Jack Kerouac’s Margarita Serves 1 2 ounces silver tequila 3⁄4 ounce Cointreau 3⁄4 ounce lime juice, freshly squeezed 1 teaspoon agave nectar (optional) Rock salt for garnishing Lime wedge for garnishing
Directions: Pour salt onto small plate. Rub a lime wedge around the lip of a rocks glass and dip the rim in the salt. In a cocktail shaker filled with ice, combine tequila, Cointreau, lime juice, and agave, if using. Shake vigorously. Strain into the salt-rimmed rocks glass over ice. Garnish with the lime wedge.

Coming in at just around seven calories per mediumsize shrimp, this crustacean is low in calories and high in lean protein and is one of only a few dishes that provides the beneficial antioxidants selenium and astaxanthin, according to The American Shrimp Company. The majority of North American shrimp is harvested from the Gulf of Mexico, ensuring fresh catches for the U.S. and Canada. Around 244 million pounds of shrimp are produced each year. An abundance of shrimp means the opportunities for delicious meals are endless. For something with a lot of flavor and crowd appeal, try this recipe for a “Shrimp Quesadilla” courtesy of Eastern Fish Company. Plump shrimp are nestled between tortillas and seasoned with familiar Latin flavors, ideal for a fast meal any time.
Shrimp Quesadilla Serves 6 2 tablespoons vegetable oil 1 onion, sliced 1 red bell pepper, sliced 1 teaspoon salt 1 teaspoon ground cumin 1 teaspoon chili powder 1 pound uncooked medium shrimp, peeled and deveined 1 jalapeño pepper, seeded and minced (optional) 1 lime, juiced 1 teaspoon vegetable oil, or as needed 6 large flour tortillas 3 cups shredded Mexican cheese blend
Directions: 1. Heat 2 tablespoons vegetable oil in a large skillet over medium-high heat. Cook and stir onion and red bell pepper in the hot oil, stirring frequently, until onion is translucent, and peppers are soft, around 6 to 8 minutes. 2. Stir salt, cumin and chili powder into onion and bell peppers. 3. Stir shrimp into mix and cook until shrimp are opaque and no longer pink in the center, 3 to 5 minutes. 4. Remove skillet from heat; stir jalapeño pepper and lime juice into shrimp mixture. 5. Heat a skillet over medium heat and brush with about 1 teaspoon vegetable oil. 6. Place a tortilla in the hot oil. Spoon about 1⁄6 shrimp filling and 1⁄2 cup Mexican cheese blend on one side of tortilla. Fold tortilla in half. 7. Cook until bottom of tortilla is lightly browned, about 5 minutes; flip and cook other side until lightly browned. ndependence Day is a celebration of the United States of America. The holiday is marked by fanfare and large parties, complete with barbecues, fireworks and parades. As fun as July 4th festivities typically are, injuries, particularly those involving fireworks, are a concern that celebrants should not take lightly. According to the United States Consumer Product Safety Commission, more than 15,000 people were treated for fireworks injuries in emergency rooms in 2020. However, fireworks aren’t the only danger this time of year. In order to remain safe, individuals can heed these tips. • Do not drink and drive. Alcohol consumption may accompany Independence Day festivities. For those planning on using a car to get to and from parties, it is essential to designate a driver who will not imbibe. Otherwise, utilize any number of ridesharing services or available taxis. • Swim smartly. Always swim with a buddy, and consider hiring a lifeguard if you’ll be hosting a pool party and cannot keep a watchful eye on guests in the pool. Adults also should not swim intoxicated, as it can impede the ability to stay afloat and may lead to risky behaviors.

Kids running around with sparklers in hand could be a recipe for disaster, as sparklers burn extremely hot. Make sure children do not wave them around or others can get burned. Keep a bucket of water handy to properly extinguish the sparklers. • Review safe boating practices. If July 4th festivities find you out on the water, be sure that life jackets are worn and set boating and water safety rules for the family. • Check in with a vet. The Fourth of July can be traumatic for pets not accustomed to fireworks and other loud noises or crowds. Behavior therapy, medication and ensuring that pets do not run away from home and get lost may be necessary. • Watch food temperatures. Do not leave food out in the hot sun for too long; otherwise, harmful bacteria can grow and potentially cause foodborne illnesses. The USDA Food Safety and Inspection Service says to never leave food out of refrigeration for more than two hours. If the temperature is above 90 F, food should not be left out for more than one hour.

Father’s Day History
E
ach year, the third Sunday in June is a time to pay homage to fathers and the millions of other men who have stepped into the role of father. While it may seem as though Father’s Day has been around forever, it didn’t become a nationally recognized holiday in the United States until 1972, when President Richard Nixon signed Joint Resolution 187 into law. Many thank Sonora Smart Dodd for making Father’s Day happen. In 1909, while attending a Mother’s Day sermon in church, Dodd felt fathers were equally deserving of praise. To honor her own father, a Civil War veteran and widower who raised six children alone, Dodd petitioned for a Father’s Day on June 5th (the anniversary of her father’s death) in her native Spokane, Wash. The celebration was deferred to the third Sunday in June. Another account says Grace Golden Clayton came up with the idea for a Father’s Day in 1908 in Fairmont, West Virginia. Clayton was inspired to celebrate fathers after 361 local men perished in a deadly mine explosion. Clayton brought the idea up to the minister of her local church. Historians say that Father’s Day may even
be a much older idea. St. Joseph’s Day, which was celebrated each year on March 19 in Catholic nations of Europe since the medieval era, and later elsewhere around the world, commemorates Joseph, the husband of Mary and father figure to Jesus. It was said that Joseph should be held up as the ideal example of fatherhood. The Coptic
