Pre-Winter Perennial Pruning Pointers
F
oliage and football might be two things people instantly associate with fall, but there’s more to this beloved season than brightly colored leaves and action on the gridiron. Gardeners know that spring is an ideal time to plan and plant their favorite flowers and most flavorful fruits and vegetables. However, seasoned gardeners know that gardening is a year-round commitment. Pruning is one of the keys to keeping perennials coming back for years to come, and fall is an ideal time to take on this important task. Pruning perennials in the fall is not a one-size-fits-all endeavor. According to the Old Farmer’s Almanac, some perennials can be cut down after the first killing frost, while others can be left to benefit wildlife, including birds and insects. Understanding pruning and when to do it this fall can help gardeners lay a strong foundation for their gardens that will benefit them next spring.
Almanac notes that bee balm and phlox are prone to powdery mildew and should be cut back once they’re gone. Hostas harbor slug eggs, so they, too, should be pruned after a hard frost. Hosta leaves that have fallen on the ground should be removed as well. There’s no need to cut back certain perennials if they’re healthy. For example, hardy geraniums do not require pruning in the fall, and Penn State Extension notes that hardy perennials like garden mums are more likely to survive a cold winter if they’re left intact. Many farms offer a variety of apples, which may be harvested at different times. For example, in the northeastern United States, Gala apples tend to be harvested in late summer, while Granny Smith apples may be best picked in early October. • Beets: The Spruce: Eats notes that beets may be in season in temperate climates from fall through spring. • Broccoli: Fresh broccoli makes a healthy addition to any dinner table, and

Fall And Winter Skincare Tips

s summer transitions to fall, many changes take place. In addition to changing landscapes, men and women may need to adapt their health and wellness habits to ensure that they stay healthy and happy. Part of that daily regimen includes how to care for skin as the seasons change. Just as skin requires certain protection from the sun and heat in the summer, skin has special needs in the fall and winter. Fall and winter are often characterized by cold, dry weather, which can make these times of year particularly challenging for people with dry or sensitive skin. These tips can help people maintain their skin’s appearance and health. • Don’t Skip The Sunscreen. Sunscreen is not a summer-only requirement. UV rays can damage the skin any time of year, even if the rays are not as strong as during the summer. UV radiation accelerates and increases the risk of skin cancer. It also can lead to premature aging. Utilize a sunscreen with an SPF of 30 or higher every day. • Invest In A Humidifier. Dry, cold temperatures can rob the skin of essential moisture, even indoors. Dermatologists
suggest using a humidifier at home to boost the amount of moisture in the air. This can make skin more comfortable and can have other health benefits as well. • Skip Hot Showers. It can be tempting to sit under a hot stream of water to warm up. However, hot water dries out the skin by depleting its stores of natural oils, says Glacier Med Spa. Take warm showers instead and don’t stay in for longer than 15 minutes. • Limit Exfoliation. While exfoliation can remove dead skin, overdoing it can make already sensitive skin more raw. Increase the time between exfoliation treatments. Consult with a dermatologist for more advice about dealing with flaky skin. • Don’t Forget Your Lips. Using a thicker moisturizer on the body and face can help add and retain moisture, but pay attention to your lips and eyes as well. Something as simple as petroleum jelly on the lips can help prevent chapping. Invest in a quality eye cream to help the delicate skin around the eyes as well. Celebrate Oktoberfest

With Traditional Fare
O
ktoberfest is a 16 to 18 day festival that begins at the end of September and continues into the first week of October. It’s annually held in Munich, Bavaria, Germany and features traditional Bavarian cuisine and copious amounts of local beer. While not everyone can travel to Munich to celebrate Oktoberfest, the rich heritage of the festival can be simulated closer to home by crafting foods from that region of Germany. Though sausages and pretzels may be most associated with Oktoberfest, those looking for something a little more substantial can try this recipe for “Roast Pork Loin in Bavarian Beer Sauce” courtesy of Löwenbräu Brewery. The traditional Oktoberfest tapping is scheduled for Saturday, September 17, 2022. In 2021, the Oktoberfest unfortunately had to be cancelled for the second time in a row due to the Corona pandemic.
Roast Pork Loin in Bavarian Beer Sauce Serves 4 to 6
Oktoberfest Originally Began As Something Of A Wedding Reception
Marinade 1⁄2 cup Dijon or German-style mustard 1 large onion, chopped 1⁄2 cup honey 3 cups Löwenbräu Original beer 31⁄2 pounds boneless pork loin, tied 3 to 31⁄2 inches wide 2 tablespoons vegetable oil

