Greetings November! We’re so excited for the holidays to kick off later this month. It’s also Small Business Season and the chamber has some plans in the works for the holiday season’s Shop Local campaign and the 2023 edition of the Bethpage Holiday Catalog from South Bay Neighbor featuring our chamber members and fun holiday activities like recipes and games to check out throughout the winter.
Prior to that, at the very end of October, we attended the prestigious Nassau Council of Chambers of Commerce Business Person of the Year & Legislative Breakfast at the Crest Hollow Country Club where we celebrated Gus Tsiorvas of the Embassy Diner as our honoree for 2023! Several board members were there along with our Chamber President whom is also on the Nassau Council Board. We’ll post photos on our social media when they’re available. Make sure to congratulate Gus and his family the next time you stop at the diner! He has made the 60 plus year old Embassy Diner into a hugely successful establishment that has become locally famous for it’s seasonal displays and support for local sports clubs and first responders. Congratulations to the Embassy crew! We also want to announce the Holiday Tree Lighting Ceremony will be held Sunday December 3rd downtown on Broadway. The event itinerary is still being arranged and we look forward to a great celebration and menorah lighting for the holidays. We would like to thank the residents that have offered their own evergreens as donations for this year’s tree, our committee is evaluating them. The chamber would also like to wish you and your families a wonderful Thanksgiving holiday this year, it’s been tough for many and we hope that being Bethpage Strong can bring joy to our hearts as we reflect on how far we’ve come and remember to support those in need when we can. Central Boulevard Elementary School Unveils Newly Renovated Library

Bethpage students from Central Boulevard Elementary School returned to a newly renovated library for the 2023-2024 school year. The renovation took place during the summer months as part of the Bethpage Union Free School District’s bond projects which passed
in 2021. Central Boulevard’s library is a warm and inviting space, featuring fresh paint on the walls and new carpet and furniture. Upon entering the renovated library, one will see a new mobile circulation desk and tables and chairs with wheels to encourage
collaboration. Flexible seating is a common theme within the library as students have the option to utilize comfortable floor cushions, benches and floor rocking chairs as they read. To maximize book space, all the library bookcases received an upgrade. Aside from two large moveable
cube-shaped bookcases, some of the library’s new bookcases contain end caps for students to easily see specific book selections. According to Ashley Scotto, Central Boulevard’s library media specialist, these end caps will feature different books each month based on the curriculum and special events or holidays. One of the most noticeable differences is the size of the library which was
expanded due to the removal of a wall. The library now features a MakerSpace which can be used for small group instruction and which houses different technology-based learning tools (coding, robotics, etc.). The library also includes a new Zen Den, featuring a sensory bin and a Chrome Zone, for Chromebooks. “The new library at Central Boulevard reflects our school’s goal to nurture
students’ into being responsible and caring global and digital citizens,” said Ms. Scotto. “With new dynamic spaces such as a Chrome Zone and Zen Den, students and staff needs are addressed. The funds are part of a $600,000 grant program being administered by the Town to help support local Chambers of Commerce and Business Associations that were negatively impacted by the COVID pandemic. The funding, which is being distributed to up to 12 chambers of commerce and business associations through the Nassau Council of Chambers of Commerce, is being provided through the American Rescue Plan Act and at no cost to Town
taxpayers. “We recognize the crucial role that local Chambers of Commerce and Business Associations play in supporting small businesses, fostering commerce and establishing connections with potential customers. Unfortunately, so many of these organizations were significantly impacted by the COVID pandemic, leading to financial hardships,” said Supervisor Saladino. “As part of the Town’s commitment to supporting our local communities and aiding in the economic recovery of our Town, we are pleased to offer this grant opportunity.” Grant funding will be administered by the Nassau Council of Chambers of Commerce to chambers and business associations in the Town of Oyster Bay. Entities are eligible to receive up to
$50,000, which can be used for a variety of purposes, including operations and maintenance expenses and community investments. Additionally, individual businesses and non-profits who have not yet applied for the Town’s $5,000
‘Oyster Bay Forward’ grant program can still receive funding. The program is available to businesses that employ up to 50 full-time equivalent W-2 employees as well as sole proprietors. Additional eligibility criteria and application
information can be found at TOBforward.com. “Local businesses are the heart of our communities, and we want them to thrive as they keep local dollars on the economy, provide local jobs, build a strong tax base and invest

