Stop Sand from Spoiling Summer Fun
F
ew things are as synonymous with summer recreation as a day at the beach enjoying the sun, sand and surf. Whiling away the hours at the coast is an ideal way to get fresh air and enjoy family or solitary time and also can be an entertaining way to exercise and learn about marine life. While a beach isn’t a beach without sand, sand can adversely affect beach excursions. Sand is a loose, granular material that blankets the coastlines of beaches, lakes and riverbeds. Depending on location,
sand is comprised of many materials and comes in a vast array of colors. Silicon dioxide in the form of quartz is the most common component of sand. Feldspar, mica and rock fragments are other materials. In tropical locations, the sand varies because there are no rich sources of quartz nearby. Tropical sand may take on a white or pastel hue thanks to the shells and skeletons of reef-living marine organisms that make up the sand in these locations. Black sand is comprised of volcanic glass.
Powder up. Baby powder, made of simple cornstarch, can help remove sand from the feet and body. Apply a thin layer to areas where stubborn sand is sticking, and it will fall away.

Regardless of its composition, sand is a nuisance to some people. Because it is lightweight and can stick to clothing and other items, sand often follows beach revelers home. During and after a beach trip, these suggestions can make sand less problematic:

Protect the skin. Sand reflects the sun’s rays and can be hot to the touch. Experts estimate that beach sand can reach 120º to 130º F. Wear sandals or water shoes to protect delicate undersides of the feet. And don’t forget to apply sunscreen to all areas of the feet, which are vulnerable to sunburn.

airs, carnivals, rodeos and roving amusement parks are popular summer attractions. Rides and raffles may attract the majority of revelers, but fairs and carnivals also are great places to enjoy mouthwatering food. Fried dough, meats on sticks, pretzels, cotton candy, cheesesteaks and other aromas waft through the air at carnivals. However, fairs have not always been so great for people watching their calories. And while fairs might not be diet-friendly, it’s not impossible to adhere to one’s diet while visiting the fair. Fill Up at Home Prior to heading out to the fair, be sure to eat a filling, healthy breakfast. This will provide ample nutrients and decrease the likelihood that you will overindulge in less healthy fare while at the carnival.

Try Something New this Grilling Season

rilling is many people’s preferred method of cooking, perhaps because it combines the great outdoors with delicious food. When grilling, many people are comfortable sticking with traditional backyard barbecue fare, such as hot dogs and hamburgers. But those who want to expand their grilling horizons can try the following simple recipe for Grilled Chicken and Onion Skewers: Grilled Chicken & Onion Skewers Makes 10 to 12 skewers Basting Sauce (optional) 1/2 cup soy sauce 1/4 cup mirin 2 tablespoons sugar Ingredients: 1/2 pound boneless, skinless chicken thighs, excess fat removed and cut into bite-size pieces 1 yellow onion, cut into 2-inch wedges, and/or baby leeks, white part only, cut into 1-inch lengths 1 tablespoon canola or other neutral oil Salt (optional)
Directions: Place 10 to 12 bamboo skewers in water to cover at least 30 minutes before grilling. Prepare a mediumhot fire in a charcoal grill, or preheat a gas grill to medium-high. If using the basting sauce, in a small saucepan, combine the soy sauce, mirin and sugar over medium-low heat and cook, stirring, until the sugar has completely dissolved and the liquid just begins to turn syrupy, 5 to 8 minutes. Remove from the heat and set aside in a small bowl. Drain the skewers. Thread the chicken pieces alternately with the onion pieces onto the skewers, using about 3 pieces of chicken and 2 pieces of onion for each skewer. As each skewer is ready, place on a plate. Brush the chicken and onion pieces lightly on all sides with the oil. The grilling goes quickly, so set up your workstation next to the grill before you begin: the plate holding the skewers, the bowl of sauce and a basting brush and/or the salt, and tongs for turning the skewers. If using the basting sauce, either dip each skewer in the sauce or brush
the sauce on the skewers and then place directly over the heat. Grill the skewers, turning 3 or 4 times and basting with additional sauce, until the chicken is cooked through and the onions are scorched around the edges, about 5 minutes total. If the sauce appears to be burning at any point, move the skewers to a cooler part of the grill, or reduce the heat if using a gas grill. If using salt instead of the basting sauce, place the
skewers directly over the heat and grill, turning 3 or 4 times, until cooked through, about 5 minutes total. Sprinkle both sides of each skewer with salt and remove from the grill. Serve the skewers piping hot.

