Ring in NYE with these great community events
Sunshine Coast Council is supporting fireworks displays at three locations this New Year’s Eve – Coolum, Mooloolaba and Caloundra.
In Mooloolaba, council is hosting 8.30pm and midnight fireworks displays from an offshore barge, due to the Mooloolaba revitalisation works. This means you can experience the display from multiple viewing points, from Maroochydore Beach in the north to Point Cartwright in the south.
Choose your own adventure – pack a picnic to enjoy the display, or book a table at your favourite restaurant. If you’d like some light family-friendly entertainment, from 5pm to midnight, you’ll find buskers and roving performers at the HMAS Lookout and the Northern Parklands.
Beat the crowds and arrive with pedal power. A dedicated
bike park is located at Mooloolaba Esplanade opposite Meta Street.
In Coolum, experience roving performers, food trucks, light entertainment and a great family-friendly atmosphere from 5pm, with fireworks at 8.30pm. The event, hosted by Coolum Lions, finishes at 9pm.
In Caloundra, head to Kings Beach Amphitheatre. From 4-10pm, you’ll find rides, face painting and roving entertainment, food trucks and fireworks at 9.30pm. This event is hosted by the Food Truck Association.
All of these New Year’s Eve events are glass and alcohol free. Wherever you choose to spend the evening, take advantage of the 50-cent public transport fares. You can plan your journey using the Translink journey planner.

Your coastal-inspired table
This year, call on our local environment for inspiration and swap traditional red and white colours for softer hues. Opt for sea greens, ocean blues, brushed golds and natural textures.
For centrepieces, keep it simple: soft linen draped down the centre of the table, driftwood, shells, starfish, coral-inspired accents and vases filled with greenery. Add tealight candles in pale blue or green glass holders. Pearlescent baubles will also look great scattered throughout.
Nothing says summer Christmas quite like our beautiful beaches, and this year’s trend is all about bringing those beachside tones indoors. Start with a base of soft beige or linen. Layer in teal napkins, a table runner and seagreen glassware or plates for a colour pop. Bring in Christmas vibes with the added touch of gold baubles, soft string lights and a basic green garland.

Holiday food
One of the best parts of the holidays is sitting around and sharing good food and conversation with those we love. Here are some great Christmas recipes to get you started.
CHRISTMAS BAKED DOUBLE BRIE
RECIPE SUPPLIED BY SEASONS IGA SUPERMARKETS
INGREDIENTS
• 125g Community Co double brie
• 1 cup of fresh or Community Co dried cranberries
• ½ cup of Community Co honey
METHOD
• 1 tsp of Community Co balsamic vinegar
• ½ cup orange juice
• ¼ cup of Community Co walnuts, chopped
• 2 rosemary sprigs
1. Preheat the oven to 170°C (160°C fan forced).
2. Place cranberries, honey, balsamic vinegar, rosemary and orange juice in a small saucepan. Season with salt and pepper. Bring to boil and cook for 5 minutes or until the juices have slightly thickened. Remove from heat and set aside.
3. Bake double brie in ovenproof serving dish for 10-15 minutes or until soft. Pour cranberry mixture over the brie and garnish with walnuts. Serve with crackers.
AUSSIE PRAWN AND AVO SALAD
RECIPE SUPPLIED BY AUSTRALIAN CAUGHT PRAWNS
Is it even Christmas without a prawn cocktail? Give the old favourite a new lease on life by combining two of the season's staples – prawns and avocado. Festive food at its best!
INGREDIENTS
• Cooked Endeavour prawns, peeled –two or three per cocktail
• 50g baby leaf rocket
• 1 mango, cut and cubed
• 2 avocados, cut and cubed
• 1 tin salt-reduced corn kernels
• Good quality olive oil
• Salt
• Radish slices to garnish
Dressing:
• Juice of one lime
• ½ tsp Dijon mustard
• 40ml olive oil
• Salt and pepper to taste
METHOD
1. Drain and dry corn on paper towel. Heat olive oil in fry pan and lightly toast the corn. Put aside and allow to cool.
2. To make the dressing, mix all ingredients together.
3. Now, gently toss the mango, avocado and corn together and layer into glass. Top with rocket leaves and prawns and garnish with a thin slice of radish if desired. Drizzle with dressing just before serving.

FESTIVE RECIPES \\
GINGER BEER HAM
RECIPE SUPPLIED BY SEASONS IGA SUPERMARKETS
INGREDIENTS
• 5kg smoked half leg ham
For the glaze:
• 375ml ginger beer
• 1 bay leaf
• 2 tbsp Dijon mustard
METHOD
• ½ cup Community Co honey
• 1 tsp ground black pepper
• 1 tbsp juice from grated ginger
1. Preheat the oven to 200°C. Move the baking rack towards the bottom position of the oven.
2. Combine all the glaze ingredients in a medium pot, bring it to a boil and reduce the glaze to a syrup, but adjust to personal taste.
3. While the syrup is reducing, remove most of the skin from the ham. Find a corner where you can see the skin and fat layer, and with your finger, tug between the layer to help start the separation. Continue to peel back the skin from the fat. Leave the skin on where it’s close to the shank at the end of the ham.
4. Score the fat layer lightly, in straight lines around the ham. Make each score about 1cm apart and finish scoring the entire surface where there is fat coverage. You can brush some syrup on top so you can see the scoring.
5. Wrap the shank end of the ham with baking paper and foil. Using a pastry brush, coat the ham generously with syrup and place it on a heavy baking tray lined with baking paper.
6. Bake the ham until golden, about 1 hour and 15 minutes. Repeat the brushing every 15 minutes, and turn the tray around halfway through baking.

RECIPE SUPPLIED BY PARK & COVE
Nothing says Christmas fare quite like a decadent dessert.
INGREDIENTS
INNER FILLING
300g white chocolate
500g coconut oil
50g glucose
50g coconut cream
8 egg yolks
1. Melt the white chocolate to 40–45°C.
2. In a saucepan, heat coconut oil, glucose and coconut cream to -60°C, just enough to dissolve the glucose.
3. Whisk egg yolks in a bowl. Slowly

Perfect for a summer lunch with the family. Serve with fresh cranberry, feta and pine nut salad.
INGREDIENTS
• 1 whole side of Fresh Meats fresh Tasmanian salmon
• 125g unsalted butter
• 180g of honey (Hum Honey, available in store)
• 6 cloves of fresh garlic, minced or crushed
METHOD
• 1 lemon, thinly sliced in circles
• juice of 1 ½ lemons
• 1 tsp of salt and pepper mix
• 20g of both parsley and dill for garnish (fresh is best!)
1. Preheat oven to 180°C and line a baking pan with baking paper. Make sure it is large enough to fit the whole salmon.
2. Melt the butter in the microwave slowly. Then add the honey, crushed garlic, salt, pepper, lemon juice and a pinch of the fresh herbs. Mix well until combined.
3. Put the salmon skin side down into the baking pan and pour honey butter mixture over the fish. Place the thinly sliced lemon on the top of the salmon.
4. Put in the oven for 15 minutes, then remove and baste the salmon with the butter mixture on the side of the pan. You can add a touch more honey to get a deeper glaze.
5. Put back into the oven for a further 15 minutes (or until it is cooked to your liking), then sprinkle over fresh herbs and serve straight away.
