Get fired up about campfire cooking
C
amping season revs up when the temperature warms. In a recent survey by Kampgrounds of America, Inc., the main reasons people say they go camping are to reconnect with nature, spend time with family and friends and reduce stress and relax. The roughly 40 million people who go camping in the United States each year also may have food on their minds. Campfire cooking — which involves cooking over an open fire and eating outdoors — makes camping that much more enjoyable for many people.
Campfire cooking is about simplicity of ingredients and ease of cooking. Chances are campers do not want to lug too many cooking instruments to the campsite, so ingredients that are portable and can cook quickly over an open fire are attractive. Cast iron skillets, grills and Dutch ovens often are the gear of choice. Here are some delicious campfire meals to try on your next camping trip.
Campfire Casserole Mix your favorite ground meat (beef, chicken or pork) with kidney beans and cubed bacon (leftover from breakfast works well). Add barbecue sauce or diced tomatoes, depending on your preference. Allow to simmer in a Dutch oven on low for 45 minutes to an hour. Season to

taste. During the last 10 minutes of cooking, place refrigerated biscuits over the top of the casserole, cover and cook until the biscuits are done.
Seafood No-Boil Cut foil sheets about 12 inches long. Add 5 to 6 shrimp, one quarter of an ear of corn, a few slices of smoked andouille sausage, a lemon slice, and seasonings to taste. Fold the foil packets carefully to seal in the ingredients. Place the packets on a grill over the campfire and allow to cook for around 10 to 15 minutes. Skillet Pizza Place a little cornmeal and oil on the bottom of a cast iron skillet. Spread refrigerated pizza dough out on the skillet. Cover with pizza sauce, cheese and favorite toppings and cook over the fire until the cheese boils and the crust browns.
Campsite Cobbler Line a Dutch oven with aluminum foil. Mix together a yellow cake mix, 11⁄4 cups water and 1⁄2 cup canola oil and pour over two cans of a favorite pie filling flavor in the pot. Prepare the campfire for low heat. Put the Dutch oven in the ashes and cover with remaining ash or charcoal briquettes. Cook until bubbly, around 30 to 40 minutes.

Enjoy a safe and happy Independence Day
I
ndependence Day is a celebration of the United States of America. The holiday is marked by fanfare and large parties, complete with barbecues, fireworks and parades. As fun as July 4th festivities typically are, injuries, particularly those involving fireworks, are a concern that celebrants should not take lightly. An estimated 11,000 people visited the emergency room for fireworks-related injuries in 2016, according to the U.S. Consumer Product Safety Commission. However, fireworks aren’t the only danger this time of year. In order to remain safe, individuals can heed these tips. • Do not drink and drive. Alcohol consumption may accompany Independence Day festivities. For those planning on using a car to get to and from parties, it is essential to designate a driver who will not imbibe. Otherwise, utilize any number of ridesharing services or available taxis.
• Swim smartly. Always swim with a buddy, and consider hiring a lifeguard if you’ll be hosting a pool party and cannot keep a watchful eye on guests in the pool. Adults also should not swim intoxicated, as it can impede the ability to stay afloat and may lead to risky behaviors. • Leave fireworks to the professionals. Watch a public fireworks display instead of lighting fireworks on the street or in the backyard.
• Exercise caution with sparklers. Kids running around with sparklers in hand could be a recipe for disaster, as sparklers burn extremely hot. Make sure children do not wave them around or others can get burned. Keep a bucket of water handy to properly extinguish the sparklers. • Review safe boating practices. If July 4th festivities find you out on the water, be sure that life jackets are worn and set boating
and water safety rules for the family.
• Check in with a vet. The Fourth of July can be traumatic for pets not accustomed to fireworks and other loud noises or crowds. Behavior therapy, medication and ensuring that pets do not run away from home and get lost may be necessary. • Watch food temperatures. Do not leave food out in the hot sun for too long; otherwise, harmful
bacteria can grow and potentially cause foodborne illnesses. The USDA Food Safety and Inspection Service says to never leave food out of refrigeration for more than two hours. If the temperature is above 90 F, food should not be left out for more than one hour.