Mini Cheese Ball Bites Makes 12 8 ounces light cream cheese, softened 1 cup shredded sharp cheddar cheese 3 tablespoons drained, chopped pimentos 1 teaspoon garlic powder 1 teaspoon paprika Pinch kosher salt Pinch freshly ground black pepper 1⁄2 cup crushed pecans 1⁄4 cup chopped chives 12 pretzel sticks
Directions: In a large bowl, stir together the cream cheese, cheddar, pimentos, garlic powder, paprika, salt, and pepper until well combined. Cover and refrigerate for at least 30 minutes. Place the crushed pecans and chives in a small bowl. Set aside. Roll the cheese mixture into twelve 1-inch balls. Evenly coat each ball with the pecan-chive mixture. Press a pretzel stick into the top of each cheese ball just before serving. Serve at room temperature or chilled.

Dry Turkey This Thanksgiving
Turkey is the centerpiece of Thanksgiving dinners. The National Turkey Federation estimates approximately 46 million turkeys are consumed on Thanksgiving each year, followed by 22 million turkeys at Christmastime. Turkey makes a pleasing picture on the dinner table. However, some people insist that turkey is their least favorite component of the Thanksgiving meal. One of the biggest complaints is turkey tends to be dry. There are many reasons why turkey can come out dry. Turkey is a lean meat, and Healthline reports that turkey has slightly less fat in its dark meat than chicken. Another reason why turkey may be dry is due to its poor breast-to-leg ratio. By the time one gets the leg meat to cook to a temperature so it’s safe for consumption, the breast meat often has dried out. Seeing how many people dive for the breast meat initially, they could dish up some dry bird. There are many ways home cooks can prevent dry turkey this Thanksgiving. Consider these turkey-tending tips. • Brine your bird. According to ScienceBlogs, what causes a human to perceive a
food as juicy may actually be his or her own saliva at work. Salty foods may stimulate the production of saliva in the mouth, helping the food to feel much more moist while on the palate. To adequately inject
enough salt into the turkey meat, submerge it in a salt brine for a few days before cooking. • Watch your cook time. It’s important to avoid overcooking the turkey, which will turn it as dry as the Sahara.

Some turkeys come equipped with pop-up timers to help cooks gauge when to take them out of the oven. However, a more accurate tool is a digital food thermometer that can be set to go off when the turkey reaches the correct internal temperature. • Cook the turkey parts separately. As previously noted, the breast meat will likely reach the desired temperature before the leg meat. To fix this, take the turkey out of the oven when it reaches five to 10 degrees before the safe temperature for the breast meat, around 165 F. (Remember, the meat will continue to cook while “resting.”) Let guests “ooh and aah” over the pictureperfect turkey. Then cut off the legs and return them to the oven until they are done. Arrange the properly cooked breast and leg meat together on a serving platter. • Offer condiments. A moist dollop of stuffing, a drizzle of gravy, or a scoop of cranberry sauce can add moisture to turkey. This approach does not prevent drying out, but it can make a turkey that has dried out a bit more satisfying.

