Transformational Medicine Offers Retatrutide Weight-Loss Program
by New Africa on AdobeStock.com
News Briefs
Transformational Medicine is now offering Retatrutide, an investigational weight-loss medication that has shown significant results in clinical trials. Retatrutide is a once-weekly injectable “triple agonist” that activates GIP, GLP-1 and glucagon receptors. While clinical studies have reported average weight loss of 26 to 29 percent of body weight at higher doses, the medication has not yet received FDA approval.
According to Transformational Medicine, Retatrutide is designed to suppress appetite, slow gastric emptying, improve sugar cravings, enhance insulin sensitivity and increase energy expenditure. The addition of glucagon receptor activation may contribute to increased fat burning and metabolic activity. Patients participating in the program are monitored by a physician and check in every two weeks to review progress, have vitals recorded, discuss any concerns and receive ongoing support. While the medication can be administered once weekly, some patients may choose smaller, more frequent doses under physician guidance. The clinic recommends combining the medication with a clean, lean diet, weight-bearing exercise and medical supervision. Clinical trial data cited by the clinic indicate that nearly all participants lost at least 5 percent of their body weight, with some individuals losing as much as 71 pounds over approximately 68 weeks. Transformational Medicine offers a 12-week supply for $200, which includes syringes and needles. Patients must establish care with the clinic and receive a prescription from one of its physicians before beginning treatment. Transformational Medicine is located at 2028 E. Prince Rd. in Tucson. here’s a reason you feel different when you step outside. Researchers studied nearly 20,000 people and found that just two hours a week in nature—parks, trails, beaches and woodlands—was enough to make a meaningful difference in how people felt physically and emotionally. Stress hormones dropped. Sleep improved. Moods lifted. Simply being outside produced the same emotional benefits as a formal meditation session. So for those of you who have always wanted to meditate, but just can’t find a way to be successful at it, here’s a viable alternative! And the kicker? The effects aren’t just in the moment. Some studies suggest the immune boost from a single outdoor visit can linger for days. Your body takes the gift and keeps working with it long after you’ve gone back inside. One two-hour stretch or several short spurts—the benefit shows up either way. Two hours a week. That’s all. So why don’t we do it more? Somewhere along the way, most of us stopped feeling like we had permission to slow down enough to actually enjoy being outside. We drive past the trailhead. We eat lunch at our desks. We save the long walk for “someday when things calm down.” News flash. Things rarely calm down on their own. You have to create the calm.
NaturalTucson.com
Here are five simple ways to get two “outdoor” hours in your week so you can create your own calm: • Commit to walking 20 minutes after one meal each day. • Play in your garden or yard for 30 minutes, four times a week. • Find an evening outdoor fitness class for an hour and then watch the sunset. • Head to a local park, stadium or outdoor amphitheater with stairs and spend 60 minutes walking and climbing, twice a week. • Explore a new outdoor destination each week. Visit a different trail, nature preserve, botanical garden, lake or park. And some of my favorite go-tos: head to cooler elevations, take a hike each weekend, schedule a morning walk and talk with a friend, hit the farmers market, ride your bike, or walk a labyrinth. Stepping into the great outdoors is more than just a pleasant break from your day, it’s your body craving restoration and trying to recalibrate itself and even heal itself. Two hours a week is the starting point. But even one intentional hour is an act of radical self-care. NEW MICROBES EXHIBIT BIOFUEL POTENTIAL
With an annual loss of 264 gigatons, melting ice from the Greenland Ice Sheet has become the primary source of sea level rise, and the rate of melting has been increasing since the 1980s. A study published this year in Communications Earth & Environment reported that ice-marginal lakes (IMLs) are a critical factor accelerating the melting of Greenland’s glaciers.
muratart/shutterstock
IMLs are meltwater lakes that form in the hollows left by retreating glaciers. When a glacier flows into one of these lakes, the water lifts the ice’s edge, reducing friction and increasing the likelihood of large ice slabs to break away. Using satellite data, researchers have discovered that glaciers terminating in IMLs move three times faster than those ending on land. This rapid flow delivers more ice to lower, warmer elevations, accelerating the melting process. By incorporating the effects of IMLs into future climate models, scientists can enhance their ability to predict sea-level changes.
During routine maintenance on the R/V Blue Heron, a large research vessel operating in the Great Lakes, a black goo was discovered hidden in the ship’s rudder shaft. Analysis conducted by researchers at the University of Minnesota Duluth revealed that the substance contained previously unidentified microbial species. The rudder shaft had provided a semi-warm, stable and oxygenfree environment for this rare form of single-celled anaerobic archaea to thrive. The researchers theorize that these oxygenaverse organisms may have remained dormant within the rudder’s lubricating oil, awaiting favorable conditions for reproduction. From the goo, the research team successfully reconstructed 20 genomes. When compared against databases of known organisms, one species appeared to represent an entirely new order of archaea, while another may constitute a new bacterial phylum. Some of the organisms appear to produce methane—a potential resource for biofuel development. OHClNaMg_CreativeCommons,AttributionShareAlike4.0International

