Easy Vegan Pasta Bolognese By Marilyn Porzio of Dix Hills, New York
What You Will Need
1/2 cup diced portobello mushrooms 1/2 cup sweet green peas 1 24 oz. jar of Ragu Traditional Pasta Sauce (no sugar added variety) 2 tablespoons red wine 1 pinch of salt 1 pinch of black pepper 1 sprinkle of turmeric 1/4 package of Smart Ground meatless soy crumbles 2 heaping tablespoons dairy-free butter substitute 1 box of your favorite pasta
How To Make It Melt butter substitute in a large or medium sized skillet and add in Smart Ground soy crumbles. Mash up and turn crumbles as they brown (about 4 minutes). Turn off heat and set aside.
Pour jar of pasta sauce into a medium or large saucepan, turn on medium heat and stir in diced mushrooms and cooked soy crumbles. Let sauce simmer and then add in tumeric, salt, pepper and red wine; stire altogether, turn heat to low and cover tightly to re-simmer. Boil water and cook pasta for approximately 10 minutes until al dente. (soft, but slightly firm). Rinse and drain pasta and set aside. Steam peas in the microwave or 2-3 minutes and stir peas into sauce. Remove covered sauce from heat. Plate pasta, pour sauce over pasta and enjoy!

Simple Ways To Be Good To Yourself Years ago, I was roaming the aisles of Costco and picked up a book, titled, 101 Simple Ways to Be Good To Yourself by Donna Watson Ph.D. I’ve been re-reading it ever since. As we grow older and our responsibilities mount, we lose touch with our own needs. Children, spouses, jobs (second jobs), mortgages, car payments, friends in need…the list is endless. The weekdays bleed into each other in a frenetic blur, and on weekends we can barely catch up on sleep, catch our breath and take the kids to their weekend activities. Sometimes “adulting” can make you want to cry “Uncle.” Most likely, you’re running on fumes. If your battle cry of the moment is, “Stop the ride, I wanna get off!” a few small adjustments can recharge a burnt out battery. There are plenty of simple ways to be good to you, which will, in turn, help you be good to others. BREATHE. Wherever you are, whatever you are doing, stop right there and breathe. Breathe out all of the air in your body through your mouth. Count to four and
then breathe in through your nose, filling up your abdomen (not your chest). Hold for four seconds. Then, slowly let the air leak out through your mouth as your belly deflates. Repeat. LAUGH. Make YouTube your friend. I personally love the television show, All In The Family. When I need a good laugh, I cue up a full episode on YouTube and laugh myself silly. Laughing is good for the soul. LISTEN. Nothing soothes me like Jazz music. Did you know that brain surgeons play their favorite music in the operating room to take the pressure off? Sometimes, in order to do your best, you have to actually place your attention elsewhere to remain centered and focused. WALK. Take a walk in nature. Walk briskly, look at the grass, the trees and the sky. Breathe in the crisp air, feel your body move and your heart rate slightly increase. Feel your muscles working to move your body. SPEND TIME WITH ANIMALS. If you have a dog or a cat, spend time cuddling and petting your
animal companion. Really take in their energy. If you don’t live with any animals, consider spending time at a dog park to be around animals, or at a local horse stable. Spending time around animals is healing. TAKE A LESSON. You don’t have to make a commitment, time-wise or financially. You can simply take a lesson or two for fun. It will bring a sense of play and adventure to your life. Do it by yourself, or bring a friend or family member along. TAKE A MINI-BREAK. Look for Groupons or off-season deals for short weekend getaways that are within driving distance, and change your environment for 48 hours...or 24 hours if you must. MASSAGE. Everywhere you go now, there are massage and nail spas. Carve out 30 minutes and go for a shoulder rub or a relaxing foot rub... just because. These are just a few of the simple things you can do to be good to yourself. Being good to yourself is like saving money in the bank. You can then spread the wealth to the ones you love.

Learning South Bay’s Neighbor Newspapers TV Proudly Presents Its Production at NBC Students from East Islip High School’s English 11, creative writing and broadcast television classes recently toured the famed NBC Studios in New York City, enjoying behind-the-scenes access to the studio’s sets, broadcast centers and writing rooms. The tour included the broadcast sets of shows such as “NBC Nightly News,” “Saturday Night Live” and “The Tonight Show Starring Jimmy Fallon” as well as NBC’s new 4K theater, production gallery, studio rooms and broadcast operations center. Students also experienced a description of the entire television production process from the writing of the sketches and monologues to the steps for production and means of viewer access to shows. Additionally, the students on the tour had the opportunity to create their own unique productions, utilizing their personal scripts and performances. The production was recorded for students to later download. As a follow-up activity in creative writing and broadcast television, the high schoolers wrote their own sketches, working cooperatively to create characters, scenario and dialogue and taking part in a group editing process they learned on the tour. Meanwhile, the junior English class, focused on speech, discussed the skills of performance and poise demonstrated by various actors and television show hosts, and put into practice such speech techniques as enunciation and holding for laughter.

