Tips to Making Delicious Ice Cream at Home equipment is necessary to produce ice cream. Store the bowls of an ice cream maker in the freezer to keep them frozen and ready for when the mood strikes to make a batch of ice cream.

Even though a trip to the local ice cream parlor can yield many different opportunities to indulge, making ice cream at home is easier than one may believe. Also, creating homemade ice cream can be a fun way to experiment with unique flavors and textures. It is easy to customize concoctions based on what everyone likes best. Making ice cream also is a fun way to bring the family together with the reward of a tasty prize for all of the effort. Here are some tips for making ice cream at home:

Avoid ice crystallization. Ice crystals in the ice cream can ruin texture by making ice cream crunchy. Freezing ice cream quickly at very cold temperatures is essential. That means freezing the bowl and keeping the ingredient mix cold. Spinning the ice cream and transfering it quickly to the freezer helps keep ice crystals small.

Buy quality ingredients. Choose fresh, high-quality ingredients. Real vanilla beans or extract can produce better flavor than imitations. Select in-season berries and other fruits and, if possible, use organic milk. All of these ingredients will blend together for fresh flavor.

Keep mix-ins small. Mix-ins, like cookie pieces or cake crumbs, can add a different dimension to ice cream. Chill the ingredients and make sure they are small (roughly the size of chocolate chips). Add

Design a Dream Outdoor Entertaining Space

pon the arrival of warm weather, many individuals prefer to spend their free time outside, relishing the fresh air and sunshine and evenings spent under the stars.

rilling is many people’s preferred method of cooking, perhaps because it combines the great outdoors with delicious food. When grilling, many people are comfortable sticking with traditional backyard barbecue fare, such as hot dogs and hamburgers. But those who want to expand their grilling horizons can try the following simple recipe for Grilled Chicken and Onion Skewers: Grilled Chicken & Onion Skewers Makes 10 to 12 skewers Basting Sauce (optional) 1/2 cup soy sauce 1/4 cup mirin 2 tablespoons sugar Ingredients: 1/2 pound boneless, skinless chicken thighs, excess fat removed and cut into bite-size pieces 1 yellow onion, cut into 2-inch wedges, and/or baby leeks, white part only, cut into 1-inch lengths 1 tablespoon canola or other neutral oil Salt (optional)

Directions: Place 10 to 12 bamboo skewers in water to cover at least 30 minutes before grilling. Prepare a mediumhot fire in a charcoal grill, or preheat a gas grill to medium-high. If using the basting sauce, in a small saucepan, combine the soy sauce, mirin and sugar over medium-low heat and cook, stirring, until the sugar has completely dissolved and the liquid just begins to turn syrupy, 5 to 8 minutes. Remove from the heat and set aside in a small bowl.

Keep Summer Road Trips Safe

hen the outdoors beckons, road trips can be the perfect way to see the countryside, escape the routine of daily life and enjoy short vacations.

When taking to the open road, it is important to focus on safety. The National Highway Traffic Safety Administration says that planning and prevention can spare roadtrippers from the consequences of breakdowns, traffic accidents or other road emergencies.

Plan your route. Map out the route before heading out. Be aware of potential road closures, obstacles or construction. Thanks to realtime GPS updates through mobile phones and other devices, some drivers like to rely on tech to get them through. But it’s important to realize service may be spotty in rural areas. Mapping a trip out in advance can save drivers from getting lost during mobile service interruptions.

