Halloween Pumpkin-Carving Pointers
T
ransforming pumpkins into cleverly carved creations is a Halloween tradition. Each October, glowing pumpkins take up residence near doorsteps and porches, adding to the magical ambiance of the season. Young and old spend time designing their themes and then taking knife to
pumpkin to achieve the desired effects. Carving pumpkins into jack-o’lanterns can be traced back centuries to Ireland and a story about “Stingy Jack.” The tale involves Jack outwitting the Devil twice, the second time freeing the Devil from a prank in exchange for the promise that he would not claim Jack’s soul should Jack die. When Jack did die, God did not want the unsavory character in heaven, but the Devil could not claim Jack for hell. Therefore, Jack was relegated to roam the planet indefinitely with only a burning coal to light his way. Jack put that coal into a carvedout turnip. His ghostly figure was referred to as “Jack of the Lantern.” Later on, it was shortened to “Jack O’Lantern.” When Irish immigrants arrived in North America, turnips weren’t plentiful, so jack-o’-lanterns were instead carved into pumpkins. Today, many people carve jacko’-lanterns, with some featuring just smiling or grimacing faces,
while others are far more artistic creations. These tips can help anyone carve a pumpkin:
removed and as a way to add texture and shadowing. The more air that is allowed to penetrate the pumpkin, the faster it will start to degrade.
Begin with a fresh pumpkin. Look for a pumpkin with a green stem. If the pumpkin has been sitting around for too long or has been handled too much, the stem can get brittle and/ or fall off. A thick, fresh pumpkin is best for carving. Plan your ideas. Draw a plan for your pumpkin before you make your first cut. Then transfer that design to the pumpkin with pen or a thin marker. Pumpkin-carving kits come with designs that can be “traced” by poking small holes to create the outline of the design. Don’t cut all the way through. Many professional pumpkin artists do not actually cut clear through the flesh of the pumpkin. They carve and shave off layers of the outer rind until it becomes more translucent. The level of transparency can be adjusted based on how much skin is
Delay carving until the last minute. Wait until the day before Halloween to begin carving. Pumpkins are a perishable item, and they’ll begin to rot as soon as you begin carving. Spritzing them with water can help them stay fresh, but there’s no turning back the clock once the first cut is made. Cut a hole in the back. Cutting off the top of the pumpkin can affect its structural integrity and cause it to rot faster. Instead, cut a hole in the back of the pumpkin and use an electric light to illuminate it. LEDs are adviseable because they don’t generate much heat, which can cook and rot the pumpkin from the inside out. With some creativity and a little know-how, anyone can create an eye-catching jack-o’-lantern.

Pack Well for a Hike in the Wilderness
S
eptember may enjoy the title of National Wilderness Month, but any time of year is a good time to enjoy the great outdoors. One of the ways to immerse oneself in nature is to enjoy a day hike or overnight backpacking excursion. Millions of people take to trails or create their own paths all across the world each and every year. Hiking is a great way to enjoy the beauty of nature, but it also has other benefits. Hiking as a form of low-impact walking can reduce risk for heart disease, hypertension, diabetes, obesity and anxiety.
Preparing for a hike involves packing accordingly for the trip. These items should be brought along on hiking trips to ensure such excursions are comfortable, safe and successful: Water: Bring along water whether you’re hiking in warm or cool temperatures. Water can be heavy, so some experienced hikers prefer to bring a filtration device or purifying tablets so they can rely on natural water sources for their drinks. Proper Footwear: Trail shoes may be adequate for shorter hikes or when you are not carrying much gear. Otherwise, opt for sturdy hiking boots with plenty of sole and ankle support.
map will help keep you on course. Remember, cell phones may not work in remote areas.
Nutrition: Bring along lightweight food to keep you well fed. Any number of situations, including difficult trails and getting lost, can prolong hiking trips. Nutritious snacks can help hikers maintain their energy levels. Rain Gear/Extra Clothing: Dressing in layers and having a change of clothes enables you to adjust your attire according to the weather conditions. Wear water-repellant materials that wick away sweat. Sun Protection: Sun protection encompasses sunscreen, sunglasses and a hat. Illumination: Pack a headlamp or flashlight, and don’t forget the batteries. Light will help you navigate if you are out after sundown. Flashlights also can be used to signal others if you’re lost. Navigational Tools: A compass and
Fire Starter: A night spent in the wilderness may not be on the itinerary, but chemical fire starters, matches or even dryer lint can help start fires in emergency situations. Multipurpose Tool: A multipurpose tool can be used to cut items, open cans and much more. First Aid Kit: Don’t forget a prepackaged first aid kit to treat minor or major injuries. Taking a first aid course is also helpful. Toilet Paper: When nature calls in nature, a roll of toilet paper can make things much easier. Emergency Shelter: Tarps, tents or even reflective blankets can be put to use if a day trip needs to be turned into an overnight stay.

