On March 21, The Woodloch Family gave each of its 950 hourly team members an additional week’s worth of wages to compensate them during the first week of shutdown from March 16 – 22. The Woodloch Family hosted two separate food drives, one on March 26 and the other on April 10, where they distributed over 800 care packages to staff members. These included an assortment of items such as pasta, meat, milk, eggs, juice, canned goods, toilet paper, baked goods from the resort’s in-house bakery as well as salad greens and herb bundles from the organic farm at Woodloch’s destination spa. An additional 300 packages were donated to local Pike and Wayne County food shelters. Woodloch donated all of its available N95 respirator masks to the local community hospital, Wayne Memorial. Additionally, Woodloch’s bakery distributed care packages to hospital staff, local urgent care, and local EMS on Friday, April 17. Woodloch owns and

The Covid-19 crisis has hit the hospitality industry particularly hard, and Woodloch Pines, an all-inclusive family resort located in Pennsylvania’s Pocono Mountains, is no exception. The property closed its doors back in mid-March with hopes to reopen on May 22, but with much still unknown, Woodloch refused to simply stand by and wait. Having been in business for 62 years, the Poconos resort has emerged triumphant from its fair share of challenges, never shying away from difficult times and always working to turn negatives into positives. Family-owned and operated since 1958, Woodloch’s core mission is built upon treating guests and staff like “company in our homes.” Although the property remains shuttered, it has been working hard to maintain the Woodloch spirit for guests, staff and the entire community in an effort to spread light in a time of darkness. Initiatives include the following: The launch of Woodloch at Home, a treasure trove of activities and games that can be accessed remotely through both the resort’s website and social media channels. Activities include tried and true guest favorites such as scavenger hunts, “Olympics,” game show and athletic contests, deejay-led dance parties and even a “Concert on the

Serve Steak Alongside A Backyard Barbecue Staple A night of al fresco dining next to a grill in the backyard can be a great way to spend an evening. Nearly any type of food can be grilled, and steaks tend to be especially good when cooked over an open flame. The following recipe for “Grilled Rib-Eye Steaks with Mushroom-Shallot Butter” from Laurie McNamara’s “Simple Scratch” (Avery) is sure to please, especially when coupled with McNamara’s recipe for “Baked Beans,” a must-have staple for any backyard barbecue. Grilled Rib-Eye Steaks with Mushroom-Shallot Butter Serves 4 to 6

tablespoons (1 stick) plus 3 tablespoons unsalted butter, at room temperature 1⁄2 cup sliced shallot 1 heaping cup sliced cremini mushrooms 2 large cloves garlic, minced 1 teaspoon coarsely chopped fresh thyme leaves 1⁄4 teaspoon kosher salt, plus more as needed 1⁄4 teaspoon coarsely

ground black pepper, plus more as needed to 6 steaks (such as ribeye, New York strip or porterhouse)

Melt 1 tablespoon of the butter in a medium skillet over medium-low heat. Add the shallot and cook until golden and slightly crispy, 7 to 8 minutes. Use a slotted spoon to transfer the shallot to a clean plate. In the same skillet, melt 2 tablespoons of butter, then add the mushrooms, garlic, thyme, salt, and pepper. Stir and cook until the mushrooms are softened, about 5 minutes. Transfer to the plate with the shallot and let cool. In a small bowl, use a rubber spatula to blend the remaining 8 tablespoons of butter with the cooled mushroom mixture until combined. Place the butter in the center of a piece of parchment paper. Bring the edges together and press with your fingers to form the butter into a log. Roll and twist the ends before popping the butter into the refrigerator for at least 20 to 30 minutes. Set the steaks on the counter for 30 minutes to

bring them up to room temperature. Meanwhile, preheat a grill or grill pan to medium-high or about 400 F. Season both sides of the steaks with 2 pinches of salt and a pinch of pepper. Grill each steak for 6 to 8 minutes per side, depending on the thickness and the desired doneness. Tent with aluminum foil and let rest for 5 minutes. Slice the mushroom butter into coins and top each of the steaks with two coins before serving. Baked Beans Serves 10 15-ounce cans navy beans, drained and rinsed 4 slices applewood- or pecan wood-smoked bacon, cut into 1-inch pieces 1 cup diced yellow onion 11⁄2 cups ketchup 1⁄4 cup + 2 tablespoons unsulphured molasses 1⁄2 cup packed dark brown sugar 11⁄4 teaspoons ground mustard 1 teaspoon ground cloves 1 teaspoon kosher salt

