Step Back In Time With Christmas Goose

T

he holiday season is a sentimental time of year. Nostalgia for past holiday seasons and excitement about what’s to come make this a particularly special time of year for millions of people across the globe. Some families may read Charles Dickens’ early Victorian novella A Christmas Carol together before watching one of the many film adaptations of the beloved story. Food can add a touch of the sentimental to Christmas celebrations. This year, holiday hosts can create some nostalgia around the Christmas dinner table by serving this recipe for “Roasted Christmas Goose” courtesy of the Food Network and Mark Slawson of The Wort Hotel in Jackson, Wyoming.

Roasted Christmas Goose Yields 6 to 8 servings 1 14- to 16-pound goose 1⁄4 cup sea salt 1 lemon, halved 1 apple, cut into chunks 1 potato, cut into chunks

Basting Syrup

1 orange, sliced

1⁄3 cup corn syrup

1 cup chopped celery

1⁄3 cup cane syrup

Basting Syrup (recipe follows)

1⁄3 cup melted butter

Stuffing (recipe follows)

1⁄4 cup light brown sugar

Cumberland Sauce (recipe follows)

Cumberland Sauce: 1 1⁄2 cups beef stock 3⁄4 cup port wine 3⁄4 cup red wine vinegar 3 shallots, peeled and chopped 1 tablespoon crushed black peppercorns 3 oranges, juiced

Stuffing

3 cups whole chestnuts, roasted and peeled 1 14-ounce bag stuffing mix 1 cup raisins 1⁄2 cup chopped celery 1⁄4 cup diced apple 1⁄4 cup diced onion 3⁄4 teaspoon salt 1⁄8 teaspoon pepper 3 cups chicken stock 3⁄4 cup melted butter 1⁄4 cup heavy cream www.longislandmediagroup.com

Directions:

1. Place goose in a large pot. Add water to cover and stir in the sea salt. Refrigerate overnight. 2. Preheat oven to 450 degrees F. 3. Remove goose from water and drain well. Remove all innards and trim excess fat from the tail. Rub inside cavity with lemon juice. Place apple, potato, orange and celery inside the body cavity. Truss the bird like a turkey. 4. Place the goose in the preheated 450 degree F oven. Reduce oven temperature to 350 degrees F. Cook 20 to 25 minutes per pound. Baste the goose every half hour with the Basting Syrup. 5. Carve goose and serve with Stuffing and Cumberland sauce. Basting Syrup: 6. Mix all ingredients together in a small bowl. Stuffing: 7. Preheat oven to 350 degrees F. 8. Coarsely chop the chestnuts and put in a large bowl. Add the stuffing mix, raisins, celery, apple, onion and salt and pepper. Toss to combine. Pour in the chicken stock, butter and cream and mix until evenly moistened. 9. Transfer to a baking dish and bake until the top is browned and crisp, about 1 hour. Cumberland Sauce: 10. In a saucepan, combine the stock, port, vinegar, shallots, peppercorns and orange juice. Bring to a boil, cook until reduced by 2⁄3, about 25 minutes. Strain and refrigerate. Serve cold over goose. There’s nothing like

Christmas In New York ROCKEFELLER CENTER, A D E S T I N AT I O N F O R A L L For many decades, the Rockefeller Center Christmas Tree has stood as a holiday beacon for all people. While the lights, decorations and stars have changed over time, visiting the Tree remains a quintessential New York experience. In December 1931, workers at Rockefeller Center pooled their money together to buy a Christmas Tree. The men decorated the 20-foot high Balsam Fir with handmade garlands made by their families. Two years later, Rockefeller Center decided to make the Christmas Tree an annual tradition, and held the very first Tree Lighting Ceremony. This year’s Rockefeller Center Christmas Tree hails from Vestal, NY. It’s an 80 foot tall, 43 foot wide Norway Spruce, which weighs 12 tons. The long awaited and very beloved annual tree lighting will be held at Rockefeller Center on Wednesday, November 29. The Tree will be lit daily from 5am-12am until January 13 at 10:00pm. On Christmas Day, the Tree will be lit for 24 hours and on New Year’s Eve it will shine bright from 5am to 9pm. Whether you head to the Big Apple year after year to gaze at the aweinspiring Tree or you have yet to see it in person, consider making the trip this year. While you’re there, you may want to lace up some skates and jump on the rink! etail sales during the 2022 holiday season inched ever closer to crossing the trillion dollar mark. Though total retail sales during the November-December holiday season fell short of National Retail Federation forecasts, the group still reported that sales totaled $936.3 billion in that period in 2022. Though a host of variables, including inflation, affect how much consumers spend during a given holiday season, it’s not outside the realm of possibility that 2023 could be the year shoppers cross the trillion dollar threshold. That would require an increase of a little less than $64 billion in spending compared to 2022. Such an increase is not unheard of, even in a single year, as NRF calculations based on data from the U.S. Census Bureau indicate holiday season spending between 2020 and 2021 increased by just under $106 billion.