Types of Firepits for Your Backyard Oasis
O
utdoor entertaining areas are popular among homeowners, and firepits are one of the most sought-after additions to such spaces. In fact, a 2016 survey from the American Society of Landscape Architects found that fireplaces and firepits were the most popular outdoor design element in 2016. Various styles are available to homeowners who want to add firepits to their backyards, and choosing the right type may come down to budget, the amount of yard space available or even personal preference.
Wood Firepit: As their name suggests, wood firepits burn wood, which may appeal to homeowners who already have wood-burning fireplaces inside their homes. Because they don’t require homeowners to tap into gas lines, wood firepits are generally easy to set up and install, and many homeowners prefer the aesthetic appeal of crackling wood and flames that’s synonymous with wood firepits. Gas Firepit: Gas firepits are touted for their convenience, as they
don’t require homeowners to carry wood and build fires. Upon being connected to a gas source, gas firepits provide fire at the click of a switch. Gas firepits are also appreciated for their safety, as there is little or no risk that flames from gas firepits will grow too large and become difficult to control.
their outdoor seating areas because they provide warmth and ambiance without taking up much space. Tabletop firepits fueled by gas will not need to be connected to a gas source, which may appeal to consumers who want something that’s simple as well as small.
Fire Urns: While they might not technically qualify as firepits, fire urns provide a similar effect as firepits. Fire urns are typically gaspowered and may be an ideal choice for homeowners who are looking for a unique, awe-inspiring feature for their outdoor entertaining areas.
Gas Fire Tables: Gas fire tables might be ideal for those homeowners whose sense of decor favors more modern looks. Gas fire tables come in a variety of shapes and sizes and, like gas firepits, there’s no need to struggle with lighting a fire or carrying firewood.
Tabletop Firepits: Homeowners, condominium or apartment dwellers with limited backyard space may want to consider the convenience of tabletop firepits. Restaurants may use tabletop firepits in

How to Get Black Friday Deals
A
s Thanksgiving draws near, retailers begin dropping hints about their Black Friday promotions. Some stores have begun to open their doors on Thanksgiving evening, after many people have filled up on turkey and trimmings. Smart shoppers recognize that Black Friday is a great time to find deals on holiday gifts, and following these tips can help shoppers save even more: Begin researching early. Since many retailers begin posting information online or send out advertisements about sale items far in advance of Black Friday, shoppers should pay attention to each retailer’s offerings so they can better coordinate their shopping efforts. Cross-reference prices against other stores, including both online retailers and traditional brick-andmortar stores. Establish a shopping budget. It’s tempting to go out shopping with credit cards blazing, but that may
lead to overspending. Determine what you can afford and set a budget for Black Friday shopping. Establishing a budget can help you avoid impulse purchases as well. Look for extra discounts. The early bird often gets the worm, but late shoppers also may benefit on Black Friday. Determine which times of the day stores are offering their biggest discounts. Doorbuster sales tend to start very early, but such sales might be irrelevant if only items you do not need are being discounted. Determine if there are any additional sales that extend throughout the day. Divide and conquer. Split up the shopping responsibilities so you and your family can get your shopping done quickly. The divide and conquer approach allows you to cover more ground and ensures someone will be there to claim the best deals from various retailers.
Dress comfortably for shopping. Malls and department stores may be crowded and can be warm, so dress in layers so you can remove clothing if you get hot. You’ll probably do a good deal of walking on Black Friday, so make sure to wear comfortable shoes. Have discount codes at the ready. Many retailers now use digital apps or e-mails to keep in touch

with customers. These same apps may enable smartphone users to search for discount codes and other coupons. Keep digital coupons handy so they can be presented quickly at checkout. Black Friday is one of the best days of the year to land steep discounts on a variety of merchandise and services. Make the shopping trip even more successful this time around.

