Interesting Facts About Winter

he winter solstice marks the first day of winter. . Though it’s common to think of the winter solstice as an event that spans an entire day, it actually occurs for just a moment — specifically when a hemisphere is tilted as far away from the sun as it can be. Winter is widely known as the coldest time of the year in most locales, but that’s not the only thing that makes the season unique. Explore these other cold, hard facts about wintertime. • The Earth actually is closest to the sun in December, even though the winter solstice is the shortest day of the year. The amount of daylight hours has to do with the tilt of the Earth on its axis rather than its proximity to the sun. • The Southern Hemisphere, due to having less land mass and a more maritime climate, tends to have milder winters than the Northern Hemisphere. • According to Smithsonian, ancient Romans used daylight and darkness to determine the

time. As a result, an hour in ancient Rome lasted 45 minutes in the winter and 75 minutes in the summer. • Two islands, called Big Diomede and Little Diomede, are located in the Bering Strait, which divides Alaska from Russia. Big Diomede is owned by Russia, while Little Diomede is owned by the United States. The 2.5 mile stretch between these two islands often freezes over in winter, technically making it possible to walk from the U.S. to Russia, according to Alaska Centers Public Land Information. • Snow is common in many areas during the winter. The highest snowfall ever recorded in a one-year period in the U.S. occurred at Mount Rainier, in Washington. Between February 19, 1971, and February 18, 1972, 31.1 meters (1,224 inches) of snow fell. • Russia remains the coldest country in the world during the winter. Canada and Mongolia are not too far behind.

• The largest snowflake ever recorded measured 15 inches wide. It was found in Fort Keogh, Montana. • A city in Sweden uses light therapy in bus stops to help combat seasonal affective disorder during winter, when 19 hours of darkness are common. • Unlike hurricanes and other summer storms, winter storms are not named by the National Weather Service. • Snowflakes are translucent, not white. • No country in the Southern

Hemisphere has hosted or applied to host the Winter Olympics. • Most weather-related crashes in the U.S. happen on wet pavement during rainfall rather than during snow or sleet, according to the U.S. Department of Transportation. Winter might be seen as a cold period marked by dark days, but there’s still a lot of interesting things going on between the winter solstice and the spring equinox.

Driving In A Winter Wonderland: 5 Safety Tips

hough the winter season has its joys, it also brings unique challenges – especially when venturing out in hazardous weather. According to the Federal Highway Administration, 24% of all weather-related vehicle crashes happen on snowy, slushy and icy pavement, while 15% occur during snowfall or sleet. Here are five tips to protect yourself, your loved ones and your vehicle this season. 1. Invest in winter tires. Snow and ice can turn roads

into a slippery nightmare, posing a real threat for drivers. Winter tires, also known as snow tires, are uniquely designed to increase traction in these conditions and can help avoid accidents. 2. Clear snow and ice before hitting the road. Though it can be tempting not to, especially when you’re in a rush, you should always fully scrape your vehicle’s windows and remove snow from its surface before driving. Leaving ice and snow to melt is more dangerous than you might think. It can slide

down the windshield and block your view of the road, or even fly into nearby traffic, causing damage or obstructing the vision of other drivers. 3. Keep your distance. Ever heard of the “three-second rule”? Experts recommend leaving three seconds of distance between your vehicle and those ahead of you. To do this, watch the car ahead of you pass a landmark, then count to three. It should be at least three seconds before your car reaches the landmark. When the roads are slick or icy, be sure to widen the gap. Should you need to stop suddenly, the extra space will lower your chances of a collision. 4. Slow down! A recent national survey by Erie Insurance found that one in 10 drivers admitted to driving at extreme speeds (20 mph or more over the speed limit) during the early months of the pandemic, and many respondents say drivers are still going way faster than normal. Speeding is always dangerous and can be even more hazardous

when roads are icy, making it harder to control the vehicle and avoid skidding. If your vehicle begins to skid, turn the steering wheel towards the direction you need to go. 5. Monitor and improve driving behaviors. Identify bad habits and become a safer driver year-round with a smartphone app like YourTurn from Erie Insurance. How To Care For Winter Birds That Visit Your Yard

birds that store food in caches or have developed special scavenging strategies to find as much food as possible can benefit from a little wintertime help. Penn State Extension suggests providing a variety of foods to attract the greatest number of species. Small, black-oil sunflower seeds are preferred by many smaller species of bird and have a high oil content that is nutritionally important for birds. Other sunflower seeds will be appropriate for blue jays and cardinals. Some other popular foods include white proso millet, thistle seed, niger seed, and peanuts. Consult a wild bird store, which likely sells a birdseed mix that enables you to place a variety of seed into one feeder. In addition to seed, suet, which is made from high-quality animal fat, is crucial for birds in the winter. Families can get crafty by spreading peanut butter onto pine cones and sprinkling seed on top. Hang the pine cones tied to pieces of string from tree branches for homemade feeders. Birds likely need a little help surviving the winter, when conditions can be bleak. Offering food and observing backyard visitors can be a great way to unwind on winter afternoons.

