"Spring adds new life and new beauty to all that is." ~ Jessica Harrelson
Spring is a time of rebirth, cleaning out the clutter in our lives and re-engaging with nature in all its splendor. In this spring issue we are exploring one of Long Island's most popular pastimes, horseback riding. Did you know that there are currently more than thirty-five horse stables across Long Island, tip-to-toe, that offer riding lessons and various types of equine therapy?
SPRING ON LONG ISLAND
Upcoming Events pages 16 & 17
Spending time around horses has proven therapeutic benefits, such as improved work ethic, improved levels of trust and improvement in processing and working through various emotions, according to a 2017 article published in Psychology Today.

What I Love About Long Island in the Spring
Breathtaking Equestrian Photography
Riding also happens to be one of my personal passions, and I am thrilled to bring you this SEASONS' cover story, titled, Long Island's Love Affair with Horses, on page 4 of this issue. In addition, this year we're ditching products for moms this Mother's Day and focusing on gifting mothers with unforgettable experiences. For dads it's still all about gadgets and tinkering, so we stick to the tried and true. We also asked, you, the reader, to tell us what you love most about springtime on Long Island, and we're bringing you some exciting upcoming events in our Spring Events Calendar. This spring SEASON is all about self-care, re-connecting with nature and finding balance among our often chaotic lives.
In the coming weeks and months, stroll through local farmers markets and enjoy Long Island's lush gardens. Make time for family playtime at public parks across Nassau and Suffolk counties, and choose outdoor shopping villages that allow you to bask in the sunshine and outdoor landscape while you browse. As always, we thank our readers and advertisers for their continued loyal support of SEASONS Magazine, and we look forward to continuing to serve our community for many more SEASONS to come!

Unique Mother's Day Gift Ideas
Many people give heartfelt gifts on Mother’s Day to express their love for the mothers in their lives. The perfect gift may focus on Mom’s interests and the things that make her truly happy. This year our focus is on experiences over things. With that in mind, the following shopping tips can help anyone find the perfect Mother’s Day gift: Explore spa packages. What mother won’t benefit from some rest and relaxation with a little pampering thrown in? Salons and massage therapists typically put together Mother’s Day packages. Packages may include massages, facials, hair treatments, manicures, and pedicures. Gift-givers can

customize services depending on their budgets. Hand and Stone Massage & Facial Spa's Jericho and Commack locations; Massage For Wellness is Hicksville; Center for Pain Relief and Wellness in Babylon and Fantastic Day Spa in Farmingdale are just a few of many options across Long Island.
Dining out can be a treat. A meal at a favorite restaurant can be a welcome change from kitchen duty. Mother’s Day is a busy day for restaurants, many of which have limited menus. To ensure mothers have full menus at their disposal, gift givers can cook a meal at home on Mother’s Day and choose another day of the week to enjoy a meal in an upscale restaurant. Try RARE 650 in Syosset or Insignia in Smithtown for steak and sushi; La Villini in East Northport, Villa Caia in Lindenhurst or Mama's Italian Restaurant in Copiague for Italian; and Shandon Court in East Islip for Continental fare. Schedule a paint and sip. A paint and sip session is a growing trend and unique Mother's Day gift. A session is typically two

hours and includes step-bystep instructions. Patrons are encouraged to bring snacks and their favorite beverages. This one makes for a “ladies night out.” Encourage other moms to join in the fun. Or, include dad's and children and the entire family can paint together. Some local Paint and Sip spots include: Pinot's Palette in Bay Shore; Casa de Spin in Massapequa; Artsea Studio in Babylon and Sketchbook Studio in Patchogue.
Give tickets to a show or sporting event. Whether Mom is a sports fan or she prefers the theater or live music, event tickets can make a wonderful gift. Keep it local at Long Island venues like the Paramount in Huntington, John W. Engeman Theater in Northport or a popular favorite, NYCB Theatre at Westbury.
Give the gift of wine tasting. Wineries can be found across the country and frequently open their doors to wine tastings and wine pairing events. A Mother’s Day wine tasting can be special for the entire family and support local businesses.
Check the vineyard’s rules on guests. Many times those under 21 can attend but will not be permitted to consume wine, though other refreshments may be available. Wine tasting is a popular pastime on Long Island, with several east end wineries to choose from, including: East End Wine Tasting in Yaphank; Elegant Wine Tours in Medford; Li Vino Tours in Middle Island and Wine Tour New York in Greenport. .

