Healthy Ways to Get to School

Today, many school-aged children are driven to school by their parents. That not only increases traffic and the opportunities for vehicular accidents, but also contributes to the poor air quality in and around local neighborhoods. The cities of London and Camden in the United Kingdom have already placed bans on driving on some roads around schools to help curb air pollution. The World Health Organization says air pollution is linked to the deaths of three million people around the world each year. Driving to school may also contribute to the obesity epidemic plaguing the nationâ€™s youth. The Centers for Disease Control and Prevention say the percentage of children with obesity in the United States has more than tripled since the 1970s. Roughly one in five school-aged children is obese. Families can find healthy ways to transport children to school, and

Walking one mile to and from school each day can fulfill around two-thirds of the 60 minutes of the recommended physical activity for children each day. Considering that recess times are being cut and kids are spending more time indoors or on devices instead of playing outside with friends, walking to school provides much-needed exercise. Young children should be accompanied by an adult chaperone when walking to school. Older children are urged to walk in pairs or groups to increase safety in numbers. Students should heed traffic signals and stick to routes with access to crosswalks and crossing guards. Bike to School

Bicycling is another great physical activity and an efficient way to get to school. The Wisconsin Department of Health states that, when kids cycle at a moderate effort for one mile, they can burn between 20 and 30 calories, depending on the weight of the child. When biking to school, students should follow the rules of the road and wear the appropriate safety gear, such as helmets. Carpool

Sharing rides to school is another way to cut down on congestion and air pollution. Families can work together to drive students to and from school, sports games and clubs. Ride the Bus

Finding Balance with Extracurricular Activities

any high schools, colleges and universities emphasize their goals of producing wellrounded students. Extracurricular activities teach students important life lessons, provide them opportunities to socialize and often stimulate their minds and bodies in ways that differ from the stimulation provided in the classroom.

Children are more likely to participate in sports than clubs or lessons, such as music, dance and language, but each of these activities can be beneficial to students’ development.

The “over-scheduling hypothesis” may be overhyped. This is the concern that too much organized activity participation leads to poor developmental outcomes. This hypothesis also suggests that hectic schedules also undermine family functioning, detract from schoolwork and possibly increase the risk of copycat behaviors and excessive competitiveness. However, in the study “The Over-Scheduling Hypothesis Revisited: Intensity of Organized Activity Participation During Adolescence and Young Adult Outcomes,” researchers J.L. Mahoney and Andrea Vest determined that, controlling for demographic factors and baseline

Pack Well for a Hike in the Wilderness

eptember may enjoy the title of National Wilderness Month, but any time of year is a good time to enjoy the great outdoors. One of the ways to immerse oneself in nature is to enjoy a day hike or overnight backpacking excursion. Millions of people take to trails or create their own paths all across the world each and every year. Hiking is a great way to enjoy the beauty of nature, but it also has other benefits. Hiking as a form of low-impact walking can reduce risk for heart disease, hypertension, diabetes, obesity and anxiety.

Preparing for a hike involves packing accordingly for the trip. These items should be brought along on hiking trips to ensure such excursions are comfortable, safe and successful: Water: Bring along water whether you’re hiking in warm or cool temperatures. Water can be heavy, so some experienced hikers prefer to bring a filtration device or purifying tablets so they can rely on natural water sources for their drinks. Attention allergy sufferers, NAET may be the answer you are looking for. The good news is that Kinesiology testing (muscle testing) is very often capable of detecting sensitivities and intolerances. An allergy can be expressed in many more ways than most people expect. Any system in the body can be affected by an allergen. The respiratory system may present with shortness of breath, wheezing, sinus congestion, sneezing and spontaneous sweating. The cardiovascular system may present with a rapid heartbeat, atrial fibrillation and chest tightness. The integumentary or skin system often presents with a rash in patches or throughout the body, open skin sores; which can be an extreme eczema condition or skin dryness and itching. The entire body system can shut down with an extreme

sensitivity to an allergen, as in an anaphylaxis shock, which would require an immediate treatment usually with an epi-pen to inject the body with epinephrine.