Q & A With the Funny and Fiercely Original Sandra Bernhard I understand you grew up and were raised in Scottsdale, Arizona. What was it like growing up there?
Sandra Bernhard Photo by Nick Spanos
Sandra Bernhard is an American comedian, actress, singer and author. Renowned for her sharp wit, unconventional style and lasting influence on alternative comedy, Bernhard will perform Caught Off Guard when she takes the stage at the magnificent Fox Tucson Theatre on Saturday, November 21. Caught Off Guard fuses stand-up comedy, cabaret and social commentary, along with the Sandyland Squad Band. Bernhard has built a career on her outspoken personality, fearless honesty and a style that is unmistakably her own. She first gained national attention in the late 1970s performing standup at Hollywood’s Comedy Store. Her breakthrough acting role was in Martin Scorsese’s The King of Comedy, where she played the eccentric Masha opposite Robert De Niro. The performance earned her acclaim as well as a National Society of Film Critics Award for Best Supporting Actress.
I was born in Michigan, and we moved to Scottsdale when I was ten. I had a great time in Arizona riding horses in the mountains—it was so fun and groovy. I do think Tucson is cooler and more dynamic, and I think it’s more open for cultural experiences than Scottsdale and Phoenix.
You’ve enjoyed a remarkable career spanning comedy, movies, television, music and writing. What has kept you inspired over the years?
Being a performer is something that is in your DNA. You get to perform all kinds of themes and I love it. I’m very lucky. I’m fascinated by people, relationships and the absurdity of everyday life. I thrive on staying creative.
Your comedy has always pushed boundaries. Have you ever felt pressure to tone it down?
Some people have tried to pressure me, but I never would succumb to pressure. As I’ve gotten older, a lot of the things I would have pressed
Bernhard remained a bold and influential voice in entertainment throughout the 1980s and 1990s for her provocative routines and captivating audiences with her one-woman shows, including “I’m Still Here.” Bernhard has never been afraid to speak her mind, challenge convention or reinvent herself. Currently in her 11th year hosting her weekly radio show Sandyland on SiriusXM, Bernhard interviews A-list celebrities and 10

when I was in my teens, 20s and 30s fell by the wayside as I’ve matured. I’m pushing the boundaries less now, but it’s not because I was forced to, rather because it evolved naturally.
No, I wrote the piece for the Playboy issue myself.
What book are you reading now and what is it about?
You became widely known after your role in The King of Comedy. How did that experience shape your career?
To work with that caliber of director and actors, it set the tone and gave me more confidence and understanding of the best part of the business. It painted a much more positive picture of the industry. The movie was brilliant, a satire of celebrity obsession that was so ahead of its time.
Can you tell us anything about how you landed your upcoming role in the highly anticipated season four of the satirical dark comedy, The White Lotus?
Mike White asked me to do it, and he wrote a role for me. I’m excited to be working with such a terrific cast, and he is an amazing writer and director. It’s one of the preeminent anthology series, and I’m proud to be part of it.
Your work blends comedy, music and storytelling in a very distinctive way. How did that style evolve?
From all of the influences of entertainment while I was growing up. I didn’t want to do just one thing because I discovered I’m good

