Various ways you can put pumpkins to use
F
ew items signal the fall harvest season more than the bright, orange pumpkins that dot fields and liven up displays outside of homes and businesses. Come fall, many pumpkins are turned into grinning jack-o-lanterns just in time for Halloween. But there are many other uses for pumpkins as well.
aloe vera gel, olive oil, and a bit of cornmeal to create an exfoliating mask for the face or body. Pumpkin also can be used to rejuvenate dry or tired skin from cold weather.
Pumpkin wines and beers are popular as well. There are many recipes for developing sweet, fermented beverages, which tend to be especially popular in the fall.
Foods and beverages Pumpkin purée is the basis for many tasty, pumpkin-infused treats. Purée can be used in pies, cakes, muffins, breads, and many additional foods. Pumpkin purée also may be found in certain beverages, such as smoothies and shakes. A bit of spiced purée may appear as flavoring in teas and coffees.
Decorations Pumpkins can also add to one’s home décor during the fall. Pumpkins can be carved for Halloween displays, hollowed-out to hold tealights or simply left on tables and used as centerpieces. Larger pumpkins may be used as natural flower pots for mums or other seasonal floral displays. As the Native Americans once did, pumpkins can be hollowed-out and used as bowls to serve favorite soups and dips.
Honey, pumpkin and yogurt can be mixed together and used to condition hair. Let the mixture sit for 15 to 20 minutes, and then wash it out and shampoo.
Pumpkins are believed to have originated in North America. Early Native Americans relied on pumpkins as a source of food that helped them survive long winters. Pumpkins could be roasted, baked, boiled, and dried, and they were eaten and used as medicine. Pumpkin blossoms were added to stews. The shells of the pumpkins could be dried and used as eating and storage vessels. While pumpkins may now be symbolic of Halloween, the following are a handful of additional ways this versatile fruit can be put to use.
Roasted pumpkin seeds make a healthy treat. Foodies suggest using the seeds from “sugar pumpkins” or the ones best for making pies. Boil the seeds for a few minutes before draining. Spray a baking sheet with non-stick spray and put the seeds in a single layer. Bake at 400 F for 20 minutes. Allow to cool and serve.
Beauty regimen Pumpkins contain a number of essential vitamins and minerals that can help replenish the skin. Pumpkin purée can be mixed with honey,

Use a hollowed, small pumpkin as a natural aromatic candle holder. Cut holes in the sides to vent the exhaust. Rub aromatic spices, such as cloves, nutmeg, allspice,
cinnamon, and vanilla bean, on the inside of the pumpkin. Insert a beeswax candle in the bottom of the pumpkin and let it send inviting aromas into the air.
Pumpkins are a versatile fruit that can serve many purposes beyond just jack-o-lanterns and pies.

State Park Spotlight: Belmont Lake State Park
B
elmont Lake State Park, located in West Babylon, is a 463acre day use park bisected by Carll's Creek and Belmont Lake. The park, established in 1926, had been owned by August Belmont and served as farmland for some of Belmont's equestrian activities. Robert Moses chose this park to establish the regional headquarters for all state parks on Long Island in 1935, which serves the public today for region-wide permit sales, park administration and as headquarters for the New York State Park Police.
The park is primarily visited by families seeking outdoor gatherings, picnics and informal sports activities. It provides a bucolic feeling adjacent to the Southern State Parkway at exit 38 among densely developed neighborhoods. Carll's Creek stretches 4.2 miles south to the Great South Bay with a trail for hiking and biking. Horseback riding is available through the nearby Babylon Riding Center (for information call 631-587-7778). The 42-acre Belmont Lake is encircled by a similar path, making a total of 7.6 miles of multi-use trails.
Other waterfowl that can be easily spotted include Northern Shovelers, Mergansers, Teal, Great Blue Heron, and Egrets.
Patrons enjoy activities such as picnicking, playgrounds and using the various courts and fields. The lake attracts trail walking, fishing and non-motorized boating. The 7.6 miles of trails throughout the park are available for hiking, walking, biking, nature observation and weather permitting, cross-country skiing.
Pedal boats and rowboats are available for rent on the lake through the summer. They also allow kayaks and canoes to be launched from the boat dock while the boat dock is open (they can't be inflatable, must be hard bottomed, no motors, no surfboards or wakeboards, and no paddle boards). If you cannot bring your own kayak, kayak rentals are also available for a nominal fee.

