To be spared the penultimate devastation, Israelites were instructed to sacrifice a lamb for a meal and to mark their doors with its blood. The Lord would see the blood and pass over that household, sparing the occupants’ sons. Because Passover is so symbolic, Passover seders, which take place either on the first Friday or both the first and second Friday of Passover, feature many traditions. Some traditions may need to be modified to maintain health and safety during the COVID-19 pandemic. It is customary to read the Haggadah at the seder table, but celebrants who cannot come together may share these important stories, blessings and songs via an online video chat. In addition, if Passover celebrants cannot make it to the store or find all of the ingredients for their seder plates, substitutions may need to be made. Traditionally, an egg, bitter herbs, a shank bone, parsley, haroset (chopped mixed nuts, fruits and cinnamon), and lettuce are included. Celebrants can even experiment with making unleavened bread at home if necessary. If horseradish for a bitter herb is unavailable, any item that can cause tears, such as ginger or raw lemon, may be substituted. Passover is an important part of Jewish history and a holiday that is celebrated each year with vigor.

During a time when there is so much negative news, we want to spotlight a local Long Island student who has a long list of accomplishments and heads for greater things! Paul Joseph is currently a senior at St. Anthony’s High School, where he holds a 4.0 GPA. His journey began at the early age of six years old. Paul Joseph started playing PAL football and his father, a NYPD police ofﬁcer at the time, was his coach. The bond between father and son was very strong. As the high school years approached, Paul Joseph was afforded the opportunity to attend St. Anthony’s High School, since the family is Catholic and it is a college preparatory school that is known for its athletics. Paul Joseph adapted very well to the Catholic school environment; he excelled at academics and athletics as well. He was not only on the football team, but on the wrestling team and spring track team as well. Wanting to become more marketable in his football career, he decided with the advice of his father, to take up long snapping. He is now a Nationally Ranked Long Snapper and stands tall at 6’6” and weighs 260 pounds! His Mom and his younger brother (Antonio) are his biggest supporters and number #1 fans. Paul Joseph expressed interest in attending college in the south, so his journey continued. Before the pandemic hit, Paul Joseph and his father visited several universities in the south. He immediately fell in love with Furman University. With support from his whole family, friends and love from his parents and brother, Paul Joseph will continue his journey at Furman University in Greenville, South Carolina, where he will play the game he loves.

Basketball Team Finds Major Success

During the winter season in February, the Deer Park High School boys basketball team was a major success, going 5-0 in League IV play and 6-2 overall on route to earning their seventh league championship since 2012. They also qualified for the Suffolk County playoffs for the 12th season in a row. In individual accolades,

freshman Preston Edmead was named All-County and League IV Player of the Year, sophomore Anthony Daley was named AllLeague and Conference 2 All-Tournament, junior Kyle Jefferson and senior Jalen Van Dorn were named All-League, and Van Dorn was named Academic All-County. Senior captain Matt Myrick was honored

with the Spirit Award, captain Nahleaj Delbridge was honored with the Coaches Award, and Jefferson was honored with the Sportsmanship Award. The Falcons return 13 lettermen from this year’s squad and have already begun working on their 2021-2022 campaign.

The Twilight Wish Foundation www.twilightwish.org

T h e Twilight Wish Foundation is a 501(c) (3) non-proﬁt organization whose mission is to honor and enrich the lives of seniors through intergenerational Twilight Wish celebrations. Since the organization’s founding in 2003, their goal has been to make the world a nicer place to age, one Twilight Wish at a time. When a Twilight Wish is granted, a senior is recognized for all that they have done throughout their lives and is shown that they are appreciated and valued. Did you know that senior citizens are the fastest growing population in the world? The number of Americans 65 and older is projected to more than double to over 98 million by 2060. To date, the Twilight Wish Foundation has granted over 3,700 wishes throughout our country! These wishes have ranged from simple needs wishes, such as shaving razors for nursing home veterans, to living life to the fullest wishes, such as going cross country in a tractor trailer truck. Recently, many Long Island residents had their wishes come true. Below is a story about Michael, a Plainview resident. Michael wished for a record player and vinyl records. The Twilight Wish Foundation happily granted his wish, and as far as the records go, he received two of his favorites! Michael had worked in insurance and took an early train into the city every morning, returning home late at night. By the time he retired, he was ready for senior living accommodations. However, retirement did not stop his desire to volunteer. Prepandemic he worked closely to help people who were lower functioning/ had dementia. During the pandemic,