Getting Prepared For Summer Camp Season Summer camps in North America were first established in the 1880s and were attended by children without their parents for overnight stays. By the 20th century, summer camps had become an international phenomenon, and various organizations hosted traditional summer camps or camps geared toward religion, sports, music and other subjects and activities. According to the American Camp Association, each year more than 14 million children and adults in the United States attend camp.
house as an opportunity to learn more about the programs offered. If available, find a camp employee to discuss your child’s eligibility for enrollment. Some camps may offer webinars for convenience.
Establish payment schedules.. Summer camps vary in price. The ACA says camp costs range from $100 to more than $1,500 per week. However, many accredited camps offer some sort of financial assistance for children from families with limited financial means. If cost is a factor, be sure to broach the subject.
Parents should keep in mind that camps begin registration early in the year and have specific cut-off dates for enrollment. Parents can use this guide to help plan a summer camp agenda. Attend an orientation seminar.. Take the time to visit prospective camps for a tour, and use this open
camp activities may be rigorous, and campers may need to be cleared by a physician before starting. Be sure to schedule your child a physical and bring along any pertinent forms. Children also can increase their levels of physical activity compared to the often sedentary nature of winter. Shop for supplies. Camps are likely to provide a list of requirements with regard to clothing and other equipment campers will need. Make sure kids have enough shorts,
T-shirts, socks, athletic shoes, swimsuits, toiletries, and other camp necessities before they leave and physical activities. Keep children in the loop. Engage children in the planning process to help alleviate their fears and get them excited about summer camp shoes, swimsuits, toiletries, and other camp necessities before they leave and physical activities.
FURNISHED • DELIVERED • INSTALLED
Fill out the enrollment package completely.. Each camp has their own requirements for registration. Expect to submit some personal information, including a medical background and proof of insurance, names and numbers of emergency contacts, and any other pertinent information as it applies to the camper. This may include allergies, fears, physical or mental disabilities, or even preferences in camp courses.

How to Spend More Time Outdoors
G
etting outside to enjoy the great outdoors can reduce the likelihood that a person will live a sedentary lifestyle that can negatively affect long-term health. But many adults are spending too much time indoors.
In its 2014 OUT is IN national survey, the National Recreation and Park Association found that 28 percent of adults in the United States do not spend time outside daily. The survey, conducted by Ipsos Public Affairs on behalf of the NPRA, asked 1,005 adults to share their opinions and behaviors regarding outdoor time. While 35 percent of respondents said work was getting in the way of their spending time outdoors, 39 percent said their computers, tablets, smartphones, and televisions were keeping them indoors.
Though it might be difficult to cut back on hours at the office, adults do have the capacity to cut back on their screen time. Using that newfound free time to get outdoors can pay dividends for years to come, as the National Center on Health, Physical Activity and Disability notes
that the potential consequences of living a sedentary lifestyle are severe. According to the NCHPAD, one study indicated a 40 percent decrease in cancer mortality among physically active persons compared to those who were inactive. Physical
activity also helps to prevent insulin resistance, which is the underlying cause of type 2 diabetes. While you don’t need to get outdoors to be physically active, men and women who find
themselves bored by workouts at the gym or at home may be more likely to embrace physical activity if they can get their exercise outdoors. The following are three great ways to spend more time enjoying all that nature has to offer. Take up hiking. While some hiking trails are best left to seasoned hikers, many are built for hikers of all ages and abilities. Men and women who are overweight should not be intimidated by hiking, as even the simplest trails can help them get back on a healthy track. Men and women who incorporate hiking into their regular routines can lower their risk of heart disease and improve their blood pressure and blood sugar levels. The American Hiking Society also notes that research has shown that hiking can positively affect mood by helping to combat the symptoms of stress and anxiety.
flexibility. In addition, the stressrelieving properties of exercise can certainly be ascribed to cycling, which may even help adults prevent stressful episodes by relieving them of the burden of sitting in rush hour traffic. Grow your own foods.
Nature awaits, and adults should know that some playtime in the great outdoors is not just for kids. While the cost of fruits and vegetables may not be busting your monthly budget, growing your own fruits and vegetables is a cost-effective way to find more time for the great outdoors. In addition, a study from researchers in the Netherlands suggested that gardening is better for fighting stress than reading indoors.
Ride a bike to work. Adults whose homes are in close proximity to their offices may want to try riding a bike to work instead of relying on their cars or mass transportation. Cycling improves cardiovascular fitness and increases muscle strength and