Beurre Manie 1 tablespoon softened unsalted butter 1 tablespoon all-purpose flour
Directions: For the marinade: Combine marinade ingredients into
a large saucepan. Bring marinade to a boil while stirring and remove the pan from the heat. Using a blender, puree marinade. You may need two batches. Transfer marinade to a bowl and let cool to room temperature. Spoon off any remaining foam. For the pork loin: Combine pork and marinade into a large, heavy resealable plastic bag and press out any air. Put the bag in baking dish and refrigerate for at least 8 hours and up to 24 hours. Turn bag once or twice during refrigeration. Remove from refrigerator and let pork come to room temperature (approximately 40 minutes). Transfer marinade to a saucepan and bring just to boil. Preheat oven to 375 F. Pat pork dry with paper towels and season with salt and pepper. In a flameproof roasting pan, heat oil over moderately high heat (not smoking) and brown pork on all sides. Roast pork while basting frequently with some marinade until temperature reaches 155 F. For slightly pink meat, roast for 1 to 11⁄2 hours. Transfer pork to a cutting board while keeping juices in the roasting pan. Discard string and let stand covered loosely with foil for approximately 15 minutes.
ktoberfest is a joyous celebration that includes food, dancing, music, parades, and, of course, beer. Some observers may note that the Oktoberfest celebration, minus the parades, closely resembles a modern day wedding reception. And such an observation provides a clue as to the origins of Oktoberfest. Oktoberfest includes so much tradition that some revelers may feel as though it must trace its origins back many centuries. However, according to History.com, the original Oktoberfest took place in 1810. That festival was actually a celebration of the marriage of Crown Prince Ludwig of Bavaria to Princess Therese of Saxe-Hildburghausen. To commemorate the couple's marriage, the Bavarian royalty invited the citizens of Munich to celebrate with them during a nearly weeklong feast that included plenty of music, food and dancing. The fields where the celebrations took place were renamed the Theresienwiese in honor the new bride, though celebrants now refer to this area by the abbreviated name of "Wies'n." While both Prince Ludwig and his bride have long since passed away, each would no doubt take comfort knowing that their nuptials are still being celebrated today, more than 200 years after they tied the knot.
For the sauce: While pork is standing, skim and discard fat from pan and add remaining marinade. Deglaze roasting pan over moderately high heat, scraping up brown bits. Bring sauce just to a boil and strain through a fine sieve into another saucepan. Bring sauce to a simmer and whisk in Beurre Manie in small increments, whisking until sauce is combined and thickened slightly. Savory Sandwiches For Tailgate Fun

all marks the start of football season. Game Day experiences are made even more enjoyable by hosting or attending a tailgate in the parking lot of the stadium. Tailgate supplies must be brought to the tailgate the day of the game. That includes food, which is often prepared at home and then cooked on-site. This recipe for “Ultimate Steak & Mushroom Sandwiches” from Laurie McNamara’s “Simply Scratch” (Avery) can be prepared at home and then put together at the stadium lot. These delicious sandwiches can be easily cut into small pieces and served as slider-type appetizers.
Ultimate Steak & Mushroom Sandwiches Makes 4 6-inch sandwiches 1 1⁄4 to 1 1⁄2 pounds rib-eye steak 1 cup Balsamic Herb Dressinade (see below) 1 tablespoon unsalted butter 1 tablespoon olive oil 1 large sweet onion, halved and thinly sliced 1 pint cremini mushrooms, cleaned and sliced Kosher salt and freshly ground black pepper (optional) 1⁄2 cup crumbled blue cheese 1 1⁄2 cups grated provolone cheese 4 6-inch hoagie buns, split Mayonnaise Balsamic Herb Dressinade 2 cloves garlic, minced 1 tablespoon chopped fresh basil or 1 teaspoon dried 2 teaspoons chopped fresh rosemary or 1 teaspoon dried 1 teaspoon chopped fresh thyme or 1⁄2 teaspoon dried 3⁄4 teaspoon kosher salt 1⁄4 teaspoon coarsely ground black pepper 2 teaspoons Dijon mustard 6 tablespoons balsamic vinegar 2 tablespoons red wine vinegar 1 cup grape-seed or olive oil
Directions: In a 1-pint glass jar, combine all the ingredients. Secure the lid and shake until combined. Let stand for 30 minutes before using. Refrigerate any unused dressing.
Place the steak on a small rimmed baking sheet and freeze for 20 minutes so it’s firm and partially frozen. Holding a sharp knife on a slight angle, going against the grain of the meat, slice into very thin strips. In a large resealable bag or a medium bowl, marinate the steak in the dressinade for 30 minutes. On a griddle or in a 12-inch cast-iron skillet, melt the butter with the olive oil over medium-high heat. Add the onion, toss and spread out in an even layer. Once the onion starts to soften, add the mushrooms. Cook until soft and slightly caramelized. Using tongs, remove the steak from the marinade (allow excess to drip back into the bag or bowl) and place on the griddle, toss with the onions and mushrooms, then spread in an even layer. Allow the steak to sear, forming a crust, for 4 to 6 minutes, then flip and cook for 4 to 6 minutes more. Season with a pinch of salt and pepper, if desired, and sprinkle with the blue cheese and provolone. Turn off the heat on the griddle or remove the skillet from the heat and cover with a domed lid or tented foil to allow the cheese to melt quickly. Toss one last time so the cheese is mixed throughout. Divide the steak mixture among the crusty hoagie buns. Serve immediately. www.longislandmediagroup.com/seasons-magazine