The park's significant natural features include the 26-acre, spring-fed Belmont Lake and a significant wetland complex. The lake provides springtime trout fishing and summer bass fishing for the avid anglers who use the park. It is home to permanent and migratory waterfowl populations. Park visitors enjoy watching Osprey diving from high above to catch fish for their young in the spring.
The seventh annual Great JackO’-Lantern Sail will take place at Belmont Lake State Park on October 26, 2019. This year’s event will run from 3:00pm-6:00pm and the Pumpkin Sail will begin at 6:15pm. The first 50 carved pumpkins received are placed on flotation devices with candles inserted inside and are sailed around the lake behind kayaks. Children’s activities include crafts, games, inflatables, funny photos and trick-or-treat stations. They can also visit the not-so-scary ‘Spooky Den’. Lesser-known information about Halloween
H
alloween is a day of costumes, hijinks and an often unhealthy helping of sugary sweets. Many celebrants know that Halloween evolved from ancient Celtic festivals, such as Samhain, which marked the end of the harvest season and the dawn of winter. Celts were no longer spending long days in the pastures, and so they gathered in their homes to tell stories and wait out the winter. When Christianity spread, Halloween became intertwined with a feast day dedicated to the saints and deceased loved ones. “All Hallows Even,” eventually got shortened to “Hallowe’en,” and then Halloween. Though certain parts of Halloween history are well-known, there are many additional interesting facts about this beloved holiday that are less widely known. The following are some lesser known Halloween tidbits, courtesy of the websites, The Thought & Expression Company and Random History, as well as “The Halloween Handbook” (Citadel Press) by Ed Morrow. • The first jack-o-lanterns were made from turnips and beets. Pumpkins were used after

For homeowners with big yards, such a project can be tiring and time-consuming. However, there are ways to make leaf cleanup easier.

s children head back to school, they and their parents have lots to do to be ready for the first days of school. Clothing and supplies may be top priorities, but families also should focus on safety as the first day of school draws close.
The following are some key tips families can keep in mind to ensure a healthy and happy upcoming school year.
School bus safety The National Highway Traffic Safety Administration says that school buses are the safest way for children to travel to and from school. The majority of school bus-related injuries occur while students are boarding and getting off the bus. Over the last 10 years, the NHTSA says nearly two-thirds of school-age pedestrians who were fatally injured by school buses or other vehicles were hurt after being struck while entering or exiting the bus. While at the bus stop, children must remember to stay at least five large steps away from the road and wait to board until the driver says so. When leaving the bus, students should make sure there is no oncoming traffic and wait for a signal from the bus driver
before crossing busy streets.
While on the bus, observe the rules and stay seated at all times. Keep the center aisle clear of backpacks.
Walking/biking safety Students may walk or bike to school if the school permits. School tends to begin during the morning rush hour, so students must exercise extreme caution when walking or biking to school. Stick to sidewalks whenever possible when walking. Cyclists should follow the rules of the road, including riding in the same direction as traffic. Choose the safest route as a family and practice it before the first day of school, advises the security company ADT.
Backpack safety Choose an ergonomically designed backpack to enhance safety and comfort. Backpacks should weigh no more than 5 to 10 percent of the child's body weight, advises the National Safety Council. Rolling backpacks should be avoided since they are a tripping hazard. With a new school year on the horizon, students and their parents can discuss school safety so the year starts off on the right foot.

