Enjoy More Time Outdoors with Easy Tricks In centuries past, humans spent much of their time in nature, hunting, foraging and living life without the comforts of extensive shelters. Fastforward several centuries, and the tables have turned dramatically.

spent outdoors. And people may be paying a price for spending so much time indoors. There’s various reasons to believe that being outdoors can be good for a person’s health. The National Institutes of Health and Harvard Medical School say that, in addition to providing physical benefits, simply spending time in nature in any form can improve mental outlook, boost creativity, elevate mood due to natural light, improve concentration and reduce stress. A study from the St. Louis University School of Medicine also said that spending time outdoors can help a person sleep better. That’s because natural sunlight can set the body’s

The Environmental Protection Agency says the average person spends 93 percent of his life indoors, with 87 percent of the time inside of a building, and the remaining 6 percent in an automobile. These shocking results indicate that the equivalent of just one half of one day per week is

internal clock. Despite all of the benefits of getting outside, many people find it challenging to do so thanks to their busy schedules. The following are a few ways to increase time in the outdoors that do not require major commitments: Bike or walk to work. For those who live close to their offices, walking or cycling to work is a simple way to spend more time outdoors. People who take public transportation can get off the train or bus a few stops early to get some exercise and breathe some fresh air. Lunch outside. Take your lunch hour outdoors rather than in an indoor cafeteria or restaurant. Office workers are urged to go to a park or green space to give their brains a rest from urban stimuli. Lunch is the ideal time to do just that. Invest in a screen room at home. A screened-in porch, lanai or other space can bridge the indoors to outside and serve as a restful place to enjoy some fresh air while being protected from insects and inclement weather.

Set strict “no device” times. Schedule a time when devices are disconnected and the entire family enjoys some recreation outdoors. Let kids get back to the basics of bike riding, skating, playing pick-up sports games outside with friends, and all of the activities parents enjoyed as youths. Dine al fresco. Opt for outdoor seating at a favorite restaurant. This will provide an hour or more to take in the sights and breathe some fresh air while enjoying a meal. Meet friends at outdoor places. When engaging in recreational activities, plan them at outdoor venues, such as parks, beaches, town centers, boardwalks and other areas where everyone can have fun and still be outside. Fresh air, sunshine and time spent in nature are good for the mind and body. People concerned that they’re spending too much time indoors should seek ways to spend more time outside whenever possible.

Keep Summer Road Trips Safe

hen the outdoors beckons, road trips can be the perfect way to see the countryside, escape the routine of daily life and enjoy short vacations.

When taking to the open road, it is important to focus on safety. The National Highway Traffic Safety Administration says that planning and prevention can spare roadtrippers from the consequences of breakdowns, traffic accidents or other road emergencies.

Plan your route. Map out the route before heading out. Be aware of potential road closures, obstacles or construction. Thanks to realtime GPS updates through mobile phones and other devices, some drivers like to rely on tech to get them through. But it’s important to realize service may be spotty in rural areas. Mapping a trip out in advance can save drivers from getting lost during mobile service interruptions.

Stock emergency preparedness items. Prior to a trip, drivers should make sure their vehicles are equipped with necessary safety items. Nearly half of Americans do not check that proper emergency items are stored in their vehicles prior to getting on the road. Before embarking on a road trip, make sure vehicles have a first aid kit, flashlight, water bottles, phone chargers, tirerepair tools, flares, jumper cables, towels and even an old backpack for storage.

Refresh defensive driving skills. A safe-driving course can remind drivers of the rules of the road. In some cases, courses also may qualify drivers for discounts on their

Take an up-to-date photo. Snap a digital head-to-toe picture the day of the trip. This can make it easier for authorities to identify lost children. In a stressful situation, parents may forget what their children were wearing when they went missing. A photo taken the day of the event can help authorities. Dress children in bright colors. This device tethers a child to his or her parent or guardian, preventing kids from wandering off. Parents never expect to lose their children, but losing kids in crowded public places is possible. Being prepared and acting calmly can help parents quickly find their lost children.