Fun and Safe Halloween Party Guide
H
osting a Halloween party can be fun, but it’s also a big responsibility. Halloween parties favor outlandish pageantry, amazing costumes, eye-catching decor and enough scares and tricks to amuse thrill-seekers. While fun is often the primary focus of Halloween, party hosts also need to prioritize safety when hosting spooky soirées. Halloween isn’t just for kids anymore. Alcohol has become a big part of many adults’ Halloween celebrations, and that means hosts must take steps to safeguard their guests from overdoing it with alcohol. As party planners start to plan their Halloween festivities, it’s important to remember that safety must be a priority: Prepare the space. A raucous party may lead to accidents around the house. Move out any extra furniture so guests have more space
to move around. Remove breakable items from rooms where guests will spend most of their time. Skip the candles. Battery-operated tealights create the effect of real candles without the danger. Illuminate jack-o’-lanterns and other Halloween items with flickering LEDs, which won’t start a fire if they’re knocked over. Hire a bartender. If the party is an adult affair, invest in a professional bartender or server who can monitor guests’ alcohol consumption. He or she can cut off those who have had too much and prevent guests from becoming intoxicated. Provide adequate lighting. Darkness might remind many of Halloween, but an entertaining space should not be so dark that guests cannot move around safely. Be sure to illuminate all walkways and clearly indicate exits so that guests can get to safety if
necessary. Remove any obstacles on the floor that are tripping hazards, and be sure to use nonslip runners and rugs. Practice food safety. Many Halloween treats and desserts contain nuts, and this can pose a hazard to those with nut allergies. Label foods and attempt to make the party nut-free if there is someone attending with a nut allergy. Many foods can be left out at room temperature for anywhere from one to two hours. Promptly refrigerate any leftovers so that they do not spoil and cause foodborne illnesses.
of Halloween darkness. Routinely conduct a head count to be sure everyone is safe and sound. Halloween parties can be safe and enjoyable at the same time. Enlist the help of others to ensure that all guests are protected while they engage in costume-clad fun.
Arrange for transportation home. Guests who imbibe should have a safe and sober means of getting home. This may mean arranging for cabs or ride-share services for guests. Keep an eye on kids. Children can get into mischief any day of the year, but especially so under the cloak

Plan a Day to Shop Local Fairs and Stands
A
utumn is tailor-made for getting out of the house to enjoy the great outdoors. With crisp temperatures perfect for strolls or sightseeing and breathtaking scenery awash in bright autumnal hues, autumn landscapes make for the ideal backdrop for weekend plans, including shopping excursions.
Fall is a great season to enjoy festivals, farmer’s markets and craft fairs, as merchants look to liquidate inventory before they prepare for the rush of the upcoming holiday season. Cities, towns, hamlets and everything in between will host their share of open markets and more with great deals to be had, and fall is an ideal time to visit local shops and stands. Fresh Produce
Farms big and small are bursting with produce come the fall. You can find the last vestiges of summer crops mingling with the first fruits of autumn. Grab the last of tomatoes and start thinking ahead to apples, squashes, lettuces and grapes.
You can even get an early start on pumpkin season - both for cooking and carving.
Stock the car with reusable tote bags and scour the farmer’s markets for seasonal finds. Chances are you also might pick up some extra treats, such as fresh honey or canned jams. Food Finds
As plants are harvested, many items are turned into delicious treats. No autumn shopping excursion is complete until you smell a freshbaked apple pie or some apple cider doughnuts. Corn breads and fritters, cranberry snacks and wines from nearby wineries also are easy to find in autumn. These items make welcome additions to your own pantry, or bring a freshly made treat to a friend or family member’s home when paying a visit.
Also, don’t miss the food-related festivals that pop up on community calendars in the fall. From garlic to potatoes to pumpkins to cheeses, many seasonal items are on display. You also can sample these foods in
interesting applications and make a day of gathering recipes and supplies to enjoy later. Crafts, Jewelry and Décor
Include a trip to a craft fair, where local vendors come together to display and sell their wares, on your weekend schedule. Handcrafted items make thoughtful and unique gifts, which can be tucked away for giving later in the year. Booths at these types of events
tend to be diverse. Spend the day strolling town squares or closedoff city centers, and you may find some hand-fashioned jewelry or home-crafted artisanal soaps. Those eager to enhance their homes’ décor may find unique items like painted signs, knit afghans and much more. Shopping local shops, farms and fairs is a great way to enjoy the fresh autumn air while supporting local businesses.