Burn Candles Safely

For The Holidays And Beyond andles are not in short supply come the holiday season. During Chanukah, candles are an integral component of celebrating the miracle of oil that burned in the Temple for eight days. Celebrants of Kwanzaa utilize candles to represent the seven principles of the holiday. Christians light candles during Christmas services and in their homes to represent the light Jesus brought to the world. There is no denying the warmth and beauty candles can bring to a home when they are flickering delicately. But candles have open flames, so caution must reign supreme when they are in use. The U.S. Consumer Product Safety Commission says 85 percent of candle fires can be prevented by following some key safety precautions. The National Fire Protection Association says Christmas is the most dangerous day for candle fires. Here is how to burn candles safely. • Always trim wicks to 1⁄4-inch before burning candles. Long or crooked wicks can cause uneven burning, dripping, or flaring. • Keep candles at least 12 inches away from anything that can burn. • Use candle holders that are sturdy and will not tip over easily. • Use a long match or long lighter to light candles to prevent fingers and hands from getting too close to the flames. • Run used matches under water to cool them down and prevent fires from occurring after matches are disposed of in the trash. • Never leave a candle unattended. It should be in sight at all times. • Place and store candles beyond the reach of children and pets where they will be less likely to get knocked over. • Never touch or move a candle while it is burning or while the wax is liquefied. • Place candles on stable, heat-resistant surfaces. • Keep candles away from drafts, vents, and air currents. • Follow candle manufacturers’ recommendations on burn time and proper use. • When utilizing multiple candles, place them at least three inches apart from one another. This reduces the chances for the candles to melt one another or create drafts that will cause the candles to burn improperly. • Extinguish a candle if the flame becomes too high or flickers repeatedly. • Refrain from burning a candle longer than three hours at a time, and never burn a candle when there is less than one centimeter of wax at the base. • Use a candle snuffer to safely extinguish a candle and make sure the candle is completely out (wick ember is no longer glowing) before leaving the room. Plan make-ahead dishes Simplifying holiday cooking comes down to spending less time in the kitchen on the day of the festivities. Make-ahead dishes that can be reheated or set in chafing dishes for buffet meals are preferable. There are lots of dishes to choose from, including casseroles, stews, soups, and baked pasta dishes. Avoid fresh pasta offerings, like spaghetti and meatballs, for example. Leftover noodles will get mushy and will not reheat very well. Ham is a good choice Ham is a forgiving dish that is quite popular for holiday gatherings. Many hams come pre-cooked and pre-sliced, so producing a flavorful main course may be just a matter of dressing it up with seasonings or even using the glaze that often comes with such products. Cater a meal There’s certainly pride that comes with offering guests a table full of homecooked foods. But the expense, effort, and time that goes into creating a masterful menu can be taxing. If a lot of people are coming for the holidays, hosts can find out which area businesses offer holiday catering packages and consider them. This frees up more time for mingling with guests. Food establishments often have experience knowing just how much food to have per person, reducing waste and helping hosts avoid having a refrigerator full of leftovers they may or may not eat. Delegate some tasks It’s alright to ask guests to bring something to the holiday dinner. In fact, they may be eager to pitch in. If someone brings a salad, another an appetizer, and others some desserts, then it is just up to the host to provide the main course and maybe a side or two. This removes a lot of the pressure. Select familiar foods Hosts may be tempted to try all of the delicious recipes featured in magazines or online around the holidays. However, sticking with familiar dishes that you have made before reduces the chances of error. Recipes that can be whipped up by rote will make holiday cooking tasks easier and quicker.

The Perfect Christmas Christmas Tree

hristmas trees are among the most recognizable symbols of the holiday season, and the popularity of trees is undeniable. According to the National Christmas Tree Association, approximately 25 to 30 million real Christmas trees are sold in the United States each year. Christmas trees also are big business in Canada, where Statistics Canada notes cash receipts from Canadian Christmas tree producers totaled nearly $163.5 million in 2022. Annual spending on Christmas trees underscores how important they are to holiday decor. Christmas trees serve as the centerpiece in millions of holiday home decor schemes, so it's important to pick a tree that can shine in that role. This holiday season, celebrants can consider these tips as they look for the perfect Christmas tree. · Measure the area where the tree will be placed. A large tree can be awe-inspiring but also can stick out like a sore thumb if it takes up too much space. There should be enough room around the tree for families and their guests to sit around it. The home interior experts at Better Homes & Gardens recommend leaving a minimum of six inches between the top of the tree and the ceiling. If a tree topper will be added, make sure the top of the tree is at least 12 inches from the ceiling. Measure the area before leaving to buy a tree, so it can fit nicely into the room and the surrounding decor.

· Find the trunk (if you can). A trunk that's visible through the branches indicates the tree does not have dense branches, which will be necessary if homeowners want to dress the tree with ornaments. If it's hard to find the trunk because of all the thick branches and green needles, then the tree is likely pretty healthy. · Test the needles. The home improvement experts at Lowes note that needles should be flexible but still snap when bent sharply. Avoid trees with needles that are already losing their color and can easily be pulled off. A Christmas tree garners a lot of attention come the holiday season, which only underscores the significance of finding a tree worthy of being the centerpiece of holiday decor.

· Try the shake test. Anyone who has purchased a fresh-cut Christmas tree is undoubtedly familiar with the shake test, which remains an effective way to measure the dryness of the tree. A slight shake will produce some fallen needles. If the needles are brown and few and far between, then the tree likely is not overly dry. However, a lot of falling green needles indicate the tree is already drying out, which means it could shed quite a bit and lose its looks before Christmas Day. · Pick a tree with a symmetrical look. Trees are living things, so it's unlikely that buyers will find a perfectly symmetrical tree.