Establish an emergency plan. Families should come up with a plan for reuniting if they get separated. This may include children going up to an authority figure for help or another mother with children. Families also can choose a

Cut Blooms that Will Last the Longest

lowers may look beautiful in gardens and even when snipped and brought inside to brighten up a mantel or dining table. Unfortunately, cut flowers have a finite shelf life. While cut blooms can’t live forever, certain varieties will outlast others. Choosing flowers wisely for wedding centerpieces or keepsakes can help couples enjoy selected flowers longer. Peonies: Peonies can last for about a week or two when brought indoors. HGTV says to snip the stems when the buds are tight, wrap them in newspaper and store them in the refrigerator until you’re ready to arrange. Zinnias: These bright blooms can last for three to four weeks and are best harvested in summer. Related to the sunflower, zinnias are available in a wide range of colors. Mums can be used to fill out floral displays because they tend to be inexpensive but durable flowers.

Coneflower: The purple coneflower is popular, but coneflowers are available in many colors aside from purple. Coneflowers attract butterflies and are beautiful in cut displays.

veteran florist Nic Faitos, senior partner at Starbright Floral Design in New York, who has provided his floral expertise for Reader’s Digest, says the best approach is to keep vase water clean. In addition, ProFlowers suggests keeping cut blooms in a cool room away from direct sunlight and heat.

Carnations: Another budgetfriendly flower, carnations are popular from early spring until late summer. Available in many hues, they can be used in conjunction with other blooms to create wellrounded floral displays that may last between two and three weeks. Lilies: Lilies are traditional flowers that are beautiful to behold. Lilies are available in various sizes and colors and can be bought fresh year-round. Lilies often last longer than a week after being cut. Look for lilies with tight buds, as such flowers tend to last the longest. Don’t try to break the mold. Some hosts may be tempted to think outside the box in regard to the foods and beverages they’ll serve at their Fourth of July parties. Prepare to entertain. Unlike holiday season gatherings that typically begin in the evening, Fourth of July parties tend to begin in the afternoon and extend into the night. Tips to Making Delicious Ice Cream at Home

ce cream is a favorite dessert across the globe. The average American consumes more than 23 pounds of ice cream per year, says the International Dairy Foods Association.

Avoid ice crystallization. Ice crystals in the ice cream can ruin texture by making ice cream crunchy. Freezing ice cream quickly at very cold temperatures is essential. That means freezing the bowl and keeping the ingredient mix cold. Spinning the ice cream and transfering it quickly to the freezer helps keep ice crystals small.

Buy quality ingredients. Choose fresh, high-quality ingredients. Real vanilla beans or extract can produce better flavor than imitations. Select in-season berries and other fruits and, if possible, use organic milk. All of these ingredients will blend together for fresh flavor.

Try Something New this Grilling Season

G

rilling is many people’s preferred method of cooking, perhaps because it combines the great outdoors with delicious food. When grilling, many people are comfortable sticking with traditional backyard barbecue fare, such as hot dogs and hamburgers. But those who want to expand their grilling horizons can try the following simple recipe for Grilled Chicken and Onion Skewers: Grilled Chicken & Onion Skewers Makes 10 to 12 skewers Basting Sauce (optional) 1/2 cup soy sauce 1/4 cup mirin 2 tablespoons sugar Ingredients: 1/2 pound boneless, skinless chicken thighs, excess fat removed and cut into bite-size pieces 1 yellow onion, cut into 2-inch wedges, and/or baby leeks, white part only, cut into 1-inch lengths 1 tablespoon canola or other neutral oil Salt (optional)

Directions: Place 10 to 12 bamboo skewers in water to cover at least 30 minutes before grilling. Prepare a mediumhot fire in a charcoal grill, or preheat a gas grill to medium-high. If using the basting sauce, in a small saucepan, combine the soy sauce, mirin and sugar over medium-low heat and cook, stirring, until the sugar has completely dissolved and the liquid just begins to turn syrupy, 5 to 8 minutes. Remove from the heat and set aside in a small bowl.

Drain the skewers. Thread the chicken pieces alternately with the onion pieces onto the skewers, using about 3 pieces of chicken and 2 pieces of onion for each skewer. As each skewer is ready, place on a plate. Brush the chicken and onion pieces lightly on all sides with the oil. The grilling goes quickly, so set up your workstation next to the grill before you begin: the plate holding the skewers, the bowl of sauce and a basting brush and/or the salt, and tongs for turning the skewers. If using the basting sauce, either dip each skewer in the sauce or brush

Children can stage their own experiments with items they find in nature, such as learning about tides, wind and water flow by sailing homemade boats. Teach kids through daily tasks. Barbecuing, making a cake, building a raised garden bed, seeding the lawn - each of these moments present educational opportunities for parents who want to keep their kids’ minds sharp during summer. Children need not fall victim to summer learning loss when their days are filled with educational but fun activities.

