It is an exciting time at the Mercy Soup Kitchen of Wyandanch as it is preparing to launch its new and expanded post Covid operation. Located in the basement of Trinity Lutheran Church at 17 South 20th Street, the Kitchen served its first meal to hungry people in 1980 and currently serves an average of 108 people per day. During the pandemic, however, Kitchen procedures had to be modified in order to provide hot, nourishing meals safely and continuously to those in need. Indoor sit-down dining was discontinued and only take-out dining was available. But today the Kitchen is posing for a postCovid reopening – a reorganizational rebirth of sorts – where Kitchen procedures can finally return to again offering guests dignified, indoor sit-down dining. The Kitchen relies heavily on its generous volunteer support and,

Boys And Girls Track Teams Capture League Championships

East Islip High School’s boys and girls indoor track and field teams both recently captured their respective league championships, the girls team for the first time in school history. The events were held on Jan. 20 and 21 at Suffolk County Community College in Brentwood. Sophomore Kaylee Garatina started the girls meet off by placing fourth in the hurdles. Her twin sister Chloe Garatina won second place in the 55-meter race, with fellow sophomore Danika Tidridge taking sixth in the latter event. Junior Danielle Birner
earned a hard-fought sixth place in the 300-meter race. Sophomore Grace Micali and freshman Kathryn Simonetti took fourth and fifth, respectively, in the high jump. Junior Brianna Tucci and senior Jaclyn Scandale earned fourth and fifth place in the race walk. Simonetti was stellar in the 1,500-meter contest, earning a second place finish. The 4x800 relay team of Micali, Kaylee O’Boyle, Simonetti and Tucci took fourth place. The 4x200 relay team of Carly Amato, Maya Brown and the Garatina twins captured first place with a time of 1:53.7, the first
time in school history East Islip has won this event. Chloe Garatina saved her best performance for the long jump, setting a new school record of 17 feet, 3.75 inches on route to her gold medal-winning performance, and becoming the first girl to ever break 17 feet in East Islip history. The 4x400 relay team of Birner, Simonetti, Tidridge and Katelyn Trifaro came roaring back to finish first. Micali added to her impressive resume with a win in the triple jump. Her jump of 36 feet, 10 inches reset Micali’s own school record, and in the process broke the League
3 championship record. Lastly, Simonetti was the MVP of the meet for her outstanding performance in taking first place in both the 600-meter and 300-meter contests, breaking school records in both races and putting up some of the fastest times in the state. “It was an epic day with some magical performances,” coach John Reynolds said. “History was made, and all the young ladies did an amazing job.” The EI girls team is now looking ahead to Feb. 4, when they hope to win their first county championship. The boys team found
equal success a day later, beginning with Jack Kalinowski, who placed fourth in the 55-meter dash. In the 55-meter hurdles, Jake Sambo captured fourth place. In the 600-meter dash, captain Joseph Norrby finished with an impressive time of 1:23.89 to finish second. Captain Matt McIntee won the 300-meter dash with a time of 35.66, while Jack Kalinowski took sixth. In triple jump, James Terhune finished in fifth place. Julani Ellis clinched first in long jump with a leap of 21 feet, 3 inches, with Terhune taking fourth. In shot put, Charlie Heffernen led the
way with an impressive championship-winning throw of 47 feet, 7.5 inches, while McIntee took third and Drew Walendowski finished fifth. Norrby won the high jump event with an effort of 5 feet, 11 inches. Lastly, the 4x400 meter dash team of Kalinowski, Aidan McConnell, McIntee and Norrby dominated the field with a time of 3.33.75 to become league champions. “Congratulations to all members of the team and good luck in the county championship on Feb. 3,” assistant coach Nicole O’Connor said.

