Party-Perfect Pizza

4 slices Black Kassel Speck, cut in half lengthwise

Pizza Dough: 1¾ to 2 cups all-purpose flour 1 cup cake and pastry flour 2¼ teaspoons instant or bread-machine dry yeast (or 1 envelope) 1 teaspoon salt 1¼ cup very warm water Directions: To make pizza dough, stir together allpurpose flour, cake flour, yeast and salt in a mixer fitted with a dough hook; make a well in the center. Add water. Mix on medium speed until all flour is incorporated into dough; add remaining flour as needed to have soft, slightly sticky dough. Alternatively, you can mix by hand. Turn out on a wellfloured surface. Let rest covered for 10 minutes. Divide into thirds. Place a pizza stone or upside-down baking sheet in the oven and preheat to 450º F. Gently flatten dough into a circle or rectangle

on a lightly floured surface, creating a rim. Transfer to a cornmeal-dusted pizza peel or another upside-down baking sheet; slide dough onto the hot pizza stone or baking sheet. Bake for 8 minutes. Meanwhile, combine 2 tablespoons olive oil in a bowl with garlic, rosemary and salt and pepper to taste. Remove pizza from oven. Brush with olive oil mixture and top with ricotta and mozzarella. Return pizza to oven, baking until cheese is golden and bubbly, about 6 more minutes. Toss arugula and shallot slices in a large bowl with lemon juice, olive oil and salt and pepper to taste. Top the pizza with arugula salad, speck and shaved Parmesan cheese. Cut into wedges or squares with scissors; serve immediately. Tip: As an alternative to speck, you can try Black Kassel Old Forest, Picante or Mustard Seed salami. You can also buy store-made pizza dough and simply layer on the toppings.

How’s it Going? So… how is everyone’s year coming along so far? Are we still avidly pursuing our New Year’s resolutions, or have we moved on to other, more realistic, goals? Sure, we’re only slightly more than two weeks underway into 2017, but even the most promising “fresh starts” have been known to bite the dust not even a few days in to a new year. Personally, I don’t see the point. Chances are, the second something negative happens, your entire motivation will be thrown off anyway; so, rather than give yourself unnecessary reason for disappointment, keep your goals open and ﬂexible – much like life. The best-laid plans more often than not do not go according to any pre-conceived notion of how things are “supposed” to transpire. The sooner we

realize this, and accept it, the better off we will be in the long run. Take the weather, for instance. Mother Nature is not a force that can be predicted, especially at this time of year. Make all the plans you wish; chances are, they will be forced into “rain check” mode far too frequently. Personally, I’ve already had an entire weekend’s worth of appointments and obligations squashed due to snow, and have tentatively (fingers crossed) rescheduled for the next available opportunity. To be continued… until spring, most likely. And then there are the roads. Traveling on Long Island is a skill to be mastered under the best of circumstances. Throw in some inclement weather and it’s a regular three ring circus, complete with a collection of characters who

either A) should not be on the road at all, in any season; or B) had best make like the groundhog and hibernate for the duration of the winter. Crawling, speeding, braking unnecessarily, swerving all over the road… such are just a few examples of the skills witnessed daily on my fairly brief commute to and from work. Throw in a ﬂurry or two, and forget about it. Such is the state of life in January. And if not now, there are similar factors to face each and every subsequent month of the year. So take your resolutions – or whatever form of self-improvement you have documented for yourself in 2017 – keep them in your back pocket as a reminder, and move onward and upward. There will be a rainbow over the horizon soon enough. Just don’t drive off the road admiring it.

The December 12th Babylon School District Board of Education meeting was full of recognitions in honor of recent student accomplishments. The night began with the recognition of Babylon Junior-Senior High School 2016 Suffolk Zone Physical Education Award recipients, Jason Carlock and Sarah Franklin, who were each presented with certificates. Jason and Sarah were selected for this prestigious honor based on their effort, leadership, athleticism and outstanding character.

The Babylon JuniorSenior High School girls varsity soccer team was honored for recently being named Long Island Class B champions, and were presented with tokens of appreciation due to their efforts. The team successfully defeated the Center Moriches soccer team back in October to secure their title. Additionally, six Babylon Junior-Senior High School student-musicians were presented with certificates for being chosen to perform with county and state music ensembles.

Seniors Emma Schubart (orchestra), Scott Sgueglia (orchestra) and Lindsey Daily (women’s chorus) were congratulated for been named All-State musicians. These students along with seniors Matthew Fama (mixed chorus), Maxwell O’Handley (mixed chorus) and Olivia Lulley (mixed chorus) were also commended for receiving All-County honors. The students earned these titles based on their scores at last year’s NYSSMA solo and ensemble festival and teacher recommendation.

Watch Out For the Post-Holiday “Blues”

Christmas and New Years are here and gone! All the hustle and bustle of the holidays have left many of us exhausted. We now begin to pack away all the decorations and begin planning for next year. Friends and relatives came together in the spirit of love and kindness and are returning to the grind of everyday normal life. Alas, the old cliché shall be spoken often in the next few weeks, “Why can’t the Christmas Spirit last all year long?” Something we should all be aware of is the “Post-Holidays’ Blues Syndrome.” We all suffer from this syndrome to some degree. Some of us just seem a little down and cannot get our act together. Some of us refuse to put away the decorations. We tend to blame the feeling on exhaustion, or being too busy, but it is a form of the BLUES. Some people, however, suffer very severely from this syndrome. Consider the person who just lost a loved one recently and suffered through another such season. Consider also orphaned or troubled children, who are lavished with gifts and attention for the holiday season and feel unloved and forgotten about for the rest of the year. Think a moment about those who are unable to get out of their houses and have visitors for 20 days in December, but do not see anyone for the rest of the year. Please don’t get me wrong. I think it is very important and wonderful the spirit of Christmas that touches so many people. But, I just want to point out a few reasons why some people suffer from severe Post-Holiday Blues. There are many other reasons why some people may suffer from this syndrome. And this syndrome may be the beginning of a more severe depression which may grow, especially during the bleak and dismal months of January and February. So if you suffer from a mild case of Post-Holiday Blues, be secure in the knowledge that it is normal and that many people suffer along with you. But, also be aware that some people suffer from a very severe case of this syndrome and they should be watched. One of the best remedies to cure your “Blues” is to seek someone out to whom you can bring a little Christmas joy to all year round.