Seasonal Selections Serve steak alongside a backyard barbecue staple A night of al fresco dining next to a grill in the backyard can be a great way to spend an evening. Nearly any type of food can be grilled, and steaks tend to be especially good when cooked over an open flame. The following recipe for Grilled Rib-Eye Steaks with Mushroom-Shallot Butter is sure to please, especially when coupled with McNamara’s recipe for Baked Beans, a must-have staple for any backyard barbecue.

Baked Beans Serves 10 2 15-ounce cans navy beans, drained and rinsed 4 slices applewood- or pecan wood-smoked bacon, cut into 1-inch pieces 1 cup diced yellow onion 11⁄2 cups ketchup 1⁄4 cup plus 2 tablespoons unsulphured molasses

Grilled Rib-Eye Steaks with Mushroom-Shallot Butter

1⁄2 cup packed dark brown sugar 11⁄4 teaspoons ground mustard

Serves 4 to 6 8 tablespoons (1 stick) plus 3 tablespoons unsalted butter, at room temperature

1 teaspoon ground cloves

1⁄2 cup sliced shallot

Preheat the oven to 350º F.

1 heaping cup sliced cremini mushrooms

Combine the bacon and onion in a medium Dutch oven. Slowly cook over medium heat until the onion is tender and the bacon is cooked, 8 to 10 minutes.

1 teaspoon kosher salt

2 large cloves garlic, minced 1 teaspoon coarsely chopped fresh thyme leaves

Meanwhile, in a medium bowl, whisk together the ketchup, molasses, sugar, ground mustard, ground cloves, and 1 cup water to combine. Add the cooked beans and pour the mixture into the pot with the bacon and onion. Stir, cover and bake for 1 hour, stirring every 20 minutes.

1⁄4 teaspoon kosher salt, plus more as needed 1⁄4 teaspoon coarsely ground black pepper, plus more as needed 4 to 6 steaks (such as rib-eye, New York strip or porterhouse) Melt 1 tablespoon of the butter in a medium skillet over medium-low heat. Add the shallot and cook until golden and slightly crispy, 7 to 8 minutes. Use a slotted spoon to transfer the shallot to a clean plate. In the same skillet, melt 2 tablespoons of butter, then add the mushrooms, garlic, thyme, salt and pepper. Stir and cook until the mushrooms are softened, about 5 minutes. Transfer to the plate with the shallot and let cool.

Add the salt and stir. Uncover and let sit for 15 to 20 minutes before serving.

In a small bowl, use a rubber spatula to blend the remaining 8 tablespoons of butter with the cooled mushroom mixture until combined. Place the butter in the center of a piece of parchment paper. Bring the edges together and press with your fingers to form the butter into a log. Roll and twist the ends before popping the butter into the refrigerator for at least 20 to 30 minutes. Set the steaks on the counter for 30 minutes to bring them up to room temperature. Meanwhile, preheat a grill or grill pan to medium-high or about 400º F. Season both sides of the steaks with 2 pinches of salt and a pinch of pepper. Grill each steak for 6 to 8 minutes per side, depending on the thickness and the desired doneness. Tent with aluminum foil and let rest for 5 minutes. Slice the mushroom butter into coins and top each of the steaks with two coins before serving. www.seasonsmagazineonline.com

erhaps nothing is more relaxing on a warm summer night than sipping a cocktail as the sun sets. Some cocktails, such as the following recipe for Blueberry Crush, even evoke the twilight hours of summertime with their unique look.

Blueberry Crush Ingredients: 4 or 5 ice cubes 2 blackberries 2 blueberries 2 raspberries 3 ounces Blueberry Vodka (see below) Dash of lime juice 1 cup cracked ice 1⁄2 cup sparkling water or club soda (optional)

Sugar Syrup Ingredients: 1 cup water 2 cups granulated sugar Directions:

Directions: Place the ice cubes in a chilled oldfashioned glass. Place the berries in a small bowl and crush with a fork. Add to a shaker with the vodka, lime juice and cracked ice. Shake for 10 to 15 seconds, then strain over the ice cubes. For a lighter version of the drink, add the sparkling water. Blueberry Vodka

When you’re satisfied with the intensity of flavor, strain the liqueur through a metal sieve into a bowl. Discard the berries. Add the sugar syrup to taste, if desired. Using a funnel, pour the liqueur into the original bottle (or another container). Label with the name of liqueur and the date. Age for 1 month away from light and heat.
