Growing up on Long Island, I can recall the cold winters when I would long for and daydream about the first bloom of spring. I would relish the vacation my family and I would take each year during winter break to enjoy someplace warm and sunny on the beach.
Though I am still not a fan of temperatures that drop below 40 degrees, as I have matured, I have come to appreciate each of the four seasons that we are blessed to experience here on Long Island. When you lean into moments, you can make them beautiful and memorable. Activities like sledding or snowboarding with my son, sitting by a warm crackling fire with a blanket and a good book, whipping up heartier meals, making snow angels and sipping a mug of hot coca are just some of the cherished moments I now look forward to during the winter months. February is the month of fluffy pajamas and socks, warm mittens and scarfs, and taking in the splendor of a Winter Wonderland on our beautiful and magical island. This month, I will be throwing caution to the wind and going ice skating for the first time in years. Wish me luck!

Sweating when it’s cold out can increase a person’s risk for hypothermia. Sled styles: Sleds come in many different styles, each with its own advantages. Sleds with metal blades will work like ice skates, balancing riders’ weight on two metal runners. These sleds can work well during icy conditions or with hard-packed snow. Toboggans can fit multiple people, which can increase the fun factor and downhill speeds. Saucer-style sleds are good for one or two people. Foam liners on some saucers can absorb shock for riders, making those downhill bumps a little easier on the backside. Keep in mind that sleds with steering mechanisms are easier to control, which can equate to safer sledding.

An Environmentally Friendly St. Patrick's Day

reen is the color most associated with St. Patrick’s Day, and green also can be the primary mindset of hosts and hostesses when planning Paddy’s Day revelry. As celebrants prepare to pay homage to Irish culture and the accomplishments of St. Patrick, they can include eco-conscious practices in the festivities.
For many people, St. Patrick’s Day is a day to let loose and have a good time. Parades are abundant, and food and drink often are enjoyed in copious amounts. While this excess can make for a fun and raucous day, those who are conscious of their carbon footprints can scale back in some clever ways. Enjoy a Local Brew. While many may prefer a pint of Ireland-brewed Guinness on St. Patrick’s Day, imported beers have larger carbon footprints than local beers thanks to trans-Atlantic shipping and delivery to nearby retailers. Instead of Guinness, consider a locallybrewed beer. Homespun breweries are a growing niche business in communities big and small. If you’re more adventurous, invest in a home-brewing kit and try your luck with your own flavor profile. Skip the confetti or ticker tape. Attending a parade can be the pinnacle of St. Patrick’s Day celebrations. When so many people gather in one place, there’s a greater propensity for waste and litter. Although garbage cannot be avoided, towns and cities can help curtail the mess by avoiding confetti, balloon drops and ticker tape. Birds routinely get snagged by balloon strings, or they may
inadvertently swallow popped latex balloons thinking they’re food. Confetti can wash away into storm drains or clog sewers. Bubbles, laser lights and other plastic- or paperfree items can be used instead and are better for the environment.
Invest in reusable products. If your’s is the go-to house for St. Patrick’s Day revelry, purchase tablecloths, dishes and cups that can be used again and again. This cuts down on the number of disposable items that get put in the trash and eventually find their way into landfills.
Transform your leftovers. Irish soda bread, corned beef, potatoes and much more are par for the culinary course come St. Patrick’s Day. Rather than discarding leftovers, consider recipes that will put those leftovers to good use. Dice up the corned beef to add to egg dishes or quiches. Post-Paddy’s Day sandwiches also make a delicious treat. Potatoes can be mashed and transformed into croquettes. Or they can be diced to make hash browns to go with those corned beefenhanced eggs. Spread soda bread with a sweet jam and instantly turn it into a dessert. Or crumble the bread to use in a delicious bread pudding. Splurge on an experience. Rather than material goods, if you want to set your party apart, invest in an experience that produces no waste. Contract with Uilleann pipers who can add a Celtic flair to the festivities. Stay Safe and Warm During Winter Workouts
A
thletes devoted to outdoor workouts do not abandon their routines when winter rears its chilly head. While it can be difficult to embrace the great outdoors when temperatures hover around freezing, maintaining your motivation bodes well for your fitness goals the rest of the year. Staying warm is a top priority for athletes who exercise outdoors during winter months. While there’s no guarantee winter winds won’t test your willpower, there are ways to stay warm when working out in colder climates.
For years, many people subscribed to the conventional wisdom that suggested people lose 40 to 45 percent of their body heat through their heads. But in 2008, researchers at Indiana University debunked that myth, suggesting that if humans lost that much heat through their heads, they would be just as cold when going outside without a hat on as they would be if they left home without wearing any pants. But wearing headgear when exercising outdoors is still a good idea, as the head is more sensitive to changes
in temperature than many other areas of the body. A wool hat you can pull down over your ears can protect them from getting too cold. Athletes may also want to consider ski masks or other facial covers that can protect their faces.
Layering has long been a reliable way to beat the cold when temperatures are at their lowest. But layering must be done correctly to be effective. When choosing your workout gear, choose an inner layer that will move moisture away from your skin. Cotton retains moisture, and that means your sweat will cling to your body and make you feel cold. Once you find a shirt made with moisture-wicking material to wear against your skin, look for a second layer that also wicks moisture so you can more effectively control your body temperature. Your outer layer should be capable of handling the elements, so look for something that is waterproof and wind-resistant. Feet can easily succumb to cold temperatures when exercising outdoors, but you can employ the same strategy with your socks that you do with your layers. When