The Royal Society for the Protection of Birds indicates that winter is a difficult time of year for birds due to the weather and the scarcity of food. Shovel Snow Safely This Winter

he beauty of freshly fallen snow is undeniable. Such beauty compels millions of people across the globe to ski and snowboard each winter, while millions more enjoy simply looking out their windows at snow-covered landscapes. If it was as convenient as it is beautiful, snow would likely be welcomed with open arms whenever the local weatherperson includes it in his or her forecast, but heavy snowfall can be inconvenient, making it difficult to travel and even creating more work for individuals responsible for shoveling their driveways and walkways. Shoveling snow can increase a person’s risk for injury, and some may be surprised to learn just how frequently such injuries happen. The U.S. Consumer Product Safety Commission notes that, in 2018, more than 137,000 people needed medical assistance for injuries that happened while shoveling snow or using snowblowers. Sprains and strains in the back and shoulders are the most common injuries when shoveling snow, but people also can suffer lacerations and injuries related to belowfreezing temperatures when shoveling snow. The American Academy of Orthopaedic Surgeons recommends people keep these safety precautions in mind when shoveling snow this winter. • Stretch before shoveling. Just like you would do before exercising in a gym, stretch prior to picking up your snow shovel. Warm up your muscles with some light exercise for

10 minutes to reduce your risk of sprains, strains and muscle tears. • Stay hydrated and take frequent breaks. The AAOS notes that snow shoveling and snow blowing are aerobic activities. Such activities require participants to be hydrated. In addition, taking frequent breaks can help prevent injuries. • Avoid shoveling snow if you’re at risk for heart attack. Some people should avoid shoveling snow entirely. According to the Harvard Medical School, researchers correlated hospital admissions and deaths due to heart attack the day after it snowed in Canada between 1981 and 2014. Researchers found that the deeper the snow, the more men died of heart attacks. In fact, researchers found that there was a 34 percent increase in heart attack deaths the day after an eight-inch snowfall, and those rates increased when snowfall increased. Most deaths were men, but both men and women who are at risk of heart attack should avoid shoveling snow, particularly after heavy snowfall. Adults who are unsure of their heart health should consult with their physicians prior to shoveling snow. • Use the right equipment. Ergonomic snow shovels can make shoveling less taxing, reducing your risk for sprains and strains. Warm Up With Stew On Cold Winter Nights

earty meals are best on cold nights, when food can provide a warming effect after coming in from the cold outdoors. This recipe for “Boeuf Bourguignon” from Jill Lightner’s “Edible Seattle: The Cookbook” (Sterling Epicure) is sure to provide such an effect.

Boeuf Bourguignon Serves 6 generously 2 pounds beef shoulder, cut into 2-inch pieces (see note) 1 onion, cut into large dice 2 carrots, cut into large dice 2 stalks celery, cut into large dice 2 dried bay leaves 4 sprigs fresh thyme 7 sprigs fresh flat-leaf parsley 1⁄4 teaspoon black peppercorns 1 bottle red wine Salt Freshly ground black pepper 1 tablespoon canola oil 1⁄4 pound slab bacon, cut into large dice 1⁄2 stick (4 tablespoons) unsalted butter 1⁄4 cup all-purpose flour 4 cups beef stock 2 large Yukon Gold potatoes, peeled and cut into large dice 1 pound pearl onions, blanched and peeled 1 pound button mushrooms, diced

