Throughout much of North America, flu season peaks between December and February. But flu season can occur anywhere from October to March, advises the U.S. Centers for Disease Control and Prevention. The flu is contagious and can sideline people for extended periods of time. The CDC says that each year one in five Americans gets the flu. Taking steps to fend off the flu can help men and women and the people they routinely come in contact with: Foods. Food can be used to fend of the flu. Common foods that many people already have in their pantries can be powerful flu-fighters. Garlic, for example, contains compounds that have direct antiviral effects and may help destroy the flu before it affects the body. Raw garlic is best. In addition to garlic, citrus fruits, ginger, yogurt and dark leafy greens can boost immunity and fight the flu, according to Mother Nature’s Network. The British Journal of Nutrition notes that dark chocolate supports T-helper cells, which increase the immune system’s ability to defend against infection. The U.S. Food and Drug Administration says that, in select situations, antiviral medications which are usually prescribed to treat the flu and lessen symptoms - can reduce the chance of illness in people exposed to influenza.

Ways to Celebrate Valentine’s Day

alentine’s Day is an opportunity for couples to celebrate their love for each other, whether their relationship is relatively new or has endured through many years. The National Retail Federation estimates that Americans are expected to spend close to $20 billion on Valentine’s Day this year. While chocolates and champagne are high on the list of most-purchased items for February 14th, couples should not feel beholden to tradition on Valentine’s Day. This year may be the perfect time to try something new, even if it’s out of couples’ comfort zones. Here are some novel ideas for couple’s looking to set their celebrations apart: Paint and Sip. Couples can take part in a growing trend this Valentine’s Day. At paintand-sip events, people are guided step-bystep through the process of painting their own masterpieces. Breaks are provided through the evening to indulge in beverages and snacks of choice. Couples can bring along a bottle or two of wine and a platter of cheeses, chocolates or other Valentine’s Day fare. Those interested can inquire at their nearest paint and sip location for Valentine’s Day specials. Activity Night. Couples who are naturally competitive or devoted sports fans can enjoy
the evening by engaging in some healthy competition. Some restaurants host trivia nights, or couples can head to the nearest arcade and battle it out. Panic and escape rooms are cropping up in towns across the country. These employ 60-minute real-life experiences in which participants must solve clues to escape the room. This can be a great bonding experience for fun-loving couples. Chef Lessons. Although some couples may dine out on Valentine’s Day, men and women who like to dabble in culinary arts can prepare their own meals from the comforts of their own kitchens. Others may want to enroll in classes that provide expert instruction from area chefs or culinary instructors. Cooking classes can be an ideal way to spend time together learning skills that can be put to use again and again. Adventures. Couples who like to push the envelope can explore the possibilities of thrill-seeking activities. Some may include bungee-jumping, hot-air balloon rides, taking laps at the racetrack or hitting the ski slopes. Helping Kids find Hobbies this Winter
M
uch like adults can benefit from participating in hobbies, children can reap rewards from engaging in hobbies. According to the Child Development Institute, hobbies give children a chance to express themselves. The CDI also notes that hobbies can play an important role in children’s self-discovery and boost their selfesteem. Some children may discover hobbies on their own, requiring little if any assistance on the part of their parents. For example, some kids may display an interest in music that parents, even those with not such musical inclination, can foster by purchasing certain instruments. But some children may need a little more prompting, and parents of such boys and girls can take certain steps to help their youngsters find rewarding hobbies: Involve kids in your own hobbies. Kids look up to their parents and often want to emulate what their mothers and fathers do. If possible, involve children in your own hobbies. Gardeners can teach their youngsters how to grow and
tend to a garden, while painters can host family painting nights where everyone is encouraged to create their own masterpiece. Parents whose hobbies are more adultoriented, like woodworking, can still involve their children. For example, work with children to design a new item, then show them how the item goes from paper to finished product; just avoid allowing them to use any unsafe tools or machines.

Some hobbies may prove more difficult than kids first imagined, requiring some perseverance before they can be enjoyed fully. In such instances, observe youngsters while they engage in the activity. If they appear to be enjoying themselves but are periodically frustrated, encourage them to keep trying. If

Weighing In on Exercise vs. Dieting
S
tatistics indicate more and more men, women and children are overweight or obese. The National Institutes of Health state that more than 35 percent of adults in the United States are obese and more than 34 percent are overweight, while 17 percent of children and adolescents in the United States are obese. Obesity rates are three times as high among today’s children than they were among youngsters just one generation ago. As individuals attempt to lose weight, they may wonder what is the most effective way to accomplish that objective. Some argue that the secret to weight loss is lots of exercise, while others insist that calorie control is the key. When it comes to slimming down, some may be surprised by what the experts have to say. The Mayo Clinic advises that cutting calories through dietary changes appears to promote weight loss more effectively than physical exercise alone. According to Shawn M. Talbott, Ph.D., a nutritional biochemist and former
director of the University of Utah Nutrition Clinic, weight loss is about 75 percent diet and 25 percent exercise. People generally see the largest short-term results when they eat healthy foods and healthy portions. Poor diets can be difficult to overcome, as it takes a lot of exercise to spur dramatic weight loss, whereas a low-calorie, healthy diet can be a simple and effective means to losing weight. Nutritionists often point to a balanced diet that focuses on fruits and vegetables, lean proteins and whole-grain carbohydrates over fad diets or ones that require the adherence to strict guidelines that are difficult to follow for lengthy periods of time.

