Preheat the oven to 350 F.

Combine the bacon and onion in a medium Dutch oven. Slowly cook over medium heat until the onion is tender and the bacon is cooked, 8 to 10 minutes. Meanwhile, in a medium bowl, whisk together the ketchup, molasses, sugar, ground mustard, ground cloves, and 1 cup water to combine. Add the cooked beans and pour the mixture into the pot with the bacon and onion. Stir, cover and bake for 1 hour, stirring Baked Beans every 20 minutes. Melt 1 tablespoon of the butter in a medium skillet over medium-low heat. Add the shallot and cook until golden and slightly crispy, 7 to 8 minutes. Use a slotted spoon to transfer the shallot to a clean plate. In the same skillet, melt 2 tablespoons of butter, then add the mushrooms, garlic, thyme, salt, and pepper. Stir and cook until the mushrooms are softened, about 5 minutes. Transfer to the plate with the shallot and let cool. In a small bowl, use a rubber spatula to blend the remaining 8 tablespoons of butter with the cooled

8 tablespoons (1 stick) plus 3 tablespoons unsalted butter, at room temperature 1⁄2 cup sliced shallot 1 heaping cup sliced cremini mushrooms 2 large cloves garlic, minced 1 teaspoon coarsely chopped fresh thyme leaves 1⁄4 teaspoon kosher salt, plus more as needed 1⁄4 teaspoon coarsely ground black pepper, plus more as needed 4 to 6 steaks (such as ribeye, New York strip or porterhouse)

Grill each steak for 6 to 8 minutes per side, depending on the thickness and the desired doneness. Tent with aluminum foil and let rest for 5 minutes. Slice the mushroom butter into coins and top each of the steaks with two coins before serving.

Creativity Soars During STEM Kite Challenge

Elementary STEM students from throughout Copiague School District participated in the Kites Over Babylon challenge, themed “America the Beautiful” at Cedar Beach on April 10. The students have been working remotely on aerodynamics lessons including Bernoulli’s Principle with elementary STEM teacher Karen Wiking. During their lessons, the students created Google Slides and shared kite blueprints and designs with each other in Google Meet and breakout rooms. Students were given the opportunity to pick up kite kits and get to work. The kits

included six wooden dowels (two sizes), 200 feet of string, thick plastic, electrical tape, brown sheet paper, sketch paper and four straws. The students created designs based on the research and collaboration. Nineteen Copiague Elementary families competed on the challenge day in three categories: most unusual, funniest and most creative. Copiague won first place overall with a kite designed by Isabella Rufrano, a fourth grader from Great Neck Road Elementary School. Copiague students also won for the most creative kites, with kites designed by

Abigail Guashpa, fifth grader at Deauville Gardens West Elementary School and Jake Vargas, fifth grader from Susan E. Wiley Elementary School. Popular Graduation Traditions Graduation is steeped in tradition. Come the day of graduation, many gradsto-be might be focusing on receiving their diplomas and then celebrating after the ceremony. The hard work students put in affords them every right to celebrate once they’re officially anointed as new grads, but before the party begins it can be fun to reflect on the many traditions associated with graduation ceremonies. Cap and gown Graduation ceremonies simply wouldn’t be the same without caps and gowns. The tradition is anything but new, as Columbia University notes caps and gowns have been linked to academia since the 12th century. Back then, students wore gowns and hoods to emulate the clergy who taught them, but also to stay warm. Many universities dressed their scholars in gowns from the 1700s onward. In 1786, one school, Brown University, even mandated that degree candidates be clad in flowing robes and caps at commencement ceremonies. Though educators and students

may no longer wear caps and gowns when attending class or around campus, the tradition of doing so at commencement ceremonies has endured. Tassel turning The tradition of turning the tassel does not have the lengthy history of the cap and gown, dating back only decades rather than centuries. Graduates typically turn the tassels after everyone has received their degrees during the ceremony. The turn is symbolic of their transition from student to graduate. Tassels start on the right for high school students and college undergraduates and are then turned to the left, while recipients of master’s degrees and doctorates keep their tassels on the left throughout the commencement ceremonies. Tossing caps in the air The tossing of graduation caps in the air is believed to date back more than 100 years. Prior to 1912, graduates of the United States Naval Academy had to serve as midshipmen for two years before they were commissioned as officers.