It is possible to be allergic to anything, not just the usual suspects such as wheat, peanuts, animal dander, pollen and molds. Some common examples of allergens are salt, sugar, caffeine, spice, alcohol, food coloring/additives, cotton, paper, artificial sweeteners, cleaning agents, gold, silver, petroleum products and on and on. When least expected, an allergen could be the cause to your health problems. Other common pathologies such as autoimmune disorders, Chronic Fatigue, Fibromyalgia, Depression, Systemic Inflammation, frequent common colds, Eczema, Psoriasis, irregular menstrual cycles and many other illnesses may be allergy related. Yes, it is true. You can get rid of your allergies without taking medicine by reprogramming your nervous system with acupuncture or acupressure. If your allergies are not severe, they can sometimes be eliminated with a single treatment. NAET principles and techniques are based upon the combination of Kinesiology (muscle testing), chiropractic, acupuncture and some

Host a Turkey-Free Thanksgiving (And Other Meal Ideas Inspired by the First Thanksgiving)

ow in fat, high in protein and an inexpensive source of iron, zinc, potassium and B vitamins, turkey makes a healthy addition to a person’s diet. Turkey also tends to be the star of the show on Thanksgiving and other holidays. Even though turkey can be a delicious addition to any holiday table, some people prefer to buck Thanksgiving tradition from time to time and divert focus from the golden gobbler.

Even though turkey may be synonymous with Thanksgiving, hosts and hostesses should not shy away from serving something different. In fact, turkey may not even have been on the menu for the first Thanksgiving. Thanksgiving dates back to New England in November 1621, when newly arrived Pilgrims and the Wampanoag Indians gathered for an autumn harvest celebration. It’s reported that pilgrims went on a “fowling” mission in preparation

for the three-day feast. Although wild turkey was plentiful in the region, ducks, geese, passenger pigeons and swans were commonly consumed. Historians at the Smithsonian say documents refer to wildfowl and venison as foods appearing at the first Thanksgiving, but turkey was not mentioned. Home chefs can take a cue from those first pilgrims and choose less traditional offerings this Thanksgiving. The following are some ideas that are reminiscent of the first Thanksgiving: If the flavor is more palatable, don’t hesitate to select another bird to grace the Thanksgiving table, such as a goose or even a chicken. Some people find turkey meat to be too dry, despite all of the different preparation methods. Chicken or goose may be more well-received and just as versatile.

A traditional Thanksgiving meal for the early settlers would not have included potatoes. White potatoes originated in South America and sweet potatoes in the Caribbean. At the time of the first Thanksgiving, these would not yet have been introduced, as white potato patches in North America were not established in the region until 1719.

Don’t overlook the possibility of serving fish and other seafood. Colonists and the Wampanoag probably ate eel, lobster, clams and mussels. Fish can be dried, smoked and preserved. Replace wheat-based recipes with those made from cornmeal, as maize was more likely available during colonial time than wheat.

Because colonists did not have wheat flour and butter to make flaky tart crusts, pumpkin pie was not on the first Thanksgiving menu. In lieu of pumpkin pie, hosts can experiment with moist loaf breads or muffins made with pumpkin.

Forests provided chestnuts, beechnuts and walnuts, so a platter of nuts paired with cheese or fruit also can make a welcome addition to the table. Nuts also can be ground and used in baked goods or flavoring for Thanksgiving desserts.

The average Thanksgiving dinner table today looks quite different from the one the Wampanoag Indians and Pilgrims gathered around centuries ago. Families can stick closer to history and tailor their meals for a touch of something different this year.

Pumpkin and squash were plentiful in colonial times, and this is why these gourds are often included in Thanksgiving meals and decor. The flesh of a pumpkin or squash can be turned into casseroles or used to make quiche.

Halloween Pumpkin-Carving Pointers

ransforming pumpkins into cleverly carved creations is a Halloween tradition. Each October, glowing pumpkins take up residence near doorsteps and porches, adding to the magical ambiance of the season. Young and old spend time designing their themes and then taking knife to

pumpkin to achieve the desired effects. Carving pumpkins into jack-o’lanterns can be traced back centuries to Ireland and a story about “Stingy Jack.” The tale involves Jack outwitting the Devil twice, the second time freeing the Devil from a prank in exchange for the promise that he would not claim Jack’s soul should Jack die. When Jack did die, God did not want the unsavory character in heaven, but the Devil could not claim Jack for hell. Therefore, Jack was relegated to roam the planet indefinitely with only a burning coal to light his way. Jack put that coal into a carvedout turnip. His ghostly figure was referred to as “Jack of the Lantern.” Later on, it was shortened to “Jack O’Lantern.” When Irish immigrants arrived in North America, turnips weren’t plentiful, so jack-o’-lanterns were instead carved into pumpkins. Today, many people carve jacko’-lanterns, with some featuring just smiling or grimacing faces,

while others are far more artistic creations. These tips can help anyone carve a pumpkin:

