Note: You can use goodquality, low-salt kosher chicken stock cubes or bouillon powder, but the recipe above for homemade broth is recommended. For the dumplings: 7 ounces medium matzo meal (about 8 matzo sheets, ground up) 3 eggs 1 tablespoon olive oil 1 tablespoon finely chopped ﬂat-leaf parsley 3 grindings of black pepper 2 pinches of salt First, make the broth. Put the carcass in a large pot and cover with about 21⁄2 quarts of water. Bring to a boil, cover and simmer for 30 minutes. Add the vegetables, herbs and peppercorns, return to a boil, cover and simmer for 1 hour. Strain, reserving the broth. Make the dumplings by

mixing all the dumpling ingredients together, then knead until you have a smooth dough, adding a little water if necessary. Cover and let rest for at least 3 hours. Using your hands, form the mixture into balls the size of apricots. To put it all together, bring the chicken broth up to simmering point. Drop in the dumplings and continue simmering, covered, for 30 minutes. If you don’t have a chicken carcass, boil a whole chicken for the soup and use the meat in other dishes. Traditionally, a boiling fowl from a kosher butcher would be used. Health note: This is the famous “Jewish penicillin” beloved of every mother and grandmother. It’s not an old wives’ tale; there’s good scientific evidence that it contains vitamins, minerals and other natural chemicals that are antibacterial and immune-boosting. In addition, nutrients and valuable plant chemicals are extracted from the vegetables and herbs during the cooking process, most of which end up as active ingredients in the finished soup.

One of the symbols of Passover is matzo, an unleavened ﬂatbread made from ﬂour and water. It’s even possible to get a little creative with matzo. Lamb is a significant symbol of Easter because Jesus is often referred to as the “Lamb of God.” Additionally, lamb was sacrificed during the Jewish Passover and subsequently became symbolic of Jesus’ sacrifice on the cross. This year it may be possible to combine a love for lamb with a love for grilling. This recipe for “Grilled Rosemary Lamb Chops” from Peggy Knickerbocker’s “Simple Soirées: Seasonal Menus for Sensational Dinner Parties” (Stewart, Tabori & Chang) gives Easter dinner hosts the opportunity to prepare the meal over an open ﬂame, adding

North Shore Animal League America Conducting Adoptions By Appointment Only Essential Staff Providing Care For Animals On Campus Amid Coronavirus (Covid19) Pandemic

North Shore Animal League America’s Adoption Center is currently conducting adoption by appointment only. Our Adoption Team is contacting pre-approved adopters with a scheduled day and time to complete their adoption. The health and wellbeing of NSALA staff, volunteers, adopters, and the community remains our priority at this time. We currently have over 40 dogs of various ages and sizes on campus, as well as more than 100 felines, from kittens to older cats, all looking for loving homes. As always, the animals on the NSALA Port Washington campus are being well-cared for by our devoted staff. In addition to finding homes for more than 110 canines, some of whom were from our recent Mill Dog rescue (we saved 100 dogs and puppies from deplorable

conditions with some going to our area shelter partners,) we have also placed more than 30 animals into foster homes. During this time, the Alex Lewyt Veterinary Medical Center will remain open to see sick patients and emergency cases only. While we are doing adoptions by appointment, NSALA’s Adoption Center is temporarily closed to the general public in accordance with New York State Governor Andrew Cuomo’s statewide directives and to control the number of people in the Adoption Center at any one time. How Does The New Coronavirus Affect You And Your Pets?

Pet owners can rest easy that there is no reason to believe that dogs or cats in the United States might be a source of infection for the new coronavirus disease — COVID-19 — or cause its spread according to the Centers for Disease Control (CDC) in Atlanta, Georgia. And so far, according to the CDC, there have been no reports of pets becoming sick with COVID-19. This coronavirus appears to be primarily transmitted from human to human. As a pet owner, you may have heard of canine coronavirus, an intestinal infection in dogs, especially puppies, and feline coronavirus, which can cause feline infectious peritonitis (FIP). These types of coronaviruses have been around for quite some time and are not associated with the current outbreak. To protect yourself, your family, and possibly even

your pets, from this new coronavirus, you should follow these precautions: • Frequently wash your hands thoroughly with soap and water (use hand sanitizer with more than 60 percent alcohol if you can’t wash) • Avoid close contact with people who are sick—stay at least three feet away • Cover your mouth/ nose with a tissue when you cough or sneeze, then throw away the used tissues and wash your hands • Stay at home if you are sick • Sanitize often-used surfaces in your home and office If you do become sick with COVID-19, how then should you care for your pet? The CDC recommends that you restrict contact with pets and other animals just as you would with people. Ask another member of your

