• Freshness: Many people visit farmers markets because the fruits and vegetables sold at such markets seem to taste more fresh than those sold at chain grocery stores. People are not mistaken, as the produce available at farmers markets often comes from local farms, meaning there’s no long-distance shipping necessary. Locally sourced foods need not be frozen en route to the market, meaning foods purchased there tend to taste especially fresh. • In-season foods: Some grocery stores may sell fruits and vegetables even when those foods are out of season. Farmers markets only sell in-season fruits and vegetables. To grow fruits and vegetables out-ofseason, farmers may need to rely on chemicals or other unnatural methods. No such means are necessary when farmers stick to growing foods in-season. • Environmental benefits: According
to the Center for Urban Education about Sustainable Agriculture, food in the United States travels an average of 1,500 miles to get to consumers’ plates. Such journeys burn natural resources, pollute the air and produce sizable amounts of trash that ultimately ends up in landfills and/or the world’s oceans. Because food sold at farmers markets is locally sourced, considerably fewer natural resources are necessary to transport the food from farm to table, and the relatively short distances the food travels translates to less air pollution.

This is not only a great way to discover new and delicious foods, but also a way to promote biodiversity. • Hormone-free animal products: Farmers markets do not exclusively sell fruits and vegetables. Animal products sold at farmers markets are typically antibiotic- and hormone-free, which is both more humane to the animals and healthier than animal products produced with hormones or antibiotics. Tips For Hosting A Fun 4th Of July Party
T
he Fourth of July is a day to celebrate in the United States. Much about July makes the fourth day of the month the ideal time to celebrate. School is out, the weather is warm and the
generally relaxed attitude of summer has typically set in by the first week of July. People tasked with hosting Fourth of July festivities may not feel the same pressure
when hosting such gatherings that they would when hosting more formal affairs. The relaxed nature of summer often pervades Fourth of July festivities, but hosts can still take a crash course in summer hosting to ensure everyone has a good time. • Don’t try to break the mold. Some hosts may be tempted to think outside the box in regard to the foods and beverages they’ll serve at their Fourth of July parties. While hosts can still experiment and serve new foods and creative cocktails at their parties, many guests will be anticipating some Fourth of July staples, such as grilled hot dogs and hamburgers and cold beer and lemonade. Making sure such foods and beverages are served alongside more experimental fare won’t disappoint traditionalists, and those looking for something beyond the norm won’t be disappointed, either. • Embrace the red, white and blue. When decorating,
opt for red, white and blue decorations. This gives the party a distinctly Fourth of July feel. Red, white and blue napkins and tablecloths are readily available come July, and hosts with a gift for crafts can even create their own decorations to use year after year. • Prepare to entertain. Unlike holiday season gatherings that typically begin in the evening, Fourth of July parties tend to begin in the afternoon and extend into the night. That means hosts must not just feed their guests, but entertain them as well. Since Fourth of July parties tend to take place outdoors, plan lots of backyard games, such as badminton, bocce, Wiffle ball, horseshoes, and more. Hosts with swimming pools should have pool games readily available as well. • Leave the fireworks to the professionals. Hosts should not succumb to pressure, real or perceived, to supply fireworks at their Fourth of July
parties. Fireworks can lead to injuries and accidents and are best left to the professionals who put on community fireworks shows. Discourage guests from bringing their own fireworks by making it known they will be asked to leave the party if they do. • Arrange transportation home for guests. To make sure everyone gets home safe and sound, arrange in advance for some guests to serve as designated drivers. Hosts also should abstain from consuming alcohol during the party so they can get people home safe if necessary. Keep a list of local taxi company phone numbers on hand and encourage guests who plan to consume alcohol to use ridesharing apps to get to and from the party. Fourth of July festivities typically are less formal than other celebrations, but hosts still must plan their parties to ensure everyone has a fun, safe Independence Day.

