argaritas are wildly popular cocktails that can be enjoyed in standard and frozen varieties. Typically made with tequila and lime juice, margaritas lend a tropical flair to most any occasion and are the ideal accompaniment to Latin-inspired cuisine. Perhaps sipping a margarita can evoke the coming days of sunshine and outdoor antics? That’s especially likely when you make this recipe — a favorite of author Jack Kerouac on one of his many Mexican sojourns — courtesy of “How to Drink Like a Writer: Recipes for the Cocktails and Libations that Inspired 100 Literary Greats (Apollo Publishers), writing by Margaret Kaplan.
Jack Kerouac’s Margarita Serves 1 2 ounces silver tequila 3⁄4 ounce Cointreau 3⁄4 ounce lime juice, freshly squeezed 1 teaspoon agave nectar (optional) Rock salt for garnishing Lime wedge for garnishing
Directions: Pour salt onto small plate. Rub a lime wedge around the lip of a rocks glass and dip the rim in the salt. In a cocktail shaker filled with ice, combine tequila, Cointreau, lime juice, and agave, if using. Shake vigorously. Strain into the salt-rimmed rocks glass over ice. Garnish with the lime wedge.

Salads can be made with whichever ingredients home chefs prefer or have on hand. What better way to maximize the summer season than by incorporating summer berries into the salad mix? In this recipe for “Blueberry Spinach Salad with Grilled Chicken” from “Cooking Light: Fresh Food Superfast” (Oxmoor House) from the Editors of Cooking Light, iron, folate, vitamins, and rich antioxidants combine to create a light, tasty meal that’s perfect for summer evenings.
Blueberry Spinach Salad with Grilled Chicken
Makes 4 servings 3 6-ounce skinless, boneless chicken breast halves Cooking spray 1 6-ounce package fresh baby spinach 1 cup crumbled goat cheese 1 cup blueberries, optional Blueberry-Thyme Dressing (see below)
Prepare Blueberry Thyme Dressing. Place chicken breasts in a medium bowl. Add 1⁄3 cup dressing, toss to coat. Heat a nonstick grill pan over medium-high heat. Coat pan with cooking spray. Add chicken mixture to pan; cook 5 minutes on each side, or until desired degree of doneness. Let chicken stand 3 minutes before cutting crosswise into 1⁄2-inch slices. Cover and keep warm. While chicken cooks, place 11⁄2 cups spinach on each of four plates. Top salads evenly with chicken slices; sprinkle evenly with goat cheese and, if desired, blueberries. Drizzle evenly with remaining dressing.

uly 4th is a day when Americans celebrate their independence, but it's also a day to commemorate two men who played vital roles in procuring that independence. Both John Adams, the second President of the United States, and his successor Thomas Jefferson passed away on July 4, 1826. The two men had an interesting relationship that became increasingly complex as the nation they helped to found developed. According to History.com, Adams and Jefferson were confidantes in the 1780s, but as time wore on, each man developed a different view of what the United States government should be, creating a rift in their relationship that was only widened by the 1800 presidential election. The men ran against each other in that election, which is still considered one of the more contentious elections in American history. Jefferson ultimately claimed victory, a result so unnerving to Adams that he left Washington, D.C. prior to Jefferson's inauguration. s shrimp on the menu tonight? Maybe it should be. Coming in at just around seven calories per mediumsize shrimp, this crustacean is low in calories and high in lean protein and is one of only a few dishes that provides the beneficial antioxidants selenium and astaxanthin, according to The American Shrimp Company. The majority of North American shrimp is harvested from the Gulf of Mexico, ensuring fresh catches for the U.S. and Canada. Around 244 million pounds of shrimp are produced each year. An abundance of shrimp means the opportunities for delicious meals are endless. For something with a lot of flavor and crowd appeal, try this recipe for a “Shrimp Quesadilla” courtesy of Eastern Fish Company. Plump shrimp are nestled between tortillas and seasoned with familiar Latin flavors, ideal for a fast meal any time.
Shrimp Quesadilla Serves 6 2 tablespoons vegetable oil 1 onion, sliced 1 red bell pepper, sliced 1 teaspoon salt 1 teaspoon ground cumin 1 teaspoon chili powder 1 pound uncooked medium shrimp, peeled and deveined 1 jalapeño pepper, seeded and minced (optional) 1 lime, juiced 1 teaspoon vegetable oil, or as needed 6 large flour tortillas 3 cups shredded Mexican cheese blend
Directions: 1. Heat 2 tablespoons vegetable oil in a large skillet over medium-high heat. Cook and stir onion and red bell pepper in the hot oil, stirring frequently, until onion is translucent, and peppers are soft, around 6 to 8 minutes. 2. Stir salt, cumin and chili powder into onion and bell peppers. 3. Stir shrimp into mix and cook until shrimp are opaque and no longer pink in the center, 3 to 5 minutes. 4. Remove skillet from heat; stir jalapeño pepper and lime juice into shrimp mixture. 5. Heat a skillet over medium heat and brush with about 1 teaspoon vegetable oil. 6. Place a tortilla in the hot oil. Spoon about 1⁄6 shrimp filling and 1⁄2 cup Mexican cheese blend on one side of tortilla. Fold tortilla in half. 7. Cook until bottom of tortilla is lightly browned, about 5 minutes; flip and cook other side until lightly browned. A Summertime Staple