household to care for your pets while you are sick. If you must do it yourself, wash your hands before and after you interact and wear a facemask. repentance. The days immediately prior to Easter are commonly referred to as Holy Week. This encompasses Palm Sunday and lasts through Holy Thursday (the day of The Last Supper), Good Friday (when Jesus was crucified and placed in the tomb), and Holy Saturday (the 40-hour-long vigil that the followers of Jesus Christ held after his death and burial). On Easter Sunday, four women, including Mary Magdalene, went to Christ’s tomb to anoint his body with spices and oils. They found the tomb was empty and were met with an angel who told them that Jesus had been raised from the dead. A biblical account in John 20:14-16 indicates that Mary Magdalene was the first to speak with the risen Jesus. She mistakes Jesus for a gardener and says to him, “Sir, if you have carried him away, tell me where you have laid him, and I will take him away.” Jesus said to her, “Mary!” She turned and said to him, “Rabboni!” In regard to his apostles Simon and Peter who were the first to see the risen Christ. Easter is a time of joy and celebration, and a great opportunity for Christians to immerse themselves in their faith.

To the casual observer, Passover and Easter may not seem to have much in common. While the two holidays are celebrated by people of different faiths, they share certain similarities. Both Passover and Easter celebrate fundamental tenets of their respective faiths. For Christians, Easter commemorates the death and resurrection of Jesus Christ, a moment that has shaped the lives of faithful Christians ever since. During Passover, Jews honor a moment in history that helped

As fun as those components can be, Christianity is at the heart of Easter, which is the most important date on the Christian religious calendar. Easter Sunday marks the culmination of events that shaped the beliefs and teachings of an entire faith. Easter marks the Resurrection of Jesus Christ, which Christians believe occurred within days of his crucifixion and burial. The New Testament indicates that the Resurrection of Jesus is one of the chief tenets of the Christian faith and established Jesus as the Son of God. Easter is an example that God will righteously judge the world by sacrificing His son for the sins of others. And any person who chooses

Northwest Students Have A Lot To Say About Their Books

A Writer’s Workshop unit at Northwest Elementary School in the Amityville Union Free School District had second graders exploring opinion writing, then using technology to share their work. In Jenny Smith and Kerrin Faulkner’s class, students wrote opinion A LOT TO SAY ABOUT BOOKS - Northwest Elementary graders 126School W. second MAIN STREET, BABYLON letters based on literature wrote opinion pieces and could scan QR codes on their finished pieces to bring up videos of they were reading. Each student’s completed writing piece featured a picture from the book as well as a QR code. The code, when scanned with the camera

on a smartphone or tablet, brought up a video. Using Chatterpix, students recorded themselves reading their pieces, which then corresponded to moving lips on the character’s picture. Ms. Smith and Ms. Faulkner said the activity taught students how to cite evidence from text and how to speak with expression.

Being deployed to Afghanistan can be dangerous and stressful for our service members. Some of these service members rescue stray dogs and befriend them. When it’s time to head back to the United States, the last thing they can think of is leaving the dog behind to fend for itself. One soldier, Sgt. Dominick, is desperate to bring his dog, Jonsey, back home with him. “After these dogs are rescued, they develop a spe-

cial bond with our service members. These dogs will not leave their side and become very attached and loyal,” explains Dori Scofield co-founder of Paws of War. “There’s no way they can leave them, so we do everything we can to help them bring the dog home with them. We need all the support we can get from the public in order to be successful with these efforts.” Army Sgt. Dominick, who is stationed in a remote area

of Afghanistan, first spotted Jonsey when the starving puppy was eating burnt trash outside of his camp. He took the puppy in, fed him, and the whole unit fell in love with him, which brought them joy. He named him Jonsey, and the dog grew to feel like a part of his family. Now that he will be heading back to the United States, he can’t bear to leave him behind. Stray dogs in Afghanistan have a very rough life and

often times are subjected to cruelty. Desperate to bring him back home with him to live out his life and be a part of his larger family, he turned to Paws of War for assistance. The organization has a program in place that helps service members bring their dog home after being deployed to the Middle East. While they are always quick to help do what they can, they can’t do it alone. In order for Paws of War to be successful at bringing

a dog back to America from Afghanistan, they work with Nowzad, the only official animal shelter in Afghanistan, and get financial support from public donations. There’s a lot that goes into bringing a dog back to the U.S., including quarantine, all of which comes at a high cost. PSEG Long Island and the PSEG Foundation are supporting the Island Harvest Food Bank in its response to critical community needs throughout Long Island as a result of the COVID-19 outbreak. The mission of Island Harvest Food Bank is to end hunger and reduce food waste on Long Island. The PSEG Foundation provided the Island Harvest Food Bank a grant of $45,000 to address rising food insecurity, including children who do not have access to school feeding programs because their schools are temporarily closed because of the public health crisis. Island Harvest Food Bank, which relies mostly on donations of surplus food by commercial food establishments, w h o l e s a l e r s , supermarkets, and individuals, has seen a decline in those donations recently. The grant will purchase food to ensure an uninterrupted supply for people who rely on supplemental feeding programs served by Island Harvest Food Bank.