ities and towns across the country commemorate special days with various festivities, particularly when warm weather beckons people outdoors. Fireworks long have been a popular way to cap off parades, concerts, sporting events, and national days of celebration. Entire communities come together to watch spectacular shows in which blazing pops of color light up the night sky. Smithsonian magazine reports that pyrotechnics displays have been astounding audiences all over the world for centuries. As early as 200 B.C. fireworks were developed in China to first scare off mountain men and later evil spirits. However, soon the Chinese incorporated “fire drug,” essentially saltpeter, sulfur and charcoal (a recipe for gunpowder), into their cultural celebrations. Early Chinese fireworks consisted of the gunpowder mixture stuffed in bamboo tubes. Fireworks have evolved since then, but by and large they’re still comprised of the same main parts: an oxidizer, fuel and chemical mixture to produce desired colors. Fireworks are a wonder to behold when they are part of professional displays, and their history can be interesting as well. • While the Chinese invented fireworks, Italians helped fine-tune them. Italians are credited with designing aerial shells and figuring out that certain metallic powders could create specific colors. • The largest consistent fireworks show in the United States is the Macy’s show in New York over
the Hudson River on July 4th. More than three million people view the show, which includes more than 40,000 shells. • The Walt Disney Company is the largest consumer of fireworks in the world, according to Business Insider. It also is the second largest purchaser of explosive devices, behind only the U.S. Department of Defense. • High-energy metal compounds like copper chloride emit colors like violet and blue in fireworks. Lowenergy compounds like strontium chloride produce orange and red. • The pattern fireworks will produce in the sky is determined by how stars are arranged inside of the shell. Stars are the cubes or spheres that contain the chemicals needed for the firework reaction. • Mental Floss notes that “daytime fireworks” are made up of colored smoke and can be seen during the day. • Individuals who are employed in the manufacture of fireworks must wear cotton clothing, including undergarments, as synthetic clothing can create sparks capable of detonating fireworks, according to Alamo Fireworks. • Various fireworks shapes have their own names.

Dinner Is All Rolled Up
W
hen the weather starts to warm, people are inspired to once again venture outdoors and spend more time away from home. People can benefit from having quick and easy dinner recipes at the ready so that hours are not spent in the kitchen after a day of fun in the fresh air. With mere minutes of preparation and about 15 minutes cooking time, this recipe for “Chicken, ham, and Swiss roulades” from “Real Simple Dinner Tonight: Done” (Time Home Entertainment) from the editors of Real Simple makes a simple weeknight meal that is tasty, too.
Chicken, Ham, And Swiss Roulades Serves 4 8 small chicken cutlets (about 1 1⁄2 pounds total) 8 thin slices cooked ham 8 thin slices Swiss cheese 4 tablespoons olive oil 6 cups mixed greens 1 cup grape tomatoes, halved 1 tablespoon white wine vinegar 1⁄4 cup whole-grain mustard
Directions - Heat oven to 400 F. Season the chicken with 1⁄2 teaspoon salt and 1⁄4 teaspoon pepper. Roll up each cutlet with 1 slice of the ham and 1 slice of the Swiss cheese. Skewer the roulades closed with toothpicks. - Heat 2 tablespoons of the oil in a large ovenproof skillet over medium-high heat. Add the roulades and cook, turning occasionally, until golden brown, 4 to 6 minutes. Transfer the skillet to an oven and roast the roulades until cooked through, 8 to 10 minutes. - Meanwhile, in a large bowl, toss the greens and tomatoes with the vinegar, the remaining 2 tablespoons of oil, and 1⁄4 teaspoon each salt and pepper. Serve with the roulades and mustard.