Turkey Vegetable Pot Pie
Serves 6 Pot pie makes for a delicious meal, especially when home cooks go the extra mile and prepare homemade pie crust. Some may be intimidated by the idea of making their own pie crusts, but the following recipe for “Turkey Vegetable Pot Pie with Whole-Wheat Crust” simplifies that process, ensuring a fun and easy time cooking and, ultimately, a delicious meal:
INGREDIENTS For the crust:
1 cup whole-wheat flour 1 cup all-purpose flour 1⁄4 teaspoon salt 2⁄3 cup corn oil 1⁄3 cup orange juice
For the filling:
1 carton condensed cream of chicken soup (organic
preferred) 1⁄2 cup low-fat milk 11⁄4 pound boneless, skinless turkey breast, thinly sliced into bite-size pieces 1 cup thinly sliced carrots (or frozen sliced carrots, thawed) 1 cup leeks, quartered lengthwise, then thinly sliced crosswise, using white and pale green parts only
DIRECTIONS
To make the crust: Combine flours and salt in a medium bowl. Pour in oil and orange juice and stir until moistened. Press dough to flatten and chill.
To make the filling: Blend soup and 1⁄2 cup of milk in a large bowl. Mix in the remaining ingredients.
3⁄4 cup thinly sliced celery 1⁄2 cup frozen peas, thawed 3 tablespoons whole-wheat flour 2 teaspoons dried herbes de Provence (or 1⁄2 teaspoon each thyme, rosemary and basil) 1⁄2 teaspoon freshly ground black pepper 1⁄4 teaspoon salt
Preheat the oven to 350º F. Divide dough into 2 balls, one slightly larger than the other. Roll the larger ball between 2 large sheets of waxed paper until it is 1⁄8-inch-thick or until it fits in the bottom of a 9-inch pie pan. Remove the top sheet of waxed paper. Turn dough over and carefully place in the pie pan, removing remaining piece of waxed
paper. Press out any bubbles and patch holes with scraps of dough. Pour filling into the prepared pan. Roll remaining dough and lay it on top. Cut any excess dough hanging from the edges and crimp the crust between your thumb and forefinger to seal. Cut a heart into the center to allow steam to escape.
Place the pie on a sheet pan and bake for 1 hour and 15 minutes, until center of crust becomes golden and an instant-read thermometer inserted into the pie’s center reaches 165º F, covering browned edges only with foil about halfway through cooking. Remove the pie from the oven and allow it to rest for at least 5 minutes before cutting.
Mediterranean Fish Stew Serves 6
Flavorful meals come in all shapes and sizes. When looking to seafood for flavor, shrimp shells are full of flavor, and even more so in the following recipe for “Mediterranean Fish Stew.” The flavor of the shells should seep into the sauce, making this a delicious dish best eaten with your fingers and mopped up with plenty of crusty fresh bread:
INGREDIENTS
12 mussels 1 large fennel bulb, with leafy tops 2 tablespoons olive oil 2 garlic cloves, crushed
DIRECTIONS
3/4 cup dry white wine 11/4 cups fish stock 29 ounces canned chopped tomatoes 1 cup cherry tomatoes, cut in half 1 pound monkfish fillet, cut
Scrub the mussels clean and rinse them in several changes of cold water to remove grit. Pull off the beards or seaweed-like threads, and discard any mussels that are cracked or that don’t close when tapped against the countertop these are dead and not edible.

into 11/2-inch chunks 12 large, unpeeled, raw shrimp, heads removed 1 pinch of sugar Sea salt and freshly ground black pepper Extra virgin olive oil, to serve
Remove the leafy tops from the fennel bulb, chop them coarsely and set aside. Cut the bulb into quarters, remove and discard the core, then finely chop the bulb. Heat the oil in a large saucepan or wok. Add the fennel bulb and saute for 5 minutes. Add the garlic and saute for a further 1 minute. Add the
wine, stock, canned tomatoes and sugar, and stir well. Bring to a boil, reduce the heat, then simmer for 5 minutes. Add the cherry tomatoes and cook for a further 5 minutes. Add plenty of salt and pepper.
minutes, or until the mussels have opened and the fish is cooked.
Ladle the stew into deep plates or bowls. Sprinkle with the fennel tops and olive oil, and serve.
Add the monkfish and return to simmering. Stir in the mussels and shrimp, cover and cook for about 5

Fall Lawn Care Tips
CHIMNEY KING ENT, INC.
S
pring and summer may be the seasons most often associated with landscaping and lawn care, but tending to lawns and gardens is a year-round job. If lawn and garden responsibilities dip considerably in winter, then fall is the last significant chance before the new year that homeowners will have to address the landscaping around their homes.