alloween isn't complete without jack-o'-lanterns, and jack-o'-lanterns can't be made without pumpkins. Plenty of people are familiar with pumpkins thanks to their connection to Halloween and, of course, pumpkin pie, but few may know some of the more interesting aspects of this Halloween staple. Indigenous to the western hemisphere, pumpkins have been grown in North America for 5,000 years, but while they might be indigenous to the west, pumpkins can be grown in the eastern hemisphere as well. According to contributors to the online pumpkin resource Pumpkin Nook, pumpkins are more popular in southern China than northern China. History.com notes that pumpkin seeds do not have a long planting season. Ideally, seeds should be planted between the last week of May and the middle of June. That gives pumpkin lovers precious little time do their planting. Once seeds are planted, pumpkin lovers must wait somewhere between 90 and 120 days for the pumpkins to grow. s the days become shorter and the weather cools down, a new crop of allergy symptoms can arise, turning the autumn season into one marked by sneezing, scratchy throats and itchy eyes. Medications can alleviate such symptoms, but allergy sufferers may want to investigate some natural ways to beat allergies. According to the American College of Allergy, Asthma & Immunology, ragweed is one of the more common triggers of autumnal allergies. Ragweed contributes to “hay fever,” which is a term to describe allergic rhinitis that occurs as a symptom of ragweed pollen in the air. Ragweed releases pollen in midAugust, and it can continue to be problematic until a deep freeze arrives. Other sources of fall allergies include leaf mold and pollen that is present on fallen leaves. This gets circulated when people begin to rake or blow fallen leaves. Classroom pets and chalk dust in schools (although chalkboards are largely a thing of the past) are other autumn allergens. The good news is that many natural remedies work just as effectively as over-the-counter medications in regard to combatting ragweed and pollen problems. Here’s how to beat the fall allergy blues. • Stay Away From Pollen. Stay away from pollen and prevent it from being tracked indoors. Remove shoes when walking through the door. Take off clothes worn outside and launder them promptly, showering to wash pollen off of the body. Use an air conditioner or keep windows closed when the pollen count is high. • Increase Omega-3 Fatty Acids. It is well documented that fatty acids are good for brain health and cardiovascular wellbeing, but these acids also may

help with allergies. A German study linked foods high in omega-3 fatty acids with the ability to fight inflammation, which is a hallmark of allergy suffering. Foods that are high in fatty acids include walnuts, flax, eggs, and cold-water fatty fish. • Rinse Off Pollen. Use a mild cleanser to rinse the eyelids
and eyelashes of pollen, as this is where it tends to congregate after being outdoors. Use saline spray to clear nasal passages of excess pollen as well. • Take Natural Supplements. A study published in the journal Clinical and Experimental Allergy found participants who used tablets of the herb butterbar showed significant allergy relief after only one week. Select herbs from reputable manufacturers who certify them. • Use Eucalyptus Oil. This oil is great to have in the house to help clear up sinuses and provide nasal congestion relief. Mix a small amount with coconut oil and rub onto the chest. There also is some evidence that adding a few drops of eucalyptus oil to cleansing products can help kill dust mites around the house. • Wear A Mask. When doing housework or yard work, wear a mask to reduce the inhalation of specific allergens. Avoid seasonal allergies by exploring natural ways to find prevention or relief of symptoms.