Many professional pumpkin artists do not actually cut clear through the flesh of the pumpkin. They carve and shave off layers of the outer rind until it becomes more translucent. Delay carving until the last minute. Wait until the day before Halloween to begin carving. Pumpkins are a perishable item, and they’ll begin to rot as soon as you begin carving. Spritzing them with water can help them stay fresh, but there’s no turning back the clock once the first cut is made. Cut a hole in the back. Cutting off the top of the pumpkin can affect its structural integrity and cause it to rot faster. Instead, cut a hole in the back of the pumpkin and use an electric light to illuminate it. LEDs are adviseable because they don’t generate much heat, which can cook and rot the pumpkin from the inside out. With some creativity and a little know-how, anyone can create an eye-catching jack-o’-lantern.

Fun and Safe Halloween Party Guide

osting a Halloween party can be fun, but it’s also a big responsibility. Halloween parties favor outlandish pageantry, amazing costumes, eye-catching decor and enough scares and tricks to amuse thrill-seekers. While fun is often the primary focus of Halloween, party hosts also need to prioritize safety when hosting spooky soirées. Halloween isn’t just for kids anymore. Alcohol has become a big part of many adults’ Halloween celebrations, and that means hosts must take steps to safeguard their guests from overdoing it with alcohol. As party planners start to plan their Halloween festivities, it’s important to remember that safety must be a priority: Prepare the space. A raucous party may lead to accidents around the house. Move out any extra furniture so guests have more space

to move around. Remove breakable items from rooms where guests will spend most of their time. Skip the candles. Battery-operated tealights create the effect of real candles without the danger. Illuminate jack-o’-lanterns and other Halloween items with flickering LEDs, which won’t start a fire if they’re knocked over. Hire a bartender. If the party is an adult affair, invest in a professional bartender or server who can monitor guests’ alcohol consumption. He or she can cut off those who have had too much and prevent guests from becoming intoxicated. Provide adequate lighting. Darkness might remind many of Halloween, but an entertaining space should not be so dark that guests cannot move around safely. Be sure to illuminate all walkways and clearly indicate exits so that guests can get to safety if

necessary. Remove any obstacles on the floor that are tripping hazards, and be sure to use nonslip runners and rugs. Practice food safety. Many Halloween treats and desserts contain nuts, and this can pose a hazard to those with nut allergies. Label foods and attempt to make the party nut-free if there is someone attending with a nut allergy. Many foods can be left out at room temperature for anywhere from one to two hours. Promptly refrigerate any leftovers so that they do not spoil and cause foodborne illnesses.

Turkey Vegetable Pot Pie

Serves 6 Pot pie makes for a delicious meal, especially when home cooks go the extra mile and prepare homemade pie crust. Some may be intimidated by the idea of making their own pie crusts, but the following recipe for “Turkey Vegetable Pot Pie with Whole-Wheat Crust” simplifies that process, ensuring a fun and easy time cooking and, ultimately, a delicious meal:

INGREDIENTS For the crust:

1 cup whole-wheat flour 1 cup all-purpose flour 1⁄4 teaspoon salt 2⁄3 cup corn oil 1⁄3 cup orange juice

For the filling:

1 carton condensed cream of chicken soup (organic

preferred) 1⁄2 cup low-fat milk 11⁄4 pound boneless, skinless turkey breast, thinly sliced into bite-size pieces 1 cup thinly sliced carrots (or frozen sliced carrots, thawed) 1 cup leeks, quartered lengthwise, then thinly sliced crosswise, using white and pale green parts only

DIRECTIONS

To make the crust: Combine flours and salt in a medium bowl. Pour in oil and orange juice and stir until moistened. Press dough to flatten and chill.

To make the filling: Blend soup and 1⁄2 cup of milk in a large bowl. Mix in the remaining ingredients.