at doing a multitude of genres. It all melded in a seamless way—I put it together in a unique format, different from anyone else.
Your live performances are legendary. What makes being on stage special to you?
My relationship with the audience. I enjoy the energy of a live audience. It’s an ongoing narrative I’ve had with them for years. If I can make people laugh while helping them see the world from a new perspective, then I’ve done my job.
I read that you posed for the cover of Playboy magazine. What did you wear?
I was on the cover in 1992, and I wore the Playboy bunny outfit. It was a radical, funny, twist on the body. It reflected how outrageous I am and how super in control I am as a woman.
What does success mean to you?
Getting to do what you believe and what comes second nature to you as an artist. Staying relevant while being honest and not compromising your work for anything.
What do you want people to take away from your show Caught Off Guard?
I hope they feel transported into my world: entertained, energized and perhaps a little more fearless. Great live shows are hard to come by, so I encourage people to ditch their screen time for real world memory-making. Sandra Bernhard will appear at the Fox Tucson Theatre on Saturday, November 21 at 7:30 p.m. Tickets are $61 to $102. Visit FoxTucson.com for more information. A Terrain-Based Approach to Cancer Prevention and Care by Dr. Teri Jackson, NMD
This idea forms the foundation of what is known as terrain-based medicine. Rather than asking only, “What disease does this person have?” terrain-based medicine also asks, “What kind of environment exists inside this person’s body?” Is it supporting health, or quietly encouraging dysfunction? Imagine trying to grow a garden. Healthy plants don’t thrive simply because you buy good seeds. They need fertile soil, clean water, adequate sunlight, healthy microbes and the right balance of nutrients. If the soil is depleted or full of weeds, even the strongest seed will struggle.

Our bodies work much the same way.
M
ost conversations about cancer prevention and treatment options in the face of a cancer diagnosis begin with fear: “How do I avoid getting cancer?”, or “How do I remove this tumor from my body and/or kill the cancer cells?” While these are understandable questions, a far more empowering one to ask is: “How do I create the conditions for vibrant
health?” The distinction may seem subtle, but it changes everything. Rather than viewing health as simply the absence of disease, we can begin to see it as the presence of an internal environment that allows the body to thrive. When we shift our focus from fighting illness to cultivating health, we open the door to a completely different way of thinking about prevention and treatment.

The “terrain” is the collection of factors that influence how well our bodies function day after day. It includes nutrition, blood sugar balance, inflammation, immune function, hormone health, digestion, circulation, detoxification pathways, nervous system regulation, sleep quality, environmental exposures, emotional well-being and even our sense of purpose and connection.