As a result, they still needed their graduation caps. But beginning with the class of 1912, graduates were automatically commissioned as officers, so they no longer needed their hats. That led the graduates to throw them in the air, thus beginning one of the more fun and photo-worthy graduation traditions. Pomp and Circumstance This tradition marked by the playing of “Pomp and Circumstance” is rooted in the work of William Shakespeare, which makes it seem like a perfect fit for graduation ceremonies. Sir Edward Elgar composed “Pomp and Circumstance” in 1901 and the title for the song was inspired by a line in the bard’s “Othello.” Elgar received an honorary degree from Yale University in 1905, and during that ceremony “Pomp and Circumstance” was played. The song apparently made a strong impression, as it soon began to be played at various commencement ceremonies, a tradition that continues today.

Bethel Hobbs Community Farm is a non-profit organization with a rich history. It is an 11 acre farm, located at 178 Oxhead Road in Centereach, and is ran entirely by volunteers. This community farm grows and harvests an average of over 50,000 pounds of fresh, organic produce, which then gets donated to over 11 food pantries / soup kitchens. They also offer CSA Memberships, educational programs, they host community events and they have a seasonal farm stand! If you live nearby the farm and would like to sign up for their Summer and or Fall CSA program, you can. Their crop shares are an easy way to guarantee farm fresh veggies for you and your family all season long. By joining their CSA program you will gain a connection to their farm and know exactly where your vegetables are coming from. You will receive a weekly share of nutritionally dense produce grown right in Centereach, while supporting your own neighbors. Their organically grown vegetables are harvested and packed the same day you receive them, cutting time and travel dramatically from field to fork. Members of their Summer CSA can expect to receive a wide variety of summer vegetables, including but not limited to, summer squashes, tomatoes, peppers, eggplants, cucumbers and a diverse array of greens. Members of their Fall CSA can expect to receive an assortment of winter squashes, potatoes, sweet potatoes, onions, carrots, beets, as well as an assortment of greens. Additionally, anyone is welcome to stop by and shop at their farm stand every Saturday from 10 AM - 3 PM, which started on June 12th and runs through October 10th. investigator was Mayer Bellehsen, PhD, director of the Unified Behavioral Health Center for Military Veterans and their Families in Bay Shore, Long Island and member. “ Tr a n s c e n d e n t a l Meditation is a nontrauma-focused, easyto-learn technique that was found in this study to improve PTSD symptoms, likely through the experience of physical rest,” said Dr. Bellehsen. “In contrast to commonly administered therapies for PTSD that are traumafocused and based on a patient’s recall of past traumatic experiences, this intervention does not require extensive review of traumatic history, which some individuals find difficult to engage in. This intervention may therefore be more tolerable for some individuals struggling with PTSD.” The randomized controlled trial assigned 40 veterans with documented PTSD to either the TM group or a “treatment as usual” control group. The TM treatment provided 16 sessions over 12 weeks, with twice-aday daily home practice. PTSD symptom severity was assessed with the Clinician-Administered PTSD Scale for DSM-5, and patient self-report with the PTSD Checklist for DSM-5. The results showed large effect sizes, indicating a strong TM treatment impact in reducing trauma symptoms for both PTSD measures. Other facts associated with trauma, such as depression and anxiety symptoms and sleep problems, also showed a strong impact as a result of TM treatment. “This trial corroborates the findings of a large clinical trial published in The Lancet Psychiatry,” said Sanford Nidich, Ed.D., Director of the Center for Social-Emotional Health

Celebrating A Thriving Science Research Program Joined virtually by central office administrators, board of education members, Town of Babylon officials and members of the local science community, Walter G. O’Connell Copiague High School celebrated the success of its science research students during the seventh annual science symposium on May 20. “It’s no secret that it’s been a difficult two years,” said Renee Locker, Walter G. O’Connell Copiague High School science research teacher. “Our students have been resilient in this virtual learning environment and we have a thriving, robust science research program in Copiague. The results of their work have been outstanding.” Research students – from

the introduction to research, independent and advanced research classes – had the opportunity to showcase their projects during a virtual presentation. “I can’t tell you how impressed I am by the work of these students,” said Copiague School District Superintendent of Schools Dr. Kathleen Bannon. “Their dedication to science has been outstanding and the tenacity they have shown will do them well over the course of their careers. We all know you will continue to do great things after you leave this science research program.” A video presentation of the science research program was featured and local town officials commended the students for

their perseverance in their science research endeavors despite the past year’s challenges. Their hard work is evidenced by their awards and accomplishments this year. “Congratulations to our science research students for the tremendous successes they have received this year,” said Walter G.
