Fall Harvest Fruits And Vegetables

F

ood is a big part of fall, and farms play a significant role in seasonal celebrations. Each fall, families plan apple picking excursions with their eyes on baking homemade apple pies. And while Halloween is made even more fun when carving jack-o’-lanterns, savvy celebrants know that carving sessions are not complete without some roasted pumpkin seeds. The fall harvest is a great time to indulge in some freshly picked healthy foods. While the picking season may vary depending on where you live, and specifically the climate in your region, the following are some fruits and vegetables that might be ripe for the picking this fall. • Apples: Apple-picking season typically begins in late summer and extends into fall. Many farms offer a variety of apples, which may be harvested at different times. For example, in the northeastern United States, Gala apples tend to be harvested in late summer, while Granny Smith apples may be

The online table, and Pickyourown.org resource Harvest to Table notes notes that broccoli can have a that cabbage can survive under lengthy harvesting season. Early snow without being harmed, harvesting may begin in May in making it an ideal late fall some regions, though it’s still vegetable. • Peaches: People who can’t wait to whip up a peach cobbler may need to do so before fall even begins. According to Pickyourown.org, peaches can be ready for picking as early as July in the northeastern United States, and the picking season generally ends around mid-September. The season is even earlier in places like Georgia, a state known for its peaches where the picking season can begin in mid-May and extend through early August depending on the variety. • Pumpkins: Thanks in part to Halloween decor and the popularity of pumpkin pie as a Thanksgiving dessert, pumpkins are synonymous with the fall harvest. And pumpkin picking season aligns perfectly with each of these holidays, typically beginning in early or mid-September and extending deep into October.

Apple Picking Pointers

A

pple picking is a beloved autumn tradition. While many traditions had to be put on the back burner as the world dealt with the COVID-19 pandemic, apple picking seems like one activity that can endure in a world dominated by social distancing. Apple picking season tends to begin in mid to late September and ends sometime in early October. That makes apple picking a perfect social distancing activity, as it’s both outdoors and at a time of year when the weather is generally pleasant no matter where you live. Individuals interested in apple picking this fall can take heed of these tips to ensure their trip is fun, safe and successful. • Contact The Farm In Advance. Apple picking is a wildly popular activity, so expect a crowd to be there on a typical autumn weekend. That can be tricky to navigate while social distancing, so call ahead to learn about new

protocols and if the operating hours are the same. If the farm is open several days per week, ask which days are the least busy and schedule your trip when foot traffic figures to be minimal. • Choose Firm Apples Without Bruises. According to Pickyourown.org, apples should be crisp and firm. Don’t worry about the color of the apple, as color is not an indicator of ripeness. Instead, Pickyourown. org advises people to ask the farmers which apples are ripe, which is determined by how long it’s been since the trees flowered. • Gently Place Picked Apples Into Your Basket. Pickyourown. org recommends gently placing apples into your basket after picking them. Tossing them into the basket may cause bruising, which can lead to the apples spoiling prematurely. While it depends on the variety, many apples that are not bruised tend to last a long time, especially when

stored in a cool place. So taking care of them when picking them can mean you get to enjoy apples for several weeks. • Clean Apples Before Eating Them. The Food and Drug Administration notes that produce can be contaminated even after it’s been picked and brought home. The FDA advises

consumers to wash their hands for 20 seconds with warm water and soap before and after preparing fresh produce. Produce should be rinsed before it’s peeled so any lingering dirt and bacteria are not transferred from the knife onto the fruit or vegetable. If bruising has occurred, cut away the damaged or bruised areas before preparing or eating it. For More Information, Call 631.226.2636

Tips To Carve The Perfect Jack-O’-Lantern

J

ack - o’- lanterns are one of many indelible symbols of Halloween. It’s hard to pinpoint the precise origins of jack - o’- lanterns, but many historians trace the tradition to 19th century Ireland. In fact, this instantly recognizable staple of Halloween decor actually gets its name from an Irish folktale character named “Stingy Jack.” Jack - o’- anterns are ubiquitous in October, but a refresher course on carving one can help those who haven’t dusted off their carving skills since last fall.

the pumpkin is removed so candles or lights can be effortlessly placed inside. However, the custom pumpkin carving experts at New York-based Maniac Pumpkin Carvers note that removing the top cuts off the vine, which supplies the pumpkin with nutrients and moisture, even after it’s been cut. A whole in the back of the pumpkin can provide easy access when placing candles or lights inside, and cutting here won’t cut off the nutrient and moisture supply a pumpkin needs to avoid drying out.