Quality sleep becomes a time when the body repairs itself. Stress management isn’t simply about feeling calmer. It directly influences immune function, hormones, inflammation and healing.
Sometimes small, consistent changes across many areas create a much bigger impact than focusing intensely on just one. The practice of terrain-based cancer care involves considerable time looking beneath the surface. Lab testing often helps identify subtle patterns that may not yet qualify as disease but suggest the body is working harder than it should. Elevated inflammation, insulin resistance, nutrient deficiencies, chronic stress physiology, digestive dysfunction or environmental toxic burden can all influence how someone feels long before a diagnosis appears.
breath becomes an investment in longterm wellness. For many people, this approach simply helps them feel better. They experience more energy, improved digestion, better sleep, fewer aches and pains, and greater confidence that they’re supporting their health before bigger problems develop.
The goal isn’t perfection. It’s resilience.
Cancer can understandably make people feel powerless. While conventional treatments such as surgery, chemotherapy, radiation, immunotherapy and targeted therapies are often essential, many patients are left wondering what else they can do to support themselves.
When the terrain is healthy, the body is often remarkably capable of adapting, repairing and maintaining balance.
A terrain-based approach is not meant to replace conventional oncology care. Rather, it works alongside it.
This philosophy also encourages patients to become active participants in their own health. Instead of feeling like their body is working against them, they begin to understand that many daily choices influence the environment inside their bodies. Every nourishing meal, every good night’s sleep, every walk in nature, every stress-reducing
By supporting metabolic health, reducing chronic inflammation, optimizing nutrition, improving immune resilience, addressing digestive health, encouraging healthy movement, supporting emotional well-being and helping patients tolerate treatment more effectively, we seek to create the healthiest internal environment possible during a very challenging time.
The goal is not simply to help patients fight disease. It is to help them strengthen the health that remains. Whether someone is seeking to optimize everyday wellness, manage a chronic health condition or navigate a cancer diagnosis with an integrative team beside them, the philosophy remains the same: When we nurture the terrain, we give the body its greatest opportunity to function as it was designed. Health is not a destination we arrive at once. It is something we cultivate every day, one choice, one habit and one act of self-care at a time. The GrownWoman Art of Not Giving Up
Maybe you give up as soon as the path gets uncertain. Maybe you keep forcing the original plan after it’s clear that it doesn’t fit your life. Maybe you get busy, become practical and quietly stop mentioning the thing at all. These often aren’t conscious decisions. They’re reflexes—patterns shaped by what life taught you about disappointment, risk, responsibility or wanting too much. And they can fire so quickly, so automatically, they feel like truth. And then we call it realism.
How to Honor What You Want Without Denying the Life You Actually Have
Once you can see the pattern, you gain enough space to ask whether this moment truly calls for letting go—or whether an old response has simply shown up to run the meeting.
by Deb Beroset
Sometimes we give up too soon because the first version won’t work. Other times we keep pushing that version because changing it feels like failure.
photo Unsplash.com
The grown-woman move is neither quitting nor forcing.
Y
ou know the moment. Something in you wants more. Work that feels like yours again. More intimacy. More color. A trip, a class, an idea finally given some oxygen. Then real life clears its throat. There’s the money. The calendar. The marriage. The aging parent. The body that has opinions. The energy you actually have. And just like that, the desire starts to look irresponsible. By this point in your life, you’re not dealing in blank slates. You’ve got history, loyalties, people you love and decisions that carry consequences. “Just leap” can feel unrealistic and faintly insulting. 14
Tucson Edition
Still, there’s a difference between respecting reality and allowing it to close the case. For example, the number in your bank account is a fact. But “too late” is a cultural story. Yes, your body’s limits are real. But “Nothing new is possible” is resignation. True, there are only so many hours in your week. However, “There’s no room for me” is self-erasure. A healthy foundation for change isn’t relentless optimism. It’s a relationship with yourself in which what you want can survive contact with reality. Most of us have a familiar way of responding when desire and reality collide.
NaturalTucson.com
You hold the hard fact in one hand and the luminous desire in the other. You don’t pretend either one away. You stay in the room long enough to ask a better question: What move would love make inside the life I have? That question changes the scale of things. In the first Elle group I led, one woman kept talking about the kayak sitting beside the lake she lived on. She didn’t need a new life. She needed to enter the one that was already there. Her move was simple: put the kayak in the water. The kayak was never just the kayak. It was contact with her own aliveness—a square inch of her real life given back to something that made her feel awake. Your version may be protecting one Saturday morning, finally answering the message you’ve avoided, signing up for the class, asking someone for help, or telling the truth about what no longer fits.
It may mean changing the timeline. It may mean grieving the original version of the dream so you can discover the version that can actually live. Sometimes the loving move isn’t forward. It’s sideways. It’s quieter. It’s a pause taken on purpose instead of a collapse you later call failure. Changing the shape isn’t the same as giving up. Neither is resting, asking for support or choosing a smaller, truer move over the heroic one fear keeps demanding. Fear doesn’t always tell you to quit. Sometimes it makes you push harder, get louder and act more determined, because acknowledging that you’re afraid feels too vulnerable. Fear is allowed to be present. It simply helps to know when it’s in the room, so it doesn’t quietly take over the decision. Love is steadier and more precise. It includes your limits without building a shrine to them. It gives the desire somewhere real to land. This is how self-trust grows: not because everything works out exactly as imagined, but because you stop automatically abandoning yourself when life gets complicated. That may be the healthiest foundation of all. When something true begins to stir in you, you’ll listen. You’ll take the facts seriously. You’ll take yourself seriously, too. You don’t need perfect conditions. You need one faithful move—small enough to make, real enough to matter and loving enough that you’re not using it to punish yourself into becoming.