February’s Charity of the Month is: Paws of War
“Helping Both Ends of The Leash”
The Paws of War Service Dog Program relies heavily on the support of their community and volunteers. Through this program they are able to provide service dogs and their training to Veterans in need at no cost, truly providing them with a miracle! A service dog can help combat the daily symptoms of PTSD. They are trained to pick up stress signals and intervene with their owner to direct their focus back to a positive environment. They can also greatly increase the quality of life for someone suffering from Traumatic Brain Injury. Paws of War trains service dogs to combat the daily issues that someone suffering from TBI has. Each service dog given out is intensely trained before handed off to the Veteran. The lives of many American Heroes have been changed forever because of what this organization has done for them!
Below is a list of more services that Paws of War offers to Veterans in addition to their Service Dog Program: •

Therapy Dog Program - This is a volunteer based program in which certified Therapy Dogs are brought to visit individuals that would benefit from a dog, but unfortunately cannot have one at the time being. War Torn Pups Program - This program has brought back dogs from Afghanistan, Syria and Jordan that Service Members have found while out on tour. Community Education Program - This program allows Paws of War to work with members of their local community. Through this program, they are able to provide a direct connection between Veterans and the younger population. Vets to Vets Medical RV - This mobile RV provides certain medical services for service animals at no cost to Veterans!
Paws of War is growing and has been recognized by national leaders, national press and some of the larger sporting franchises have even partnered with them to sponsor a dog. The men and women that this organization provides services for have dedicated their lives to serving our great country, and Paws of War strives to help them in every way possible! service project of the Patchogue Rotary Club. Veterinarian Dr. David Roy Hensen founded this
organization with a belief in the therapeutic potential of dogs! PRAAT screens, trains and eval-
uates all dog-handler teams (the volunteer and their dog). Upon a successful completion of the
PRAAT dog-handler team training, teams become eligible to make visits at over 150 of their contracted and insured facilities across Long Island. PRAAT also runs a Doggie Reading Club. This

Islip High School business ownership and marketing students recently received firsthand experience in building a business from the ground up. Teams of students competed against each other using the business game Risky Business, which tasks players to be the first to build a company and complete an initial public offering, with success depending on decisions, timing and competition with opponents. Using the game as a learning tool, students had to meet certain
criteria to complete their business plan; hire marketing, product development, finance and sales executives; develop a product line with patents; and secure additional funding. Meanwhile, their competitors used mergers and patent protections to hold them back. Each step of the business plan that was completed allowed the students to move to the next step, until they had all the components to make an IPO. “The students were really engaged in this activity,” said business teacher Renee Clock. “This hands-
on experience helped the students connect what they have been learning about in the classroom through a realistic approach. They enjoy learning in a nontraditional environment.”

Student of the Month Celebration Resurrecting a popular ceremony for the first time in a decade, Islip High School held its Student of the Month Celebration on Jan. 15 in the school’s cafeteria, with Principal Michael Mosca and Assistant Principal Curtis Juengerkes honoring 45 terrific students who had been recognized for their achievements during the months of September, October, November and December by the school’s careers, English, ELL, fine and performing arts, guidance, mathematics, physical education and
health, science, social studies, technology and world language departments. Also honored were four staff members. “It’s a very special event,” said Juengerkes, who spearheaded the celebration’s return. “We get to recognize students in different disciplines, because you don’t have to be a valedictorian or an AllCounty athlete or musician to merit recognition. Islip is a special community to be a part of, and we have some very talented students and staff. This gives us the opportunity to
recognize and appreciate some of the things that make Islip whole, that give it the character it has as well as the integrity and wisdom we thrive on.”

MAKING WISHES GROW - Dance Connection of Islip, as well as other local performers and dance companies, performed at Holy Trinity Diocesan High School in Hicksville, on Sunday, January 20th. The performance raised money which granted the wish of a child named Matthew from Huntington Station, NY through Make-AWish of Suffolk County. Matthew was referred to the Make-A-Wish Foundation® in 2015 when he was diagnosed with Langerhans Cell Histiocystosis, a rare cancer that causes LCH cells to build up in certain parts of the body, where they can damage tissue or form lesions.
Four Islip Middle School students from the district’s EXCEL program for the academically gifted - Abby Alfano, Erica DeLapi, Emily Lewis and Jaci Narducci – won first place in the 27th annual Future City Competition in New York City on January 19th, beating out 43 other regional teams. “Our team has been working hard since last June to prepare for this five-part competition, and their hard work paid off,”
said EXCEL coordinator Julia Johnson. DiscoverE’s national, project-based engineering program Future City enables students in grades 6-8 to imagine, research, design and build cities of the future using “SimCity” software. Future City’s 2018-2019 theme of “Powering Our Future!” tasks student participants to design innovative power grids for their future cities that can withstand and quickly recover from

Future City Competition the impacts of a natural disaster. The Islip foursome came home from Manhattan with trophies, medals and prizes including iPads and Amazon gift cards. They will move on to the next phase of the competition, spending February break representing New York at the Future City National Finals in Washington, D.C., competing against teams from across the nation as well as the globe.
To help keep his mind off of the treatments and procedures he goes through, Matthew enjoys learning about cars. His favorite movie is Disney Pixar’s Cars which is why when he was medically eligible for a wish come true, Matthew wished to visit the magical Walt Disney World Resorts and be one of the first guests to explore Lightning McQueen’s Racing Academy. With the help of Making Wishes Grow, Matthew and his family plans to boarded their plane on January 26th. The performance featured Create Dance Center, the Dance Connection Performance Team, JAM Dance & Fitness, Trinity Dance Company, Milan Bailey, Sara Benjamin, Emily Chamberlain, Joel Feliciano, Emily Hart-Lopez and many more. TSA AIRPORT BREAKFAST - Town Supervisor Angie Carpenter, Aviation Commissioner Shelley LaRose-Arken, and Deputy Commissioner Rob Schneider, provided a breakfast of assorted bagels, cream cheese and coffee for the TSA morning crew at ISP. The airport’s 50 TSA workers continue to come to work despite the government shutdown. The shutdown has had no impact on the screening operations at ISP. “These men and women continue to come to work each and every day, ensuring the safety and well-being of the traveling public, despite not receiving a paycheck.
