Get fired up about campfire cooking

amping season revs up when the temperature warms. In a recent survey by Kampgrounds of America, Inc., the main reasons people say they go camping are to reconnect with nature, spend time with family and friends and reduce stress and relax. The roughly 40 million people who go camping in the United States each year also may have food on their minds. Campfire cooking — which involves cooking over an open fire and eating outdoors — makes camping that much more enjoyable for many people.

Campfire cooking is about simplicity of ingredients and ease of cooking. Chances are campers do not want to lug too many cooking instruments to the campsite, so ingredients that are portable and can cook quickly over an open fire are attractive. Cast iron skillets, grills and Dutch ovens often are the gear of choice. Here are some delicious campfire meals to try on your next camping trip.

Campfire Casserole Mix your favorite ground meat (beef, chicken or pork) with kidney beans and cubed bacon (leftover from breakfast works well). Add barbecue sauce or diced tomatoes, depending on your preference. Allow to simmer in a Dutch oven on low for 45 minutes to an hour. Season to

taste. During the last 10 minutes of cooking, place refrigerated biscuits over the top of the casserole, cover and cook until the biscuits are done.

Seafood No-Boil Cut foil sheets about 12 inches long. Add 5 to 6 shrimp, one quarter of an ear of corn, a few slices of smoked andouille sausage, a lemon slice, and seasonings to taste. Fold the foil packets carefully to seal in the ingredients. Place the packets on a grill over the campfire and allow to cook for around 10 to 15 minutes. Skillet Pizza Place a little cornmeal and oil on the bottom of a cast iron skillet. Spread refrigerated pizza dough out on the skillet. Cover with pizza sauce, cheese and favorite toppings and cook over the fire until the cheese boils and the crust browns.

Campsite Cobbler Line a Dutch oven with aluminum foil. Mix together a yellow cake mix, 11⁄4 cups water and 1⁄2 cup canola oil and pour over two cans of a favorite pie filling flavor in the pot. Prepare the campfire for low heat. Put the Dutch oven in the ashes and cover with remaining ash or charcoal briquettes. Cook until bubbly, around 30 to 40 minutes.

ndependence Day is a celebration of the United States of America. The holiday is marked by fanfare and large parties, complete with barbecues, fireworks and parades. As fun as July 4th festivities typically are, injuries, particularly those involving fireworks, are a concern that celebrants should not take lightly. An estimated 11,000 people visited the emergency room for fireworks-related injuries in 2016, according to the U.S. Consumer Product Safety Commission. However, fireworks aren’t the only danger this time of year. In order to remain safe, individuals can heed these tips. • Do not drink and drive. Alcohol consumption may accompany Independence Day festivities. For those planning on using a car to get to and from parties, it is essential to designate a driver who will not imbibe. Otherwise, utilize any number of ridesharing services or available taxis.

• Swim smartly. Always swim with a buddy, and consider hiring a lifeguard if you’ll be hosting a pool party and cannot keep a watchful eye on guests in the pool. Adults also should not swim intoxicated, as it can impede the ability to stay afloat and may lead to risky behaviors. • Leave fireworks to the professionals. Watch a public fireworks display instead of lighting fireworks on the street or in the backyard.

Summertime seaside candy staple

ummertime fun frequently involves a trip to the seaside. While days are spent with toes in the sand, once the sun sets the entertainment moves away from the sand to the boardwalk attractions, food and fanfare.

Today, Atlantic City, New Jersey, is known for its casinos. But the city has a storied history as a seaside retreat. The Atlantic City Boardwalk opened on June 26, 1870, becoming the first boardwalk in the United States. National Geographic explains the first wooden planks were laid to curb the amount of sand beachcombers tracked into the train and hotel lobbies. Eventually, the boardwalk itself, with arcade halls and amusement attractions, would become its own destination. Soon other boardwalks opened across the country, including in Coney Island, New York, and Myrtle Beach, South Carolina. Boardwalks became hubs of summertime fun, with food and confections.

A well-known boardwalk treat, salt water taffy is a summertime staple. Salt water taffy is a soft taffy

that was originally produced and marketed in Atlantic City. According to popular lore, David Bradley, whose candy store was flooded during a major storm in 1883, found all of his stock soaked with the salty Atlantic brine — including his taffy. When a young customer later came in asking if he had taffy, he jokingly offered her “salt water taffy.” The customer sampled the piece and showed her friends. The name “salt water taffy” caught on.