Keep Summer Road Trips Safe

hen the outdoors beckons, road trips can be the perfect way to see the countryside, escape the routine of daily life and enjoy short vacations.

Cut Blooms that Will Last the Longest
F
lowers may look beautiful in gardens and even when snipped and brought inside to brighten up a mantel or dining table. Unfortunately, cut flowers have a finite shelf life. While cut blooms can’t live forever, certain varieties will outlast others. Choosing flowers wisely for wedding centerpieces or keepsakes can help couples enjoy selected flowers longer. Peonies: Peonies can last for about a week or two when brought indoors. HGTV says to snip the stems when the buds are tight, wrap them in newspaper and store them in the refrigerator until you’re ready to arrange. Zinnias: These bright blooms can last for three to four weeks and are best harvested in summer. Related to the sunflower, zinnias are available in a wide range of colors. Chrysanthemums: Widely referred to as “mums,” these midsummer to late-fall flowers can last between three and four weeks after being cut. Mums can be used to fill out floral displays because they tend to be inexpensive but durable flowers.
Coneflower: The purple coneflower is popular, but coneflowers are available in many colors aside from purple. Coneflowers attract butterflies and are beautiful in cut displays.

Ranunculus: Ranunculus mimic the look of roses and display layer after layer of silky, crepe-like petals. These blooms can last a week or more in vases if they’re put in water right after being cut.
Although advice varies on how to keep cut flowers fresh the longest,
veteran florist Nic Faitos, senior partner at Starbright Floral Design in New York, who has provided his floral expertise for Reader’s Digest, says the best approach is to keep vase water clean. In addition, ProFlowers suggests keeping cut blooms in a cool room away from direct sunlight and heat.
Carnations: Another budgetfriendly flower, carnations are popular from early spring until late summer. Available in many hues, they can be used in conjunction with other blooms to create wellrounded floral displays that may last between two and three weeks. Lilies: Lilies are traditional flowers that are beautiful to behold. Lilies are available in various sizes and colors and can be bought fresh year-round. Lilies often last longer than a week after being cut. Look for lilies with tight buds, as such flowers tend to last the longest. Directions:
Tacos with Grilled Steak and Veggies Prep time: 5 minutes Cook time: 14 minutes Serves 6 Ingredients: 2 10.5-oz. packages of Mann’s Southwest Chipotle Nourish Bowl 4 beef flat iron steaks (about 7 ounces each) Juice of 2 limes Salt and freshly ground black pepper to taste 1 package whole wheat tortillas 1 avocado, sliced Chipotle Mayonnaise 1⁄2 cup mayonnaise Juice of 1⁄2 lime 1 to 2 teaspoons
Prepare the Nourish Bowl according to package instructions. Squeeze lime juice over the vegetables and season with a bit of salt and pepper. Toss to combine, then set aside. Season steaks with salt and pepper. Place on grill and cook with the lid closed for 10 to 14 minutes over medium-heat for medium to medium-rare doneness, turning occasionally. Allow to rest off the grill for 5 minutes, then carve into slices. To make the mayonnaise, place all ingredients into a small mixing bowl and stir well to combine. Place tortillas on grill and cook until warm and slightly charred. To assemble the tacos, place a couple slices of grilled steak on the bottom. Add vegetables and top with a slice of avocado. Drizzle the top with chipotle mayonnaise.

