Chicken With Matzo Dumplings - This delicious recipe for “Chicken With Matzo Dumplings” can be enjoyed during Passover or throughout the year. 1 2 1 4 12

Note: You can use goodquality, low-salt kosher chicken stock cubes or bouillon powder, but the recipe above for homemade broth is recommended. For the dumplings: 7 ounces medium matzo meal (about 8 matzo sheets, ground up) 3 eggs 1 tablespoon olive oil 1 tablespoon finely chopped flat-leaf parsley 3 grindings of black pepper 2 pinches of salt First, make the broth. Put the carcass in a large pot and cover with about 21⁄2 quarts of water. Bring to a boil, cover and simmer for 30 minutes. Add the vegetables, herbs and peppercorns, return to a boil, cover and simmer for 1 hour. Strain, reserving the broth. Make the dumplings by

mixing all the dumpling ingredients together, then knead until you have a smooth dough, adding a little water if necessary. Cover and let rest for at least 3 hours. Using your hands, form the mixture into balls the size of apricots. To put it all together, bring the chicken broth up to simmering point. Drop in the dumplings and continue simmering, covered, for 30 minutes. If you don’t have a chicken carcass, boil a whole chicken for the soup and use the meat in other dishes. Traditionally, a boiling fowl from a kosher butcher would be used. Health note: This is the famous “Jewish penicillin” beloved of every mother and grandmother. It’s not an old wives’ tale; there’s good scientific evidence that it contains vitamins, minerals and other natural chemicals that are antibacterial and immune-boosting. In addition, nutrients and valuable plant chemicals are extracted from the vegetables and herbs during the cooking process, most of which end up as active ingredients in the finished soup.

Passover is a Jewish festival that commemorates the story of Exodus. In that story, ancient Israelites were freed from slavery in Egypt, and men, women and children of Jewish heritage celebrated that liberation during Passover, a seven or eight day festival that is one of the more widely observed Jewish holidays. Passover celebrations begin on the 15th day of the Jewish month of Nisan. That day typically falls in March or April of the Gregorian calendar. One of the symbols of Passover is matzo, an unleavened flatbread made from flour and water. Though matzo is an enduring symbol of Passover, that does not mean it cannot be enjoyed at other times of the year. In fact, those who want to celebrate their Jewish heritage or even those who simply want to experience Jewish culture can enjoy matzo throughout the year. It’s even possible to get a little creative with matzo. Such is the case with the following recipe for “Chicken With Matzo Dumplings” from Michael van Straten’s “The Healthy Jewish Cookbook” (Frog, Ltd.). This delicious recipe can be a part of your Passover celebration or just a meal to sit down and enjoy with family and friends.

North Shore Animal League America Conducting Adoptions By Appointment Only Essential Staff Providing Care For Animals On Campus Amid Coronavirus (Covid19) Pandemic

North Shore Animal League America’s Adoption Center is currently conducting adoption by appointment only. Our Adoption Team is contacting pre-approved adopters with a scheduled day and time to complete their adoption. The health and wellbeing of NSALA staff, volunteers, adopters, and the community remains our priority at this time. We currently have over 40 dogs of various ages and sizes on campus, as well as more than 100 felines, from kittens to older cats, all looking for loving homes. As always, the animals on the NSALA Port Washington campus are being well-cared for by our devoted staff. In addition to finding homes for more than 110 canines, some of whom were from our recent Mill Dog rescue (we saved 100 dogs and puppies from deplorable

conditions with some going to our area shelter partners,) we have also placed more than 30 animals into foster homes. During this time, the Alex Lewyt Veterinary Medical Center will remain open to see sick patients and emergency cases only. While we are doing adoptions by appointment, NSALA’s Adoption Center is temporarily closed to the general public in accordance with New York State Governor Andrew Cuomo’s statewide directives and to control the number of people in the Adoption Center at any one time. How Does The New Coronavirus Affect You And Your Pets?

Pet owners can rest easy that there is no reason to believe that dogs or cats in the United States might be a source of infection for the new coronavirus disease — COVID-19 — or cause its spread according to the Centers for Disease Control (CDC) in Atlanta, Georgia. A biblical account in John 20:14-16 indicates that Mary Magdalene was the first to speak with the risen Jesus. The information below is from Dr. Priti Patel of Primary Care of Long Island and the CDC website The most important thing you can do for your family, friends and community is to help reduce the spread of the virus as much as possible. We have very little power over this virus at the moment, because it is so new that there are no drugs or vaccines for it yet. For most people if they get the virus, it does not cause much if any symptoms. The problem is that there are a few people who will need to goto the hospital to treat the effects of the virus. The one thing we have a control of is what we can do! If we follow these guidelines as outlined by the CDC, we can help reduce the spread and slow down the effect of the virus, which will help you and your neighbors. Know How it Spreads There is currently no vaccine to prevent coronavirus disease 2019 (COVID-19). The best way to prevent illness is to avoid being exposed to this virus. The virus is thought to spread mainly from person-to-person. Between people who are in close contact with one another (within about 6 feet). Through respiratory droplets produced when