Stock emergency preparedness items. Prior to a trip, drivers should make sure their vehicles are equipped with necessary safety items. Nearly half of Americans do not check that proper emergency items are stored in their vehicles prior to getting on the road. Before embarking on a road trip, make sure vehicles have a first aid kit, flashlight, water bottles, phone chargers, tirerepair tools, flares, jumper cables, towels and even an old backpack for storage. Schedule a service call. Regular maintenance can keep vehicles from breaking down. Drivers should

Enjoy More Time Outdoors with Easy Tricks In centuries past, humans spent much of their time in nature, hunting, foraging and living life without the comforts of extensive shelters. Fastforward several centuries, and the tables have turned dramatically. The Environmental Protection Agency says the average person spends 93 percent of his life indoors, with 87 percent of the time inside of a building, and the remaining 6 percent in an automobile. These shocking results indicate that the equivalent of just one half of one day per week is

spent outdoors. And people may be paying a price for spending so much time indoors. There’s various reasons to believe that being outdoors can be good for a person’s health. The National Institutes of Health and Harvard Medical School say that, in addition to providing physical benefits, simply spending time in nature in any form can improve mental outlook, boost creativity, elevate mood due to natural light, improve concentration and reduce stress. A study from the St. Louis University School of Medicine also said that spending time outdoors can help a person sleep better. That’s because natural sunlight can set the body’s

internal clock. Despite all of the benefits of getting outside, many people find it challenging to do so thanks to their busy schedules. The following are a few ways to increase time in the outdoors that do not require major commitments: Bike or walk to work. For those who live close to their offices, walking or cycling to work is a simple way to spend more time outdoors. People who take public transportation can get off the train or bus a few stops early to get some exercise and breathe some fresh air. Lunch outside. Take your lunch hour outdoors rather than in an indoor cafeteria or restaurant. Office workers are urged to go to a park or green space to give their brains a rest from urban stimuli. Lunch is the ideal time to do just that. Invest in a screen room at home. A screened-in porch, lanai or other space can bridge the indoors to outside and serve as a restful place to enjoy some fresh air while being protected from insects and inclement weather.

Set strict “no device” times. Schedule a time when devices are disconnected and the entire family enjoys some recreation outdoors. Let kids get back to the basics of bike riding, skating, playing pick-up sports games outside with friends, and all of the activities parents enjoyed as youths. Dine al fresco. Opt for outdoor seating at a favorite restaurant. This will provide an hour or more to take in the sights and breathe some fresh air while enjoying a meal. Meet friends at outdoor places. When engaging in recreational activities, plan them at outdoor venues, such as parks, beaches, town centers, boardwalks and other areas where everyone can have fun and still be outside. Fresh air, sunshine and time spent in nature are good for the mind and body. People concerned that they’re spending too much time indoors should seek ways to spend more time outside whenever possible.

Ways to Prevent Summer Learning Loss

ummer vacation presents an opportunity for students to enjoy an extended break from the classroom. While this respite from routine may be a welcome change to youngsters, teachers frequently lament that valuable educational lessons seem to be forgotten each summer. Educators then face tougher hurdles when students return to school in the fall.

Children need not fall victim to summer learning loss when their days are filled with educational but fun activities.

he Fourth of July is a day to celebrate in the United States. Much about July makes the fourth day of the month the ideal time to celebrate. School is out, the weather is warm and the generally relaxed attitude of summer has typically set in by the first week of July.

Embrace the red, white and blue. When decorating, opt for red, white and blue decorations. This gives the party a distinctly Fourth of July feel. Red, white and blue napkins and tablecloths are readily available come July, and hosts with a gift for crafts can even create their own decorations to use year after year.

Leave the fireworks to the professionals. Hosts should not succumb to pressure, real or perceived, to supply fireworks at their Fourth of July parties. Fireworks can lead to injuries and accidents and are best left to the professionals who put on community fireworks shows. Discourage guests from bringing their own fireworks by making it known they will be asked to leave the party if they do. Arrange transportation home for guests. To make sure everyone gets home safe and sound, arrange in advance for some guests to serve as designated drivers. Hosts also should abstain from consuming alcohol during the party so they can get people home safe if necessary. Stop Sand from Spoiling Summer Fun

F

ew things are as synonymous with summer recreation as a day at the beach enjoying the sun, sand and surf. Whiling away the hours at the coast is an ideal way to get fresh air and enjoy family or solitary time and also can be an entertaining way to exercise and learn about marine life.