Creating A Positive Vision At Bethpage’s Central Boulevard School

Bethpage students and staff from Central Boulevard Elementary School started the 20232024 school year on a positive note as they each “created a positive vision” about the future. “Create a positive vision” is a rule from Jon Gordon’s book, “The Energy Bus for Kids: A Story About Staying Positive and Overcoming Challenges.” The Central Boulevard
school community has participated in the Energy Bus program, based on the book, for the past few years to help sustain a positive school culture. To showcase their positive visions, each staff member at Central Boulevard was asked to think about one word that they want to follow this school year. They each used paint pens to write their one word on a rock
and decorate it. Some of the positive words that the staff picked were blessed, determined, inspire, kindness, perseverance and steadfast. The decorated rocks will be placed outside in a school rock garden for all to see. Students were also encouraged to “create a positive vision.” During the school’s first Thoughtful Thursday of the 2023-2024 school year, each class was
challenged to generate a word or words that best described their goals. The students created a poster with one word that their class agreed upon or they made a word cloud to display the one-word ideas of each student. On Sept. 27, Central Boulevard students and staff gathered in the school’s all-purpose room for the first Energy Bus assembly of the school year.
The celebration, which was emceed by library media specialist Ashley Scotto and school psychologist Dr. Louis Ricci, highlighted the Energy Bus program, set up expectations for this year’s program and dove into the meaning of the first rule, “create a positive vision.” Students danced and cheered as Central Boulevard Principal Dominique Siebert held up a sign featuring the
first rule. In addition, Ms. Scotto shared that each student would be creating their own oneword license plates during their upcoming library periods which will then be displayed around the school building. Both the students and staff are excited about the new year ahead and look forward to following their 2023-2024 visions.

Six seniors from Bethpage High School were recently named Commended Students in the 2024 National Merit Scholarship Program. Matthew Burgin, Zoe Chinda, Ellie Park, Parisa Pitiranggon, Mashhood Shah and Miraj Shah are among about 34,000 students nationwide who were recognized for their exceptional academic promise based on their high 2022 Preliminary SAT/National Merit Scholarship Qualifying Test scores. Although they will not continue in the 2024 competition for National Merit Scholarship awards, receiving a letter of commendation from the National Merit Scholarship Corporation is a high honor. The Bethpage Turkey Drive to benefit the Island Harvest Food Bank will take place on Friday, November 17, 2023, from 7:30 AM to 6:00 PM at Bethpage’s headquarters located at 899 South Oyster Bay Road in Bethpage. This year marks the 15th anniversary of Long Island’s largest oneday food drive which to date, has donated more than 45,000 turkeys and over 200,000 pounds of food over 15 years to Island Harvest which helps supply Thanksgiving holiday meals to families in our community. Long Islanders are asked to donate frozen turkeys, non-perishable food items or cash donations. Bethpage’s Drive Through Donation Lanes will allow residents to remain in their cars while volunteers remove donations from the vehicles. The donations will go directly to Island Harvest Food Bank, which will help supply Thanksgiving meals to the more than 300,000 foodinsecure Long Islanders through its distribution network of over 400 food pantries, soup kitchens, and other feeding programs on Long Island. Non-perishable food items needed include canned goods, cereal, pasta, rice, boxed juices, and shelfstable milk (please, no glass containers). For the first time, Bethpage is issuing a Corporate Challenge encouraging local businesses and organizations to donate the largest amount of frozen turkeys and nonperishables and then drop off their donations on November 17. The business that provides the largest donation will be
sent an ice cream truck to their location for all employees to enjoy. To join the challenge, Long Island businesses and organizations can sign up here. “Bethpage is focused on enriching the lives of the communities we serve and we are able to accomplish this by collaborating and partnering with businesses across Long Island. So this year, we are very excited to see the impact the new Corporate Challenge brings to this important event,” said Linda Armyn, President and CEO, Bethpage Federal Credit Union. “As always, our heartfelt thanks go out to the Long Island community for its ongoing support. Every donation counts.” For those unable to make a donation on November 17, or would rather show their support online, Bethpage is accepting online monetary donations. Every gift of $35 will help support a holiday meal for your Long Island neighbors. Bethpage Water District Celebrates 100 Years
Lighting the Night with a Drone Show for the Ages!
Not many institutions hit the century mark, but Bethpage Water District certainly did! To commemorate this prestigious milestone, Bethpage Water District and the Bethpage Chamber of Commerce held a birthday bash celebration on September 30th in downtown Bethpage.
The evening culminated with a spectacular drone show…one of the largest drone show displays ever on Long Island.