choosing workout socks, avoid cotton socks that don’t wick moisture away from your feet. Acrylic can be more effective at wicking moisture away from your feet than cotton.
Know your weather reports. While it’s admirable to stay on course with your outdoor workouts in the winter, don’t allow your devotion to overtake your common sense.
Check the forecast before beginning an outdoor exercise, paying particular attention to the wind chill. According to the Mayo Clinic, frostbite can occur when skin is exposed to wind chill levels below minus 18 F for 30 minutes. If need be, shorten outdoor workout routines and find ways to exercise indoors when wind chills get dangerously low.

The Origins of Popular Winter Sports

any people spend winter huddled indoors. For winter sports enthusiasts, however, the arrival of snow and chilly temperatures means the start of a season of outdoor fun. Those who see winter as a time to embrace their love of sport may appreciate learning more about some of the sports that are most popular during the colder months of the year.
Ice Hockey
Hockey is one of the most popular winter sports. In 1994, Parliament passed the Canada’s National Sport Act, which declared hockey the official national winter sport of Canada. The origins of ice hockey are somewhat uncertain, though some historians claim the first set of rules to govern the sport were written by students at Montreal’s McGill University in the 1870s.
Downhill (Alpine) Skiing
Snowsports Industries America indicates that, in the 2014-2015 season, more than nine million American Alpine skiers took to the slopes, and the sport continues to attract new devotees each year.
Historians state that skiing evolved as a method to cross the landscape in the winter when marshlands froze over. Cave drawings suggest that man used skis during the last Ice Age in the Palaeolithic period. Yet the birth of modern downhill skiing is often traced to the 1850s when Norwegian legend Sondre Norheim popularized skis with curved sides and made skiing a sport instead of just a mode of transport. Skiing ultimately became quite popular in Russia, Finland, Sweden, and Norway. Today there are various types of downhill skiing, including mountain skiing, extreme cat skiing and heli skiing.

When heart-shaped chocolate boxes are not enough, resourceful gifters can turn to homemade desserts to really capture the spirit of Valentine’s Day.
Lightly grease two baking sheets, or line with parchment.
To make the cookies: Combine the butter, hot chocolate mix, brown sugar, baking powder, salt, and espresso powder in a mixing bowl. Beat until the mixture is smooth. Add the egg and vanilla, and beat until thoroughly combined. Weigh out your flour. Or measure it by gently spooning it into a cup, then sweeping off any excess. Add the flour to the cookie mixture, stirring to combine. Mix in the chips and cocoa nibs. Drop the dough by teaspoonfuls onto the prepared baking sheets — a teaspoon cookie scoop works well here. Space the cookies at least two inches apart. Bake the cookies for 8 to 9 minutes, until the surface is set, but the cookies aren't quite fully baked. Take the cookies out of the oven and press a chocolate disk into the center of each cookie. Return the cookies to the oven for 1 to 2 minutes longer, until the chocolate begins to turn shiny and softens. Remove the cookies from the oven once again, and sprinkle the melted chocolate disk with your garnish of choice.
Allow the cookies to cool right on the baking sheet until the chocolate disks are set. Store well-wrapped cookies at room temperature for a week or so; freeze for longer storage.

