Christmas Tree Trail Sunshine Coast Council’s regional Christmas Tree Trail will dazzle and delight with 22 trees lighting up progressively throughout the region. Environmentally friendly light emitting diode (LED) lighting is used across all of the council-decorated trees keeping with council’s vision for the Sunshine Coast to be Australia’s most sustainable region – vibrant, green and diverse. Decorated trees include hoop, bunya, lilly pillies, f g, jacaranda, Norfolk pines, swamp and paper gums. Ingredients: ½ cup organic unhulled tahini ½ cup organic honey ½ cup organic desiccated coconut plus a bit extra for rolling ½ cup organic LSA ½ cup organic dried apricots ½ cup organic dried banana ½ cup organic dried cranberries Method: 1. Chop up the dried fruit into little pieces, f ne but not too f ne. You can swap and change fruit to your own taste. 2. Throw everything together in a bowl and mix it up. 3. Now the fun part (for the kids): rolling into balls with your hands. 4. Roll balls in extra-desiccated coconut. Keep the balls in the fridge until it’s time to enjoy them. 5. Festive Food Baked ham with cider and salted caramel glaze Preparation time: 15 mins Cooking time: 1 hour 5 mins Serves: 10-12 Ingredients: 4.5-5.5kg full Australian leg ham, bone-in 4 x 300ml apple or pear cider 2 cinnamon sticks, cracked Glaze 350ml salted caramel sauce, warmed Optional 100g hazelnuts, roasted, skin on 100g hazelnuts, roasted, skin off Cooking Instructions: 1. Pre-heat oven to 170°C. 2.Using a small sharp knife, carefully lift one side of the ham rind, then using your f ngertips gently separate the rind from the fat in one piece. 3. Cut a shallow diamond pattern in the fat. 4. Place the leg ham into a large baking dish and pour over the apple cider and add the cinnamon sticks to the baking pan. 5. Place the ham into the oven and bake for 20 minutes. 6. Remove the ham from the oven and drizzle half the salted caramel sauce evenly over the ham (use a silicone brush or your hand to coat the ham liberally). 7. Return the ham to the oven and bake for a further 45 minutes until golden. Allow the ham to rest for 20 minutes prior to placing onto serving platter or board. 8. To serve, tie the hock with a piece of muslin for easy carving and drizzle over the remaining sauce. Serve with all the festive trimmings.

Homemade salted caramel sauce Ingredients: 2 cups granulated sugar, 180g salted butter, cut up into pieces, 1 cup thickened cream, 2 teaspoons salt Directions: 1. Heat sugar over medium heat, stirring constantly. Sugar will gradually melt into a thick brown, amber-colored liquid – be careful not to burn it. 2. Once completely melted, immediately add the butter. Be careful as the caramel will bubble rapidly when the butter is added. 3. Stir the butter into the caramel until it is completely melted. Slowly drizzle in 1/2 cup of cream while whisking. Be careful as the mixture may bubble and splatter when the cream is added. Allow the mixture to boil for 1 minute. Remove from heat and stir in 1 teaspoon of salt. Allow to cool down before using. Excess caramel sauce will keep for up to 2 weeks in the refrigerator, use on ice-cream, cakes and biscuits.

Festive Food Sweet Champagne Smash Ingredients: Mango, cut into thin strips blueberries raspberries honey of your choice All components other than fruit are best prepared a day in advance. Pink champagne and raspberry jelly 750ml of pink bubbly 1 cup castor sugar 2 tablespoons of gelatine powder 60ml hot water Heat bubbles and sugar over medium heat and stir until sugar is dissolved.
Sprinkle gelatine powder over hot water and whisk briskly until gelatine is dissolved. Stir gelatine into heated bubbles. Pour into container and disperse raspberries throughout. Set in fridge overnight. Chewy Meringue 6 egg whites 3/4 cup castor sugar Whip egg whites until stiff peaks, gradually add sugar, beating well after each addition until sugar is dissolved and the mixture is thick and glossy. Pour mixture into lined tray with sides. Bake in preheated oven 100-120°C for one hour, rotating trays half way
through cooking process. Turn oven off and leave meringue to cool in oven with door ajar. Vanilla whipped marscapone 250g marscapone 125ml thickened cream 100g icing sugar 2 teaspoons of vanilla bean paste Combine all ingredients and whip until soft peaks. To Assemble Cut jelly and meringue into cubes. Layer jelly, meringue, marscapone and fresh fruit in a glass of your choice and f nish with a drizzle of honey.

BUY RIGHT Fresh seafood on the table at Christmas has become a uniquely Australian tradition – but how can you make sure you are getting the best for your Christmas table? Michael and Paul at Point Cartwright Seafood have some helpful hints: • only select seafood that looks shiny and moist • eyes on f sh should be clear and not sunken, while the scales should be shiny, not dry • oysters should look moist and plump and not dry and sunken in
the shells • prawns should have a glossy appearance and plump eyes • be careful about purchasing from businesses that promise to have your seafood packed and ready to go at Christmas – you don’t know when it was packed, how old it was when it was packed, or what you are getting. Best to choose your own. 2. STORE RIGHT Christmas time is normally hot, everyone’s fridges are usually overloaded with Christmas cheer,
and the fridge door is opened more frequently than normal – and that can cause problems. At best, domestic fridges run at 4°C, but at this time of the year they usually operate at a warmer temperature, which is not good for storing seafood. Fresh seafood should be stored between zero and 4°C . The best way to hold large quantities of seafood is by keeping your seafood in an esky, sandwiched between two layers of ice. Lime Butter Sauce 1 large chopped clove of garlic ¼ fresh lime juice 1 tsp salt ½ tsp black pepper ½ cup of melted unsalted butter Combine chopped garlic with lime juice, salt and pepper in a blender. Blend until smooth then with the blender running add melted butter and mix until emulsif ed (about 30 seconds). Chilled lime butter will keep as long as regular butter.

Filling the esky to the top removes any air gaps which can heat up and cause the ice to melt more quickly. Sprinkle some salt on top, seal, place in a cool spot, (often the laundry is good) and don’t open until you need it. If you have a lot of seafood, you can create a number of layers of ice, seafood, ice, seafood, ice, etc . Smaller quantities can be stored by spreading out in a sealed container and storing in the coldest part of your fridge. Done correctly, good quality fresh seafood will last two to three days, ensuring you will have an amazing Christmas.
So order your seafood early and save yourself the hassle of the last minute rush. This will give you plenty of time to prepare this special recipe from the crew at Point Cartwright Seafood. Paul’s simple but stunning dish of grilled Moreton Bay bugs on the barbecue with lime butter sauce is sure to impress your guests. Take large Moreton Bay bugs (either raw or cooked) and cut in half, lengthwise. Wash and clean, then put a teaspoon of lime butter in the head cavity and smear some over the f esh. Grill or barbecue until cooked or warmed through if using pre-cooked bugs. Add a dob of lime butter on top of the warm f esh before serving with a fresh garden salad (serving suggestion 1 bug per person). Enjoy.