Fishing Recreational fishing is wildly popular. According to the Recreational Boating & Fishing Foundation, in 2016 more than 47 million Americans participated in fishing at least once during the calendar year. In its Survey of Recreational Fishing in Canada, the organization Fisheries and Oceans Canada found that more than 3.2 million adult anglers actively participated in a variety of recreational fishing activities in Canada in 2015. Beware of jellyfish this summer
S
ummer often includes a few jaunts to the beach to cool off and enjoy some swimming and sunbathing. For those who have the benefit of living close to an ocean, few things beat the allure and majesty of a pristine coastline. A day at the beach can be spent surfing the waves, collecting seashells or relaxing with toes in the sand. The world’s oceans are diverse ecosystems that are home to many creatures large and small. When beach-goers enter the water, they should understand that they may be sharing the sea with crabs, fish and even mammals. Some sea creatures are relatively harmless, while others can be more dangerous in certain situations. Understanding the differences can keep both marine life and people safe.
Jellyfish are marine creatures that call the saltwater home in various areas and during different months of the year. There are more than 200 species of jellyfish, which come in a diverse range of forms. Jellyfish can be found in every ocean in the world, and some can thrive in freshwater lakes and ponds as well.
The jellyfish’s main defense mechanisms are its stings and its transparent body, which make it hard to see in the water. Jellyfish have the potential to sting, and some dangerous varieties can even cause death. Beach-goers’ best defense is to learn about jellyfish, including how to recognize those that pose a threat to human health. The sea wasp of coastal Australia and Indo-Pacific regions; the chiropsalmus quadrigatus of the same region; the tiny irukandji, which has spread to many different waters; and the alatina alata, found in both
Pacific and Atlantic waters, are some of the world’s most dangerous jellyfish, says Smithsonian. Most of these jellies are box jellyfish, which get their name from the cube-shaped swimming bell. Stings can be extremely painful, and some are fatal to humans, although there are some antivenoms available in Australia, where many encounters with this type of jellyfish occur.

Most jellyfish stings occur in the summer and fall when people are most active at the beach. Summertime seaside candy staple
S
ummertime fun frequently involves a trip to the seaside. While days are spent with toes in the sand, once the sun sets the entertainment moves away from the sand to the boardwalk attractions, food and fanfare.
Today, Atlantic City, New Jersey, is known for its casinos. But the city has a storied history as a seaside retreat. The Atlantic City Boardwalk opened on June 26, 1870, becoming the first boardwalk in the United States. National Geographic explains the first wooden planks were laid to curb the amount of sand beachcombers tracked into the train and hotel lobbies. Eventually, the boardwalk itself, with arcade halls and amusement attractions, would become its own destination. Soon other boardwalks opened across the country, including in Coney Island, New York, and Myrtle Beach, South Carolina. Boardwalks became hubs of summertime fun, with food and confections.
A well-known boardwalk treat, salt water taffy is a summertime staple. Salt water taffy is a soft taffy
that was originally produced and marketed in Atlantic City. According to popular lore, David Bradley, whose candy store was flooded during a major storm in 1883, found all of his stock soaked with the salty Atlantic brine — including his taffy. When a young customer later came in asking if he had taffy, he jokingly offered her “salt water taffy.” The customer sampled the piece and showed her friends. The name “salt water taffy” caught on.
Taffy was first prepared in copper kettles heated over open coals. The sugary mixture was cooled on marble slabs and then pulled from a large hook. The pulling incorporated air into the mix to help keep the taffy soft. The taffy was hand-rolled to the desired thickness, cut and then
wrapped.
Salt water taffy is primarily a treat enjoyed on the east coast of the United States, but it is sold throughout the United States and Canada. No trip to the boardwalk is complete without snagging a piece of sweet salt water taffy.
A man named Joseph Franlinger helped make salt water taffy a household name. After observing boardwalk visitors purchasing the candy during seaside jaunts, he found a way to box the candy and sell it so it wouldn’t be reserved only for summer holidays. According to candy manufacturer Wokenfuss, by the 1920s, salt water taffy was at the height of its popularity, with more than 450 manufacturers making and/or selling the candy at the time. Each had his own method of preserving the candy, making it less sticky and more portable.