Reflecting the district’s strong music education programming and support provided by teachers, 50 East Islip studentmusicians from East Islip High School, East Islip Middle School, John F. Kennedy Elementary School and Ruth C. Kinney Elementary School were recently chosen for the Suffolk County Music Educators’ Association All-County Festival. These students will rehearse with the respective SCMEA
ensembles in early March. On March 10, fifth and sixth graders will perform at the SCMEA Central Division I concert at East Islip High School. On that same date, seventh and eighth graders will perform at the SCMEA West Division II concert, and ninth and 10th graders will perform at the SCMEA West Division III concert, both at Huntington High School. “We are delighted to congratulate our hardworking musicians
that have been accepted into SCMEA,” Director of Art and Music Dr. Rob Wottawa said. “This year we have 50 student acceptances, and we attribute that fact to our amazing music teachers who are committed to our young musicians. Nachos Make The Ideal Game Day Snack

ame watches with fellow fans, family and friends are a great way to make playoff football even more enjoyable. With so many big games on the horizon, football fans would be wise to ready their culinary arsenal. Whether you’re hosting at home or going to a game watch at a fellow fan’s house, keep in mind that food and football are a great match. Certain dishes have long since staked their claim on the game watch dinner and snacking tables, and nachos certainly need no introduction to football fans. As this year’s playoffs kick off, football fans can try this recipe for “Loaded Beef Nachos” courtesy of AllRecipes.com.
Loaded Beef Nachos Serves 4
Taco Seasoning: 5 teaspoons paprika 1 1⁄4
teaspoons garlic powder
1 1⁄4
teaspoons ground cumin
1 1⁄4
teaspoons onion powder
1 teaspoon chili powder 1 teaspoon oregano leaves 1 1⁄2
teaspoons salt

1 pound ground beef 1 cup diced onion 1 cup diced green bell pepper 1 10-ounce can diced tomatoes with green chiles (such as RO-TEL®) 1 15-ounce can Mexican-style corn (optional) 1 16-ounce can refried beans 1 cup shredded Cheddar cheese, or as needed

For taco seasoning: Stir paprika, garlic powder, cumin, onion powder, chili powder, oregano,

Heat oil in a large skillet over medium-high heat; cook and stir ground beef in the hot skillet

and salt together in a small bowl; set aside.
until browned and crumbly, 5 to 7 minutes. Stir in onion and green pepper; cook and stir with oil and juices from browned meat until much of the liquid has evaporated, about 2 minutes more. Stir 1⁄2 can diced tomatoes with chilies and Mexican-style corn into skillet. Season beef mixture to taste with prepared taco seasoning mix. Stir together the remaining 1⁄2 can diced tomatoes with chilies and refried beans in a microwave-safe bowl. Microwave on high until heated through, stirring every 30 seconds, 1 to 3 minutes. To assemble nachos: Lay half of tortilla chips in a single layer on a microwave-safe plate, then drop teaspoons of refried beans onto chips, followed by meat mixture and shredded cheese. Repeat with remaining chips, beans, meat, and cheese to make a second layer. Microwave on high until cheese is melted and nachos are warm, 2 to 3 minutes. Top with sour cream, salsa, olives, jalapeños, and green onion as desired.

East Islip High School’s robotics team competed in the VEX Robotics Over Under game on Jan. 27, held at John F. Kennedy High School in Bellmore. The all-day event featured over 45 teams from around the Tri-State area. This year’s tournament was played on a 12x12 square field. Two alliances – composed of one “red” and one “blue” team each – competed in twominute matches to attain a higher score. East Islip team captains Kaitlyn McCall and Jishnu Roy Chowhuri led the squad to a sixth-place finish at
the end of the qualification matches. Robot driver Matt Collins performed extremely well under the pressure and was 5-1 in competition play. The remaining robotics team members helped in the pit area all day, fine tuning and making last-minute adjustments to the robots. The team will next compete on Feb. 17 at Adelphi University. “I enjoyed coming to the event,” sophomore Jackson Carucci said. “It really opened me up to friendly competition and I gained valuable experience about teamwork and robotic

Runner Kaiden White, an Islip High School junior, recently had a spectacular day at the Molloy Stanner Games, held at Nike Track & Field Center at The Armory in New York City. In the 300-meter race, White ran a winning time
of 34.50, placing him in the top three fastest runners in New York State and top 20 nationally. He was awarded overall Most Outstanding Individual Performance at the meet. His time in the 300-meter was a new personal record

The Long Island Pet Expo returns on March 2-3, 2024, with fur flying entertainment, dog sporting competitions and educational programs designed for the whole family.
