Although a large part of the fun involves watching the game, food and other festivities often round out the day especially when fans gather in the comforts of private homes rather than big stadiums.

Having good food nearby is essential when hosting sports fans for a big game, and there are many additional ways to make gameday that much more fun and memorable: Establish The Atmosphere Make the party area more festive by incorporating team colors. Feature these colors on serving bowls, plates, pennants, balloons and more. Remember to ask guests to wear the apparel of their
favorite teams, hang photos of key players and keep a ball on hand so guests can toss or kick it around between plays. Choose Fan-Favorite Foods Game day menu options can include anything from finger foods to more elaborate appetizers to main courses. Games can take several hours from start to finish, so make sure you have enough food to cover the duration of the event. Consider favorites like chicken wings, sliders, mozzarella sticks and deli sandwiches. Use a slow cooker to prepare chili or stew. A slow cooker also can be used to cook ribs or hot dogs in bulk. It’s also a handy tool to prepare pork loin for pulled pork sandwiches. Don’t Forget Desserts Desserts are an item you can
delegate to guests. If you want to prepare your own desserts, small and portable items are easier to manage and cut down on the mess while fans are cheering. Speck and Arugula Pizza Serves: 4 Pizza Topping: Flour, for dusting ¼ cup extra virgin olive oil, divided 1 garlic clove, crushed ½ teaspoon fresh rosemary, chopped Kosher salt and freshly ground pepper, to taste ½ cup partly skimmed ricotta cheese 1 cup mozzarella cheese, grated 2 cups baby arugula 1 small shallot, thinly sliced ½ lemon, juiced

An easy way to ensure drinks are cold is to plug the kitchen sink and fill it with water and ice. Place beverages inside and keep cups nearby. This eliminates the need to drag a cooler inside. When the party ends, simply pull the plug and let the water drain out.
Party-Perfect Pizza
4 slices Black Kassel Speck, cut in half lengthwise
Pizza Dough: 1¾ to 2 cups all-purpose flour 1 cup cake and pastry flour 2¼ teaspoons instant or bread-machine dry yeast (or 1 envelope) 1 teaspoon salt 1¼ cup very warm water Directions: To make pizza dough, stir together allpurpose flour, cake flour, yeast and salt in a mixer fitted with a dough hook; make a well in the center. Add water. Mix on medium speed until all flour is incorporated into dough; add remaining flour as needed to have soft, slightly sticky dough. Alternatively, you can mix by hand. Turn out on a wellfloured surface. Let rest covered for 10 minutes. Divide into thirds. Place a pizza stone or upside-down baking sheet in the oven and preheat to 450º F. Gently flatten dough into a circle or rectangle
on a lightly floured surface, creating a rim. Transfer to a cornmeal-dusted pizza peel or another upside-down baking sheet; slide dough onto the hot pizza stone or baking sheet. Bake for 8 minutes. Meanwhile, combine 2 tablespoons olive oil in a bowl with garlic, rosemary and salt and pepper to taste. Remove pizza from oven. Brush with olive oil mixture and top with ricotta and mozzarella. Return pizza to oven, baking until cheese is golden and bubbly, about 6 more minutes. Toss arugula and shallot slices in a large bowl with lemon juice, olive oil and salt and pepper to taste. Top the pizza with arugula salad, speck and shaved Parmesan cheese. Cut into wedges or squares with scissors; serve immediately. Tip: As an alternative to speck, you can try Black Kassel Old Forest, Picante or Mustard Seed salami. You can also buy store-made pizza dough and simply layer on the toppings.

LIGHTHOUSE MISSION!
“Providing Hope Beyond The Food” . . . this is a phrase often used at Lighthouse Mission, a mobile food pantry on Long Island. Pastor Jim Ryan is the President of this inspiring ministry that reaches 2,000 people per week with the mission to share the Gospel of Jesus and feed the poor. Lighthouse Mission is a registered non-profit that operates 100% on donations, receiving no government help. They operate a very impressive Food Outreach weekly on Mondays, Wednesdays, Thursdays, Fridays and Saturdays (visit their website at www. LighthouseMission.com for a full Food Outreach Schedule). Instead of operating this outreach from a single location, Lighthouse Mission chose to go mobile and travel to different locations where those in need could line up to receive plenty of nutritional food, gently used clothing and hear the word of God from one of the pastors working the event. Pastor Jim Ryan mentioned to me that they were inspired to operate this outreach in a mobile manner because the Gospel
tells us that, when going to help others, Jesus traveled to them instead of having them to come to Him. Lighthouse Mission also has a Youth Outreach that operates on Tuesdays, Wednesdays and Saturdays. Every Tuesday, they open their facility to high school students and offer them food, entertainment and time to socialize in a Christian setting. Every Wednesday, they do the same for middle school students; and on the first and third Saturday of each month, they offer this for students K-5. All of these events are free of charge and open to everyone. If you are interested in becoming involved with this organization, there are plenty of ways to do so. They gladly accept clothing and food donations and currently are in need of winter coats. As far as volunteering, they accept walk-on volunteers at all of their Food Outreach events. If you are interested in coming with a group to a Food Outreach event or are interested in volunteering at a Youth Outreach Event, please call their office at 631.758.7584 first for more information!