an infected person coughs or sneezes. These droplets can land in the mouths or noses of people who are nearby or possibly be inhaled into the lungs. Take steps to protect yourself Clean your hands often Wash your hands often with soap and water for at least 20 seconds especially after you have been in a public place, or after blowing your nose, coughing, or sneezing. If soap and water are not readily available, use a hand sanitizer that contains at least 60% alcohol. Cover all surfaces of your hands and rub them together until they feel dry. Avoid touching your eyes, nose, and mouth with unwashed hands. Avoid close contact Avoid close contact with people who are sick Put distance between yourself and other people if COVID-19 is spreading in your community. This is especially important for people who are at higher risk of getting very sick. Take steps to protect others Stay home if you’re sick Stay home if you are sick, except to get medical care. Learn what to do if you are sick. Cover coughs and sneezes Cover your mouth and nose with a tissue when you cough or sneeze or use the inside of your elbow. Throw used tissues in

the trash. Immediately wash your hands with soap and water for at least 20 seconds. If soap and water are not readily available, clean your hands with a hand sanitizer that contains at least 60% alcohol. Wear a facemask if you are sick If you are sick: You should wear a facemask when you are around other people (e.g., sharing a room or vehicle) and before you enter a healthcare provider’s office. If you are not able to wear a facemask (for example, because it causes trouble breathing), then you should do your best to cover your coughs and sneezes, and people who are caring for you should wear a facemask if they enter your room. Learn what to do if you are sick. If you are NOT sick: You do not need to wear a facemask unless you are caring for someone who is sick (and they are not able to wear a facemask). Facemasks may be in short supply and they should be saved for caregivers. Clean and disinfect Clean AND disinfect frequently touched surfaces daily. This includes tables, doorknobs, light switches, countertops, handles, desks, phones, keyboards, toilets, faucets, and sinks. If surfaces are dirty, clean them: Use detergent or soap and water prior to disinfection.

As coronavirus continues to impact Long Islanders, growing health concerns along with the constant barrage of news is raising people’s anxiety. Catholic Health Services’s (CHS) mental health professionals offer ways we can reduce our stress during this time of uncertainty. This includes eating healthy, exercise, adequate sleep, virtually connecting with friends and family and reducing

exposure to news and social media. “The constant flow of information related to coronavirus can become overwhelming,” said Catholic Health Services Chairman of Behavioral Health Ronald Brenner, MD. “It’s important to take a break and step away from media reports and the constant scrolling through social channels.” Anxiety is a normal response to a stressful

situation and can inspire adaptive behavior in many situations. However, when facing mounting uncertainty, the brain can go into an anxiety spiral and cause atypical reactions. Knowing the body’s physical reactions to the different types of anxiety is important. Typical stress reactions can include temporary difficulty concentrating, irritability, fatigue, stomachache and

difficulty sleeping. Atypical reactions can manifest in persistent and/or excessive worry that prevents you from completing daily tasks, changes to energy levels, eating patterns and/or prolonged and overwhelming worry. Dr. Brenner strongly suggests that anyone experiencing unusual or atypical reactions that won’t subside in a short period of time seek professional mental health assistance.

To reduce coronavirusrelated anxiety, there are several steps individuals can take. These include: • Find meaningful tasks and roles within your support network to channel your anxiety • Create spaces that are not focused on coronavirus. This could include a social media thread on other topics, or watching movies • Savor small positive moments, amplify

The highly unusual circumstances of the COVID-19 outbreak, and subsequent shutting down of much of society, has helped to identify the things that really matter in our lives. The unique circumstances have tested our abilities to leverage the wealth of technologies that Catholic Elementary Schools have invested in, and tested the partnership between parents and educators. The families and students in our school communities have found comfort from the close relationship each has with their faith, and with each other, in the uncertainty introduced by the global pandemic. Academically, each student in a Catholic school was already a user of the Google apps for education (the Google G-Suite) and each student has a Google account that they can access from any

device, anywhere they can access the Internet. In the days leading up to the closing of the schools, the schools made sure that every student had access to a suitable device to continue their learning remotely, and loaned devices to students who needed them. Faculty responded quickly, with teachers ‘translating’ lesson plans to make them engaging and effective when presented online. Pastors and Principals orchestrated the activities and began each new day with morning announcements, a morning prayer, and the pledge of allegiance. School days continued, uninterrupted, right down to the acknowledgement of students celebrating birthdays. The tight communities around our schools worked together to maintain a sense of normalcy for the students.

As the schools and students enter week 2, with the technical and educational challenges under control, students are completing and sharing projects online, they are seeing and interacting with their classmates in online forums. Students are attending Liturgies and prayer services online, and their schools have even begun to bring their art and music classes to them via Skype, Zoom and Google. The things that have always made Catholic school special all remain intact – and the warmth, love and support of these beautiful faith communities has never been more important.
