on Presidents’ Day sales.
• Stock up on winter apparel. Now is the time to enjoy deep discounts on winter apparel. Purchase clothing, coats and boots that your family can wear next year. Parents can estimate sizes for growing children. Discounts on winter apparel as winter winds down may be as high as 70 percent, meaning savvy shoppers can save substantial amounts of money.
• Score big on big-ticket items. Appliances may go on sale at steep discounts on Presidents’ Day. Shoppers who need new appliances for their kitchens may find Presidents’ Day sales have what they need at the prices they want to pay. Save even more on big-ticket items by using cash-back or points balances on credits cards to lower out-of-pocket costs even further.

Chocolate treat for a Valentine sweet...
Restaurant reservations, red roses and sparkling jewelery all are par for the course on Valentine’s Day. However, nothing may epitomize the holiday more than a decadent chocolate treat. When heart-shaped chocolate boxes are not enough, resourceful gifters can turn to homemade desserts to really capture the spirit of Valentine’s Day. This recipe for “Hot Cocoa Cookies,” courtesy of King Arthur’s Flour, marries the decadent taste of chocolate with the notion of a warm and soothing hot cocoa that’s ideal for a chilly February day. Even though the premium cocoa mix is baked right into the recipe, don’t hesitate to enjoy a steaming mug of cocoa on the side as the perfect complement to this rich and tasty cookie. Hot Cocoa Cookies - Yield: 51⁄2 dozen cookies
COOKIES:
8 tablespoons (1⁄2 cup) unsalted butter, at cool room temperature, 65 F to 68 F 1⁄2 cup King Arthur hot chocolate mix 1⁄3 cup light brown sugar 1 teaspoon baking powder 1⁄2 teaspoon salt 1 teaspoon espresso powder, optional, for enhanced flavor 1 large egg 1 teaspoon vanilla extract 11⁄4 cups King Arthur Unbleached All-Purpose Flour 11⁄2 cups mini chocolate chips 1⁄2 cup cocoa nibs, optional
TOPPING:
About 51⁄2 dozen Belcolade bittersweet disks, or other high-quality chocolate wafer Marshmallow fluff, cocoa nibs, or chopped nuts, for garnish

DIRECTIONS
Preheat the oven to 375 F. Lightly grease two baking sheets, or line with parchment.
To make the cookies: Combine the butter, hot chocolate mix, brown sugar, baking powder, salt, and espresso powder in a mixing bowl. Beat until the mixture is smooth. Add the egg and vanilla, and beat until thoroughly combined.
Weigh out your flour, or measure it by gently spooning it into a cup, then sweeping off any excess. Add the flour to the cookie mixture, stirring to combine. Mix in the chips and cocoa nibs. Drop the dough by teaspoonfuls onto the prepared baking sheets — a teaspoon cookie scoop works well here. Space the cookies at least two inches apart. Bake the cookies for 8 to 9 minutes, until the surface is set, but the cookies aren't quite fully baked.
Take the cookies out of the oven and press a chocolate disk into the center of each cookie. Return the cookies to the oven for 1 to 2 minutes longer, until the chocolate begins to turn shiny and softens. Remove the cookies from the oven once again, and sprinkle the melted chocolate disk with your garnish of choice. Allow the cookies to cool right on the baking sheet until the chocolate disks are set. Store well-wrapped cookies at room temperature for a week or so; freeze for longer storage.
TIP:
King Arthur hot chocolate mix is a proprietary blend of sugar, ground chocolate, dry milk, and cocoa powder. If you'd like to use a store-bought hot chocolate mix, try to find one with a similar list of ingredients.

axes are an unavoidable fact of life. Unfortunately, they can be somewhat overwhelming, which can cause people to put the task off and miss the deadline. Use these tips for a stress-free tax season:
Get It Over With