FROM CLOSURE TO
a transformative 15 mon Nestled amongst the pristine beauty of the Northern Pocono Mountains, Woodloch has been an oasis of family fun and relaxation since opening its doors back in 1958. Boasting lakeside activities, an award-winning golf course and world-class spa experience, the resort has something for just about everyone. After a banner year in 2019 that included being named “The Best Family Resort” by USA Today, the family-owned business was primed for another great year in 2020. But life doesn’t always go as planned. Just like many other businesses, Woodloch was stonewalled by the crippling effects of the global pandemic. For the first time ever, their welcoming doors were closed indefinitely to the public on March 17th, 2020. “At the time, like everyone, we were hopeful it would be a brief closure. April 1st was our targeted reopening,” says Brad Kiesendahl, owner. “As the situation evolved in those early days, we realized that wasn’t going to happen. It was certainly uncharted water for all of us.” Arriving at the conclusion that things would most certainly be different in spring of 2020, the Kiesendahl family and Woodloch staff realized this was an opportunity to get creative. “We decided to institute what would become ‘Woodloch At Home’- basically, as a means to bring some relief and fun to everyone’s living room during quarantine,” says Joey Ranner, Activities Director. “Through a series of do-it-yourself activities, craft projects, recipes and cooking demonstrations, and even ‘Concert From The Couch’ talent shows, Woodloch was able to share what they do best with frequent guests, and even new friends, thanks to the magic of the internet.” Simultaneously, Woodloch needed to craft a game plan for the new world that we would all face. The usual laissez-faire style of vacation would need to be shelved for a bit. “We needed to find a way to deliver that Woodloch ‘familiarity’ while considering the safety of both our guests and staff. Our new product, as different as it was, needed to feel like Woodloch,” says Brad Kiesendahl. “It required lots of moving parts and honestly some trial and error to perfect.” Pennsylvania granted permission for Woodloch to reopen at 25% capacity on June 5th, 2020. Prior to their arrival, guests were notified about new safety protocols that encompassed check-in temperature scans and reminders to download a new essential mobile app, just to mention a few. “In my 38 years of working here, Woodloch has always been ‘loosey goosey’ as far as scheduling. It wasn’t a stretch to start the day with our Olympics, do a quick go cart run, navigate a paddleboat on our lake and catch a ‘Name That Tune’ contest at 4:00, all on a whim. That became a thing of the past somewhat, as groups stuck to their ‘bubbles’ and as contact tracing became a priority,” says Joey Ranner. The resort’s new app helped guests plan their days by booking activity slots and evening entertainment reservations. This allowed staff to provide their trademark warm hospitality to one group at a time while logging guests’ locations in the event of an issue. It also provided ample time for staff to properly clean and sanitize any equipment. The usually packed Nightclub Theater featured two nightly performances of live bands, magicians, comedians and more. Woodloch’s famous Broadway-style theme show was sidelined indefinitely. The familiar and beloved dining experience also changed. With indoor dining on hiatus, all meals were “to-go,” and plenty of outdoor dining areas became popular with guests. As the team started to settle into this new Woodloch experience, state restrictions started to ease. Indoor dining returned, venue capacity increased and guests were certainly smiling just in time for fall.

The ever-clever Activities team even found a way to open a socially-distanced Halloween attraction; their “Fright Night” haunted walks were just as spooktacular as the traditional haunted hayrides. Another challenge arrived just a few weeks later. On Thanksgiving, indoor dining and gatherings were further restricted by state mandate. Though conditions had been improving, a late autumn surge in cases forced the resort to revert to older policies. Winter arrived, presenting new obstacles to the team. “New Years is typically our busiest time of the year,” says Joey. “Without any indoor gatherings, we had to get creative with our New Year’s programming.” The team put together a virtual celebration to be livestreamed to all the guest rooms, featuring family games, music sets from all of the house bands, and great dance music from the resort’s own deejays. “Essentially, every room and house accommodation got their own little ‘party-to-go’ that rivaled even ‘Dick Clark’s Rockin’ Eve.’” Outdoor activities such as Winter Olympics and snow tubing still elicited joy to anxious travelers. As winter set in, encouraging news of a highly effective vaccine shone some much-needed light at the end of the tunnel. Not only was Woodloch able to ease additional protocols in terms of dining and events, but they were also able to host several vaccine clinics on property for both staff and the surrounding community. As the number of vaccinated people steadily grows, optimism for the upcoming summer season has exploded, with guests eager to shed masks and mingle. “We now celebrate the one year anniversary of reopening, with a newfound appreciation for family and the time we are able to spend together,” says Brad Kiesendahl. “Though it was a truly challenging year emotionally, physically and financially, we count our blessings in the different kind of success we were able to obtain through the past year.” As Woodloch works to establish a more familiar plan and prepare for a full-house in summer of 2021, they are reminded of their team’s tenacity during the toughest of times. “We are incredibly proud of our team and know that we will face whatever challenges lie ahead with complete confidence.”