• Don’t Carve Too Early. Though it can be tempting and fun to carve a jack - o’lantern once the calendar turns to October, it’s unlikely the finished product will make it all the way to October 31. Horticulturists indicate that jack - o’- lanterns have a shelf life of roughly five to 10 days, though an especially cold October could shorten that life expectancy even further. If you want your jack-o’-lantern to greet trick-or-treaters on Halloween, wait to carve it until a few days before the big day.

• Scoop Everything Out. The interior of a pumpkin will be loaded with seeds, which can be removed and later roasted to make a savory snack. In addition to removing the seeds, be sure to get all of the pulp out. Pulp left in the pumpkin will soon get moldy and that can shorten the lifespan of the jack - o’- lantern. In addition, when removing the interior, try scraping the front inner wall of the pumpkin thin, which may make it easier to carve.

• Use A Dry-Erase Marker To Outline The Design. It’s easy to make mistakes when carving a jack-o’-lantern, especially if this is your first time using a carving knife since last year. Use a dry-erase marker to trace the design onto the pumpkin before you make a cut.

• Avoid Candles When Lighting The Interior Of The Jack - O’- Lantern. Candles might seem like the most authentic and even spooky way to light the interior of the pumpkin, but the heat produced by a burning candle can shorten the life expectancy of the • Avoid Severing The Stem. When many people envision jack - o’- lantern. An LED light won’t give off much heat and will provide jack - o’- lanterns, the image in their minds is one in which the top of ample illumination.

eople who were born in the early 1980s and earlier likely spent some time bobbing for apples each fall. Bobbing for apples long has been a classic autumn activity. Yet today’s children may not know what it entails. Bobbing for apples is a tradition that began in Europe hundreds of years ago as a courting ritual or a way to see who would get married next. When Europeans settled in the United States and Canada, they brought their apple bobbing traditions with them. However, over the years, bobbing evolved from an activity geared around romance to one focused on fun for children. Apple bobbing has largely fallen out of favor as more parents zeroed in on the potential yuck factor of having several mouths and noses dunked into the same bucket of water trying to grab a Red Delicious or Granny Smith. The pandemic also undoubtedly made some people skeptical about the safety of apple bobbing. Thankfully, there are alternatives for those who want to enjoy the spirit of apple bobbing without spreading germs.

dollar stores are inexpensive and readily available. Fill them up with water and float two or three apples in each. Then the race is on for each participant to snag some apples. Grabbing For Apples Kids need not use their jaws to grab apples. Kids can use small spoons, chopsticks, a spatula — anything you can think of — to make it challenging to grab a floating apple.

Symbolic ‘Apple’ Toss

Fill up red water balloons with water and set up a traditional water balloon toss. Participants pair up and toss the “apples” to one another, moving further and further away with each round. The last pair to have an intact “apple” wins. Bobbing for apples has fallen out of favor as concerns about hygiene have risen. However, there are ways to incorporate the fun parts of bobbing for apples without compromising kids’ overall health.

Hanging Apples Tie strings to the stems of apples and hang each individual apple to a clothesline. Without using their hands, participants must consume the majority of the apple of their choosing. Whoever finishes first wins a prize. Bobbing Individually One workaround to create more hygienic fun is to give party participants their own separate bowls or buckets for bobbing. Stay Safe This Halloween Season

uch like Christmas, Halloween is no longer relegated to a single day. A number of Halloween enthusiasts now begin decorating at the start of October. Hijinks and autumn revelry fill the air as individuals eagerly count down to the end of the month. Though the lightheartedness of Halloween festivities, such as costumes and candy, garner the bulk of celebrants’ attention, it’s important to take safety into consideration as well. According to the Mayo Clinic, children are twice as likely to be hit by a car on Halloween as other nights of the year. Cuts and burns also are more common on October 31. A good Halloween scare should come from costumes, not accidents or injuries. This Halloween, consider these safety measures, courtesy of Safe Kids Worldwide, the Mayo Clinic, the National Highway Traffic Safety Administration, and the Centers for Disease Control and Prevention.

Fall Flavors Shine In A Chewy Cookie

F

all is a season of cooler temperatures and changing leaves, and it also marks the return of autumn flavor profiles. Root vegetables, roasts and heartier fare are prime cooking ingredients this time of year. In terms of baking, treats spiced with ginger and cinnamon are in demand each fall. Carrot cake and oatmeal cookies are familiar favorites this time of year. In this recipe for “Carrot Cake Oatmeal Cookies” from “Live Well Bake Cookies” (Quarto Group) by Danielle Rye, delicious spiced carrot cake is transformed into a soft and chewy cookie.

