Throughout the month of December, traditions fill people’s days and comprise the many reasons why individuals decorate, celebrate and dine the way they do this time of year. But few may know the origins of some of the most beloved holiday traditions. Christmas is rife with traditions that date back ages.
Christmas stockings The Christmas stockings of today may be a byproduct of various traditions. One such tradition dates back to a Dutch custom in which children would leave shoes full of food to feed St. Nicholas’ donkeys, and then St. Nicholas would leave small gifts in return.

century, when nuns would leave socks full of nuts, fruit and tangerines for the poor. This is why some people still put tangerines in Christmas stockings. Christmas tree Christmas Trees are everywhere this time of year. The use of evergreen trees predates Christmas and is associated with the pagan festival of Saturnalia, which celebrated the agricultural god Saturn with partying and gift-giving. During the winter solstice, green branches served as a reminder that spring would arrive anew. Germans are credited with first

Santa Claus Santa Claus’ origin story can be traced to St. Nicholas, a Christian bishop who lived during the fourth century. St. Nicholas was very generous and gave away his fortune to help the needy. He also did various other good deeds. St. Nicholas became infamous and began to be known by various names around the world. The Dutch called him Sinter Klaas, which was eventually transformed to Santa Claus. The jolly persona came later when 20th
Mistletoe Mistletoe is hung in doorways, and couples who stand beneath are encouraged to share a kiss. The tradition of hanging it in the house goes back to the times of the ancient Druids. Mistletoe was thought to bring good luck to a household and ward off evil spirits. The custom of kissing under mistletoe can be traced to England. Originally, a berry was picked from the sprig of mistletoe before the person could be kissed. When all the berries had gone, there could be no more kissing. Christmas bells Church bells ring for many special services, including Christmas mass. During Christmas midnight mass in the Catholic Church, the altar bells may be rung while the priest says the “Gloria.” Bells are part of caroling, and jingling bells are associated with sleighs and Santa’s reindeer.

What are the differences between sparkling wines?
A
s midnight approaches on New Year’s Eve, revelers anxiously anticipate toasting the arrival of a new year with a glass of something bubbly. Once the cork is popped and the drinks are poured, the party can truly begin. Although revelers may assume any fizzy beverage they are served is champagne, by the true definition of the word, they actually may be drinking something else — one of many varieties of sparkling wine. True champagne Authentic champagne is named after Champagne, France, the region where the grapes used to make it are grown, fermented and bottled. According to European law, the only labels that are allowed to include the name “Champagne” must be bottled within 100 miles of this region, which is close to Paris.
The taste of champagne is unique thanks to the soil in which the grapes are grown. It is a mineral-rich soil and imparts that flavor into the beverage. Champagne is made from a unique base of grapes that include Pinot Noir, Pinot Meunier and Chardonnay grapes. Experts with Wine Country also say that roughly 90 percent of all blended champagnes use a ratio of 2⁄3 red and 1⁄3 Chardonnay mixes.
Another component that sets champagne apart is the process by which it is made. It is strictly controlled by the Appellation d’Origine Controlée. This certification dictates how a producer may grow

the grapes and how the grapes can be harvested and processed. Champagne is produced by méthode champenoise, a process that is said to have been invented by a monk named Dom Perignon. This procedure involves double fermentation in bottles and creates an earthy, yeasty flavor. Sparkling wines Champagne is sparkling wine, but not all sparkling wines are champagne. Other notable types of sparkling wine include Italian Prosecco and Spanish Cava. Sparking wine is produced in regions of France as well as in the United States and Canada. But sparkling wine can be made just about anywhere grapes are grown. Sparkling wines are often doublefermented in steel containers instead of bottles.

People are drawn to other sparkling wines besides champagne for various reasons. For some, cost is a heavy consideration, as authentic champagne can be considerably more expensive than sparkling wine. In addition, some people find less expensive champagnes are not as palate-pleasing as sparkling wines.
Few things are more universally associated with celebrations than a bottle of bubbly. Subtle differences set sparkling wines apart from champagne, but personal preference is oftentimes the deciding factor when choosing which beverage to choose for a special occasion.