Directions: 1. Put the beef chunks in a large bowl and add the onion, carrots and celery. In a piece of cheesecloth, tie together a bouquet of garni of the bay leaves, thyme, parsley, and peppercorns and add to the bowl. Pour in the bottle of wine. Cover and let marinate in the refrigerator overnight, stirring the mixture once or twice over the course of the evening. 2. The next day, remove the meat from the marinade and dry the pieces in a shallow pan lined with several layers of paper towels. Remove the vegetables and reserve them separately, along with the bouquet garni. Reserve the wine. Season the beef with salt and pepper. 3. In a large Dutch oven over medium heat, warm the canola oil. Add the bacon and cook until browned and the fat is rendered, about 5 minutes. Remove the bacon from the pot and set aside. In single-layer batches, brown the beef chunks on all sides, then set aside. Brown the reserved onions, carrots and celery, about 10 minutes. Add additional canola oil to the pot if there is not enough bacon fat to brown all of the beef and vegetables. 4. Return the beef to the pot with the vegetables and add 3 tablespoons of the butter. Remove the bouquet garni. 5. Toward the end of the beef’s cooking time, bring the potatoes to a boil in a separate saucepan covered generously with salted water. Cook until tender, about 15 minutes. 6. In a medium sauté pan, melt 3 tablespoons of the butter over mediumhigh heat. Add the pearl onions and sauté for 3 to 4 minutes. Add the mushrooms to the onions and cook until both onions and mushrooms are golden brown, about 5 minutes longer. Season to taste with salt and pepper. 7. Serve the stew in bowls, garnished with the pearl onions, mushrooms and potatoes. Note: When shopping for beef, you won’t find a cut labeled “beef shoulder” — what you want is either a chuck roast of some sort or, from a bit lower on the shoulder, a cut labeled either “arm roast” or “round bone roast.”

Test Your Culinary Chops With Quiche

heese is a comfort food that boasts a sizable fan base. There are all sorts of appealing cheeses to cater to any craving, ranging from soft varieties like ricotta or brie to hard cheeses like Pecorino Romano or gorgonzola. Cheese features prominently in many dishes, including quiche. Quiche is a rich, cheese custard tart that originated in France. While there are many varieties of quiche, Quiche Lorraine is perhaps the best-known and the blueprint upon which all other quiches are based. Individuals who want to try their hand at crafting this beloved dish can utilize this recipe for “Quiche Lorraine” from “French Classics Made Easy” (Workman Publishing) by Richard Grausman.

Quiche Lorraine Serves 6 to 8

Tart pastry 1 1⁄3 cups all-purpose flour 8 tablespoons cold, unsalted butter, cut into eight pieces 1 egg 1⁄8 teaspoon salt 1 1⁄2 tablespoons cold water

Filling 1 tablespoon Dijon mustard 2 eggs plus 1 egg yolk 1 1⁄2 cups milk 1⁄4 teaspoon salt 1⁄8 teaspoon freshly ground pepper Pinch of freshly grated nutmeg 1⁄4 pound ham (boiled, baked or smoked), diced or 8 strips of cooked bacon, crumbled 1⁄4 pound Swiss-style cheese, such as Gruyère or Emmentaler, diced, sliced, or grated (about 1 1⁄3 cups)

Directions: 1. Preheat the oven to 475 F with the rack set in the middle position. 2. Place all of the tart pastry ingredients into the bowl of a food processor fitted with a metal blade and process until the mixture blends together to form a mass, about 20 seconds. If it doesn’t form a mass after 25 seconds, add another teaspoon of water. 3. Turn the pastry out onto a lightly floured work surface, dust the pastry lightly with flour and begin the blending or kneading process known as “fraisage”: With the heel of your hand, push the pastry down and away from you a little at a time and repeat this process three or four times or until the pastry is smooth and does not stick to the work surface. 4. Lightly dust the pastry with flour and shape into a flat round, much like a thick hamburger. The pastry can be used immediately, unless it is too warm and soft. In which case, wrap it in plastic wrap and refrigerate for 10 to 20 minutes. 5. Line a 91⁄2- or 10-inch tart pan with removable bottom with the pastry. 6. Prick the pastry, line it with aluminum foil, and weight it with 1 pound of dried rice or aluminum pie weights. Bake until the edges of the pastry begin to color, about 20 minutes. Remove the pan from the oven and remove the foil and beans from the pan. Spread the mustard over the bottom of the pastry. Lower the oven temperature to 425 F. 7. In a bowl, beat the eggs and yolk lightly. Blend in the milk, salt, pepper, and nutmeg. 8. Spread the ham and cheese evenly over the bottom of the tart shell. Pour the custard into the tart shell to within 1⁄8-inch of the top of the crust. Holding the tart pan by the outer rim (so as not to dislodge the bottom), place the pan in the oven. 9. Bake until the custard puffs, 25 to 30 minutes. 10. Unmold as soon as possible. Allow to cool for at least 10 minutes before cutting into wedges and serving. Cheesecake Makes A Decadent Valentine’s Day Treat

