Cook the bacon in a soup pot over medium heat until the fat is released and the bacon bits are crisp, 6 to 8 minutes. Add the onions and garlic. Cook, stirring frequently, until the onions are a light golden brown, 8 to 10 minutes. Add the zucchini, cover the pot and cook until the zucchini starts to become translucent, about 5 minutes. Add the broth, tomatoes, tomato puree, and vinegar. Bring the soup to a simmer and cook until the vegetables are very tender and the soup has developed a good flavor, 15 to 20 minutes. Add the basil to the soup, and season with salt and pepper. Serve in heated bowls, garnished with cheddar rusks.

Directions Toast the bread until golden brown on both sides. Preheat the broiler. Scatter the cheese evenly over the toasted bread and broil until the cheese bubbles and begins to brown.

Pal-O-Mine Equestrian, Inc., a private, not for profit organization providing a comprehensive therapeutic equine program using horses to facilitate growth, learning and healing for children and adults with disabilities, has announced its 4th Annual Hay Drive. It is hoping that animal loving Long Islanders will once again help raise funds to feed the organization’s herd during the challenging winter months. Feeding a large herd is costly and hay costs continue to increase due to weather and supply and demand challenges. Depending on the type of hay, each bale of hay weighing approximately 50-80 lbs. can cost from
$13.00 to over $20.00. Pal-O-Mine’s 6-week bill averages over $9,000 based on its herd eating 18 bales of hay (1,000 lbs.) every day. This year, due to its increasing operational costs as well as the increased cost of hay, the organization is hoping to raise $20,000 to cover its hay costs for the period from through April 15th. Hospitals Intensify Flu Prevention Efforts
Flu Shots And Surgical Facemasks Part Of Effort To Stem Flu Flu virus was declared prevalent by the New York State Health Commissioner on December 6, 2023, and hospitals on Long Island and throughout the Hudson Valley are taking additional steps to prevent the spread of flu, including enhanced efforts to vaccinate all employees and distribution of surgical facemasks. Worn by employees, masks offer a physical barrier to flu transmission. This is a comprehensive endeavor to protect patients,
visitors, and employees from exposure to the flu virus. A declaration of flu prevalence by the health commissioner triggers the public health law that was put in place by the state in 2014. Employees of hospitals and residential healthcare facilities and agencies who are not vaccinated against the flu are required to wear a mask while in areas where patients or residents are typically present. While an annual flu vaccine remains the
single best method for preventing the flu, a surgical facemask, worn by employees, provides added protection to patients, employees, and visitors. All hospitals on Long Island and in the Hudson Valley offer the flu vaccine to all employees and also provide employees with surgical facemasks, as required by New York State public health law. As a matter of standard practice, all Long Island and Hudson Valley hospitals enforce
universally recognized precautions to prevent the flu. These include hand washing, the use of hand sanitizers placed conveniently throughout the hospital, as well as goggles and gowns. In addition, all hospitals adhere to rigorous infection control guidelines and policies every day to ensure a clean environment for patients, staff, and visitors. These practices are especially important during flu season. Antiseptic wipes are
located in patient rooms, workstations, hallways, and other treatment areas and are easily accessible to hospital employees responsible for sanitizing medical equipment and surface areas. “Flu prevention is a priority at all hospitals on Long Island and in the Hudson Valley. Hospital employees work every day to lessen the spread of flu virus by adhering to strict infection control practices and prevention guidelines,” said Wendy Darwell, president/CEO
of the Suburban Hospital Alliance of New York State, the organization that represents hospitals in the nine counties east and north of New York City. “Hospitals, nursing homes, and other facilities must also document the number and percentage of personnel vaccinated against the flu to state and federal authorities.” Most hospitals offer flu shot clinics. Two exceptional Deer Park High School football players were recently honored by the New York State Sportswriters Association. Senior Hayden Lovinsky, who plays wide receiver and cornerback, was named to the All-State first team. Sophomore quarterback Aaron Smith
earned All-State honorable mention. “It was good to get this award in my senior year, to end my high school career,” Lovinsky said. “I went All-County last year, so to go All-State this year was a big goal for me, especially first team. Coaching, working out in
the summer and playing with my teammates really helped me get there.” “I’m honored to be named All-State honorable mention,” Smith said. “I couldn’t have done it without God, my mom, my family, my coaches and my team.”

he is,” said Nicole Erker, mother of Sienna Erker, who was the catcher of 2023 World Series Team. He began coaching the Little League World Series team along with fellow coaches Dom Fontana and the team manager Rich Eaton. “Dom and Rich are the best of the best” Joe said. With hard work and lots of practices, the Massapequa Softball Little League team had the chance to participate in the World Series Championship game in Greenville North Carolina that took place on August 13, 2023.
One of his greatest interests since 2008, is serving as a coach for the Massapequa International Little League team where he also sits on the board of directors. He became interested in 2008 when he played father-daughter tee-ball with his then 3-year-old daughter Jessica.
“Our team jumped out to a 3-0 lead in the first inning and never looked back and took home the title of Little League World Series Champions, the team finished undefeated with 19 Wins and 0 Losses” Joe said “This was a major win for not only Massapequa but New York State as well. The game would be known as the first world series championship game to be won by any Little League softball team in New York State.

Joe, like the other coaches, has a different style of helping the players in the time of need. When it comes to the games and practices, he wants the kids to win and feel proud of themselves. However, he always makes sure the kids are not stressed out about whether they win or lose. “Remain calm. They’re kids. They’re going to make mistakes. Everybody wants to win but you have to stay calm,” he said. He believes in core values such as respect for both the players and the coaches.
Coach Joe has been a true helper to these kids as they have been to him. While they get good training and a respectful coach, he gets to give back to the community which he loves so much. “He’s not just a coach to these girls, he’s their friend,” Rios said. Now Joe says its back to reality and back to work changing people’s lifestyles in the form of selling homes throughout Long Island. While coaches get a lot of recognition for their strategies within games and practices, the parents get to see a lot on the sidelines that many people don’t always see. “Joe brought a little more light to heavy practices... Coach Joe was the guy who had fun with them and gave them a different perspective,” said Josie Rios, the parent of Ava Rios, who played on Joe’s 2023 World Series Team. “He coached our kids without a kid on the team and he still coaches for the local little league.