2025 comprehensive analysis of U.S. pediatric data published in JAMA reveals that the health of U.S. children worsened over a 17-year period. From 2011 to 2023, the prevalence of chronic health conditions among U.S. children aged 3 to 17 rose from nearly 40 percent to almost 46 percent. Rates of obesity, sleeping difficulties, limitations in activity, physical complaints, depressive symptoms and loneliness all increased during this study period. The rise of holistic pediatric health care reflects a shift from solely treating symptoms to a

Madiha Saeed, a board-certified integrative family physician in Naperville, Illinois, understands that a child’s potential starts with what is on the plate. “Diet is always first and foremost. In our house, real food is fun food. You name it—everything from chips, cookies, ice cream, donuts, pizza or cereal—we have a healthier option for it,” says Saeed, the author of several books, including The Holistic Rx for Kids: Parenting Healthy Children to Save Our Future. To prevent health issues like stunted growth, delayed puberty and menstrual irregularities, which can also impact mood, energy and performance, she stresses the importance of calories from nutrient-dense foods, plus extra fortification with supplements. Offering an attractive “rainbow platter” of fresh vegetables and fruits for kids to snack on after school is a great start. These fiber-rich treats promote healthy gut flora, optimizing childhood biological functions. Saeed considers fiber one of the most important dietary allies for digestive balance, recommending 25 to 30 grams per day for teen girls and 30 to 38 grams for teen boys. She also champions prebiotic fiber powders for smoothies, lentil pasta, creamy chia pudding with berries, fresh guacamole, nuts and seeds.

Saeed explains that bone broth—ideally one cup daily—provides bioavailable minerals and amino acids like L-glutamine, which supports the gut’s mucosal lining, a key factor in reducing systemic inflammation. Healthy fats such as avocados; lean proteins like lean beef, poultry, eggs, sardines in olive oil and canned tuna in water; and nuts like cashews and almonds are essential for growth. Like adults, children’s cellular health requires adequate hydration. Everything in the body—from blood to bones to the brain—is partially made from water, and Saeed notes that adequate hydration can reduce a child's risk of becoming overweight.

As a busy physician managing work and family, she finds balance by prepping for the week ahead. “On the weekend, plan your meals for the upcoming week so that you can go shopping and have everything you need,” she explains. “I spend one day a week cooking all my veggies, proteins and healthy carbohydrates.”
Whole-Child Dentistry
Teaching young children about good oral hygiene at an early age is essential, but for Claire Stagg, a holistic dentist in Indian Harbour Beach, Florida, understanding the whole picture can affect a child’s foundational well-being. “A holistic pediatric dental physician can contribute a wider lens,” says the author of Smile, It’s All Connected! “We still care deeply about clean teeth, healthy gums, cavities, infections, trauma and all the basics, but the holistic approach asks more questions.” Stagg believes in the value of early assessment to identify airway patterns that may