“The thousands-strong crowd at our centennial celebration experienced something they’ve never seen before on Long Island. A truly historic event and complete ‘wow’ moment,” said Michael Boufis, Bethpage Water District Superintendent. “Over 100 drones created aerial images in lights depicting the iconic Bethpage water tower, a fire hydrant, a flowing water faucet and more. This event is the realization of countless hours of planning and preparation by our employees and other individuals who work tirelessly to serve the Bethpage community.”

Several awards of distinction were presented to individuals for their dedication to the District and the community of Bethpage. Three Nurses Earned Daisy Award For Extraordinary Care
Three St. Joseph Hospital registered nurses recently received the DAISY Award® for Extraordinary Nurses. The award is part of the DAISY Foundation’s programs to recognize the super-human efforts nurses perform every day. Lacey Mantovani, RN, Tatiana Morisseau, RN, and Heather Ribera, RN, all of the hospitals critical care unit, were nominated by patients and/or their families for providing compassionate care, going above and beyond and for staying true to Catholic Health’s I-CARE Values (Integrity, Compassion, Accountability, Respect and Excellence). The three nurses are part of a special cohort as they represent the inaugural Daisy Award winners at St. Joseph Hospital. Truly amazing.” The not-for-profit DAISY Foundation was established by family members in memory of J. Patrick Barnes. Patrick died at the age of 33 in late 1999 from complications of Idiopathic Thrombocytopenic Purpura (ITP), a little known but not uncommon auto-immune disease. The care Patrick and his family received from nurses while he was ill inspired this unique means of thanking nurses for making a profound difference in the lives of their patients and patient families. War. Vietnam veterans also make up a sizable percentage of U.S. military veterans, as VA estimates indicate there were approximately 5.9 million veterans who fought in the Vietnam War in 2021. Though veterans need not have served in wartime in order to be recognized and honored on Veterans Day, the vast majority of U.S. veterans served during wartime. According to the VA, 78 percent of veterans in 2021 had served during wartime.
Town Takes Legal Action Against Grumman Over Bethpage Park Cleanup Oyster Bay Town Supervisor Joseph Saladino and the Town Board announced that the Town has filed a federal lawsuit against the Grumman Corporation for the decades-long stalled cleanup of the ballfield at Bethpage Community Park, which closed to the public in 2002. “We are tired of the lack of attention, lack of detail and lack of urgency demonstrated by Grumman, and we are not going to sit wait any longer as the park cannot be fully open to the residents of Bethpage,” said Supervisor Saladino. “The Grumman Corporation has been dragging its feet, hasn’t been following appropriate protocols set forth by the Department of Environmental Conservation (DEC)