What's not to love? There is no place like Long Island, especially in spring! The birds are singing again, the sun is shining and green is becoming the predominant color of the landscape. There's a sweet smell wafting on the breeze and the beaches begin to beckon. Art galleries must be visited, yard and lawn sales entice us. My grandchildren love the Children's Museum in Riverhead where they spend hours enjoying the interactive exhibits. The historic and renovated Suffolk Theater in Riverhead and the Village Restoration Village at Old Bethpage are some favorites.

How Dogs Benefit From Daily Walks
D
og owners with fenced-in backyards may think their furry friends are getting all they need during their nightly exercise sessions in the backyard. While such yards provide safe places for dogs to relax and run around, the American Humane Association (www.americanhumane. org) notes that even dogs who run wild in their backyards each day can benefit from daily walks. The following are a handful of ways dogs benefit from daily walks. Socialization: The Animal Humane Society (www.animalhumanesocity. org) notes that puppies between
three weeks and 20 weeks old are generally accepting of other dogs, and nightly walks can provide the perfect opportunity for puppy owners to acquaint their furry friends with their fellow dogs. Continued exposure after 20 weeks can help further the socialization process for young dogs.
Behavior: While puppies can learn to socialize on daily walks, older dogs may or may not reap the same rewards. But daily walks can help dog owners instill better behavior in their dogs. The AHS advises that owners of older dogs use walks as opportunities to teach dogs to behave calmly in public. Bring treats to reward dogs for sitting quietly when encountering other dogs and new people along the walk.
Exercise: Of course, daily walks provide great exercise for dogs. Dogs who are let out in the backyard each night but are not played with may not be getting the exercise their owners think they are. Dogs left alone in a backyard may briefly run around before plopping down in the grass and enjoying the fresh air. That’s not enough exercise
the better of them, stopping to observe or investigate something while on walks, and that’s mentally stimulating. Resist the temptation to pull the leash when dogs want to stop to check something out, affording them a little time to do some mental exploration before continuing the walk.
for many breeds, and it’s certainly insufficient for dogs who may be overweight or obese. Nightly walks can help dogs lose and/or maintain healthy weights, and the AHA notes that such walks also help dogs build strength and endurance. Stimulation: According to the American Kennel Club (www.akc. org), dogs need both physical and mental stimulation to stay healthy and happy. Walks obviously provide physical stimulation, but they can stimulate dogs mentally as well. Dogs often interrupt walks when their curiosity gets
Be Mindful of Fleas and Tics: Fleas and ticks rely on blood for food. They are the vampires of the pet realm, silently stalking companion animals wherever they go. Once fleas and ticks find a victim, they are bound to stay around for a while, enjoying the free meal. Fleas, in particular, can grow quite fond of dogs — reproducing and quickly building an infestation. Learning more about them can help pet owners understand their behaviors and how to best keep their pets safe when playing outdoors.
Consult with your veterinarian if you suspect your dog has a tick or flea problem to get the situation under control. Preventative collars and medications can help repel fleas and ticks as well.