While a beach isn’t a beach without sand, sand can adversely affect beach excursions. Sand is a loose, granular material that blankets the coastlines of beaches, lakes and riverbeds. Depending on location, sand is comprised of many materials and comes in a vast array of colors. Silicon dioxide in the form of quartz

Harvard researchers have catalogued 72 sand collapse stories over the past decade-plus, and 60 proved fatal. A good rule of thumb is to dig sand holes that are no deeper than the knees of the smallest person in the hole.

Regardless of its composition, sand is a nuisance to some people. Because it is lightweight and can stick to clothing and other items, sand often follows beach revelers home. During and after a beach trip, these suggestions can make sand less problematic: Protect the skin. Sand reflects the sun’s rays and can be hot to the touch. Experts estimate that beach sand can reach 120º to 130º F. Wear sandals or water shoes to protect

Rinse all items. Shake and rinse all beach toys of sand before returning home. Hang towels, coverups and other clothing outside to shake off on a clothesline before laundering. This will cut down on the amount of sand tracked inside. Sand can be a bit of a nuisance. Make summer excursions more fun by handling sand effectively.

Smoking is one grilling technique that is growing in popularity, as specialty products inspire more people to smoke their foods. Smoking involves cooking foods in closed chambers at low temperatures. Smoking is not the quickest way to whip up a meal, as the low temperatures require foods be cooked for lengthy periods of time. People who prefer their foods have a smoky flavor would no doubt prefer smoking over any other grilling technique. Also known as rotisserie grilling, spit roasting may call to mind pig roasts in which food is placed in a chamber with a rotating, often motorized spit. Indirect heat is used to cook the foods placed on the spit or skewer,

and spit roasting is often a go-to method for cooking whole birds or ribs. Indirect Grilling When employing this technique to grill foods, cooks will not place their foods over a direct heat source, such as an open flame. Instead, the foods are placed in a chamber away from the heat source before the lid is closed. The lid will remain closed while the food cooks, which can take a long time. Some people prefer indirect grilling because it tends to produce foods that are well cooked on the inside but do not have the charred exterior that foods grilled by other means may have. Plank Grilling Popular among people who like to grill fish, plank grilling involves putting food on top of a plank of wood and then placing the plank over a direct heat source. In addition to the flavor imparted to the food from the heat source, such as charcoal, the plank itself can add its own unique flavor. Though fish is perhaps the food most widely associated with plank grilling, this technique also can be a great way to grill vegetables.

Cut Blooms that Will Last the Longest

F

lowers may look beautiful in gardens and even when snipped and brought inside to brighten up a mantel or dining table. Unfortunately, cut flowers have a finite shelf life. While cut blooms can’t live forever, certain varieties will outlast others. Choosing flowers wisely for wedding centerpieces or keepsakes can help couples enjoy selected flowers longer. Peonies: Peonies can last for about a week or two when brought indoors. HGTV says to snip the stems when the buds are tight, wrap them in newspaper and store them in the refrigerator until you’re ready to arrange. Zinnias: These bright blooms can last for three to four weeks and are best harvested in summer. Related to the sunflower, zinnias are available in a wide range of colors. Chrysanthemums: Widely referred to as “mums,” these midsummer to late-fall flowers can last between three and four weeks after being cut. Mums can be used to fill out floral displays because they tend to be inexpensive but durable flowers.

Coneflower: The purple coneflower is popular, but coneflowers are available in many colors aside from purple. Coneflowers attract butterflies and are beautiful in cut displays.