cheesecake recipe can be useful on any special occasion, and especially so on Valentine’s Day. For many people, cheesecake is not cheesecake without the addition of ricotta cheese. While ricotta is included in savory dishes like lasagna or manicotti, it is at home in desserts like cheesecake as well. Ricotta means “recooked” in Italian, and its production involves reheating the whey left over from making other cheeses, like mozzarella. Its texture is like a creamy/ grainy, thick sour cream. Ricotta is included in this recipe for “Ricotta Cheesecake With Coffee and Chocolate” from “Nick Stellino’s Family Kitchen” (G.P. Putnam’s Sons) by Nick Stellino, but it is not the only flavorful ingredient in this decadent dish. Coffee liqueur, chocolate and lemon zest add to the complex profile — which only get more pronounced if you prepare this cake a day in advance.

Ricotta Cheesecake With Coffee And Chocolate (Tortino al caffè e ciccolato) Serves 8 to 10 1 cup graham cracker crumbs 2 tablespoons butter, melted 2 tablespoons sugar, plus 1⁄2 cup sugar 2 lbs. ricotta cheese, drained of excess liquid 8 eggs, separated 1/2 cup cream 1/4 cup espresso or extra strong coffee, cooled 1/4 cup coffee liqueur 1 teaspoon finely grated lemon zest 1/2 teaspoon salt 1 cup semi-sweet chocolate morsels (optional)

Directions: Preheat the oven to 325 F. Make a graham cracker crust by mixing together the melted butter with the crumbs, and sugar. Press into the bottom of a 9-inch springform pan. Mix together the ricotta, sugar, egg yolks, cream, espresso, coffee liqueur, lemon zest, and salt until creamy. In a separate bowl, beat the egg whites until they form stiff peaks. Carefully fold the egg whites into the ricotta mixture. Stir in the chocolate morsels and pour onto the prepared crumb crust. Bake the cake for 1 hour and 15 minutes or until just set in the middle. The cake will still seem wobbly, but will be lightly browned and cracked around the edges. Remove the cake from the oven and cool on a rack for 30 minutes. Refrigerate the cheesecake for at least 6 hours or overnight before running a sharp knife along the edge of the cake and removing the pan. Cut into wedges to serve. A Taste Of Traditional Irish Cooking

t. Patrick’s Day is an opportunity for the world to celebrate Ireland’s patron saint and Irish culture with family, friends, food, and fun. Many St. Patrick’s Day traditions have been passed down through generations. This includes various foods and recipes that are native to Ireland that have spread around the globe thanks to the vast Irish diaspora. When dishing up new traditions at home, try this recipe for “Traditional Irish Colcannon” courtesy of Kerrygold, producers of Irish butters and cheeses. Colcannon is a mashed potato recipe made even more savory with the inclusion of cabbage and other ingredients. Serve with corned beef, Irish bacon or Irish stew.

Traditional Irish Colcannon Serves 8 2 pounds red potatoes, cut into large chunks 3⁄4 cup milk 3⁄4 teaspoon salt

Directions:

6 tablespoons Kerrygold Salted Butter, plus additional melted butter, if desired

Cook potatoes in boiling water about 20 minutes or until very tender; drain well and mash with skins on, adding milk and salt.

1 cup chopped onion

While potatoes are cooking, melt butter in a large skillet.

6 cups finely shredded green cabbage (or one 10-ounce package)

Add onion; cook 10 minutes, stirring occasionally, until very soft.

Add cabbage; cook and stir for 5 minutes more or until very soft. 1 cup (about 4 ounces) shredded Kerrygold Dubliner® Cheese or Blarney Stir cabbage mixture and Kerrygold cheese into hot potatoes and season with pepper. Castle Dubliner® Cheese Mound onto serving plates and make a well in the center of each. Pour a little melted butter into each well, if desired. Garnish to taste. According to North American Technician Excellence (NATE), here’s how to stay toasty this winter without breaking the bank. Get the Right Equipment It all starts with the right heating equipment. Choosing a furnace with an ENERGY STAR logo is important, however, it’s also a good idea to understand standard efficiency ratings so you can easily compare the performance of different systems. When you need to measure the thermal efficiency of your furnace or water heater, Annual Fuel Utilization Efficiency (AFUE) helps determine the actual, annual, average efficiency of that piece of equipment. It measures the amount of heat delivered to your house compared to the amount of fuel that you must supply to the furnace. The U.S. Department of Energy determined that all furnaces sold in the U.S. must have a minimum AFUE of 78%. The Heating Seasonal Performance Factor (HSPF) is the most commonly used measure