he was still the first person to ask others what they needed and if he could be of help in any way. He truly gives so much without thinking of taking. Thank you for being you, Michael! You can qualify for a Twilight Wish if you are at least 65 years old, are a legal U.S. citizen, demonstrate financial need, provide a history of giving back to others and possess the cognitive, emotional and physical ability to experience the wish. Please note, when going to grant a wish, this foundation takes all the necessary safety precautions. If you are interested in volunteering with their Long Island Chapter, you can fill out the Chapter Volunteer Application at www.twilightwish.org/volunteeropportunities/ and someone will get in contact with you regarding how you can do so. Why does NY State have such restrictive guidelines for animal hospitals?

We enjoy having you there too.

The NY State government has put detailed guidelines in place for all businesses, not just veterinarians. For example, medical facilities are required to screen patients before admitting them into the facility.

However right now we are required to follow guidelines issued by New York State that state “Curbside intake and pickup of animals should be used, wherever practical, to minimize the numbers of clients in waiting areas and exam rooms.”* Although that creates a lot of extra work for our staff, we are committed to complying with the NY State safety guidelines during the COVID-19 crisis, and to protect our client’s health and safety. *Exceptions can be made in situations like euthanasia

Are these still necessary? Restrictions are lifted on other things. By July 2020, restrictions like curbside check-in have helped reduce the number of people diagnosed with COVID-19 in New York State down from over 10,000 a day to below 1,000. At the same time we have seen infections rise dramatically in other states who had fewer restrictions.

Return Of Bethpage Air Show At Jones Beach State Park Governor Andrew M. Cuomo recently announced the Bethpage Air Show at Jones Beach State Park will return this Memorial Day weekend after a one-year absence. The outdoor show, sponsored by Bethpage Federal Credit Union, features a range of military and civilian aerial performers. This year’s show will be a ticketed event, with reduced capacity and social distancing measures in place to ensure a safe return of the patriotic Long Island beachfront tradition. “As we continue to see progress in our fight against COVID and cautiously reopen our state, we can look forward to enjoying more and more outdoor adventures this summer - including the annual Bethpage Air Show at Jones Beach State Park,” Governor Cuomo said. “With safety measures in place, New Yorkers and visitors can get back to enjoying all that Jones Beach and Long Island State Parks have to offer, and this annual festival is a great way to get outdoors and support the regional Long Island economy.” The Bethpage Air Show at Jones Beach, one of the most popular events on Long Island, was canceled last year due to the Covid-19 pandemic. Its return this year brings back a Memorial Day weekend tradition that celebrates the beginning of summer at Long Island’s beaches, and honors military families and those who serve our country. This year’s show features the United States Air Force Thunderbirds, the United States Air Force A-10 Thunderbolt (Warthog), United States Army Golden Knights U.S. Army parachute team, and United States Coast Guard Search and Rescue team, as well as many other worldclass civilian performers. The Bethpage Air Show will take place Friday, May 28, (Practice show); Saturday, May 29, and Sunday, May 30, 2021 from 10 a.m. - 3 p.m. each day. Visitors must purchase a ticket in advance to park at Jones Beach during the show. Details on purchasing a ticket

Have Your Furry Friends Tested Annually The American Heartworm Society advises dog owners to have their furry companions tested for heartworm annually. Such tests can typically be conducted during routine preventive care visits to the veterinarian. The

AHS notes that such tests are necessary even for dogs that are taking year-round heartworm prevention medications. Tests can confirm that such programs are working or indicate if they are not effective. The American Veterinary

Medical Association notes that antigen tests are the most commonly performed tests. These tests detect the presence of adult female heartworms and they are typically highly accurate. If a test is positive, veterinarians may recommend

further testing, including radiographs, a blood profile and an echocardiogram. Such tests can determine a number of things about the infection, including its severity. The AVMA also notes that the additional testing can help determine the best

course of treatment. Cat owners should know that it’s more difficult to detect heartworm in cats than in dogs. The AHS indicates that cats are much less likely than dogs to have adult heartworms, making the disease harder to detect in

felines. Veterinarians may recommend cats receive both the antigen test and an antibody test, which detects exposure to heartworm larvae. The AVMA notes that more testing may increase the likelihood of detecting the disease in cats.