Carnations: Another budgetfriendly flower, carnations are popular from early spring until late summer. Available in many hues, they can be used in conjunction with other blooms to create wellrounded floral displays that may last between two and three weeks. Lilies: Lilies are traditional flowers that are beautiful to behold. Lilies are available in various sizes and colors and can be bought fresh year-round. Lilies often last longer than a week after being cut. Look for lilies with tight buds, as such flowers tend to last the longest. Tacos with Grilled Steak and Veggies Prep time: 5 minutes Cook time: 14 minutes Serves 6 Ingredients: 2 10.5-oz. packages of Mann’s Southwest Chipotle Nourish Bowl 4 beef flat iron steaks (about 7 ounces each) Juice of 2 limes Salt and freshly ground black pepper to taste 1 package whole wheat tortillas 1 avocado, sliced Chipotle Mayonnaise 1⁄2 cup mayonnaise Juice of 1⁄2 lime 1 to 2 teaspoons

Place tortillas on grill and cook until warm and slightly charred. To assemble the tacos, place a couple slices of grilled steak on the bottom. Add vegetables and top with a slice of avocado. Drizzle the top with chipotle mayonnaise.

Sugar Syrup Ingredients: 1 cup water 2 cups granulated sugar Directions:

Directions: Place the ice cubes in a chilled oldfashioned glass. Place the berries in a small bowl and crush with a fork. Add to a shaker with the vodka, lime juice and cracked ice. Shake for 10 to 15 seconds, then strain over the ice cubes. For a lighter version of the drink, add the sparkling water.

Put the water in a small saucepan. Add the sugar. Bring the water to a boil while stirring. Reduce the heat and continue to stir until the sugar dissolves. Cool to room temperature. Select a clean container that will hold at least 11⁄2 cups. Using a funnel, pour the sugar syrup into the container, seal and store in the refrigerator for up to 6 months.

When you’re satisfied with the intensity of flavor, strain the liqueur through a metal sieve into a bowl. Discard the berries. Add the sugar syrup to taste, if desired. Using a funnel, pour the liqueur into the original bottle (or another container). Label with the name of liqueur and the date. Age for 1 month away from light and heat.

Decant the vodka into a clean 2-quart glass container with a tightfitting lid. Soak the original bottle to remove the label. Let dry. If using frozen berries, allow them to thaw. Place the fresh or thawed frozen berries in a bowl, crush with a fork and add to the vodka.

Seasonal Selections Serve steak alongside a backyard barbecue staple A night of al fresco dining next to a grill in the backyard can be a great way to spend an evening. Nearly any type of food can be grilled, and steaks tend to be especially good when cooked over an open flame. The following recipe for Grilled Rib-Eye Steaks with Mushroom-Shallot Butter is sure to please, especially when coupled with McNamara’s recipe for Baked Beans, a must-have staple for any backyard barbecue.

Baked Beans Serves 10 2 15-ounce cans navy beans, drained and rinsed 4 slices applewood- or pecan wood-smoked bacon, cut into 1-inch pieces 1 cup diced yellow onion 11⁄2 cups ketchup 1⁄4 cup plus 2 tablespoons unsulphured molasses

Grilled Rib-Eye Steaks with Mushroom-Shallot Butter

1⁄2 cup packed dark brown sugar 11⁄4 teaspoons ground mustard

Serves 4 to 6 8 tablespoons (1 stick) plus 3 tablespoons unsalted butter, at room temperature

1 teaspoon ground cloves

1⁄2 cup sliced shallot

Preheat the oven to 350º F.

1 heaping cup sliced cremini mushrooms

Combine the bacon and onion in a medium Dutch oven. Slowly cook over medium heat until the onion is tender and the bacon is cooked, 8 to 10 minutes.

2 large cloves garlic, minced 1 teaspoon coarsely chopped fresh thyme leaves

Meanwhile, in a medium bowl, whisk together the ketchup, molasses, sugar, ground mustard, ground cloves, and 1 cup water to combine. Add the cooked beans and pour the mixture into the pot with the bacon and onion. Stir, cover and bake for 1 hour, stirring every 20 minutes.