Protect Your Home From Winter's Freeze
F
reezing temperatures may be good for ice skating or building snowmen, but sub-freezing temperatures can be dangerous for the average person and his or her home.
Cold weather often leaves people scurrying to do whatever is necessary to safeguard themselves from the big chill. But it’s important
that homeowners also protect their homes in cold weather: Plumbing and pipes may be vulnerable to cold weather. Frozen pipes can burst and cause substantial damage to a home, potentially causing flooding and structural damage. Homeowners should disconnect and drain garden hoses. Water to outdoor hose bibs should be turned
off, though the valves on these outdoor faucets should be left open to drain. Also, outdoor faucets can be covered with insulating foam covers.
The Red Cross says pipes that freeze most frequently include pipes in unheated areas, such as basements, attics, garages, and crawl spaces. Close vents to the outside in areas like attics and basements to limit the amount of cold air that gets indoors. Think about insulating unheated areas, as well as using pipe sleeves, heat tape or wraps on exposed pipes. By opening kitchen and bathroom cabinet doors, homeowners can allow warm air from a home to reach pipes under the sink. During extreme freezes, keep cold water dripping from a sink to prevent pipes from freezing
hot water heaters. Inspect the heat exchanger for cracks, install a clean air filter and make sure all thermostats are working properly. Homeowners who heat their homes with oil, wood or coal should make sure they have plenty of fuel on hand. Shortages can occur, and it may take some time for new fuel to arrive in the midst of a cold snap.
As a precaution, homeowners can rely on portable space heaters to fill in the heating gaps during the most freezing temperatures. Exercise extreme caution with these devices, by purchasing a portable heater that safeguards against overheating. Also be sure to read the enclosed directions, turn off the heater when leaving the room and remembering to avoid overloading outlets.
It’s important to ensure that heating systems are working properly. It may only take hours for the interior of a home to reach dangerously low temperatures without adequate heat. Homeowners should schedule annual checkups of furnaces and

Whip Up Something Sweet For Your
Sweetheart
Certain times of year give everyone license to indulge in sweets. No day of the year is more sweets-friendly than Valentine’s Day!
Heart-shaped boxes of chocolate are ubiquitous come mid-February. While no chocolate devotee is liable to scoff at a box of delicious chocolates, lovers who want to hit a home run with their sweets-loving sweetheart can try their hand at crafting their own confectionary concoction this Valentine’s Day. This recipe for “Chocolate Cardamom Truffle Cake” from Maxine Clark’s “Chocolate” (Ryland, Peters & Small) will amaze that special someone. This recipe serves 10-12.
• Amaretti Base
• 5 ounces amaretti • 1/2 stick (4 tablespoons) unsalted butter • 5 tablespoons sugar
Cardamom Truffle Filling
• 2 1/3 cups heavy cream • 4 to 6 green cardamom pods, lightly bruised to open them 25 ounces dark chocolate (60-70% cocoa solids), grated • 1⁄2 stick (4 tablespoons) unsalted butter, cubed
Cardamom Cocoa Sugar
• 3 green cardamom pods • 1/4 cup sugar 1/2 cup unsweetened cocoa • 1 10-inch cake pan with a removable base, base and sides lined with nonstick parchment paper
DIRECTIONS
To make the amaretti base, finely crush the amaretti in a food processor or put them in a plastic bag and crush with a rolling pin. Melt the butter and sugar in a pan over low heat, then stir in the amaretti crumbs. Press the mixture evenly over the base of the prepared cake pan and refrigerate for 20 minutes.
To make the cardamom truffle filling, put the cream and cardamom pods in a pan and heat until almost boiling. Remove from the heat and set aside to infuse for 20 minutes. Meanwhile, put the chocolate and butter in a saucepan. Strain the infused cream through a fine strainer onto the chocolate (the cream will be warm enough to melt the chocolate). If it doesn’t melt, warm over very low heat, stirring occasionally, but do not allow to boil. Stir in the liqueur, then set aside until almost cold, but not set. With an electric mixer, beat the chocolate mixture for a couple of minutes — this will give the cake a lovely airy texture. Pour onto the amaretti base. Let cool, then cover and refrigerate for at least 6 hours, or up to 48 hours before serving.
To make the cardamom cocoa sugar, remove the black seeds from the papery cardamom pods and put the seeds in a spice grinder with the sugar and cocoa. Grind to a powder. Carefully remove the cake from the pan and peel off the lining paper. Set on a chilled serving plate and sift the cardamom cocoa sugar evenly over the top. Serve immediately, cut into very thin slices.