She asserts that some seemingly hyperactive children may actually be exhausted due to structural issues, leading to behaviors like fidgeting, meltdowns, loss of focus or being “difficult”. Collaborative care from pediatricians; bodyworkers; ear, nose and throat specialists; and other professionals can sometimes address all factors. Stagg stresses the importance of real food, hydration and being cautious about “healthy-looking” snacks that may be sticky, acidic or high in sugar. Ultimately, health transcends appearances. “Straight teeth are lovely, but the bigger question is whether the bite, jaws, airway, tongue position, joints, muscles and posture are working together,” she notes.
Neurologically Focused Chiropractic Care
Approximately 35 million Americans use chiropractic care each year, but the field has evolved to encompass much more than typical adjustments for pain management. “Modern chiropractic care isn’t really about the spine in the way most people picture it. It’s about the nervous system,” states chiropractic physician Tony Ebel, in Crystal Lake, Illinois. The lead writer and educational guide for PX Docs, Ebel specializes in pediatric care aimed at correcting imbalances in the autonomic nervous system, which affects sleep, digestion, immune response, mood, focus and the ability to calm down. He emphasizes, “In childhood, this matters enormously because these are the years when the nervous system is developing fastest. 18

cause future issues. She states, “Structurally, the mouth can give us important clues. A narrow jaw, crowded teeth, chronic mouth breathing, snoring, restless sleep, dark circles under the eyes, teeth grinding, bedwetting, poor focus or constant fatigue are not little, isolated quirks. They are signs that the child’s body may be working too hard to do something that should be beautifully automatic: breathe.”
What matters most in a growing child isn’t whether their spine looks perfectly straight on an X-ray, but how well their spine and nervous system are communicating.” Ebel notes that pediatricians, therapists and specialists are vital, and chiropractors do not replace them, but instead assist in identifying patterns early and gently guiding the nervous system back to calm, balance and healthy development without drugs. He explains that chiropractic’s traditional concept of subluxation, now understood as neurospinal dysfunction, involves “a pattern of tension, restriction and altered neurosensory input into the brainstem, often concentrated in the upper neck and transitional support regions that keeps the body locked in that stressed state.” The goal at every stage is a nervous system that can adapt, regulate and grow, providing the child with the healthiest foundation for life’s demands. Ebel assures that pediatric adjustments are gentle, specific and light. “With infants, we’re often using no more pressure than you’d use to test the ripeness of an avocado— a soft, sustained touch. There’s no twisting, no popping, no force. Babies frequently relax, settle or even fall asleep on the table. Toddlers come running in for their turn. Older kids look forward to it.”
Coping Skills for the Storms of Life