Fall lawn care differs from spring and summer lawn care, even if the warm temperatures of summer linger into autumn. Homeowners who want their lawns to thrive year-round can take advantage of the welcoming weather of fall to address any existing or potential issues.

Keep mowing, but adjust how you mow. It’s important that homeowners continue to mow their lawns so long as grass is growing. But as fall transitions into winter, lower the blades so the grass is cut shorter while remaining mindful that no blade of grass should ever be trimmed by more than one-third. Lowering the blades will allow more sunlight to reach the grass in the months ahead.

Remove leaves as they fall. Much like apple-picking and foliage, raking leaves is synonymous with fall. Some homeowners may wait to pick up a rake until all of the trees on their properties are bare. However, allowing fallen leaves to sit on the ground for extended periods of time can have an adverse effect on grass. Leaves left to sit on the lawn may ultimately suffocate the grass by forming an impenetrable wall that deprives the lawn of sunlight and oxygen. The result is dead grass and possibly even fungal disease. Leaves may not need to be raked every day, but homeowners should periodically rake and remove leaves from their grass, even if there are plenty left to fall still hanging on the trees.
Repair bald spots. Summer exacts a toll on lawns in various ways, and even homeowners with green thumbs may end up with a lawn filled with bald spots come September. Autumn is a great time to repair these bald spots. Lawn repair mixes contain mulch, seed and fertilizer to repair bald spots, which can begin to recover in as little as seven days. Before applying such products, remove dead grass and loosen the top few inches of soil. Follow any additional manufacturer instructions as well. Aerate the turf. Aerating reduces soil compacting, facilitating the delivery of fertilizer and water to a lawn’s roots. While many homeowners, and particularly those who take pride in tending to their own lawns, can successfully aerate their own turf, it’s best to first have it soil tested so you know which amendments to add after the ground has been aerated. Gardening centers and home improvement stores sell soil testing kits that measure the pH of soil, but homeowners who want to test for nutrients or heavy metals in their soil may need to send their samples to a lab for further testing. Fall lawn care provides a great reason to spend some time in the yard before the arrival of winter.

Peppery Turkey Casserole Makes 8 servings
Turkey is most commonly associated with Thanksgiving. But turkey need not be relegated to just one day per year. The following recipe for “Peppery Turkey Casserole” is easy to prepare and delicious to eat:
INGREDIENTS 1 tablespoon olive oil 2 onions, finely chopped 4 cloves garlic, minced 2 teaspoons dried oregano, crumbled 1/2 teaspoon cracked black peppercorns 1 cup dry white wine 1 14-ounce can diced tomatoes, including juice 2 cups chicken or turkey stock 11/2 pounds bone-in turkey breast, skin removed, cut into 1/2-inch cubes 2 teaspoons sweet paprika, dissolved in 2 tablespoons water 1 jalapeno pepper, finely chopped 2 green bell peppers, diced 1 roasted red bell pepper, diced 3 cups water 11/2 cups quinoa, rinsed
Sea salt (optional) DIRECTIONS In a skillet, heat oil over medium heat. Add onions and cook, stirring until softened, about 3 minutes. Add garlic, oregano and peppercorns and cook, stirring, for 1 minute. Add white wine and tomatoes with juice and bring to a boil. Transfer to slow cooker stoneware. Add chicken stock and stir well. Season to taste with salt, if using. Add turkey and stir well. Cover and cook on low for 6 hours or on high for 3 hours, until turkey is tender. Add paprika solution, jalapeno pepper, bell peppers and roasted red pepper to slow cooker stoneware and stir well. Cover and
cook on high for 30 minutes, until peppers are tender.
Meanwhile, in a pot, bring water to a boil. Add quinoa in a steady stream, stirring to prevent lumps from forming, and return to a boil. Cover, reduce heat to low and simmer until tender and liquid is absorbed, about 15 minutes. Set aside. When peppers are tender, add cooked quinoa to slow cooker stoneware and stir well. Serve immediately.
At serving time, garnish with a lime wedge to squeeze over each serving.