3⁄4 cup thinly sliced celery 1⁄2 cup frozen peas, thawed 3 tablespoons whole-wheat flour 2 teaspoons dried herbes de Provence (or 1⁄2 teaspoon each thyme, rosemary and basil) 1⁄2 teaspoon freshly ground black pepper 1⁄4 teaspoon salt

Preheat the oven to 350º F. Divide dough into 2 balls, one slightly larger than the other. Roll the larger ball between 2 large sheets of waxed paper until it is 1⁄8-inch-thick or until it fits in the bottom of a 9-inch pie pan. Remove the top sheet of waxed paper. Turn dough over and carefully place in the pie pan, removing remaining piece of waxed

paper. Press out any bubbles and patch holes with scraps of dough. Pour filling into the prepared pan. Roll remaining dough and lay it on top. Cut any excess dough hanging from the edges and crimp the crust between your thumb and forefinger to seal. Cut a heart into the center to allow steam to escape.

Place the pie on a sheet pan and bake for 1 hour and 15 minutes, until center of crust becomes golden and an instant-read thermometer inserted into the pie’s center reaches 165º F, covering browned edges only with foil about halfway through cooking. Remove the pie from the oven and allow it to rest for at least 5 minutes before cutting.

When looking to seafood for flavor, shrimp shells are full of flavor, and even more so in the following recipe for “Mediterranean Fish Stew.” The flavor of the shells should seep into the sauce, making this a delicious dish best eaten with your fingers and mopped up with plenty of crusty fresh bread:

INGREDIENTS 1 tablespoon olive oil 2 onions, finely chopped 4 cloves garlic, minced 2 teaspoons dried oregano, crumbled 1/2 teaspoon cracked black peppercorns 1 cup dry white wine 1 14-ounce can diced tomatoes, including juice 2 cups chicken or turkey stock 11/2 pounds bone-in turkey breast, skin removed, cut into 1/2-inch cubes 2 teaspoons sweet paprika, dissolved in 2 tablespoons water 1 jalapeno pepper, finely chopped 2 green bell peppers, diced 1 roasted red bell pepper, diced 3 cups water 11/2 cups quinoa, rinsed

Add garlic, oregano and peppercorns and cook, stirring, for 1 minute. Add white wine and tomatoes with juice and bring to a boil. Transfer to slow cooker stoneware. Add chicken stock and stir well. Season to taste with salt, if using. Add turkey and stir well. Cover and cook on low for 6 hours or on high for 3 hours, until turkey is tender. Add paprika solution, jalapeno pepper, bell peppers and roasted red pepper to slow cooker stoneware and stir well. Cover and

cook on high for 30 minutes, until peppers are tender.

Meanwhile, in a pot, bring water to a boil. Add quinoa in a steady stream, stirring to prevent lumps from forming, and return to a boil. Cover, reduce heat to low and simmer until tender and liquid is absorbed, about 15 minutes. Set aside. When peppers are tender, add cooked quinoa to slow cooker stoneware and stir well. Serve immediately.

At serving time, garnish with a lime wedge to squeeze over each serving.

INGREDIENTS 6 cups apple cider

1/4 cup real maple syrup 2 cinnamon sticks 6 whole cloves

6 whole allspice berries

1 orange peel, cut into strips 1 lemon peel, cut into strips 1 cup spiced rum

DIRECTIONS

Pour the apple cider and maple syrup into a large saucepan. Place the cinnamon sticks, cloves, allspice berries, orange peel and lemon peel in the center of a washed square of cheesecloth; fold up the sides of the cheesecloth to enclose the bundle, then tie it up with a length of kitchen string. Drop the spice bundle into the cider mixture. Place the saucepan over moderate heat for 5 to 10 minutes, or until the cider is very hot but not boiling. Remove the cider from the heat. Discard the spice bundle. Ladle the cider into big cups or mugs, adding a fresh cinnamon stick to each serving if desired.

When original packaging is unavailable, glass or plastic containers with airtight lids can keep Halloween candy fresher, longer. 5. Manage moisture. Candies like mints, caramels and hard candies can absorb moisture. They should not be mixed with other candies that can lose moisture, such as fudge and creamy confections. The NCA notes that hard candies can stay hard if sprinkled with finely ground sugar and stored in airtight containers. 6. Use candy in other ways. If eating chocolate bar after chocolate bar becomes tiresome, repurpose candy in different recipes. Chocolate can replace chips or morsels in cookies. Use hard candies to garnish cakes. Melt down caramels to use for ice cream toppings or chop up nutty candies to make your own sundae toppings.