A Cold Concoction Perfect For Summer Nights

ummer is synonymous with many things. Vacations, warm weather and al fresco dining are part and parcel of many people’s summertime routines. Another beloved routine is enjoying a cold beverage on a warm summer evening. As summer breezes invite scores of people outside to relax on their patios, decks or balconies, a cold beverage can be just what’s needed to take such relaxing nights one step further. The following recipe for “Summer Cantaloupe” from Andrew Schloss’ “Homemade Liqueurs and Infused Spirits” (Storey Publishing) is easily whipped up and can go a long way toward making summer evenings especially sweet.
Summer Cantaloupe Makes about 1 quart 1 fifth (31⁄4 cups) 80-100 proof vodka 4 cups cantaloupe chunks 1 cup Simple Syrup (see below) Finely grated zest of 2 lemons 1. Muddle the vodka, cantaloupe and lemon zest with a wooden spoon in a half-gallon jar. Stir to moisten everything. 2. Seal the jar and put it in a cool, dark cabinet until the liquid smells and tastes strongly of melon, four to seven days. 3. Strain the mixture with a mesh strainer into a clean quart jar. Do not push on the solids to extract more liquid. 4. Stir in the Simple Syrup. 5. Seal and store in a cool, dark cabinet. Use within one year.

ong Island can be an extremely vulnerable region to natural disasters, especially hurricanes. June 1 marked the beginning of the Atlantic Hurricane Season, which runs through November 30. Due to the pandemic, in 2020 our neighbors were faced with more health and safety concerns than ever. The dangers that came from last year’s destructive storm, Hurricane Isaias were vast, and at the same time there was a shortage of product essentials. With 18 named storms predicted for 2021, it is crucial to be prepared for potential disasters, especially for vulnerable populations including seniors and young children. Recognizing the importance of preparedness, United Way of Long Island, 211 Long Island and PSEG Long Island developed BeReadyLI. org, a comprehensive online resource aimed at helping residents prepare before, during and after disasters. Hurricane Preparedness Guide
ropical storms like hurricanes occur every year. Hurricanes have the potential to be very powerful and destructive storms. The National Weather Services says that, on average, 12 different tropical storms will form over the Atlantic Ocean, Caribbean Sea or Gulf of Mexico during hurricane season every year. Of those storms, six will turn into hurricanes. Knowing how to behave before, during and after a hurricane can save lives and reduce injury risk. The following are important safety guidelines to follow during hurricane season. • Evacuate if the call is made. It can be tempting to try to be a hero and stay home when an area is being evacuated. However, when weather officials recommend evacuation, heed those warnings. It can be difficult for emergency personnel to reach people who stay behind, and that can greatly delay care and divert resources needed elsewhere. • Consider the storm surge. Storm surge can travel several miles inland, especially along bays, rivers and estuaries. Even if you think you are far from the coast, heed warnings about storm surges. • Keep a list of contacts. Keep contact information for emergency management offices, county EDITION FIVE
law enforcement, state law enforcement, local hospitals, and more at the ready. Keep it handy with other hurricane supplies. • Evaluate and know your flood risk. FloodSmart. gov is a portal for flood risk in particular areas in the United States. See where your house falls so you’ll be armed with accurate information should a storm arrive. • Stockpile emergency supplies. Water, nonperishable foods, batteries, flashlights, phone chargers, battery-powered radios, blankets, rain slickers, and rain boots are just some of the items to include in a hurricane readiness kit. • Have a plan in place. Know where family members will meet up in the event a hurricane blows in. Be sure to plan for locations away from home if evacuation is necessary. • Gauge safety before returning. Wait until an area is deemed safe before heading home or venturing outdoors. Downed power lines, debris, standing water, and other after-effects of hurricanes can be hazardous. By exercising due diligence, people can weather hurricanes and quickly get on the road to recovery.