eaches are a summertime staple. This sweet fruit is at home in desserts, salads, on top of cereals, and all on its own. Peaches thrive in warm climates with lots of sunlight. Peaches are native to northwest China, and they are believed to have been domesticated and cultivated since 2000 B.C. Later, they were widely grown in the region known as Persia, which is now called Iran. As a result, the scientific name for the peach species is Prunus persica. China continues to be the world’s largest peach producer, followed by Spain, Italy, Greece, and the United States. In the United States, even though Georgia is known as “The Peach State,” it is not the country’s biggest producer of peaches. Georgia is beat out by California and South Carolina. New Jersey also produces its fair share of peaches. Nectarines and peaches are similar fruits. In fact, nectarines are a type of peach. Peaches have a dominant allele for the fuzzy skin, while nectarines have a recessive allele for that fuzz. In regard to flavor, peaches and nectarines are very similar, but some experts say nectarines are slightly sweeter and firmer. According to the College of Food, Agriculture and Environmental Sciences, nectarines also have considerably more potassium and twice as much vitamin A as peaches.

ndependence Day is a celebration of the United States of America. The holiday is marked by fanfare and large parties, complete with barbecues, fireworks and parades. As fun as July 4th festivities typically are, injuries, particularly those involving fireworks, are a concern that celebrants should not take lightly. According to the United States Consumer Product Safety Commission, more than 15,000 people were treated for fireworks injuries in emergency rooms in 2020. However, fireworks aren’t the only danger this time of year. In order to remain safe, individuals can heed these tips. • Do not drink and drive. Alcohol consumption may accompany Independence Day festivities. For those planning on using a car to get to and from parties, it is essential to designate a driver who will not imbibe. Otherwise, utilize any number of ridesharing services or available taxis. • Swim smartly. Always swim with a buddy, and consider hiring a lifeguard if you’ll be hosting a pool party and cannot keep a watchful eye on guests in the pool. Adults also should not swim intoxicated, as it can impede the ability to stay afloat and may lead to risky behaviors.

Keep a bucket of water handy to properly extinguish the sparklers. • Review safe boating practices. If July 4th festivities find you out on the water, be sure that life jackets are worn and set boating and water safety rules for the family. • Check in with a vet. The Fourth of July can be traumatic for pets not accustomed to fireworks and other loud noises or crowds. Behavior therapy, medication and ensuring that pets do not run away from home and get lost may be necessary. • Watch food temperatures. Do not leave food out in the hot sun for too long; otherwise, harmful bacteria can grow and potentially cause foodborne illnesses. The USDA Food Safety and Inspection Service says to never leave food out of refrigeration for more than two hours. If the temperature is above 90 F, food should not be left out for more than one hour.

ach year, the third Sunday in June is a time to pay homage to fathers and the millions of other men who have stepped into the role of father. While it may seem as though Father’s Day has been around forever, it didn’t become a nationally recognized holiday in the United States until 1972, when President Richard Nixon signed Joint Resolution 187 into law. Many thank Sonora Smart Dodd for making Father’s Day happen. In 1909, while attending a Mother’s Day sermon in church, Dodd felt fathers were equally deserving of praise. To honor her own father, a Civil War veteran and widower who raised six children alone, Dodd petitioned for a Father’s Day on June 5th (the anniversary of her father’s death) in her native Spokane, Wash. The celebration was deferred to the third Sunday in June. Another account says Grace Golden Clayton came up with the idea for a Father’s Day in 1908 in Fairmont, West Virginia. Clayton was inspired to celebrate fathers after 361 local men perished in a deadly mine explosion. Clayton brought the idea up to the minister of her local church. Historians say that Father’s Day may even
be a much older idea. St. Joseph’s Day, which was celebrated each year on March 19 in Catholic nations of Europe since the medieval era, and later elsewhere around the world, commemorates Joseph, the husband of Mary and father figure to Jesus. It was said that Joseph should be held up as the ideal example of fatherhood. The Coptic