Long Island's Love Affair With Horses
M
any Long Islanders love their horses, as is evident by the nearly fifty individual horse stables and riding centers scattered tip-to-toe, from Long Island’s east end all the way into western Nassau county. It's a good thing too, since according to the website, HealthFitnessRevolution.com, the health and wellness benefits of riding are numerous, and include among others: a better sense of body awareness, quick thinking skills, improved coordination, improved core strength, mental agility and greater muscle tone and flexibility among other benefits. While more western and southern regions of the Unites States are known for their western riding style with its large, flat saddle and more casual riding gate; the northeast region of the United
States (including Long Island) has adopted the English riding style. English riding is hallmarked by a shorter and more formal saddle, more upright gate, and with its posting, cantering, and jumping techniques. No cowboys here, but riders from small children to mature adults are enjoying this relaxing pastime as, both, a competitive sport, as well as for pure enjoyment and the enormous therapeutic benefits that horses provide. And its not just riding that is known to improve a person's overall outlook on life. Simply interacting with horses has been proven to improve human health. www.seasonsmagazineonline.com
A U.S. News and World Report article titled, Equine Therapy: How Horses Help Humans Heal states, "Hanging out with horses could feel more natural and nonthreatening [than traditional therapy] – and you don't even have to ride." Everything from substance abuse to serious traumas have been helped through various forms of Equine therapy. According to Julie Dell’Aira, Executive Director of Great Strides Long Island, a stable and riding center located in Middle Island, “almost anyone can enjoy riding, and we have children and adults of all ages and abilities who participate from a very basic level all the way through jumping.” As a great bonding activity and a more active alternative to traditional early childhood programs, Dell’Aira even has a “Mommy & Me” riding program at Great Strides, to introduce horseback riding to moms and their children who are as young as five years old.
For Andrea Mercier, who works at her family's Knoll Farm in Brentwood, horses were in her blood from a very early age. “I started riding when I was twelve years old, when my grandmother took me to a place that let me ride a horse around a ring, and from that moment on I was hooked.” Mercier is a seasoned horse trainer and riding instructor at her family’s stable, and she’s ridden competitively for years. She credits growing up on Long Island's “Great South Bay” with developing her love of the water and boating, as well as her love of farms and, of course, horses. Mercier believes that horses and equestrian sports have a long history on Long Island because “it’s always been a rural outlet for urban dwellers,” referring to New Yorkers who visit Long Island from Manhattan and the Burroughs; and Long Islanders who wish to escape their busy, over scheduled daily lives.
the emotionally and spiritually meditative effect the process has on the rider. In terms of physical conditioning, Innes-Ortiz further explains that “riding develops a strong core, quadriceps, adductor, glutes and calf muscles. Riding a horse for forty-five minutes at a walk, trot and cantor can burn up to two hundred calories.”
Julie Dell’Aira of Great Strides adds, “Often people are under the misconception that riding is just sitting on the horse. That is definitely not the case. Proper horseback riding will stretch and exercise your trunk, arm and leg muscles, and develop your balance. It also requires both large and small motor skills, and requires your ability to read the horse’s body language, thus developing intuitive abilities." “[Horses] teach you lessons about relationships, communication, and body language; as well as patience, trust, respect and unconditional love,” adds Andrea Mercier of Knoll Farm, referring to some of the psychological and emotional benefits. And there is more to interacting with horses than active riding. There are great benefits to being around, caring for and grooming horses, and preparing them for a ride. Mercier makes sure to note how caring for horses in the stables also offers quite a workout. “Tacking, grooming and doing barn chores can also offer great exercise.”
So who exactly is horseback riding on Long Island? It’s a wide cross-section of children as young as three years old to adults and some seniors who are riding at Thomas School of Horsemanship in Melville. Great Strides echoes that sentiment, adding that because of
Thomas School of Riding in Melville is a longtime landmark of western Suffolk county, with their popular summer camp program and riding school. According to the school’s director, Janine Innes-Ortiz, “The health and wellness benefits of riding horses are both physical and mental. During a horse’s movement, the rider must follow the rhythm and coordinate his or her muscles to achieve a harmonious action with the horse,” describing

their stellar reputation with equine therapy for various populations, they have a program for veterans as well as programs for people on the autism spectrum. In explaining how the horses cope with nontypical riders, Dell’Aira explains, “For the horses, is can be a bit more challenging, as they have to be able to accept less subtlety with some of our students.” But she notes that they are up to the task. “The horses are really amazing, as they always seem to understand which student needs what.”
Taking into account the intimidation factor around the mythology of horses (think "The Black Stallion" for one) as wild, unruly creatures; or the misnomer that you have to begin riding at a young age, Mercier, Innes-Ortiz and Dell-Aira insist on warm, welcoming and laid back environments where new students gain a holistic education about horses and can ease into learning about the communicative language and temperament of horses. Innes-Ortiz states, "Our program develops a physical working knowledge in the care of horses, equipment and barn management. It also develops an emotional aspect of riding. Horses have a calming effect on people."