mpaired visibility can be a safety hazard while driving. Everything from sun glare to hail can affect a driver’s ability to see the road and navigate it effectively. Before drivers get behind the wheel, they should make note of their local forecast and make a plan for what to do if rain, snow or other conditions make it challenging to drive. The International Association of Traffic and Safety Sciences indicates that, based on an examination of crash test data conducted by the National Oceanic and Atmospheric Administration, the “likelihood of a crash increases during periods of low visibility, despite the tendency for less traffic and for lower speeds to prevail during these times.” Drivers can take several steps to improve their visibility when driving in poor weather conditions.
• Inspect and change windshield wiper blades. Wipers are instrumental in clearing precipitation away from the windshield. If they’re not functioning properly, wipers cannot do their jobs. Drivers should replace their wipers at the first indication that they are no longer effective. In some conditions, wipers can freeze or stick. Drivers should then pull over and clean the wipers manually. • Clear obstructions. Always make sure the windshield is clear before driving. This can include removing ice and snow in the winter and cleaning off mud or bug splatter in the spring and summer. Use
the front and rear defrost if condensation fogs up windshields and windows.
• Slow down. Foul weather can reduce drivers’ ability to see far into the distance. Drivers should always drive slower in inclement weather in order to improve reaction time. • Top off fluids. Always keep the windshield washer reservoir full and keep extra fluid in the trunk. In addition, look for a fluid that does not freeze in very cold temperatures.
• Learn how to drive in fog. Each year, more than 38,700 vehicle crashes occur in fog, states the Federal Highway Administration. Travelers Insurance recommends slowing down, staying focused and using regular headlights and not high beams when driving in fog.
The sooner you get your taxes filed, the sooner you can stop worrying about them. Early filing also means an earlier refund -- if you’re due one -- or time to plan to prepare to pay any owed taxes. To ensure it all happens on time, actually block out time in your calendar to sit down and work on your taxes. Be sure not to underestimate how much time is needed. If your situation has gotten more complicated over the last year, figure that into the equation.

The last thing anybody wants to hear is that they are being audited. You can avoid this anxiety by having the right tools on hand. Start by keeping your records filed in an organized way – both digitally and on paper with a filing cabinet that locks. As you do your taxes, it is a good idea to take your time, and do a practice run. A printing calculator is a good way to keep records of

Enjoy corned beef and cabbage this St. Patrick’s Day
C
orned beef and cabbage might not be a part of many people’s diet regimens throughout the year, but come March 17, it’s not uncommon to find people from all walks of life indulging in this beloved meal.
March 17 marks the celebration of St. Patrick, the patron saint of Ireland. Over the years, the day has also become a celebration of the Emerald Isle. Such celebrations tend to feature corned beef and cabbage, even though the dish may have little to do with Ireland (and even less to do with St. Patrick). The precise origins of the link between corned beef and St. Patrick’s Day remain a topic of debate, but some historians say the corned beef enjoyed today can be traced to New York City’s Irish immigrant population in the 19th and 20th centuries, who popularized a salted meat made from brisket that was then sold by Jewish butchers.
Regardless of the authenticity of its link to Ireland, corned beef is delicious and many modern Paddy’s Day celebrants wouldn’t think of going without it on March 17. Those who want to cook up their own can try this recipe for “Corned Beef and Cabbage” from Arthur Schwartz’s “New York City Food” (Stewart, Tabori & Chang).
CORNED BEEF AND CABBAGE Serves 6 to 8
Cook a whole brisket with both sections together with all its fat. (You can trim off the fat after the meat is cooked.) Whole brisket and second-cut corned beef brisket are hard to find, but your supermarket should have first-cut corned beef vacuum-packed in plastic. Choose the fattiest piece in the case and treat it gently. You can cook the cabbage and potatoes in the same water as the corned beef. Because the other vegetables need to be cooked in water that simmers more than the meat, scoop out water from the corned beef pot and cook the vegetables in a separate pot or pots. 1

DIRECTIONS
Place the corned beef in a pot that holds at least 5 quarts of water. Cover completely with cold water. Place over high heat and bring to a simmer. As soon as bubbles start to break on the surface of the water, adjust the heat so the water simmers very, very gently. With a slotted spoon, skim off the residue that accumulates on the surface. When the residue stops coming to the surface, add the pickling spices.
Continue to cook, with bubbles just gently breaking on the surface, for 3 to 4 hours, until fork tender. The meat can be safely held in its water for about 2 hours; reheat gently. Cook the vegetables until fork tender in separate pots of boiling fresh water or, especially for the cabbage, use some of the water in which the corned beef was cooked. Slice the corned beef and serve with mustard and/or horseradish on a platter, surrounded with some of the vegetables or with vegetables in a separate bowl.