offer valuable self-care strategies for kids to self-regulate emotions when they are feeling overwhelmed. “Adverse childhood experiences and significant life stressors have many long-term effects on the body, especially for children, but creative expression and meaningful connection can have a lasting impact on a child’s developing nervous system,” says Claire Little, a master-level art therapist and licensed associate professional counselor at Northern Light Counseling, in Honesdale, Pennsylvania. Simple mindfulness practices can be introduced at different ages and incorporated into daily routines. Grounding activities like the “5, 4, 3, 2, 1 technique—naming five things you see, four things you feel, three things you hear, two things you smell and one thing you taste—can be great and practiced almost anywhere,” says Little. Families can also model mindfulness at the dinner table by encouraging kids to think about what their food tastes, smells or feels like, with everyone taking turns sharing their thoughts. Engaging in creative activities and play helps to unlock the unconscious, and Little attests to the power of art to help kids process life and manage stress. Creating a mindfulness box is a fun way to engage a child’s senses and regulate neural pathways. “Have your child decorate a box large enough to fit several small items—interesting things found around the house or the yard such as flowers, leaves and rocks,” she counsels. “Encourage them to identify what their objects feel like such as weight and texture.” It is vital to provide children with structure and boundaries without added pressure. “Meet them where they’re at,” Little says, “If a child is expressing an emotion, hear them out. Validate their feelings by listening and demonstrating how you cope with a similar struggle or feeling.” Marlaina Donato is the author of several books, as well as a painter and composer. Homeopathy
What Our Stress Is Saying Homeopathy’s Individualized Approach to Burnout by Laurell Matthews, ND
B
urnout has become so common that it is often dismissed as a normal part of modern life, yet chronic stress can affect nearly every system in the body, contributing to fatigue, poor concentration, digestive complaints and emotional exhaustion. According to a 2021 article published in the Annual Review of Psychology, chronic stress has been associated with increased risks of anxiety, depression and cardiovascular disease. Sleep is often disrupted as well, further reducing the body’s ability to recover and restore balance. Unlike conventional approaches that often focus on a diagnosis, homeopathy looks at how stress uniquely affects an individual. Rather than offering one remedy for burnout, homeopaths select remedies based on a distinctive pattern of physical, mental and emotional symptoms. “I can’t shut my brain off.” For the person that pushes through long workdays fueled by coffee, becomes irritable and impatient, and lies
awake replaying tomorrow’s to-do list, Nux vomica is a frequently considered remedy. “Even small tasks feel overwhelming.” When mental fatigue outweighs physical exhaustion and concentration becomes difficult, Kali phosphoricum is often used to support those experiencing nervous exhaustion after prolonged stress. “I have nothing left to give.” When someone has spent months or years caring for others until emotional reserves are depleted, “Sepia is one of the best remedies for burnout, especially in women with a lot of caretaking responsibilities,” says naturopathic physician and homeopath Dr. Ian Spohn. “I recall treating a woman with five children who wanted to sleep most of the day. Within a month of adding Sepia to her regimen, she had signed up for a gym membership.”
A Targeted, Holistic Strategy
Vera Prokhorova/shutterstock
Because homeopathy is individualized, the best remedy depends on the whole person, not simply the label of “burnout”. A 2025 observational study in the Sao Paulo Medical Journal reports that patients receiving homeopathic care found improvements in sleep quality, along with reductions in stress, anxiety and depression over six months. Burnout affects both mind and body, and recovery rarely happens overnight. By listening to what stress is saying and recognizing the unique response to it, homeopathy offers a personalized approach that can complement restorative sleep, nourishing food, movement and healthy boundaries, helping individuals move beyond simply getting through the day and toward feeling like themselves again. Tapas With a Twist Small Plates With Big Health Benefits by Maya Whitman
T
apas—small-portion, sharable dishes—are a staple of Spanish culture that can be served hot or cold, vary by region and are the perfect culinary backdrop to spending unhurried, quality time with family and friends. Beyond their culinary appeal, these bite-sized offerings can also support a strong foundation for health. By focusing on whole ingredients, balanced flavors and nutrient-dense combinations, small plates can shift from an occasional indulgence to a mindful, everyday approach to eating. A collection of small dishes can become a meal itself, offering flavor explosions for memorable entertaining, encouraging guests to sample ethnic inspirations like crispy Indian tofu with tamarind chutney or sautéed Asian shrimp and snow peas. “The beauty of tapas is that you can take your guests on a trip around the world without ever leaving the table. Nobody feels like they’re eating health food; they just feel like they’re eating really well,” says Julia Chebotar, an award-winning private chef and certified health coach in New York City. Ideally, small plates can showcase bounty from farmers markets and home gardens. Whether methodically assembled at the table from themed central platters, plated from backyard grills or served up impromptu with basics foraged from the fridge, tapas