The round shape symbolizes wealth and prosperity. • Around Stonehaven, Scotland, people wield large fireballs for the Hogmanay festival on New Year’s Eve. The idea is to ward off evil spirits by swinging balls of fires over the heads of trained professionals and then tossing them into the sea. The tradition has endured for more than 100 years. • In the Eastern Orthodox Greek Church, Christmas isn’t celebrated until January 7. Aghios Vassilis, the Greek Santa Claus, makes his rounds on New Year’s Day. • Chilean families celebrate the arrival of the new year by

• Burmese people end the Thingyan water festival on New Year’s Day. Since April, they have celebrated the arrival of Thagyamin, a celestial Buddhist figure, with the firing of water cannons. The water-logged revelry ends with the new year.
• Siberians celebrate the new year’s with the planting of the “New Year’s Tree” underneath frozen lakes. This “yolka” is said to symbolize the coming of Father Frost, but also represents starting over. • Grapes are a hallmark of Spanish New Year’s celebrations. Throughout Spain, revelers gobble a grape per second as they count down the last 12 seconds of the year. Each grape corresponds to good luck for the 12 months of the new year.
• In Denmark, residents break old dishes on the doorsteps of family and friends on New Year’s Day. The bigger the pile, the more friends and good will in the new year. • In China, wthe new year will be celebrated on January 25, 2020 according to the lunar calendar, celebrants paint their doors red or hang red curtains or cutouts on windows to symbolize good luck.

One of the most recognizable traditions involves wrapping gifts. While the wrapping paper used today is a recent phenomenon, the tradition of wrapping gifts is centuries old, some historians suggesting it dates back to ancient times. Shop small businesses to improve the holiday experience

t’s the time of year when newspapers thicken with sales circulars and holiday advertisements. Consumers looking to beat the hustle and bustle and steer clear of the crowds this year may want to pay attention to local businesses in lieu of trekking to nearby shopping malls. Every time consumers visit local coffee shops to grab a latte, pick up a dress at a nearby boutique or patronize a farmer’s market down the street, they are supporting a small business. The Friday and Saturday after Thanksgiving are some of the busiest shopping days of the season, and they also can be some of the friendliest to small businesses.
Plaid Friday was conceptualized in Oakland. It may have been born in the Golden State, but the movement soon spread across the country. Plaid Friday is an alternative to big box stores’ Black Friday bonanzas. It is designed to promote both local and independently-
owned businesses during the holiday season. The name Plaid Friday was used to help people visualize the various threads of small businesses coming together to create a strong community fabric that was diverse and creativity. Shoppers can continue their small business patronage with Small Business Saturday. This, too, is a counterpart to Black Friday and Cyber Monday. The first event was created by American Express in conjunction with the nonprofit National Trust for Historic Preservation. Since its inception, many small business groups, merchants and politicians have touted the event and the Shop Small® mantra. The idea is that when small businesses thrive, communities and individuals thrive along with them.
The Small Business Administration says that, since 1995, small businesses have generated 66 percent of all new jobs in the United States. There are a number of big

• Spend more time in the kitchen. Add delicious scents to the home by way of freshly baked goods or holiday meals. Nothing beats the smell of cookies right out of the oven, and the scents can linger for hours.