Taffy was first prepared in copper kettles heated over open coals. The sugary mixture was cooled on marble slabs and then pulled from a large hook. The pulling incorporated air into the mix to help keep the taffy soft. The taffy was hand-rolled to the desired thickness, cut and then

wrapped.

Salt water taffy is primarily a treat enjoyed on the east coast of the United States, but it is sold throughout the United States and Canada. No trip to the boardwalk is complete without snagging a piece of sweet salt water taffy.

A man named Joseph Franlinger helped make salt water taffy a household name. After observing boardwalk visitors purchasing the candy during seaside jaunts, he found a way to box the candy and sell it so it wouldn’t be reserved only for summer holidays. According to candy manufacturer Wokenfuss, by the 1920s, salt water taffy was at the height of its popularity, with more than 450 manufacturers making and/or selling the candy at the time. Each had his own method of preserving the candy, making it less sticky and more portable.

Beware of jellyfish this summer

ummer often includes a few jaunts to the beach to cool off and enjoy some swimming and sunbathing. For those who have the benefit of living close to an ocean, few things beat the allure and majesty of a pristine coastline. A day at the beach can be spent surfing the waves, collecting seashells or relaxing with toes in the sand. The world’s oceans are diverse ecosystems that are home to many creatures large and small. When beach-goers enter the water, they should understand that they may be sharing the sea with crabs, fish and even mammals. Some sea creatures are relatively harmless, while others can be more dangerous in certain situations. Understanding the differences can keep both marine life and people safe.

Jellyfish are marine creatures that call the saltwater home in various areas and during different months of the year. There are more than 200 species of jellyfish, which come in a diverse range of forms. Jellyfish can be found in every ocean in the world, and some can thrive in freshwater lakes and ponds as well. www.seasonsmagazineonline.com

The jellyfish’s main defense mechanisms are its stings and its transparent body, which make it hard to see in the water. Jellyfish have the potential to sting, and some dangerous varieties can even cause death. Beach-goers’ best defense is to learn about jellyfish, including how to recognize those that pose a threat to human health. The sea wasp of coastal Australia and Indo-Pacific regions; the chiropsalmus quadrigatus of the same region; the tiny irukandji, which has spread to many different waters; and the alatina alata, found in both

Pacific and Atlantic waters, are some of the world’s most dangerous jellyfish, says Smithsonian. Most of these jellies are box jellyfish, which get their name from the cube-shaped swimming bell. Stings can be extremely painful, and some are fatal to humans, although there are some antivenoms available in Australia, where many encounters with this type of jellyfish occur.

Most jellyfish stings occur in the summer and fall when people are most active at the beach. Also, exercise caution when walking barefoot on the beach, as there may be jellyfish washed up on the sand.

Many people will never encounter a deadly variety of jellyfish. However, jellyfish populations generally are on the rise, and that figures to lead to an increase in stings as well. In 2018, more than 1,000 people were stung on a Florida beach in one week. The National Marine Fisheries Service says there have been

I love going to Bayard Cutting Arboretum in the summer. It’s a 691-acre state park located in the hamlet of Great River on Long Island. The Hidden Oak Cafe is located inside the Manor House and offers delicious fresh food, where you can eat in the enclosed porch or outside on lawn on their Adirondack chairs overlooking the water. ishing is one of the most popular recreational pursuits in North America. The U.S. Fish & Wildlife Service says around 40 million people fish each year. Fishing can be an ideal way to spend time in the great outdoors, and people often bond with family and friends while fishing.

As any angler can attest, there’s a rush that comes from getting a small tug on the line and then reeling in a fish. At this point, fishermen must decide if the fish is a keeper or should be tossed back into the water. Sometimes the answer is very clear. Rivers and lakes across the world are managed by various organizations that serve to protect wildlife and natural resources. Rules may be in place regarding the sizes of fish that can be kept, which species are safe and which are protected, and even when people can fish. In a study led by researchers with the U.S. Geological Survey that was published in the journal Fisheries, thousands of distinct populations of fish were studied. Researchers determined that as many as four out of 10 freshwater species in North America are in danger of approaching extinction. As a result, fishing is regulated by Fish and Wildlife officers and game wardens. Those who are new to fishing or to a particular region must learn and follow the rules regarding fishing. Fishing licenses are typically required to fish in a given state or area. Always speak with a licensing agency about size restrictions and any other rules regarding species

of fish. Also learn about which methods of fishing are legal. Drag nets or other methods of mass fish collection or luring the fish with lights or other equipment may be prohibited. Learning how to safely catch and release fish if the need arises also is an essential component of responsible fishing. When done correctly, catch-and-release methods can ensure high survival rates and preserve native fish populations. The National Park Service advises those who fish to follow these tips.