build healthy foundations, nourish social connection and inspire us to eat lighter while feeling satiated.
Passionate Simplicity
Small feasts are best comprised of three or four small dishes served in sequence. Rounds of inspired, mindful eating allow guests plenty of time to enjoy good company. “With so much variety, there’s genuinely something for everyone,” explains Chebotar. “Everything stays on the table; people graze at their own pace; the conversation flows; and nobody is stuck waiting for the next course.” Her peak-season favorites are grilled corn cut off the cob with lime, cotija and chili; roasted eggplant finished with pomegranate molasses and fresh mint; and ribbons of raw zucchini tossed with lemon and parmesan. Her breakfast tapas come together in minutes and kick off the day with quality protein such as soft-boiled eggs with olive oil and za’atar, a traditional Middle Eastern herb and spice blend; a small plate of whole-grain toast with almond butter and sliced strawberries; and little bowls of Greek yogurt topped with crunchy walnuts and a drizzle of honey.
Fresh Joy
Cathy Vogt, a board-certified health counselor and professional whole foods chef in the New York Hudson Valley is a proponent
of robust flavors and seasonally available ingredients such as late summer corn incorporated into a tangy relish or juicy tomatoes in a luscious salad. The author of Cultivating Joy in the Kitchen: Plant Forward Recipes & Soulful Nourishment also delights in roasted garden eggplant with olive oil and fresh garden herbs; grilled summer peaches or sweet melon paired with thinly sliced cured ham; and a bowl of briny olives, marinated artichoke hearts, fresh figs stuffed with blue cheese and colorful roasted peppers. Her most delicious, small plates include smoked salmon salad served over tart endive leaves and a tangy spread made with roasted beet, walnuts and balsamic vinegar that pairs beautifully with a seedy, crusty bread or sliced sweet peppers and cucumbers. Vogt recommends locally sourced eggs that can be hardboiled or whisked into a simple Spanish tortilla paired with fresh herbs, diced tomato or garden greens. She also champions the endless variety of lentils and legumes, such as her savory spread made with cannellini beans, sundried tomato and an herb-based pesto.
Everyday Surprises
Chebotar points out that tapas can make meal prep for the week easy and enjoyable. She recommends roasting some vegetables, cooking a grain, making a dip and preparing a protein on Sunday, allowing members of the household to build their own small plates throughout the week. “Healthy eating

Partnering with Natural Awakenings and its parent company, KnoWEwell, was a natural fit because both organizations share a commitment to empowering people with credible wellness information.”
The new department will feature practical, evidence-informed articles explaining homeopathy, how it works, when it may be appropriate and the role it can play alongside a healthy lifestyle. Readers can expect insights from experienced practitioners and trusted resources to help them make informed decisions.
Kimberly B. Whittle, CEO of KnoWEwell, P.B.C. and Natural Awakenings Publishing Corporation, states, “We are deeply grateful to the entire Grato Health team for their longstanding commitment to the advancement of homeopathy and for recognizing the vital role of trusted health journalism in educating and empowering individuals.”
This new addition to the magazine’s editorial lineup is underwritten by Grato Health, an employee-owned company that has been manufacturing and advancing homeopathic and natural wellness products for nearly four decades.
In celebrating Grato Health’s commitment to KnoWEwell, Whittle notes, “We are honored that this industry leader has chosen to become a KnoWEwell Lifetime Founding Patron Partner and will be launching and cultivating their own communities in our Regenerative Whole Health Hub (the Hub), reflecting a shared commitment to advancing homeopathy and the collaborative movement for WELLthier Living. I am certain that our partnership with Grato Health will demonstrate what is possible when mission-driven organizations collaborate to strengthen an entire field.”
“Homeopathy has helped millions of people around the world, yet many still don’t fully understand what it is or how it is used,” says Mike Evans, CEO of Grato Health. “We saw an opportunity to help change that by supporting education that is balanced, accessible and rooted in experience.” According to Evans, the company’s efforts extend well beyond their own family of brands. “For years, we have believed that strengthening the homeopathic community benefits everyone,” he explains. “We have invested in education, practitioner resources, manufacturing excellence, advocacy and organizations that help preserve and advance