Reasons to Shop Farmers Markets This Spring
A
farmers market is likely coming to a field or open parking lot near you — if there isn’t already one operating nearby. The United States Department of Agriculture says that, between the years of 2008 and 2013, the number of farmers markets doubled
across the country:
Farmers markets will continue to thrive and expand as people increasingly realize the benefits of supporting local food providers. Buyers who are not yet familiar with farmer’s markets can examine the following seven reasons to break
the ice
Enjoy fresh, seasonal foods. Foods at farmers’ markets tend to be limited to in-season offerings. Some nutritionists suggest eating seasonally available foods is better for your body, because humans ate seasonal produce for thousands of years before shipping and refrigeration changed how people received the majority of their foods. In addition, people feel that fresh, seasonal foods taste better. Discover new foods. There’s always something new at a farmers’ market, and this can entice shoppers to expand their flavor palates. Explore interesting, locally grown items. Even children may fall in love with colorful fruits or vegetables and their refreshing tastes.
Embrace organic and non-GMO offerings. Many farmers’ markets offer foods that are organically grown and are produced without GMOs. Farmers market retailers also tend to give firsthand accounts of where their foods come from and how they are grown or raised.
Indulge in nutritious foods. The vivid colors and smells emanating from farmers’ markets indicate just how fresh and nutritious the offerings tend to be. Farmers who peddle their wares at farmers’ markets adhere to careful farming methods to ensure their foods are as nutritious as possible.
Learn secrets and recipes In addition to fresh produce, farmers’ markets may offer baked and other prepared goods. Shopkeepers often mingle with customers, offering trade secrets and recipe ideas. Make it a social excursion. A farmers’ market can be an exciting and flavorful social gathering place for families and groups of friends, as well as a great place to meet other members of the community. Save money. Farmers’ markets may sell organic produce at a cost comparable, or even lower, than other retailers. That’s because local farmers don’t have to transport their items.

Seasonal Recipe
Spring 2019
Whip Up Delicious Ice Cream in the Comfort of Home
Ice cream is a favorite dessert across the globe. The average American consumes more than 23 pounds of ice cream per year, says the International Dairy Foods Association.
Even though a trip to the local ice cream parlor can yield many different opportunities to indulge, making ice cream at home is easier than one may believe. Creating homemade ice cream can be a fun way to experiment with unique flavors and textures. It's easy to customize concoctions based on what everyone likes best. Making ice cream also is a fun and sweet way to bring the family together.
• Buy quality ingredients
• Choose fresh, high-quality ingredients. Real vanilla beans or extract can produce better flavor than imitations. Select in-season berries and other fruits and, if possible, use organic milk. All of these ingredients will blend together for fresh flavor
Freeze equipment early
• Cold equipment is necessary to produce ice cream. Store the bowls of an ice cream maker in the freezer to keep them frozen and ready for when the mood strikes to make a batch of ice cream
Avoid ice crystallization
• According to Food 52, a foodie equipment and recipe resource, ice crystals in the ice cream can ruin texture by making ice cream crunchy. Freezing ice cream quickly at very cold temperatures is essential. That means freezing the bowl and keeping the ingredient mix cold. Spinning the ice cream and transfering it quickly to the freezer helps keep ice crystals small.
www.seasonsmagazineonline.com
Keep mix-ins small
• Mix-ins, like cookie pieces or cake crumbs, can add a different dimension to ice cream. Chill the ingredients and make sure they are small (roughly the size of chocolate chips). Add them after the ice cream is entirely frozen.
Watch alcohol usage
• Alcohol can create a tipsy ice cream experience, but adding too much can interfere with ice cream’s ability to freeze. Therefore, use alcohol sparingly.
Store ice cream smartly
• According to David Lebovitz, author of “The Perfect Scoop,” store ice cream in a shallow container to keep it softer. Also, cover the surface of the ice cream with plastic wrap to prevent ice crystals from forming. • Homemade ice cream will last for roughly a week in the freezer. Making ice cream can be a challenging but rewarding endeavor.
Did You Know?
It is believed that ancient Greeks ate a crude form of ice cream as early as the 5th century B.C. Confectioner and inventor of the classic Good Humor ice cream bar, Harry Burt, was instrumental in developing the ice cream truck.