Dining out every so often can be part of a healthy lifestyle, but individuals who want to exercise the utmost control over their diets may find eating at home makes it easier to do so.
Many Americans dine out at least once per week. But entrée options on restaurant menus may be high in calories and compromise dieters’ efforts to slim down. An average dinner entrée is 1,500 calories. Depending on age and gender, health experts say that adults need somewhere between 2,000 and 2,500 calories per day.
The Energy Metabolism Laboratory found that 92 percent of meals from large-chain and local restaurants contain more calories than is recommended for the average person. Birds Need Extra Assistance in Winter

old weather can be particularly taxing on many of the birds individuals discover in their backyards throughout the year. Although some species migrate to warmer climates each winter, many stay put and attempt to ride out winter in their normal habitats. Birds that tend to stay put include finches, sparrows, titmice, jays, woodpeckers, chickadees and cardinals. The Cornell Lab of Ornithology says that, in much of North America, winter days can be windy and cold for birds, and nights are even more challenging. In winter, birds no longer have berries and lush vegetation to consume and insects have died or gone underground. Since finding food can be especially difficult, and shelter may be scarce, many birds can benefit from a little help from their human friends. Shelter Wild Birds Unlimited says shelter for birds is hard to come by in winter. Trees have shed their leaves, and evergreens may not be as abundant or protective. As a result, birds frequently seek man-made structures that can provide refuge from the elements. People can provide shelters for birds, which may include traditional birdhouses, windbreaks and snow

shields. Even a brush pile can simulate the natural shelters of trees and shrubs that birds prefer. Roost boxes are another option and one that can accommodate small flocks that will group together and share their body heat. Use leaves and branches to provide natural camouflage and help attract birds to the shelter. Offer yarn, fabric scraps, cotton and other insulating materials that birds can use to help make their shelters more comfortable. Food Birds require high-calorie and high-fat foods in the winter so they can keep up their metabolism to generate warmth. Also, since birds’ feeding habits vary depending on the type of bird, it may be necessary to place feeders at varying heights to maximize access. Feeders should be located out of the wind and in an area that offers safe refuge from predators. The National Wildlife Federation also says individuals should put out sizable feeders and/or use multiple feeders to provide ample food during snow and ice storms. Feeders should be checked regularly and kept full. Consistency is also important because birds will grow accustomed to being supplemented with food and may depend on such supplements to survive. Bird Watcher’s Digest suggests a variety of foods for birds. Blackoil sunflower seeds, peanuts, suet, cracked corn, millet, thistle seed, safflower and various fruits can help many birds thrive. It’s also suggested to include mealworms, which can be purchased at bait stores or pet stores. These larvae of beetles can be presented in a shallow dish with slippery sides so the worms cannot crawl out.

Large-scale renovations can greatly affect a home, but smaller projects can yield impressive results and be completed over the course of a single weekend. If time is of the essence, these weekend or one-day projects may satisfy homeowners’ desires to fix up their homes: Create an accent wall. Painting a focal wall in a home can create a serious impact. The bonus is it will not take as long or require as many materials as painting an entire room. Accent walls frequently feature a bold color, so decide on placement and tackle this project in less than a day. Install stair runners. Dress up hardwood stairs with decorative carpet runners. Runners come in elongated pieces of carpeting or individual pieces that can be placed on each step. If carpeting doesn’t fit with the home’s design, painting individual stair treads also can create visual appeal. Dress up the entryway. An entryway is a guest’s first impression of a home. Many entryways can use a minor overhaul, both inside and outside. Paint the front door a different color so it pops from the curb. Install a new mailbox or decorative house numbers. A new welcome mat can change the look as well. Inside, consider laying a new floor. Resilient vinyl tiles come in many different patterns and can mimic the look of wood, travertine or
marble. Installing a floor can take a day or two. Install a new faucet. Instantly improve a kitchen or a bathroom with new fixtures. New faucets can provide aesthetic appeal and low-flow faucets can help conserve water. Create a gallery on the staircase. Gather and arrange framed photos, artwork or wall accents so that they ascend the wall of a staircase. This creates a designer touch and can dress up an often barren area of wall space. Install a fresh light fixture. Improve drab spaces with a little illumination. Better Homes & Gardens suggests replacing an existing fixture with something new and vibrant. If hanging a new fixture is not within one’s skill set, free-standing table or floor lamps also can cast a new glow on a space. Add molding. Molding can add instant aesthetic appeal to a room. Molding is appropriate near the floor, at the top of walls where they meet the ceiling, or even mid-wall as a chair rail. Some homeowners like to create framed molding on walls in formal living spaces. Update kitchen or bathroom hardware. Replacing hardware is a fast and easy project, but one that can have immediate impact. Swap out tired or outdated hardware for newer brushed metals and more impactful shapes and designs. Home renovations do not need to take weeks or months. Many projects can be completed over the course of a weekend.