The year 1893 was an important one in hot dog history. According to the National Hot Dog and Sausage Council, in 1893, the city of Chicago hosted the Chicago Columbian Exposition, a world’s fair that celebrated the 400th anniversary of famed explorer Christopher Columbus’s arrival in the New World in 1492. Visitors to the exposition consumed large quantities of sausages sold by vendors. Many immediately took a liking to this unique food because it was both easy to eat and inexpensive. The NHDSC notes that Germans are likely responsible for introducing sausages served on buns. In addition to their popularity at the Columbian Exposition, hot dogs got another boost in 1893 when they first started appearing at ballparks. Many modern baseball fans now cannot imagine attending a ballgame without indulging in a hot dog or two, and some historians believe they have German immigrant Chris von der Ahe to thank for that. Chris von der Ahe owned the St. Louis Browns, and in 1893 his team became the first to sell hot dogs at baseball games, though some historians dispute this.

Heat-related diseases like dehydration can put lives at risk. According to Johns Hopkins Medicine, children and people over the age of 60 are particularly susceptible to dehydration. Understanding dehydration and how to prevent it is essential for anyone who plans to spend time outside during the summer.
What is dehydration? The U.S. National Library of Medicine notes that a dehydrated body does not have enough fluid and electrolytes to work properly. On an average day, the human body needs about three quarts of water. But the USNLM notes that anyone planning to spend time outside in the hot sun needs significantly more water than that to avoid dehydration.
What are the signs of dehydration? Johns Hopkins Medicine notes that people experience dehydration differently. However, there are some common symptoms that indicate someone is dehydrated. These symptoms include: • thirst,

How to prevent dehydration Drinking plenty of fluids when working or playing in the sun is one way to prevent dehydration. Being sure to take in more fluid than you are losing is another way to prevent dehydration. Anyone, and especially people who sweat a lot, should keep a close eye on fluid loss when spending time outdoors in the summer. Sports drinks that help people maintain their electrolyte balance, such as Gatorade, can help prevent dehydration as well. Pedialyte is often recommended for sick infants or children who have experienced vomiting, as it can help restore electrolyte balance that was adversely affected when kids became sick. The solution can be equally effective at restoring electrolyte balance that was thrown off during heat exposure. Dehydration poses a significant health risk at any time of year, but people who spend time out in the summer heat may be especially vulnerable. Limiting time spent outdoors on hot days and keeping a close eye on your fluid intake and fluid levels can help prevent dehydration.

Calming activities that can tone down the body’s stress responses are great ways to alleviate stress. Summertime is an ideal time of the year to embrace relaxing activities because the hustle and bustle of everyday life tends to slow down during the summer, when kids are out of school and vacations are on the docket. These hobbies and other interests can help tame stress by promoting calm. • Listen to and/or play music. Music can be energizing or calming, depending on which music you choose. Researchers at Stanford University found that rhythmic music may have therapeutic effects for treating a range of neurological conditions, as it stimulates the brain and can perhaps change how it functions. Familiar melodies and gentle music can reduce the level of the stress hormone cortisol. • Gardening: Gardening lets a person tend to living things while getting some fresh air. Both the sunlight and the activity itself can be soothing and have a positive effect on mood. A study from the
Journal of Health Psychology found that gardening, like listening to music, lowers cortisol levels.

• Grab a good book. Taking the time to unwind and read can help ease tension in the muscles, lower one’s heart rate and induce calm. Research from the consultancy Mindlab International at the University of Sussex found reading reduced stress levels by 68 percent.

A 2014 study published in the British Journal of Occupational Therapy found that 81.5 percent of respondents with depression reported feeling happy after knitting. • Take a dance class. A form of art and music, dancing can promote well-being through exercise and expansion of creative ability. It also can be good for the mind. A study from Swedish researchers that was published in the Archives of Pediatrics & Adolescent Medicine found that a dancing intervention program, twice weekly for eight months, helped teenage girls struggling with stress, anxiety, depression, and other problems.

I love going to Bayard Cutting Arboretum in the summer. It’s a 691-acre state park located in the hamlet of Great River on Long Island. They have wonderful MANOR HOUSE TOURS with stunning old furnishings and all kinds of paths to walk along the Great River and through wooded and floral paths. The Hidden Oak Cafe is located inside the Manor House and offers delicious fresh food, where you can eat in the enclosed porch or outside on lawn on their Adirondack chairs overlooking the water. Throughout the summer they have a lot of goings on there. One of my favorite places to relax and love life.