Seasonal Selections Serve steak alongside a backyard barbecue staple A night of al fresco dining next to a grill in the backyard can be a great way to spend an evening. Nearly any type of food can be grilled, and steaks tend to be especially good when cooked over an open flame.
Baked Beans Serves 10 2 15-ounce cans navy beans, drained and rinsed 4 slices applewood- or pecan wood-smoked bacon, cut into 1-inch pieces
The following recipe for Grilled Rib-Eye Steaks with Mushroom-Shallot Butter is sure to please, especially when coupled with McNamara’s recipe for Baked Beans, a must-have staple for any backyard barbecue.
1 cup diced yellow onion 11⁄2 cups ketchup 1⁄4 cup plus 2 tablespoons unsulphured molasses
Grilled Rib-Eye Steaks with Mushroom-Shallot Butter
1⁄2 cup packed dark brown sugar 11⁄4 teaspoons ground mustard
Serves 4 to 6 8 tablespoons (1 stick) plus 3 tablespoons unsalted butter, at room temperature
1 teaspoon ground cloves
1⁄2 cup sliced shallot
Preheat the oven to 350º F.
1 heaping cup sliced cremini mushrooms
Combine the bacon and onion in a medium Dutch oven. Slowly cook over medium heat until the onion is tender and the bacon is cooked, 8 to 10 minutes.

2 large cloves garlic, minced 1 teaspoon coarsely chopped fresh thyme leaves
Meanwhile, in a medium bowl, whisk together the ketchup, molasses, sugar, ground mustard, ground cloves, and 1 cup water to combine. Add the cooked beans and pour the mixture into the pot with the bacon and onion. Stir, cover and bake for 1 hour, stirring every 20 minutes.
1⁄4 teaspoon kosher salt, plus more as needed 1⁄4 teaspoon coarsely ground black pepper, plus more as needed 4 to 6 steaks (such as rib-eye, New York strip or porterhouse) Melt 1 tablespoon of the butter in a medium skillet over medium-low heat. Add the shallot and cook until golden and slightly crispy, 7 to 8 minutes. Use a slotted spoon to transfer the shallot to a clean plate. In the same skillet, melt 2 tablespoons of butter, then add the mushrooms, garlic, thyme, salt and pepper. Stir and cook until the mushrooms are softened, about 5 minutes. Transfer to the plate with the shallot and let cool.
Add the salt and stir. Uncover and let sit for 15 to 20 minutes before serving.
In a small bowl, use a rubber spatula to blend the remaining 8 tablespoons of butter with the cooled mushroom mixture until combined. Place the butter in the center of a piece of parchment paper. Bring the edges together and press with your fingers to form the butter into a log. Roll and twist the ends before popping the butter into the refrigerator for at least 20 to 30 minutes. Set the steaks on the counter for 30 minutes to bring them up to room temperature. Meanwhile, preheat a grill or grill pan to medium-high or about 400º F. Season both sides of the steaks with 2 pinches of salt and a pinch of pepper. Grill each steak for 6 to 8 minutes per side, depending on the thickness and the desired doneness. Tent with aluminum foil and let rest for 5 minutes. Slice the mushroom butter into coins and top each of the steaks with two coins before serving. www.seasonsmagazineonline.com

Tips for Hosting a Fun 4th of July Party
T
he Fourth of July is a day to celebrate in the United States. Much about July makes the fourth day of the month the ideal time to celebrate. School is out, the weather is warm and the generally relaxed attitude of summer has typically set in by the first week of July.
Embrace the red, white and blue. When decorating, opt for red, white and blue decorations. This gives the party a distinctly Fourth of July feel. Red, white and blue napkins and tablecloths are readily available come July, and hosts with a gift for crafts can even create their own decorations to use year after year.
People tasked with hosting Fourth of July festivities may not feel the same pressure when hosting such gatherings that they would when hosting more formal affairs. The relaxed nature of summer often pervades Fourth of July festivities, but hosts can still take a crash course in summer hosting to ensure everyone has a good time.
Prepare to entertain. Unlike holiday season gatherings that typically begin in the evening, Fourth of July parties tend to begin in the afternoon and extend into the night. That means hosts must not just feed their guests, but entertain them as well. Since Fourth of July parties tend to take place outdoors, plan lots of backyard games, such as badminton, bocce, Wiffle ball, horseshoes and more. Hosts with swimming pools should have pool games readily available as well.
Don’t try to break the mold. Some hosts may be tempted to think outside the box in regard to the foods and beverages they’ll serve at their Fourth of July parties. While hosts can still experiment and serve new foods and creative cocktails at their parties, many guests will be anticipating some Fourth of July staples, such as grilled hot dogs and hamburgers and cold beer and lemonade. Making sure such foods and beverages are served alongside more experimental fare won’t disappoint traditionalists, and those looking for something beyond the norm won’t be disappointed either.