• Make beeswax ornaments. Add scented oils to melted beeswax and pour into molds. Hang these creations as ornaments on trees or in other areas of the home.
Filling a home with fragrant decor takes a little ingenuity and planning. Here are some ideas to incorporate the scents of the holiday season into your decor.
• Use a real Christmas tree. An easy way to create a pine-like scent indoors is to select a real Christmas tree. Ask the tree farm which varieties are the most fragrant. If a fresh tree is not possible, fill a decorative basket with pine cones and evergreen boughs for that woodsy appeal. • Create a seasonal scented simmer. Take to the stove to make a homemade air infusion from ingredients in and around the house. Simmer pine branches, citrus peels, vanilla,
nutmeg, cinnamon, and whatever else can be placed in a pot or slow cooker with water. The scents will permeate the house for hours if enough water is added to the mixture.
• Make holiday sachets. Some of the same ingredients for the holiday simmer can be dried and sewn into sachets. Add ribbon and hang on real or artificial trees. Or tuck the pouches into various areas around the house.
• Experiment with scented candles. Scented candles can be found at various stores during the holiday season. Select among popular holiday aromas like pine, cinnamon, apples, and Christmas cookie varieties.
• Utilize essential oils. Natural food stores and other retailers may sell essential oils, which can be diluted and sprayed on surfaces or into the air. Exercise caution around upholstery, or test for staining before use.
• Craft some “gingerbread” ornaments. A mixture of cinnamon, applesauce and glue can be used to make ornaments or gift tags that resemble gingerbread cookies, and these ornaments have more staying power than actual cookies.
• Design a pretty pomander. Stud an orange with cloves. Cut off the top of the orange and hollow out a place for a small tea light. The warmth of the flame will produce more scent.

A sweet treat for get-togethers
P
ecans are a species of hickory native to northern Mexico and the southern United States. Pecan trees are cultivated for their edible nuts, and it can take 12 years for a tree to reach maturity and begin producing.
The history of pecans, which are the only major tree nut that grows naturally in North America, can be traced to the 16th century. Pecans are frequently enjoyed in southern cooking, particularly in desserts. There are many different ways to incorporate pecans into recipes, such as in delicious, chewy cookie bars. Enjoy this recipe for “Pecan Praline Cookie Triangles” from “The Pampered Chef® Stoneware Inspirations (The Pampered Chef®, Ltd.)” by The Pampered Chef® Test Kitchens.
Pecan Praline Cookie Triangles
Yields 64 Crust
21⁄2 cups all-purpose flour 3⁄4 cups powdered sugar 1 teaspoon baking soda 3⁄4 cups butter or margarine, melted
Filling 3 cups pecan halves, divided 2 cups packed brown sugar 3 eggs 4 tablespoons butter or margarine, melted 2 teaspoons vanilla extract 1⁄4 teaspoon salt powdered sugar, optional
Preheat oven to 350 F. For crust, combine flour, powdered sugar and baking soda in a batter bowl. Add butter; mix until crumbly. Lightly press crumb mixture over bottom of stoneware bar pan; roll lightly. Bake 15 minutes; remove from oven to a cooling rack.
Meanwhile for filling, reserve 1 cup of the pecans for garnish; chop remaining pecans. Combine chopped pecans, brown sugar, eggs, butter, vanilla, and
salt; mix well. Pour filling over warm crust, spreading to edges of pan. Arrange remaining pecan halves over filling. Bake 17 to 19 minutes, or until filling is set in center. Remove from oven; cool completely.
Sprinkle with additional powdered sugar, if desired. Cut into 32 squares using a utility knife; cut each square in half diagonally.

Mini Merry Meatballs Serves 24 1⁄2 pound ground beef brisket 1⁄4 pound ground beef ribeye steak boneless 1⁄4 pound ground beef (80 percent lean) 1 cup seasoned stuffing mix 1 egg, beaten 3 tablespoons water 1 teaspoon minced garlic 1⁄4 teaspoon salt 1⁄8 teaspoon pepper Cranberry Barbecue Sauce: 2 teaspoons vegetable oil 1⁄2 cup chopped white onion 1 tablespoon minced garlic 21⁄2 cups fresh cranberries 1⁄2 cup orange juice 1⁄2 cup water
1⁄3 cup ketchup 1⁄4 cup light brown sugar 2 tablespoons cider vinegar 2 tablespoons molasses 1⁄2 teaspoon ground red pepper Salt Combine all ingredients except garnish in a blender. Blend on high until smooth and frosty. Serve in a margarita glass. Garnish with dried cranberries and a lime wheel.
