St. Mark’s Episcopal Church: Well Known For Community Reach No stranger to collecting as many as 24,000 food donations in one day at their food drives, the church often partners with service organizations such as Islip Rotary. It is also home to a well-stocked thrift shop and develops outreach programs, focused on back-to- school supplies; winter outwear,

such as scarves, hats and gloves; toys and various holiday items. The Saturday, Sept. 25 food drive is requesting donations of nonperishable food items such as: pasta, rice, beans, peanut butter, jelly, cereal, mac and cheese, juice boxes, crackers, cookies, salt, pepper, cake/ brownie mixes, canned tuna and chicken, stuffing mix, soup, canned gravy, tomato sauce, condensed milk, pudding (boxed, not prepared) jello, apple sauce, canned vegetables and fruit, kid-friendly treats, cleaning supplies, laundry supplies, toiletries, pet food, baby products, etc. Please do not include any perishable or frozen items; even chocolate can be iffy in some weather conditions. Volunteers will be available to pull donations from cars should you wish not to get out. Please practice Covid safety guidelines according to CDC regulations. At one point, there were eight people who would go out on a regular basis to shop, sort and volunteer to put bags together. “This support helped pull us through the early months of the pandemic when the food banks were scrambling for resources,” Jahn said. “Every time I think we’re getting low, someone hands me a check. One day the shortfall was so great I was afraid we wouldn’t be able to support all of our locations, but days before St. Mark’s had a food drop which enabled us to continue.”

Children are distributing flyers, collecting food donations--and some have even signed up with their parents to help sort items-at the drive-by food drop to be held at St. Mark’s Episcopal Church, 754 Montauk Highway, Islip, NY on Saturday, September 25 from 9 AM -1 PM. “Even before Covid, over 250,000 Long Island residents couldn’t put food on the table and now the numbers have increased by over 50 percent,” said Mother Christina van Liew, Interim Priest in Charge at St. Mark’s, adding that “every contribution brings hope and eases food insecurity.” All food will be donated to God’s Provision, an affiliate of the Long Island Cares-The Harry Chapin food bank. God’s Provisions supports 25 locations by distributing pre-boxed meals and bags of groceries to church pantries, shelters and senior communities along Long Island’s South Shore. Said organizer Irene Ross, “We encourage the entire community to participate by collecting from friends, neighbors, families, co-workers, fellow hobbyists, gym enthusiasts, etc.” Director Dana Jahn said

Each of the district’s buildings – from the high school and middle school to Connetquot, John F. Kennedy, Ruth C. Kinney and Timber Point elementary schools

– welcomed new and returning faces to the next step in their educational journeys. “We had an amazing first day at Timber Point,” said Principal Danielle Naccarato. “Students and staff were full of enthusiasm and excitement for what is sure to be a sensational year. It was a fabulous way to start.”

“The first day of school brought sunshine, smiles and sounds of happiness,” said JFK Principal Deborah Smith. “It was inspiring to see the enthusiastic children return to school to engage in new and exciting learning experiences. The staff was equally energized to begin a new school year.”

Presented by Catholic Health Good Samaritan Hospital. In collaboration, the Islip Arts Council Gallery (IAC) is hosting a Veteran’s art exhibit “Their Story” curated by Sean Fitzthum and Dave Rogers at the IAC Gallery at Westfield Mall featuring the work of Veteran artists: John Cardone, US Army; Rosemary LambMourey, US Navy; Harold Gubnitsky, US Army; and Carrie Anne Gonzalez, US Navy. This project will include resources for the Veterans through

the combination of art, the movie “Walk With Frank”, and a resource center. The resource center will be displayed in the courtyard area of the Islip Arts Council Gallery in the Westfield Mall featuring the services of Good Samaritan Hospital, and local Veteran community organizations. Seasonal Recipes! Carrot Cake, a Favorite for Halloween Entertaining! Makes 25 servings 4 cups sugar 8 eggs 2 cups oil, canola or safﬂower 21/2 teaspoons vanilla 4 cups ﬂour 4 teaspoons baking powder 2 teaspoons salt 2 teaspoons cinnamon 2 pounds carrots, grated 2 cups nuts, chopped 21/2 raisins (optional)

8 ounces cream cheese 5 ounces butter 11/2 pounds powdered sugar 11/2 teaspoons vanilla

1) Beat the sugar and eggs together until well blended. Stir in the oil and vanilla. In a separate bowl, mix the ﬂour, baking soda, salt, and cinnamon. Combine the egg mixture. Fold in carrots, nuts and raisins. 2) Divide the batter between two (9- x 13-inch) greased baking pans. Refrigerate the batter between baking times. Bake the cakes in a moderately hot oven (350 F) for 0approximately 40 minutes. Let cool completely. 3) Bring the cream cheese and butter to room temperature. Cream the two together until smooth. Add sugar gradually, shaking it through a strainer to get rid of the lumps and beat until smooth. Add the vanilla. Cover and refrigerate until it has a good spreading consistency. Frost with cream cheese frosting.