June Is PTSD Awareness Month Help And Hope Is Found Right Here On Long Island
M
any people are aware of post-traumatic stress disorder, or PTSD, a mental health problem that some people develop after experiencing or witnessing a life-threatening event. However, for some, it can be hard to understand just how serious this disorder can be. While it has been noted that a diagnosis of PTSD requires exposure to an upsetting traumatic event, that exposure can be indirect rather than firsthand. PTSD is not exclusive to those who have served in the military, however, it has long been linked to combat veterans. According to the U.S. Department of Veterans Affairs, as many as 20% of veterans who served during Operations Iraqi Freedom or Enduring Freedom have PTSD. In addition, the USDVA notes that estimates now suggest as many as 30 percent of Vietnam veterans have had PTSD in their lifetime. Because some people may assume that only firsthand exposure to trauma can lead to PTSD, many may be suffering in silence. That makes it
all the more important that people learn to recognize the symptoms of PTSD and those that experience this disorder should seek help; there is always hope and you can find that hope right here on Long Island. Paws of War is a non-profit organization located in Nesconset, NY. They provide essential and supportive services to our heroes in need by incorporating the love and benefits of pets. For example, service dogs can help combat the daily symptoms of PTSD. They can be trained to pick up stress signals and intervene with their owner to shift focus back to a positive environment. Paws of War runs various programs to support rescues, Veterans, Military and First Responders, some of these programs include their War-Torn Cats and Dogs Program, Mobile Veterinarian Program, Training Program and Animal Rescue Program. Their War-Torn Dogs and Cats Program is where this organization meets the requests of soldiers serving overseas to bring a rescue pet of
theirs home from the war-scarred areas they serve in. Their Mobile Veterinarian Clinic Program allows them to serve disabled Veterans and First Responders by providing free veterinarian services to their furry family members. Their Animal Rescue Program rescues dogs and cats of any breed, background or age. It also addresses situations when a dog or cat needs fostering/surrendering while a Veteran or a First Responder has to undergo short term or long-term treatment in a medical facility or if they enter circumstances where they cannot take care of their pet for a period of time. Lastly, their Training Program, includes free training for both service and/or companion animals of any Veteran or First Responder. Paws of War accommodates these individuals with the free training whether they received a pet from them or not; no one is turned away. Every service this organization offers is at no cost! raise will be applied to their programs (a donation can be given to a specific initiative of theirs if requested). The second ranking of 20 U.S. grocery retailers’ efforts to reduce single-use plastics from Greenpeace USA finds that all of the supermarket chains in the report are failing to adequately address the plastic pollution crisis, and that even retailers publicly committed to eliminating single-use plastic could be doing more to prioritize their efforts, engage with suppliers, and offer transparency with customers and the broader public. “There is not a single place that individuals are confronted with more single-use plastic than in our grocery stores, yet companies continue to