or the Environmental Protection Agency (EPA), and quite frankly has not been doing what is right to fully protect the health and safety of our residents and the environment.” Elevated levels of soil contamination in parts of Bethpage Community Park were first discovered in 2002, closing the park to the public. Sections reopened following extensive testing, and in 2006 the park underwent a significant $20 million remediation project funded by Town taxpayers. Grumman has not reimbursed taxpayers for these costs to date. The ballfield, however, remains closed as soil contamination far below the ground continues to exist. The Supervisor noted that despite Grumman’s
lack of action, the Town has taken several steps to ensure that contaminated areas of the ballfield at Bethpage Community Park get cleaned so they may be returned to the community. The Town, with cooperation from the DEC, was working with Grumman to remediate two types of contamination under the ballfield, but the project was stalling. Although Grumman installed remediation equipment above the contaminated soil, the corporation refuses to expedite this process and wishes to leave behind PCBs deep below the surface. The Town’s ultimate goal is to have all the contaminated soil completely removed, at Grumman’s expense, and trucked off Long Island.
“An entire generation of Town residents have lost out on public access to the full enjoyment of the park, and soil borings demonstrate that a concentration of toxic contamination continues to exist far beneath the surface at the ballfield,” said Supervisor Saladino. “It’s unfortunate that it’s come to this but we will stop at nothing to ask Grumman to right their wrongs and remediate this ballfield to the highest standards. We urge Grumman to fully remove all contaminated soils from this site without being placed back into the ground. Makes 24 to 36 cookies 3 cups powdered sugar 3⁄4 natural unsweetened cocoa powder 1⁄2 teaspoon espresso powder (optional) 1⁄4 teaspoon salt 2 large egg whites, at room temperature 1 large egg, at room temperature 1 1⁄2 teaspoons pure vanilla extract
Directions: Preheat the oven to 350 F. Line two large baking sheets with parchment paper or silicone baking mats and set aside. In a large mixing bowl, sift the powdered sugar and unsweetened cocoa powder together, then whisk in the instant espresso powder (if using) and salt until well combined. Set aside. In a separate mixing bowl, whisk together the egg whites, egg, and vanilla extract until fully combined. Add the wet ingredients to the dry ingredients, and stir until the mixture is fully combined and smooth. Using a 1-tablespoon cookie scoop, scoop the cookie dough onto the prepared baking sheets, making sure to leave a little room between each one. Bake for 11 to 14 minutes, or until the tops of the cookies are set. Remove from the oven, and allow the cookies to cool completely on the baking sheets. Store the cookies in an airtight container at room temperature for up to 5 days.

Town Partners With Community Group To Collect Peanut Butter Residents Invited To ‘Spread The Love’ To Help Stock Local Food Pantries
Town Supervisor Joseph Saladino and Councilwoman Laura Maier announce that the Town will partner with the Massapequa Farmingdale Men’s Club to host a Peanut Butter Collection Drive. Residents are invited to donate new, unopened and sealed peanut butter to help replenish local food pantries and support families in need. Drop-off containers are located at Town Halls North and South, as well as at the Town Ice Skating Center. Alternative butters, including sun butters, almond butters and cookie butters, as well as jelly, are also accepted. “We are proud to partner with this great organization to help ‘spread the love’ and stock local food pantry
shelves with this very popular product,” said Supervisor Saladino. “Peanut butter has a long shelf life, provides many nutrients and doesn’t require refrigeration, making it among the most highly requested items from local food banks. We thank the Massapequa Farmingdale Men’s Club for again putting our local communities first with another wonderful initiative to help others.” The Massapequa Farmingdale Men’s Club mission is to provide and encourage involvement in education, charitable and social programs for the men of local communities, and to support the local and wider community with activities and contributions. “The Massapequa-

Over the past seven years, the members of the Plainview-Old Bethpage Middle School (POBMS) community have teamed up to provide the gift of clean drinking water to thousands of people in South Sudan. POBMS ELA teacher Misha Khan, in partnership with the nonprofit Water for South Sudan, has been
which so far has raised more than $10,000 to drill wells in the African country. As of this August, the school has helped drill two wells, drastically shortening the distance village community members need to walk to obtain drinking water. Ms. Khan said her seventh and eighth grade ELA classes were inspired
to Water by Linda Sue Park. The book chronicles the real-life struggle of a refugee in Sudan to find a reliable source of clean drinking water. In South Sudan, millions of women and children walk up to eight hours a day to collect water from hand-dug wells, which are often contaminated with
and bacteria. The schoolwide effort initially set out to raise $5,000 to drill one well, which was completed in June, 2020. Thanks to the tenacity and heart of the POBMS community, however, Ms. Khan has more than doubled the initial goal, allowing for the completion of a second well
in the Warrap State region of South Sudan. The wells were made possible through various fundraisers at POBMS, including a t-shirt design contest and, in particular, an annual walkathon at the school. During the walkathon, teachers, staff and students walked around the school track
