For those who live in areas where the weather changes dramatically throughout the year, spring can be a respite from the snow and also a chance to enjoy the outdoors prior to the arrival of the muggy, hot days of summer. Families can create a bucket list of entertaining and perhaps educational spring activities. Those who want to try something new can explore these ideas.

This year’s show will be a ticketed event, with reduced capacity and social distancing measures in place to ensure a safe return of the patriotic Long Island beachfront tradition. “As we continue to see progress in our fight against COVID and cautiously reopen our state, we can look forward to enjoying more and more outdoor adventures this summer including the annual Bethpage Air Show at Jones Beach State Park,” Governor Cuomo said. “With safety measures in place, New Yorkers and visitors can get back to enjoying all that Jones Beach and Long Island State Parks have to offer, and this annual festival is a great way to get outdoors and support the regional Long Island economy.” The Bethpage Air Show at Jones Beach, one of the most popular events on Long Island, was canceled last year due to the Covid-19 pandemic. Its return this year brings back a Memorial Day weekend tradition that celebrates the beginning of summer at Long Island’s beaches, and honors military families and those who serve our country. This year’s show features the United States Air Force Thunderbirds, the United States Air Force A-10 Thunderbolt (Warthog), United States Army Golden Knights U.S. Army parachute team, and United States Coast Guard Search and Rescue team, as well as many other world-class civilian performers. The Bethpage Air Show will take place Friday, May 28, (Practice show); Saturday, May 29, and Sunday, May 30, 2021 from 10 a.m. - 3 p.m. each day. Visitors must purchase a ticket in advance to park at Jones Beach during the show. Parking capacity will be reduced by 50 percent, and only those with a ticket will be allowed to enter. State Parks will have additional staff on hand to enforce all health and safety requirements, including face covering requirements and social distancing. State Park Police will be supplemented by assistance from New York State Police. Individuals with appointments at the Jones Beach Covid-19 testing or vaccine sites will not be impacted, and will be able to enter through dedicated traffic lanes. The New York State Office of Parks, Recreation and Historic Preservation oversees more than 250 parks, historic sites, recreational trails, golf courses, boat launches and more, which are visited by 78 million people annually. Recipes like “Pasta Primavera” from “Seasoned America” (William Morrow and Company, Inc.) by Chef Paul Prudhomme can be brought out in spring and enjoyed throughout the warmer seasons. In Italian, “primavera” means “spring,” making this classic, vegetable-infused pasta dish a favorite this time of year. The vegetable inclusions below can be switched out for your own favorite produce as well.

DIRECTIONS Combine the seasoning mix ingredients thoroughly in a small bowl. Heat olive oil in a 12-inch skillet over high heat. When oil is very hot, add the prosciutto, cauliflower, mushrooms, carrots, and zucchini. Add the butter and, as it melts, stir in the garlic and the seasoning mix. Stir in asparagus tips or snow peas and green onions. Stir well and cook just until the vegetables are crisp-tender, about 4 to 5 minutes. Stir in the cream and bring to a boil. Lower the heat to medium and cook until the sauce has thickened a bit, about 3 minutes. Cook the pasta according to package directions; drain. Add the cooked pasta to the skillet, toss well and remove from the heat. Serve immediately.

Consider Mediterranean Fare For Healthy Living
T
he Mediterranean Diet has long been touted as an informed and balanced way of eating. While not a diet, it is an approach to eating that includes foods indigenous to the Mediterranean region. It is marked by large portions of fresh fruits and vegetables, whole grains, legumes, olive oil, as well as fish and other seafood. Poultry, eggs and cheeses are enjoyed in moderation, and fattier meats and sweet are allowed but should be limited. The guidelines also include plenty of water and a moderate amount of wine. A transition to the Mediterranean diet doesn’t need to involve drastic changes. In fact, one can start slowly with a tasty side dish or appetizer. This recipe for “Dolmades” from “The Mediterranean Diet Cookbook” (Rockridge Press) by the editors of Rockridge University Press is a popular dish in Greece.
Dolmades Makes 20

tablespoon olive oil

shallots, chopped

cloves garlic, minced
3⁄4
cup short-grain rice
1⁄4
cup gold raisins
1⁄4
cup pine nuts, toasted
Juice of 1 lemon
Sea salt and freshly ground pepper, to taste
DIRECTIONS Heat the oil in a large skillet over medium heat. Add the shallots and garlic, and sauté for 5 minutes. Add the rice, golden raisins, pine nuts, and lemon juice. Season with sea salt and freshly ground pepper. Add 2⁄3 cup water, bring to a boil, and cover. Reduce heat and simmer for 20 minutes. Turn off heat and allow rice to cool. Add the green onions and herbs to the rice filling and mix well.

Rinse the grape leaves in water and stuff each leaf with about 1 tablespoon of the filling. Roll tightly and place each in a steamer, seam side down. Steam for about 10 minutes, until leaves are tender. Serve warm.