1⁄4 teaspoon kosher salt, plus more as needed 1⁄4 teaspoon coarsely ground black pepper, plus more as needed 4 to 6 steaks (such as rib-eye, New York strip or porterhouse) Melt 1 tablespoon of the butter in a medium skillet over medium-low heat. Add the shallot and cook until golden and slightly crispy, 7 to 8 minutes. Use a slotted spoon to transfer the shallot to a clean plate. In the same skillet, melt 2 tablespoons of butter, then add the mushrooms, garlic, thyme, salt and pepper. Stir and cook until the mushrooms are softened, about 5 minutes. Transfer to the plate with the shallot and let cool.

Add the salt and stir. Uncover and let sit for 15 to 20 minutes before serving.

In a small bowl, use a rubber spatula to blend the remaining 8 tablespoons of butter with the cooled mushroom mixture until combined. Place the butter in the center of a piece of parchment paper. Bring the edges together and press with your fingers to form the butter into a log. Roll and twist the ends before popping the butter into the refrigerator for at least 20 to 30 minutes. Set the steaks on the counter for 30 minutes to bring them up to room temperature. Meanwhile, preheat a grill or grill pan to medium-high or about 400º F. Season both sides of the steaks with 2 pinches of salt and a pinch of pepper. Grill each steak for 6 to 8 minutes per side, depending on the thickness and the desired doneness. Tent with aluminum foil and let rest for 5 minutes. Slice the mushroom butter into coins and top each of the steaks with two coins before serving. www.seasonsmagazineonline.com

Eat Healthy at the Fair

airs, carnivals, rodeos and roving amusement parks are popular summer attractions. Rides and raffles may attract the majority of revelers, but fairs and carnivals also are great places to enjoy mouth-watering food. Fried dough, meats on sticks, pretzels, cotton candy, cheesesteaks and other aromas waft through the air at carnivals. However, fairs have not always been so great for people watching their calories. And while fairs might not be diet-friendly, it’s not impossible to adhere to one’s diet while visiting the fair. Fill Up at Home Prior to heading out to the fair, be sure to eat a filling, healthy breakfast. This will provide ample nutrients and decrease the likelihood that you will overindulge in less healthy fare while at the carnival.

Watch Portion Sizes

Foods that are comprised of protein and fiber can help you to feel fuller longer. Pack a snack that can provide a boost of energy prior to indulging in any fair foods. Trail mix or a low-calorie protein bar may be enough to tide you over until you leave the fair. Stay Hydrated The Academy of Nutrition and Dietetics says that mild dehydration produces similar symptoms to hunger. If you feel hungry after eating, your body may only need fluids and not food. Therfore, reach for water or a hydrating sports drink (particularly when it is hot outside) as a first step to abating hunger symptoms, especially if you’ve recently eaten. Choose Healthy Food Vendors

Look for vendors that offer things like yogurt cups, roasted vegetables, lean meats and fresh fruits. Kabobs that include lean meats that are low in calories can make a great carnival meal. Corn on the cob without gobs of butter also can be a filling snack. Smart dessert options include fruit smoothies, water ice, frozen yogurt and even a candied apple, which may be rich in fiber. A small dose of cotton candy, which is just 100 calories per ounce, can offer a sweet fix while you avoid deep-fried concoctions. Keep in mind that cheese curds can set you back 650 calories and a funnel cake 720 calories, according to the YMCA. It can take several miles of traversing the fair to burn all those calories. If you splurge on a treat or two, consider sharing it with a friend or family member to cut the portion size. A single bite of a calorie-rich food can be enough to satisfy a craving. If you’re heading to a Renaissance Fair, giant turkey legs may be prime for the picking. Those legs, which may contain as many as 1,140 calories, are well beyond the typical poultry portion size of four ounces. Such food is best shared with others. Pay Attention to Beverages Before you fill up on lemonade or visit the beer tent, remember some beverages contain lots of calories. Weigh your options carefully. If you want a cold beer, you may need to skip that chocolate-covered banana. Fair foods are delicious but often high in calories. Smart choices can ensure dining at a fair does not derail your diet.