Reducing waste is a worthy goal year-round, but especially so during the holiday season. And accomplishing that goal can be done without sacrificing holiday traditions:

Have a local Thanksgiving. Start a new tradition and invite nearby friends and family over for the holiday instead of traveling long distances. If each family reduced gasoline consumption by one gallon (roughly 20 miles), they could reduce greenhouse gas emissions by one million tons.

Use fine china when serving meals. Thanksgiving provides an opportunity to serve meals on fine china and use the silverware that has gone unused instead of disposable plates and utensils. In addition to adding a touch of elegance to meals, reusable china and silverware is less wasteful than paper plates and plastic utensils. Cloth napkins and other table linens are also more eco-friendly than paper napkins. Decorate using natural items. Scour the great outdoors for allnatural centerpiece materials or other items that can be turned into wreaths and garlands. Vases filled with pine cones and acorns make for beautiful, inexpensive and festive decorations. Shop locally and organically. When shopping for Thanksgiving dinner, choose local produce, poultry and grains whenever possible. Resist the urge to buy more than you need as well. Skip some of the less-popular dishes that are used only to make the table seem full. Buy a small turkey or think about only serving turkey breasts, which tend to be the most popular cuts of the bird. Light candles and reduce energy consumption. During the meal, eat by candlelight and turn off lights in other areas of the home that are not in use. Rather than turning on the television, take the party outdoors and play a game of football on the front lawn.

Send home the leftovers. Send each guest home with some leftovers, if you have any. This way the refrigerator isn’t left full of items that will end up uneaten. Otherwise, donate uncooked food to a local food bank. Use any scraps of vegetables in a compost pile. Don’t let recycling fall by the wayside. Remember to recycle all applicable items. Just because it’s a holiday, doesn’t mean recycling habits should be forgotten. Encourage guests to pitch in by clearly marking recycling bins. Thanksgiving can be less wasteful without detracting from the enjoyment and true meaning of the holiday.

Fall Lawn Care Tips

Fall lawn care differs from spring and summer lawn care, even if the warm temperatures of summer linger into autumn. Homeowners who want their lawns to thrive year-round can take advantage of the welcoming weather of fall to address any existing or potential issues. Keep mowing, but adjust how you mow. It’s important that homeowners continue to mow their lawns so long as grass is growing. But as fall transitions into winter, lower the blades so the grass is cut shorter while remaining mindful that no blade of grass should ever be trimmed by more than one-third. Lowering the blades will allow more sunlight to reach the grass in the months ahead. Remove leaves as they fall. Much like apple-picking and foliage, raking leaves is synonymous with fall. Some homeowners may wait to pick up a rake until all of the trees on their properties are bare. However, allowing fallen leaves to sit on the ground for extended periods of time can have an adverse effect on grass. Leaves left to sit on the lawn may ultimately suffocate the grass by forming an impenetrable wall that deprives the lawn of sunlight and oxygen. The result is dead grass and possibly even fungal disease. Leaves may not need to be raked every day, but homeowners should periodically rake and remove leaves from their grass, even if there are plenty left to fall still hanging on the trees.

Repair bald spots. Summer exacts a toll on lawns in various ways, and even homeowners with green thumbs may end up with a lawn filled with bald spots come September. Autumn is a great time to repair these bald spots. Lawn repair mixes contain mulch, seed and fertilizer to repair bald spots, which can begin to recover in as little as seven days. Before applying such products, remove dead grass and loosen the top few inches of soil. Follow any additional manufacturer instructions as well. Aerate the turf. Aerating reduces soil compacting, facilitating the delivery of fertilizer and water to a lawn’s roots. While many homeowners, and particularly those who take pride in tending to their own lawns, can successfully aerate their own turf, it’s best to first have it soil tested so you know which amendments to add after the ground has been aerated. Gardening centers and home improvement stores sell soil testing kits that measure the pH of soil, but homeowners who want to test for nutrients or heavy metals in their soil may need to send their samples to a lab for further testing. Fall lawn care provides a great reason to spend some time in the yard before the arrival of winter.

Arugula: Some people call arugula “rocket” because of just how quickly it grows. The green has been growing in popularity as a salad starter or vegetable side dish. Radishes: Radishes are typically ready for harvest about one month after planting, making them among the fastest-growing vegetables around.