Some regions are particularly known for their leaf displays. New York’s Catskill and Adirondack regions are prime spots for visitors in the autumn. Those who live further north will find that leaves in Vermont are such an attraction that routes are published indicating where to enjoy
the best views. Further south, Central and Eastern Virginia peak in late October. And don’t forget the shores of the Great Lakes, which are awash in reds, oranges and yellows by mid-September. Autumn is a prime time to tend lawns
A
utumn is gardening season. That statement may not seem right to those who think of the spring as the peak time to care for lawns and gardens. However, autumn is an ideal time to get into the garden and ensure that flowers, trees and garden beds will over-winter successfully. A number of things make autumn a prime gardening season. The cooler days of fall enable gardeners to spend ample time outdoors without the threat of blazing heat. In addition, soil harbors a lot of residual warmth in autumn. Also, the colder temperatures haven’t yet arrived in autumn, nor have the leaves completely fallen, making fall a prime time to assess what’s already in the landscape, what needs pruning back and where to address planting for next year.
Gardening enthusiasts can focus their attention on these areas this fall. • Pamper perennials. As annuals and perennials start to fall back, mark the spots where perennials are located so they can be easily identified later on. This way, when planning spots for spring bulbs or other spring layouts for next year, perennials won’t be overlooked or covered over. • Prune shrubs. Look at shrubs and trees and cut out dead or diseased wood.
• Clean up borders. Weed and tidy up borders and lawn edging. • Install pavers or rock wall. Embrace the cooler temperatures to work on labor-intensive projects, such as putting in a garden bed, retaining wall or walkway.
• Remove spent summer veggies. Take out vegetable garden plants that have already bloomed and borne fruit. Tidy up vegetable gardens and start to sow cooler weather plants, such as onions, garlic, beans, and sweet peas.
Prepare your deck for winter
• Rake and compost. Rake the leaves and gather grass clippings to add to the compost pile. • Plant spring bulbs. Get tulips and other spring bulbs ready for planting so they’ll burst with color next year.
• Dig up herbs. Relocate herbs like parsley or basil to indoor gardens. Otherwise, strip all leaves and freeze for storage during winter. • Consider mums. Chrysanthemum plants are perennials. While they look beautiful in pots, if planted, maintained and winterized, they can bloom every fall.
• Fertilize the lawn. Fertilizing in autumn helps ensure grass will stay healthy throughout the winter. • Add mulch and compost to the garden. Replenish spent soil with mulch and compost so garden beds will be revitalized for spring planting. • Prune hedges. Tidy up hedges, as they won’t be growing much more this year.
• Clean and store equipment. Clean, sharpen and oil all equipment, storing lawn and garden tools properly so they are ready for spring and not lying out all winter.
Autumn may not seem like gardening season, but there are plenty of lawn and garden tasks to tend to during this time of year.

omeowners often take steps to winterize the interior of their homes in the weeks before winter’s arrival, but such efforts should extend to the outside of a home as well.
Decks make for great gathering places when the weather permits. Decks are where many people spend their free time and eat their meals come spring and summer, when the temperatures climb and the sun sets well into the evening. But as summer turns to fall, homeowners must take measures to protect their decks from potentially harsh winter weather.
• Inspect the deck for problems. Decks tend to be used more often in summer than any other time of year. That makes fall and early winter an ideal time to inspect for wear and tear and any additional issues that may have cropped up throughout the summer. Damaged boards and loose handrails should be fixed before winter arrives, especially for homeowners who plan to use their decks in winter. Fixing such issues in winter and even into spring may be difficult thanks to harsh conditions, so make good use of the relatively calm autumn weather to fix any issues on the deck. • Clear the deck of potted plants. Even homeowners who intend to use their decks in winter should remove potted plants from