Hearty Four Bean Chili For Autumn Days! Makes 8 to 10 servings 2 tablespoons olive oil 1 onion, ﬁnely chopped 2 medium carrots, chopped 1 red bell pepper, chopped 3 cloves garlic, minced 2 tablespoons tomato paste 2 tablespoons packed dark brown sugar 3 tablespoons chili powder 2 tablespoons ground cumin 1 tablespoon dried oregano

1 teaspoon salt 1 can (28 ounces) diced tomatoes 1 can (15 ounces) tomato sauce 1 can (15 ounces) small white beans, rinsed and drained 1 can (15 ounces) light kidney beans, rinsed and drained 1 can (15 ounces) dark kidney beans, rinsed and drained 1 can (15 ounces) pinto beans, rinsed and drained 1 cup vegetable broth

1 can (4 ounces) diced mild green chillies 1 ounce unsweetened baking chocolate, chopped 1 tablespoon cider vinegar.

1) Heat oil in large saucepan over medium-high heat. Add onions, carrots and bell pepper; cook and stir 10 minutes or until vegetables are tender. Add garlic, tomato paste, brown sugar, chili powder, cumin, oregano and salt; cook and stir 1 minute. 2) Stir in tomatoes, tomato sauce, beans, broth, chillies, and chocolate; bring to a boil. Reduce heat to medium; simmer 20 minutes, stirring occasionally. Stir in vinegar.

Grilled Pumpkin and Black Bean Burger, a Vegan Burger! Serves 4 1 tablespoon oil 1/2 cup diced red onion 1/2 cup diced red pepper 3 cloves minced garlic 1 teaspoon ground cumin 1 15 ounce can black beans 1 teaspoon salt 2 minced chipotle peppers 1/4 cup sweet corn 3 tablespoon mashed pumpkin 1 cup breadcrumbs

1/2 cup chopped pecans (optional if you are avoiding nuts)

1) Dice the red onion, red pepper and mince the garlic. Heat the oil over a medium heat. Add the garlic, onion, red pepper and sweet corn then sauté for 3 minutes. Remove from the heat and set aside. 2) Drain and rinse the black beans and pat dry. Place in a deep bowl. Using the back of a fork, mash about half the beans and leave the other half whole. Then add the pumpkin, cooked vegetable mixture, chipotle peppers, breadcrumbs, pecans (if using), salt, and cumin. Mix well until all ingredients are combined to desired consistency. Note, if mixture is too dry you can add a little more pumpkin. Using hands, form into four large patties and refrigerate for a half-hour. 3) Heat grill to medium-high heat. Brush grill with oil then place burgers on the grill. Cook for approximately 3 to 5 minutes on each side. Remove and serve.

Helping Hand Rescue Mission

Across the East Islip School District, students in each building placed flags in the ground on Sept. 10, symbolizing the schools’ Patriot Day signs declaring “United We Stand” and observing the 20th anniversary of the 9/11 attacks.

“Last Friday, we recognized patriotism and took the time to decorate the outside of JFK with many flags,” said Principal Deborah Smith. “It was a beautiful day to reflect on how fortunate we all are to live in our great country. Students wore red, white

Helping Hand Rescue Mission(HHRM) is a local non-proﬁt organization that is based in Huntington, but serves people all over our island. Their mission is to improve the spiritual and temporal conditions of the children, families and people of the communities they serve by providing excellent service to all who come, whether they be rich or poor, high or low social status. They are here to love, to serve and to give.

The ﬁrst month they started this outreach they helped 16 moms and 22 babies. They have served consistently once a month over the past 5 years, even “drive thru” style through the pandemic to serve between 100 and 150 babies each month. 1 in 4 families in New York struggles with diaper need. If you would like to donate directly to this outreach or volunteer at a Baby Blessings event, please contact Kimberly at kimberlygambino@hhrm. org for more information. Their October Baby Blessings event will take place on October 19th from 10AM-12PM. Parents that wish to attend must bring ID, ID or insurance for children and proof of Huntington Township address.
