A Christmas message from your Mayor
T
he Sunshine Coast is a wonderful place for Christmas and New Year celebrations. There is always plenty to experience and enjoy, with events for all ages across our region. In what is now an annual tradition, Sunshine Coast Council has partnered with the team at My Weekly Preview, who are great supporters of our healthy, smart, creative region, to publish all the event information you need in this special edition. It’s your most comprehensive guide to what’s on in our region. In these pages you will find a wide range of councilsupported Christmas and New Year events which reflect the lifestyle, cultural values and diversity of our Sunshine Coast community. There are many highlights to look forward to, including: • The spectacular Community Christmas trees and lighting in 20 locations. • Community carols and Christmas-themed events along the coast and into the hinterland, including 15 funded by council’s Community Grants program. • Special council-sponsored Christmas events in Coolum, Nambour, Cotton Tree, Beerwah and Kings Beach. • The spectacular, family-friendly New Year’s Eve celebrations at Mooloolaba, Coolum and Caloundra. This year there are 20 locations with council decorated trees adding Christmas cheer to our local communities. All of the trees use LED lighting to align with council’s commitment to sustainability. The majority of trees will be illuminated from December 1, with some local communities hosting events to officially turn on the lights as part of the festivities. The lights should be shining in all trees by December 10.

NYE – Mooloolaba, 4pm-midnight The Esplanade Mooloolaba sunshinecoast.qld.gov.au Two spectacular fireworks displays will ignite at 8.30pm and midnight. Gates open at 4pm with free family activities, roving entertainment and food stalls. This event is a safe, secure, fully fenced, alcohol and glass-free zone. Beach Terrace is where you will find all the fun of a giant slide, live music by locals and a mix of food and market stalls. 99 AIRCRAFT ON SITE Queensland Air Museum recently acquired its 99th historically significant aircraft, a Macchi Trainer operated by the RAAF from 1971 and delivered to the Caloundra museum in early October. This acquisition follows quickly after the Orion P3, which rests at the Sunshine Coast Airport pending disassembly, transport to Caloundra, and reassembly – a huge challenge for the a 60-tonne aircraft with a
30-metre long wingspan. There has been a lot going on at the QAM recently with acquisitions and restoration works. And, with 99 historic aircraft and many other displays, the museum is the ideal spot to spend several memorable hours these school holidays. 7 Pathfinder Drive, Caloundra, qam.com.au

There is something special about getting into the kitchen and bringing a Christmas menu to life. Christmas food is about fresh, festive ingredients, and love!
ROLLED PORK WITH APPLES AND CRANBERRIES
Serves 6 Ingredients • 1.7kg rolled pork loin • 1 large chopped apple • 1/3 cup dried cranberries
GLAZED HAM WITH ROASTED APPLES This recipe is great for any sized ham.
Ingredients • 1 smoked ham • ¾ cup apple sauce • ½ cup dijon mustard • ¼ cup packed light brown sugar • ¼ cup apple cider vinegar Method Preheat the oven to 170 degrees, or fire up the barbecue. Remove skin from ham if there is one. Score the top of the ham in a crosshatch pattern. Place the ham, fat facing upwards, in a large roasting pan. Combine the apple sauce, mustard, brown sugar, vinegar, rosemary and cloves in a bowl until smooth. Brush the ham with some of the glaze and bake for 20 minutes. Add the apples to the pan, cut-side up, and return to the oven/barbecue. Be sure
• ¼ tsp ground cloves • 1 tbsp chopped rosemary • 8 small apples, halved
Method Untie the pork and roll out, Place the chopped apple and cranberries on the flesh along the centre, length ways. Season. Roll back up and tie with butcher’s string. Preheat oven to 240 degrees. Rub the skin with sea salt. Place in a roasting pan and roast for 30 minutes. Reduce the heat to 200 degrees and roast for a further 50 to 60 minutes, or until juices run clear when pierced. Allow to rest before serving. Recipe supplied by Fresh Meats, Wises Road.
CHRISTMAS PORK WITH CRACKLING Serves 6-8 Ingredients • 2kg boneless or bone-in pork shoulder

Remove from the heat when the glaze is golden and sticky. Transfer the ham to a cutting board and let it rest for 15 minutes before carving. Serve with the roasted apples. Method Preheat oven to 240 degrees. Season meat and skin generously with cracked pepper, sea flakes and dried sage. Transfer pork to a roasting dish and roast for 50 minutes. Reduce temperature to 160 degrees and roast for a

Place pork, uncovered with the rind facing upwards, in the refrigerator for at least one hour, or overnight if time allows. Allow pork to come to room temperature one to two hours before roasting. Use a sharp knife to score the rind in one-centimetre intervals. Thoroughly pat the skin dry with paper towels before seasoning. Tip: Save time and pre-score the skin the day before.

PINEAPPLE AND BOURBON HAM JAM
This is perfect as an accompaniment to turkey, duck or cheese.
Yields approximately 2 x 250ml jars Ingredients • 2 large ripe pineapples, peeled, cored and chopped • 2 cups orange juice • 3 limes, juice of 3 and zest of 2 • 1 large red chilli, deseeded and sliced • 2 slices raw ginger (to taste) • 2 tsp dijon mustard • 3 cups brown sugar • 1 cup bourbon or dark rum (both give a distinctive tropical flavour and enhance the pineapple)

Method Blend pineapple pieces in a food processor. Place pineapple, orange juice, lime zest, chilli, ginger, dijon mustard and brown sugar into a large saucepan. Bring mixture to a boil. Cook over medium to low heat for 40 minutes. Mixture should be slightly thickened. Add bourbon and lime juice and cook for a further 10 minutes. Remove ginger. Allow to cool. Store jam in airtight, sterilised jars. The jam will keep in the refrigerator for up to four months. Recipe supplied by IGA Marketplace on Wises Road.
FESTIVE OYSTERS Place oysters on a grill tray top. Top half of these oysters with half a teaspoon of readymade garlic butter, sprinkle with freshly grated parmesan and thinly sliced bacon. Top the other half with diced cherry tomatoes, fresh basil and a mix of parmesan and tasty cheddar. Place under heated grill or onto a barbecue with the hood down until the cheese is melted and bacon is crisp. Serve with lemon.

Serves 6 Ingredients • 3 avocados • 2 spring onions, finely sliced (save greener ends for garnish) • 1 tomato, deseeded and finely chopped • 12 cooked and peeled prawns, chopped • Red caviar • Salt and pepper • Lemon Method Cut avocados in half and remove stone, scoop out avocado and cut into small chunks. In a bowl gently mix avocado with chopped prawn meat, tomatoes and spring onions. Season

Garnish with spring onions and a teaspoon of caviar Tip: Filling can be made the day before. Make sure that you place cling wrap directly on top of the mixture and gently press to remove all air pockets to prevent it from going brown.
ASIAN PRAWN AND QUINOA SALAD Serves 2 Ingredients • 60g quinoa • 150g cooked prawn meat • ½ cucumber, halved and sliced • ½ red onion, finely sliced • 50g watercress or rocket • 100g cherry tomatoes, halved • Handful coriander and mint chopped For the dressing • 1 lime, zest and juice • 1 red chilli, deseeded and finely chopped
• 2 tbsp light soy sauce • 1 tsp extra virgin oil • 1 tsp honey Method Boil the quinoa in a small pan for 15 minutes until the grains are tender and look like they have burst. Drain well and tip into a bowl. Allow to cool. Mix dressing ingredients in a jar, store in fridge until required. Add salad ingredients and prawns. Toss gently. Toss through salad dressing 10 minutes before serving.