Myths about grilling & barbecuing, debunked
G
rillmasters and pitmasters work hard to produce mouth-watering fare. Many may develop secret recipes, rubs, sauces, and cooking techniques all in the name of flavorful food.
Certain myths about grilling and barbecuing have prevailed through the years. Such misconceptions may discourage newcomers from picking up their tongs and spatulas. Setting the record straight about common grilling myths can be just what people need to embrace cooking foods over an open flame. Myth #1: Hosting a barbecue is the same as cooking barbecue. Fact: Barbecue is the process of cooking foods slowly with low heat, typically in a smoker. Having a barbecue is an informal backyard party where foods cooked over a grill are served.
Myth #2: You can tell the temperature of the grill by placing your hand over the grates. Fact: Everyone reacts differently to heat, so the best way to gauge temperature is by using a thermometer.
Myth #3: Grilled chicken is done when the juices run clear. Fact: Even well-done chicken can form juices that are pink-hued. It’s from a protein called myoglobin, according to the book “Meathead: The Science of Great Barbecue and Grilling.” Use a cooking thermometer to learn when poultry is safe to eat, typically at 160 to 165 F.
Myth #4: Marinating is best for grilling and tenderizing. Fact: It seems that marinades really do not penetrate much beyond the surface of the meat and can keep the outer surface of the food wet, preventing searing and browning. Rubs and salts can be more effective at adding flavor. Serve a dipping sauce for additional flavor if people desire.
Myth #5: Light up the whole grill for best cooking. Fact: Temperature control is a key component of effective grilling and barbecuing. Having two temperature zones — direct, radiant heat for searing, and an indirect zone for grilling meat evenly and preventing burning — can make food more tasty. Myth #6: More smoke equals better food. Fact: When cooking, faint wisps of blue smoke are better because blue smoke is made of tiny invisible particles and gases created by small, hot, fast-burning fires. White smoke generally comes from smoldering wood that is starved for oxygen, states the cooking site Food52. All of that white smoke can affect the flavor of the food.
Myth #7: Oil the grates to prevent food from sticking. Fact: This may or may not work, depending on the temperature of the grates when the oil is applied. A better method is to oil the food, which will be cold so the oil will keep from burning and cracking..

Using a mortar and pestle or a food processor, combine all the ingredients and grind to a paste. Store leftover paste in the refrigerator in a tightly closed jar for about 1 month. Makes about 1 cup; enough for 4 to 6 pounds of meat

Skewered chicken goes great on the grill
Spiedini of Chicken and Zucchini with Almond Salsa Verde Makes 6 servings
Grilling chicken is an easy way to transform this versatile food into something even more delicious. Various cultures serve chicken in kebab form after grilling it over an open flame, and taste is a big reason this particular method of cooking chicken is so beloved.
While you might not expect to see kebabs on the menu at your favorite Italian restaurant, “spiedini” is Italian for “little skewers,” proving that Italian chefs recognize how delicious chicken can be when served in kebab form. In this recipe for “Spiedini of Chicken and Zucchini with Almond Salsa Verde” from “Cooking Light: Dinner’s Ready” (Oxmoor House) by The Cooking Light Editors, skewers are paired with a zesty salsa full of nuts, herbs and citrus, which makes for the perfect complement to the smoky grilled flavor.
Spiedini: 11⁄2 pounds skinless, boneless chicken breast, cut into 1-inch pieces 6 small zucchini, cut into 1-inch slices (about 11⁄4 pounds) Cooking spray 1⁄4 teaspoon kosher salt 1⁄8 teaspoon freshly ground black pepper Soak 12 (10-inch) wooden skewers in water for 30 minutes to prevent burning. Bring the grill to medium-high heat
To prepare the spiedini, thread the chicken and zucchini alternately on each of the 12 skewers. Coat the spiedini with cooking spray; sprinkle evenly with 1⁄4 teaspoon salt and 1⁄8 teaspoon pepper. Place on a grill rack; grill 6 minutes or until done, turning once. Serve with salsa.

Place chickpeas in a medium bowl. Coarsely mash with a potato masher, leaving some beans whole.
Add celery, pickle and onion; stir to mix. Add mayonnaise and lemon juice; mix well. Taste and add 1⁄4 teaspoon salt or more, if desired. Sprinkle with pepper, if desired; mix well. Serve on bread with lettuce and tomato, if desired.