In the 1640s, the Halsey family began farming in the Water Mill and Bridgehampton area. Today, their family farm tradition continues as Milk Pail Fresh Market & U-Pick, which is run by both Amy and Jennifer Halsey. Both Amy and Jennifer received agricultural educations and returned to the farm after college. Amy manages the retail store, helps design gardens, custom designs planters and more. Jenn is on the farm growing the crops. She once had even been named New York Young Farmer of the Year by the New York State Farm Bureau and proudly represented her state at the national finals held in Texas. At their farm they grow apples, peaches, pumpkins, blueberries, pears and table grapes. Many value-added products are made from their produce, including fresh apple cider, apple cider donuts, apple and pumpkin pies and more. With the help of their dedicated staff, this family farm continues many traditions, while also trying new ideas to grow the business! Running a farm is no easy task, but Amy and Jennifer make it seem so! Visit their farm for a great experience on the East End.

Rhonda Klch is the Executive Director and Founder of Equity First, which was formed in 2004. This organization provides financial education, literacy and best practices to the community at low or no cost. Financial decisions are based on emotional scenarios, often times leading to clients making poor choices and decisions in regards to their future. Equity First creates and implements an approved client plan until the desired result is achieved. Their programs include money management, budget reviews, financial well check, credit restoration, debt settlement, bankruptcy consulting, loss mitigation services and more. Each service is paired with ongoing consultations to ensure a thorough understanding of timelines, expectations and benchmarks. Rhonda and her team are making an incredible impact in the Long Island community. In addition to financially assisting others, during the pandemic they have also given locals in need food, gift cards, personal hygiene products and more.

Lisa Gatti is the Founder and CEO of Pal-O-Mine Equestrian and the mother of her 13 year old daughter, who is the pride and joy of her life. Her passion for horses and teaching began at a very young age. In college, she was the captain of the equestrian team and she graduated with a dual degree in Elementary and Special Education. She has supplemented her education throughout the years by taking other educational programs. In 1996 and 2000, Lisa was named as US Team Leader for the US Equestrian Paralympic Team in Atlanta, Georgia and Sydney, Australia. From 2008-2013 Lisa served as Chairman of the Board of Directors of EAGALA, the global standard for equine assisted psychotherapy and personal development. In 2015, Lisa was named to the Board of Autism Communities. Most recently in 2019, she was appointed to the Town of Islip Disability Advisory Committee to help local government identify the most crucial issues facing our special needs population. She was honored with the 2020 Woman of Distinction and Distinguished Service Award from The Town of Islip, is a current finalist for the Imagine Awards for the Leadership Excellence Category and just received the 2021 Circle Of Excellence Award from the Long Island Business News. Throughout the pandemic, she still sees the greatness around her everyday and believes that when we see it in others, we know it, and when we trust its presence in ourselves, we embody it.

Eileen Scanlon has been a NYS Licensed Cosmetologist for 30 years. She has worked with Corporate America, Non Profits, Academia and local grass-roots organizations. Ten years ago, she started Scanlon’s Traveling Salon. This heart centered business helps seniors, the home confined and vulnerable, Hospice, group homes, assisted living communities, those that are differently abled, and virtually everyone in between, look and feel better. Scanlon’s Traveling Salon brings hair services directly to their client’s residence and Eileen’s goal has always been to provide each and every one of her clients with a warm, positive, and empathetic experience before, during and after each visit. Also, Eileen incorporates her love of social justice and advocacy into her business practice by using only socially responsible, vegan and environmentally friendly products. Scanlon’s Traveling Salon provides kindness, compassion and professionalism to people all over Long Island. Eileen’s motto is “A smile is the closest distance between two people.”