the deck in the fall. The home improvement experts at HGTV note that moisture can get trapped between deck boards and plastic, wood or ceramic containers in cold weather, and that can contribute to mildew, discoloration or decay.
• Store unnecessary furniture. Homeowners who like to sit on their decks in winter will no doubt want to leave some furniture out over the winter. But those with lots of furniture for entertaining guests can likely move the majority of that furniture into a garage or shed for the winter. HGTV notes that doing so will prevent the potential formation of blemishes on the deck that can result from inconsistent weathering. • Remove snow, but do so carefully. Prolonged contact with snow and ice can damage a deck. As a result, homeowners should clear snow from their decks when accumulation is significant. HGTV recommends using a snow blower on the deck to avoid scarring. If a shovel must be used, push snow with the planks to reduce the risk of damaging the deck.
Homeowners who take steps to protect their decks throughout the winter months can ensure these popular areas are ready once entertaining season returns in the spring.

Seasonal Selections A sweet and savory Halloween treat
Save the tricks for another time; this Halloween is all about the treats. Halloween parties are par for the course, and spooktacular hosts and hostesses want to serve their guests something special. Enter a dessert hybrid that layers various flavors to create a masterpiece that simply works. This recipe for “Grilled Chocolate Chip Cookie Bacon S’mores,” courtesy of the National Pork Board and Tiffany Edwards of Le Crème de la Crumb, is the Frankenstein’s monster of the dessert world. You’d be hardpressed to find a person who can pass up the salty swagger of smoked bacon paired with the creamy richness of chocolate and the crunch and sweetness of a chocolate chip cookie. Top it with marshmallow and this Halloween treat is alive with flavor!
Grilled Chocolate Chip Cookie Bacon S’mores Yields 12 12 thick-cut slices bacon (hickory smoked, Applewood smoked or maple) 12 large marshmallows 12 2-inch squares chocolate good quality 12 skewers 12 tablespoons butter, softened 3⁄4 cup brown sugar 1⁄4 cup sugar 2 teaspoons vanilla
1 egg plus 1 egg yolk 2 cups flour 1 3.4-ounce box instant French vanilla pudding mix, dry, not prepared 1 teaspoon baking soda 1⁄2 teaspoon salt 2 cups semi-sweet chocolate chips
Make the cookies: In a bowl, cream together butter, sugar and brown sugar for 1 to 2 minutes until light and very fluffy. Add vanilla, egg and egg yolk, and mix well. In a separate bowl, whisk together flour, pudding mix, baking soda, and salt. Add dry ingredients to wet ingredients and mix until incorporated and dough comes together. Stir in chocolate chips. Cover very tightly and chill for at least 1 hour.

Preheat oven to 350 F. Roll dough into balls (about 11⁄2 inch) and space 2 to 3 inches apart on a baking sheet. Bake for 10 to 12 minutes, until lightly browned on top. Allow to cool 5 to 10 minutes on baking sheet before transferring to a cooling rack to cool completely.
To grill the bacon: Heat a grill to medium-high heat. Thread bacon onto skewers in an S-shape. Place skewers directly on grill and cook 8 to 12 minutes, rotating as needed to ensure even cooking. Transfer to a plate, let cool and then remove bacon from skewers. Set aside. Meanwhile, roast the marshmallows: Roast marshmallows directly over the grill using skewers or roasting sticks until cooked to your preference.
Assemble s’mores: Flip one cookie over so it’s upside down. Place a square of chocolate on top of the upside-down cookie, then top with grilled marshmallow, bacon and a right side-up second cookie. Serve immediately.
Cranberry-infused cocktail for autumn Besides the ubiquitous “pumpkin spice,” nothing says “autumn” more than tart cranberries. Cranberries are a major component of Thanksgiving feasts, turning up alongside and atop turkey as well as in quick breads and desserts.
Cranberries are loaded with health benefits, which include reducing the risk for ulcers and preventing gum disease. Also, just eight ounces of cranberry juice cocktail contains 137 percent of the daily recommended value of vitamin C.