The Pilot Club is an organization that assists various support programs here on Long Island. They have donated medical equipment to those in need, given needy children backpacks filled with school supplies, spent time with special needs adults and more! They have been helping others for more than 30 years and continue to help those in need around Long Island to this day. Although children can be involved in this process, they ask that all applicants are over 18 years of age. All puppy raisers are required to attend monthly puppy raising classes. Rockin’ & Rollin’ South Bay Elementary School in the West Babylon School District was transformed into a School of Rock thanks to an artistin-residence program set up by the school’s ParentTeacher Association. During the week of January 22nd-26th,
musicians from the School of Rock in Farmingdale pushed into all the K-5 general music classes to teach the students about the history of rock and roll, music, instruments and the lyrics to the choruses of several popular rock songs. On January
26th, South Bay students showed off their skills to family and friends when each grade performed a different rock song with the School of Rock band at the West Babylon Junior High School Performing Arts Center.

By showing that they too are mourning the loss of a friend, the mourners bring comfort to the family. Burdens shared become lighter; the funeral is one way to help shoulder the family’s grief. The designated agent form is one of the most important pieces of paperwork in the funeral process. This form is filled out before the deceased has passed away, designating one person to take care of the funreal arrangements. Most people believe that documents such as health care proxy or power of attorney take care of these measures and give the named person power to make funeral arrangements. This is a common misconception. These documents are null and void when the deceased person has passed on. The right of funeral arrangements would then pass to the closest next of kin, and in the case of multiple children it gets evenly distributed. The designated agent form resolves this issue by signifying one person (kin or not) to take care of the arrangements. This is most helpful in situations with cremation, where a person passes away having multiple children spread across the country. In cremation, signatures are needed from all children in order to have the process completed. If one person objects, cremation cannot be done. With the designated agent form, only one signature is needed from the designated person. This makes the arrangement process go much smoother. Peacocks & Pretty Things Beauty. They say it is in the eye of the beholder; but truly, it exists all around us, if we take the time to notice. My love of photography has certainly enhanced my ability to appreciate the aesthetics of my surroundings, from interesting cloud formations while waiting for sunsets, to pretty roadside blossoms that would otherwise be characterized as weeds to the undiscerning eye, to the novelty of light and shadow as it plays out upon a surface. Such is the abstract nature of visual “art.” And then there are the moments when it appears before you in its most natural, stunningly striking form. Case in point: several weeks ago, my friend and I enjoyed a late lunch at the famed Milleridge Inn, having both decided that it was the perfect locale after having not dined there in quite some time. To our surprise, the holiday lights were still on full display, with remnants of the Christmas season in every corner of the restaurant and shops. Having just finished dismantling my own decorations the previous week, I was at once
nostalgic and slightly weary of them. As we exited the bakery and made our way to the official Christmas shop located on the property, I spotted what appeared to be a large bird sitting on the railing of the ice cream parlor. “Is that real?” I whispered to my friend, “Or just a decoration?” We stared intently, only to be instantly startled. “It moved! Oh my gosh, it moved!” As we tentatively approached, we realized it was a GIANT peacock. And with that, no less than half a dozen others peered out from behind various corners and crevices, along with several chickens and peahens. Unfazed by the humans before them, they moseyed to and fro, pausing briefly to study us. Thoroughly infatuated, we wandered after them, attempting to snap pictures and even a few short videos of these majestic feathered creatures. As I knelt down and tentatively reached my hand out toward one especially beautiful specimen, my friend grabbed my phone to
capture the sight. The bird cocked his head slightly, examining me carefully, then strode purposefully toward me. Unsure if he was planning to sit on my lap or - more likely - to take a sizable bite out of me, I froze, backing away slightly. “Did you get the picture?” I nervously called to my friend. “Yes, I think I took about 27 of them,” she replied giggling. Alright then, no sense pushing my luck. I quickly stood up as the peacock stared at me, seemingly perplexed. “Sorry pretty bird, thanks for the photo op.” And with that, he fluttered his massive wings and took off, soaring to a nearby tree branch. By that point, a small crowd had gathered around us, amazed that this one bird had taken such an apparent liking to me. A little boy exclaimed to his parents, “Wow, they fly???” Peering up at the bird, now perched overhead, my friend and I looked at each other in utter amazement. “That,” I said, “was clearly the highlight of the day.” Beauty. It’s everywhere.
By: Jon Taylor We all got a little spoiled with a week of unseasonably warm weather in January! Judging from the foot traffic in the village, it was evident that lots of folks took advantage of the reprieve to get out and about. A new salon has opened at the corner of Deer Park Avenue and Railroad Avenue. It is so new that I don’t see a sign as of yet, but we wish them the very best. The Venetian Yacht Club, alongside the village dock on Fire Island Avenue, has been sold. The new management has plans for some nice
renovations and will continue to operate as a catering facility. There is also some buzz about the new Asian restaurant going in alongside Don Ricardo’s on East Main Street. For those who have taken a hiatus from the NFL this year, or those who just aren’t interested in football, there is an alternative to the Super Bowl. The Babylon American Legion will host a movie night on Sunday, February 4th, starting at 5 p.m. “Last Ounce of Courage” and other featured movies will be shown. A $10 donation includes food and one free drink.
Our own Babylon American Legion Post 94 will host its annual Valentine’s Day Party on Saturday, February 17th, from 7 p.m. to 11 p.m. The event features a great buffet dinner, open rack bar, DJ, dancing and lots of fun! Under the leadership of adviser Erin Casserly, the North Babylon High School Academic Team qualified a group of its students for the History Bowl Nationals following its impressive performance at the History Bowl and Bee at White Plains High
School. In addition, Matt Pecoraro was one of just five students in the country to achieve a perfect score of 100 in the United States History Bee, and qualified for the History Bee Nationals. Emily Guerra, who tied for second place