Swiss Mountain Chocolate Ice Cream Makes about 2 quarts
V
alentine’s Day is synonymous with many things, including chocolate. Many sweethearts exchange chocolate on Valentine’s Day, making chocolate confections as essential to a successful holiday as flowers and romance. Men and women who want to make this Valentine’s Day extra special can forgo store-bought chocolates in favor of homemade confections. The following recipe for “Swiss Mountain Ice Cream” is a great way to end a romantic holiday dinner:
INGREDIENTS

Put the milk, condensed milk, sugar and cocoa in a pan, bring to a boil, then simmer gently for 5 minutes, stirring constantly. Stir in the chocolate and let melt, stirring occasionally. Let cool completely, then add the vanilla essence and refrigerate for about 1 hour.

2 cups whole milk 1 cup sweetened condensed milk 3⁄4 cup granulated sugar 2 tablespoons unsweetened cocoa 14 ounces premium milk chocolate (over 32% cocoa solids), chopped” 1 teaspoon pure vanilla essence 11⁄2 cups whipping or heavy cream, chilled 61⁄2 ounces white nougat, roughly chopped 1 ice cream maker (optional) 1 freezer-proof tray or container 1 mountain-shaped mold (optional)
Stir the cream into the mixture, then churn-freeze in an ice cream maker in two batches. This will take 20 to 30 minutes. It will increase in volume as it thickens and freezes. Stop churning when thick and smooth, add the nougat and churn to mix, then transfer to a chilled freezer-proof tray, cover and freeze. If you don’t have an ice cream maker, put the mixture in a freezer-proof tray or container and freeze until it is frozen around the edges. Mash well with a fork and return to the freezer. Continue mashing with a fork and freezing the mixture until thick and smooth, about 2 hours. Stir in the nougat. At this stage, you can pack it into a mold and return to the freezer. If the ice cream is in a mold, remove from the freezer and dip briefly in hot water to melt the outside. Invert onto a chilled plate, lifting off the mold. If the ice cream is in a container, transfer to the refrigerator to soften for 20 minutes before serving in scoops. Drizzle with White Chocolate Sauce and serve.

Makes about 21⁄2 cups
INGREDIENTS

• 1 cup light or heavy cream • 6 tablespoons milk • 8 ounces white chocolate (over 25% cocoa butter), chopped
Put the cream and milk in a small pan and bring to just below boiling point. Remove from the heat and let cool for 2 to 3 minutes. Add the white chocolate and stir until completely melted. Serve warm.

erving breakfast in bed on Valentine’s Day is a romantic way to begin this day that has become synonymous with affection and romance. Of course, pouring a bowl of cereal and bringing it upstairs won’t have the same impact as whipping up a homemade
breakfast. Those who want to impress their sweethearts this Valentine’s Day and start the day off right can prepare the following recipe for Strawberry-Glazed French Toast with Sweetened Sour Cream: Serves 4
Ingredients 8 1-inch-thick bread slices, cut from a country or peasant loaf (see note) 2 cups half-and-half 4 egg yolks 3 tablespoons light brown sugar 1 tablespoon vanilla extract, plus 1⁄2 teaspoon 1⁄2 teaspoon cinnamon 3 tablespoons unsalted butter 1⁄2 cup sour cream 1 tablespoon granulated sugar 1⁄3 cup strawberry jam or preserves
Directions Arrange a rack at center position and preheat the oven to 400 F. Place the bread slices on a baking sheet and bake until dry and very lightly browned, about 8 minutes per side. Watch carefully so that the bread does not burn. Remove the bread from the oven and reduce the oven temperature to 200 F. In a medium bowl, whisk together the half-and-half, egg yolks, brown sugar, 1 tablespoon vanilla and cinnamon. Pour the mixture into a shallow pan (a 9-by-13-inch glass baking dish works well). Add the toasted bread slices and soak them 4 minutes per side. Remove to a

large plate or platter.
Place a large, heavy frying pan over low to medium heat. Add about 2 teaspoons of the butter, or enough to coat the bottom of the pan lightly. When melted, add enough bread slices to fit comfortably in a single layer. Cook slowly until the slices are golden brown and crisp on both sides, about 4 minutes per side. Remove to a baking sheet and place in the warm oven. Repeat, adding more butter to the pan as needed until all the bread slices have been sautéed. In a small bowl, stir together the sour cream, granulated sugar and remaining 1⁄2 teaspoon vanilla. When ready to serve, spread each toast with a thin coating of strawberry jam and top with a dollop of sweetened sour cream. Note: The best bread for this dish is an unsliced loaf of good-quality peasant or country bread, preferably one without an extra-hard crust. One that is rectangular, rather than round, is more convenient.