The Charity of The Month for May is: Guardians of Rescue animals, building doghouses, taking in new rescues and trying to cover all their expenses. “We have been providing our rescue services for over 10 years, but now we are struggling to keep our organization going,” explains Robert Misseri, president of Guardians of Rescue. “We are in jeopardy because of the perfect storm that this pandemic has created for organizations such as ours. Guardians of Rescue is a 501(c)(3) non-profit organization. Their mission is to facilitate and foster programs and activities that further the unique benefits of interaction between people and animals. They are truly an animal rights and welfare organization whose members work to protect the wellbeing of all animals and their owners, and come to the aid of those in distress. The Guardians are keenly aware that there is no shortage of animal neglect and their goal is to help in as many ways as possible to make sure animals are always taken care of. We are all aware of the toll that this pandemic is having on people, yet the impacts are being felt beyond humans. Animals are also being impacted in numerous ways by this situation. Guardians of Rescue has been dealing with the Covid Crisis in many different ways, such as helping people feed their pets and taking on the responsibility to care for homeless animals. They have even stepped out of their realm of helping animals to assist seniors during these trying times. Recently they received a phone call from the Public Safety at Eisenhower Park, who mentioned that a cat had been stuck in a tree for at least five days and no one was able to get it down. Soon after, the Guardians arrived and climbed over 75 feet to successfully bring the cat down to safety. They not only rescued the cat, but they are now continuing to take care of her the best they can. Guardians of Rescue is overwhelmed by the amount of assistance needed and their phones are ringing non-stop. So many people have had their employment impacted by the virus, therefore donations have been down. This makes it difficult for them to continue feeding the

Islip High School’s Class of 2020 valedictorian and salutatorian are Darienne Rogers and Madelyn Germano, respectively. Rogers, who earned a 106.30 weighted GPA, is an AP Scholar with Distinction and serves as president of the school’s Science Olympiad team. She is a member of Islip’s National Honor Society and student government, attend the Rotary Youth Leadership Awards Conference, and was a founder of the school’s robotics teams.

While playing for the varsity tennis team as a senior, she was named a county doubles champion. Rogers will attend Duke University, majoring in biomedical engineering. Germano, who earned a 105.87 weighted GPA, is a National Merit Commended Student and AP Scholar with Distinction. She was elected class president for four consecutive years and has been a member of and annual medalist with the Science Olympiad team

since 2014 and co-captain since 2018. As a member of the varsity tennis team since 2014 and co-captain since 2017, she contributed to the Lady Bucs six consecutive undefeated seasons and league and division championships, earned 100 varsity wins and won the 2019 NYSPHSAA Sportsmanship Award. Germano will attend the University of North Carolina at Chapel Hill, majoring in neuroscience.

Islip’s Staff Car Parade Spurs Pride And Positivity For more than two hours on the afternoon of April 28, Islip resounded with cheers and car horns as Islip High School held a staff car parade, with more than 50 teachers and administrators driving through the school community to waves and smiles from overjoyed students and families. at Maud S. Sherwood Elementary School to wave to the families of valedictorian Darienne Rogers and salutatorian Maddie Germano. “Driving in the parade today was very emotional, but the positivity of the teachers, staff, administrators and residents was incredible,” said English teacher

Meghan Stern, the school’s Student Union adviser. “Witnessing the cheers of the students and community members was truly an amazing exhibit of Islip pride. Words cannot express how thankful we are to them, and to the Islip Fire Department for joining us.”

3 Tips To Planning Efficient Home-Cooked Meals A few generations ago, dining out was an experience reserved for special occasions. However, until recently, when restaurants were shuttered in the wake of the public health crisis prompted by the spread of COVID-19, many people were dining out multiple times a week. Hospitality solutions provider Fourth surveyed 1,000 American adults in 2019 and 56 percent reported dining out at least two to three times per week. Ten percent said they ate out four to six times each week, while 6 percent said they dined out everyday. People accustomed to relying on restaurant for meals multiple times per week may be unaccustomed to cooking many meals at home, which has become the norm thanks to restrictions placed on restaurants and other food-related businesses as part of COVID-19 social distancing precautions. Learning how to shop for food and prepare items by maximizing available ingredients can reduce trips to the store and help people reduce food waste at a time when food is not as readily available as it once was. 1. Plan circulars

Meal planning and shopping lists are vital tools for people preparing meals at home. Without doing so, individuals can be left floundering in the supermarket, spending more money than necessary and making impulse purchases (all the while forgetting items they truly need). Use sales circulars to browse weekly discounted items at stores. Build a week’s worth of meals off of these sale items — going so far as to write out a cursory menu — then fill in any extra ingredients or staples needed on a shopping list. Leave a day or two for leftovers. Try organizing the list to follow the natural layout where items are arranged in the store.

2. Shop smart With paper and pen in hand or a digital list compiled on your phone, go aisle by aisle and check off items as they are added to the cart. If you are shopping for food you hope will last a week or more, consider substituting canned and frozen foods and other nonperishables for fresh items because they can be stored for longer periods of time. “Club size” or “family size” packages of foods may cost meals/browse less per volume and can be sub-divided and stored for

later use. 3. Minimize waste Cook only as much as is needed for the household. Generally speaking, a meat or poultry serving of three to four ounces per person is adequate. That means a roast or steak of 11⁄2 to two pounds is fine for a family of four. Use up older frozen or perishable foods first. Store foods properly and use them before the use-by date. Wrap up leftovers and turn them into new meals. With proper planning and smart thinking, homecooking can be more efficient and less wasteful.