In 1971, a compassionate, driven woman organized a picket line to protest the deplorable living conditions for over 5,000 residents in the Willowbrook State School in Staten Island, NY. At the time, Willowbrook was the nation’s largest institution serving children with development disabilities, and it had fallen into massive disrepair due to budget cuts. That woman was Victoria Schneps Yunis. Her daughter Lara had been diagnosed with severe brain damage at an early age, and as a result she was among Willowbrook’s residents. Victoria and others advocated vigorously for the rights of the Willowbrook residents. One year later, their advocacy would result in a scathing investigative news report by television reporter Geraldo Rivera. His “Willowbrook: The Last Great Disgrace” report exposed the institution’s horrendous conditions, igniting widespread public outcry and ultimately forcing Willowbrook’s closure. For Victoria, this closure was just the beginning, and her efforts would result in the founding of an organization with a far-reaching impact and a far different mission for people with intellectual and developmental disabilities and autism. That organization would come to be known as Life’s WORC, which purchased its first group home in Little Neck, Queens, a few years later. Its first residents were former Willowbrook residents. Throughout decades that followed, Life’s WORC expanded its reach and opened more group homes. There are now 45 beautiful residences located in Manhattan, Queens, Nassau, and Suffolk. Each home is maintained to the highest safety and health standards. Life’s WORC residents benefit from a person-centered approach, providing clinical services, emotional care and other supports needed for their personal fulfillment and wellbeing today and into the future. In the early 2000s, Life’s WORC’s growth prompted a relocation of its headquarters to larger facilities in Garden City, NY, and its Day Habilitation program expanded to six locations. The organization’s next major milestone came in 2015 when it opened the Family Center for Autism. With its inclusive environment and robust programming, the Family Center for Autism is a social, recreational, and educational resource for individuals of all ages who can access programs ranging from art, camps, culinary, sports and fitness, to music and movement, science and technology, salon and spa, trade skills, and family respite. Most recently, Life’s WORC added Trust Services to its comprehensive list of offerings. Working closely with attorneys, family members and benefactors, Life’s WORC’s experienced trust professionals establish and manage supplemental needs, self-settled, third-party, and surplus income trusts providing financial protection for people with intellectual disabilities, traumatic brain injuries, and autism. These trust services are now meeting the needs of over 300 people with trusts valued in excess of $7 million. Today, in its 50th Anniversary year, Life’s WORC has an annual operating budget of over $60 million and supports over 2,000 people. This budget is meticulously managed by its well-respected Board of Directors, led by Chair Lynne Koufakis, and its Chief Executive Officer Janet Koch, who previously served as Life’s WORC’s Chief Financial Officer. Victoris Schneps Yunis remains a vital advocate for Life’s WORC and those it serves, holding the distinction as Honorary Board Member. Geraldo Rivera, whose impassioned report earned him a Peabody award, is honored by Life’s WORC each year at its Annual Geraldo Rivera Golf Classic. The Dos And Don’ts Of Fire Pits M
any homeowners relish any opportunity to retreat to their back yards, where they can put up their feet and relax in the great outdoors. That retreat-like escape is made even more relaxing when sitting around a fire pit. Fire pits can be found in millions of suburban backyards across the globe. Fire pits have become so popular that a recent survey of landscape architects conducted by the American Society of Landscape Architects revealed they were the most sought after outdoor design element. Homeowners who are only now joining the fire pit revolution can keep these dos and don’ts in mind as they plan their summer s’mores sessions. DO keep the fire pit a safe distance away from the home. Fire pits should be located a safe distance from the home at all times, but especially when they’re in use. Home design experts recommend keeping fire pits a minimum of 10 to 20 feet away from a house or other structure, such as a shed or a detached garage. The further away the
fire is from houses and other structures, the less likely those structures are to catch on fire. DON’T place the fire pit beneath trees or next to shrubs. Storing Firewood Safely
F
ueling an indoor or outdoor wood-burning fire requires plenty of wood. That means having ample firewood at the ready and, perhaps more importantly, keeping that wood dry. Storing wood so it remains dry and ready to use can involve different strategies. For starters, it is important to keep firewood off the ground. Wood that comes in contact with soil creates a natural habitat for organisms that consume wood, including insects, bacteria and fungi. A basic wood-storing structure can keep wood off of the floor. It's also important to know whether your wood is green or currently wet. To burn efficiently, firewood needs to be dry. Wet wood needs ample circulation to dry out, and green wood (wood that has been recently cut) needs time to dry out and become seasoned. Therefore, people should resist the urge to completely cover wood piles; otherwise, air cannot reach the wood. Circulation is important for dry, seasoned wood. A tarp that covers the top of the wood and allows rain water to cascade down but still enables breezes to blow through the firewood is ideal. Moisture will also be able to escape, and the tarp will keep the majority of the wood dry in the process. Similarly, stack the wood away from a wall or other surface, even if that is another stack of wood. This will also facilitate air circulation. While most people store dried wood outside,
if there is room in a shed, move the wood inside. Just be sure the building has good air circulation, and be aware that firewood creates a good habitat for rodents and other pests.

branches can easily catch embers and be lit ablaze, so make sure fire pits are not placed in locations that increase that risk. DO clean out seasonal debris. It can be tempting to let seasonal debris resting inside the fire pit burn away during the season’s first s’mores session. Burning debris poses a serious safety risk, as embers can easily be blown out of the fire pit and catch nearby trees or shrubs or even a home on fire. The National Fire Protection Association advises homeowners that embers blowing from a backyard fire pose the same threat to homes as if they are from a wildfire. DON’T let fire pits burn near flammable materials. Store firewood piles a safe distance away from the fire pit while it’s in operation. It may be convenient to keep firewood right next to the fire pit while the fire is burning, but that increases the risk that embers will land on firewood and start a fire outside of the pit. DO check the weather report prior to starting the fire. Windy weather increases the risk of embers blowing around and potentially landing on the house, other structures around the property or trees. If the weather report is calling for gusting winds, burn a fire on another night. DON’T leave a fire pit fire burning. Unattended recreational fires are illegal and incredibly dangerous. Homeowners should never leave fire pit fires burning unattended or allow fires to slowly die out overnight. Always extinguish the fire before going inside and stop adding wood to the fire roughly one hour before you plan to go inside. Water or sand can be poured on ashes to extinguish the fire. Once homeowners are confident a fire has been extinguished, ashes can be spread around to ensure there are no hot spots still burning. If there are, start the extinguishing process over again. A night around the fire pit is a summertime tradition in many households. Safety must be as much a part of such traditions as s’mores.
