Gazpacho A Healthy Favorite

This gluten-free, dairy-free, nut-free, soy-free and vegan Gazpacho recipe was submitted by Registered Dietician Nutritionist, Lee Cotton, RDN (www. leecottonrdn.com). Lee lives and practices nutritional counseling in Florida, but reads our newspaper online at www.SouthBaysNeighbor.com. For people with dietary restrictions, eliminating certain foods doesn't have to deprive you of flavor, as this recipe for Gazpacho proves!

Living Well

Preparation 1.Place tomatoes, onion, bell peppers, Tabasco sauce and garlic in a food processor and process until smooth. 2. Place all of the cucumbers except ½ cup cucumbers into the blender and process until smooth. 3. Add vinegar and oil and quick process until mixed. 4. Place the mixture in a serving bowl, and stir thoroughly. 5. Cover and refrigerate for an hour or until serving time. 6. Remove from refrigerator and uncover. 7. Add salt and pepper to taste. 8. Place gazpacho into serving dishes. 9. Garnish with remaining cucumbers and cilantro and a piece of lime and 1 t. of avocado. Enjoy! You may think you know where you will be one year from today. Think again. Wherever you are right now; the people who are around you, the places you frequent, your relationship status, financial status, health status... even the area in which you reside are all outward projections of your inner world and your current stage of development. In the blink of an eye you could find yourself doing a slow circle turnabout as you wonder, “Whoa! How did I get here? My world has done a sudden 180.” It’s as if you have taken a quantum leap, but that leap has actually been a long time in the making. It is a result of your personal life cycles. I know what you are thinking. “That’s an interesting thought, but a year from now my life will most likely be pretty much the same.” That could be, but let me ask you this... Think about the year you met your spouse, the year you unexpectedly changed career paths or fate might have brought you to a new city (maybe fate brought you to Long Island, NY from someplace else), the

year you found out you were going to be a parent for the first time. I could list a hundred more examples. Who knew as the clock struck 12 midnight on New Year’s Day of that year, that those life changing events would be coming your way. Life holds so many mysteries for us to unfold; sometimes pleasant and sometimes not so pleasant. What I have come to know is that no matter what you are going through, there are always goodies waiting around a new corner. I can honestly say, I have never gone through a personal trial without something magical coming out of it; a special person, a new opportunity, an important revelation. I have also come to know that life looks most messy before things fall into place. At that point, all you can say is, “Wow!,” and “Thank you.” We go through cycles of rest, growth and then reaping rewards. We know we are in a cycle of rest when life seems status quo, the needle doesn’t move very much and we are just going about our business with no significant

ripples. Life seems fairly effortless and predictable in this cycle. It may even seem a bit boring at times, and you long for a little spice. We know we are in a growth cycle when hard times come, life feels chaotic and overwhelming, we “just can’t seem to catch a break,” and we experience heavy and painful emotions. It is in our growth cycles where we do the most significant work and our soul achieves further expansion. This expansion prepares us for our next reward cycle. When we pass the tests we are given during our growth cycles, we will then (often, when we least expect it) come into a new reward cycle. A reward cycle is recognizable to us because this is when we experience the goodies of life. Someone special comes into our path, doors seem to open up, a dream comes true, and life starts to feel great again. Suddenly, perspective is achieved. Any discomfort seems worth it, because it delivered us to a place of being able to receive the gift(s) we are now being given.

April’s Charity of the Month is: Operation S.P.L.A.S.H.

In honor of Earth Day, an annual event celebrated on April 22nd, which brings awareness about environmental conservation, I chose an eco-friendly non-profit on Long Island that strives to help conserve our island.

Operation S.P.L.A.S.H. is a non-profit volunteer ran organization that is committed to improving the quality of life on Long Island Shores. Their mission is to provide a low cost solution to the growing problem of waterfront pollution through public awareness, community action and your participation. S.P.L.A.S.H. stands for Stop Polluting, Littering and Save Harbors.

Products used to wash boat hull sand decks often contain toxic ingredients such as chlorine, phosphates and ammonia. Degreasers dry the natural oils fish need for their gills to take in oxygen. For boats that are in the water, use cleaning methods that prevent or contain the release of pollutants to surface waters. Below are a few actions you can take: 1) When possible, remove the boat from the water and perform cleaning where debris can be captured and properly disposed. 2) Use fresh water to clean your boat after every use. 3) Use environmentally friendly cleaning methods and products. Here are a list of a few alternatives to toxic products: Elbow Grease, Hydogen Peroxide, Baking Soda, Salt, Apple Cider Vinegar, Baby Oil.

This organization holds Beach, Bay and Waterway Clean-Ups and operates several other projects such as Street Storm Drains, Ocean-Bay Water Exchange, No Wake Zones, Clean Marina Program, Youth Education Programs and more. They have successfully rescued 2,498,267 pounds of trash from our waters! Also, asside from collecting trash they also have had an amazing impact on the amount of sewage being dumped in our bays. To reduce the flow of trash into our bays, they have collaborated on the funding and installation of more than 4,000 street storm drain inserts in Nassau County. Operation S.P.L.A.S.H. works diligently to partner with industry businesses, non-profits, government agencies and academic institution’s striving to promote comprehensive understanding of local

Suffolk Legislator Tom Donnelly (D-Huntington Station) and the entire Legislature recently recognized Deer Park resident Gina Lieneck as the 2019 Suffolk County Woman of Distinction at the General Meeting of the Legislature on Tuesday, March 26 in Hauppauge. Gina was selected as the 2019 Legislative District 17 honoree before being chosen as the county-wide “Woman of Distinction” by the Suffolk County Women’s Advisory Commission. In 2005, Ms. Lieneck suffered an unthinkable tragedy while boating on the Great South Bay which resulted in the death of one of her daughters, Brianna, and serious injuries to her and her entire family. Gina turned tragedy into action and has been advocating and lobbying New York

New World Language Achievers Diligence was rewarded at Deer Park High School’s World Language Honor Society induction ceremony on March 28, welcoming 73 new members. A total of 111 of the school’s students are enrolled in the school’s French, Italian and Spanish honor societies for 2018-2019. Inductees are required to earn an average of 92 or higher in their world language classes, demonstrate an overall GPA of 85 or above, receive outstanding recommendations from school staff, and act as peer leaders. “In addition to maintaining exceptional grades in their world language courses, these students are dedicated to helping Deer Park’s

multilingual and multicultural community,” said Ashley Rosenberg, the district administrator for ENL and world languages. “They have worked diligently to earn this tremendous achievement.” “When I was a high school principal, this was always one of my favorite nights,” said James Cummings, the district’s assistant superintendent for pupil personnel services and the incoming superintendent of schools. “It is an opportunity to congratulate a group of students who I always felt held a special place in my heart and in the high school. So many students are looking for the easy way out, doing the minimum amount they can do, but the kids

we honored did a couple of things. They kept going with a foreign language when a lot of students stopped. Not only did they keep going, they excelled at it. Communication is crucial, and as our world shrinks, being comfortable communicating with other cultures and human beings who might not have the same background or history is the most important skill we can teach our kids today.” The packed audience of proud families was entertained by music from band director Jerry Cannarazzo and the school’s jazz ensemble, a perfect touch to complete an evening of candle lighting and congratulations.