Carrot Cake Oatmeal Cookies Makes 22 cookies 1 cup all-purpose flour, spooned and leveled 1⁄2 teaspoon baking soda 1⁄4 teaspoon salt 1 teaspoon ground ginger 1 1⁄2 cups old-fashioned rolled oats 1⁄2 cup (1 stick) unsalted butter, softened 1⁄2 cup packed light brown sugar 1⁄4 cup granulated sugar 1 large egg, at room temperature 1 teaspoon pure vanilla extract 3⁄4 cup lightly packed freshly grated carrots 1⁄3 cup raisins 1⁄3 cup chopped walnuts

Directions

5. Mix in the dry ingredients until just combined, then fold in the grated carrots, raisins and chopped walnuts until fully incorporated.

1. Preheat the oven to 350 F. Line two large baking sheets with parchment paper or silicone baking mats and set aside. 2. In a large mixing bowl, whisk together the flour, baking soda, salt, ground cinnamon, ground nutmeg, and ground ginger until well combined. Stir in the old-fashioned rolled oats and set aside.

6. Using a 11⁄2-tablespoon cookie scoop, scoop the cookie dough onto the prepared baking sheets, making sure to leave a little room between each one. Gently press each ball of cookie dough down to slightly flatten it.

3. In the bowl of a stand mixer fitted with the paddle attachment or in a large mixing bowl using a handheld mixer, beat the butter, brown sugar and granulated sugar together for 1 to 2 minutes, or until well combined.

7. Bake for 12 to 15 minutes, or until the tops of the cookies are set and the edges are lightly browned. Remove from the oven, and allow the cookies to cool on the baking sheets for 5 to 10 minutes, then carefully transfer the cookies to a wire rack to cool completely.

4. Mix in the egg and vanilla extract until fully combined, making sure to stop and scrape down the sides of the bowl as needed.

8. Store the cookies in an airtight container at room temperature for up to 3 days.

Corn was likely turned into cornmeal and pounded into a thick corn porridge. Experimenting with a cornmeal recipe can liven up this year’s festivities.

Turnips Plant roots found in 1621 included parsnips and turnips, and not the popular potatoes that often accompany turkey at modern Thanksgiving gatherings. The potato was not yet popular enough among the English to warrant space on the Mayflower as it made its way to present-day North America. Purées of parsnips and turnips can be delectable on their own or used as a basis for a Thanksgiving soup.

Pumpkin Custard Although pumpkins and other gourds were available in the New World, baking was not yet popularized because of the lack of wheat flour. Instead, it is possible pilgrims would hollow out gourds, add spices with milk and honey, and then roll the gourds in hot flames to form a sort of custard. Home cooks can replicate a pumpkin custard in their kitchens and serve it in lieu of pumpkin pie. Borrowing foods from the first Thanksgiving can expand menu possibilities this November. www.longislandmediagroup.com/harvest

Whip Up A Classic Fall Treat

H

alloween treats take center stage in October. What can be better this time of year than a fresh autumn apple coated in a sweet candy shell? This quintessential fall treat can make Halloween celebrations even more special. This recipe for “Old-Fashioned Caramel Apples,” courtesy of “300 Best Homemade Candy Recipes (Robert Rose) by Jane Sharrock, benefits from the fall harvest while also paying homage to a classic Halloween treat.

Old-Fashioned Caramel Apples Makes 12 12 medium apples 2 cups granulated sugar 1 cup packed light brown sugar 2⁄3 cup light corn syrup 1⁄2 cup butter or margarine 1 cup half-and-half (10%) cream or evaporated milk 1 teaspoon salt 2 teaspoons vanilla extract 2 cups chopped pecans, 1 1⁄2 cups sweetened flaked coconut or 2 cups crisp rice cereal (optional)

Directions 1. Wash and dry the apples. Remove the stems. Insert a popsicle stick into the stem end of each apple, using a twist-like motion so that the apple will not split. 2. Cover a large countertop area or a large baking sheet with waxed paper. 3. In a large heavy kettle over medium-low heat, bring the granulated and brown sugars, corn syrup, butter, half-and-half and salt to a boil, stirring until the sugars dissolve and the mixture begins to boil. Cook, gently stirring to prevent scorching, to the firm ball stage (246 F). Stir in the vanilla. 4. Remove from the heat. Cool until the mixture thickens slightly. Hold each apple by the wooden skewer and quickly twirl into the caramel, tilting the pan to cover the apple with caramel. Remove the apple from the caramel, allow the excess caramel to drip into the pan and then twirl the apple again to spread the caramel smoothly over the apple. Use a spoon to coat any part of the apple not covered with caramel. If desired, roll the coated apples in the toppings before the caramel sets. Place on the waxed paper until the coating is firm. Store in a cool place. www.longislandmediagroup.com/harvest