• Avoid fishing when conditions are stressful for fish, such as when water temperatures are high. • Use equipment that enables one to land the fish quickly without struggle. • Avoid the use of scents and artifical baits that encourage fish to swallow hooks. Learn which bait are prohibited in certain bodies of water. Artificial lures that hook the fish in the lip are preferred. • Avoid playing with the fish to exhaustion.

• Keep the fish wet and calm, and treat it gently to remove the hook. Hold the fish underwater and allow it to ventilate before release so it can regain its swimming strength.

isit the former Gold Coast estate of the W.R. Coe family. This National Register property has over 400 acres of rolling lawns, gardens, woodlands, and nature walks. Coe Hall is the Tudor Revival residence of the Coe family and is open for guided tours from April to September. Guests can sample the formal lifestyle of the 1920s and see stunning craftsmanship and impressive collections of furnishings, paintings, stained glass, and decorative arts. In addition to the mansion, visitors will experience a wide variety of gardens, specimen plantings and charming outbuildings that make Planting Fields truly unique. Skewered chicken goes great on the grill

Spiedini of Chicken and Zucchini with Almond Salsa Verde Makes 6 servings

Grilling chicken is an easy way to transform this versatile food into something even more delicious. Various cultures serve chicken in kebab form after grilling it over an open flame, and taste is a big reason this particular method of cooking chicken is so beloved.

While you might not expect to see kebabs on the menu at your favorite Italian restaurant, “spiedini” is Italian for “little skewers,” proving that Italian chefs recognize how delicious chicken can be when served in kebab form. In this recipe for “Spiedini of Chicken and Zucchini with Almond Salsa Verde” from “Cooking Light: Dinner’s Ready” (Oxmoor House) by The Cooking Light Editors, skewers are paired with a zesty salsa full of nuts, herbs and citrus, which makes for the perfect complement to the smoky grilled flavor.

Spiedini: 11⁄2 pounds skinless, boneless chicken breast, cut into 1-inch pieces 6 small zucchini, cut into 1-inch slices (about 11⁄4 pounds) Cooking spray 1⁄4 teaspoon kosher salt 1⁄8 teaspoon freshly ground black pepper Soak 12 (10-inch) wooden skewers in water for 30 minutes to prevent burning. Bring the grill to medium-high heat

To prepare the spiedini, thread the chicken and zucchini alternately on each of the 12 skewers. Coat the spiedini with cooking spray; sprinkle evenly with 1⁄4 teaspoon salt and 1⁄8 teaspoon pepper. Place on a grill rack; grill 6 minutes or until done, turning once. Serve with salsa.

Variety is the spice to life, and having a go-to selection of recipes at the ready can make everything from sitdown dinners to impromptu backyard barbecues that much easier.

Vegans eschew all animal products such as dairy, eggs and meats. Salsa: 1 cup chopped flat parsley 2 tablespoons chopped almonds, toasted 2 tablespoons chopped fresh chives 3 tablespoons capers, chopped 1⁄2 teaspoon grated lemon rind 3 tbsp fresh lemon juice

1 tablespoon extra-virgin olive oil 1⁄2 teaspoon chopped fresh thyme 1⁄2 teaspoon chopped fresh oregano 1⁄4 teaspoon kosher salt 1⁄8 teaspoon freshly ground black pepper 1 garlic clove, minced

To prepare the salsa, combine the first 12 ingredients; set aside.

Tip: Prepare the salsa up to a day ahead, and assemble the skewers earlier in the day. Coat with the seasonings just before grilling.

When grilling for family and friends, mushroom and tofu burgers can be prepared specifically for vegan guests, but a versatile salad can be enjoyed by all and make for a delicious side dish. This recipe for “Chickpea Salad” from “Vegan Cooking for Beginners” (Publications International) by the Editors of Publications International is sure to please vegans and non-vegans alike. Place chickpeas in a medium bowl. Coarsely mash with a potato masher, leaving some beans whole.

Add celery, pickle and onion; stir to mix. Add mayonnaise and lemon juice; mix well. Taste and add 1⁄4 teaspoon salt or more, if desired. Sprinkle with pepper, if desired; mix well. Serve on bread with lettuce and tomato, if desired.
