Families are welcome to come down to meet Santa, and he will bring lollies to hand out to all the children. There will be a fantastic fireworks display at 8pm on in front of The Surf Club Mooloolaba. Grab the best seat in the house on the deck to watch the show.

the World. The display features trees decorated and contributed to by community groups from across the hinterland region. Entry is by gold coin donation and all funds go to the Maleny Hospital Auxiliary. December 17, 10am–8pm December 18, midday–4pm December 19 to 23, 2pm–8pm December 24, 10am–7pm, then Christmas Eve service. Other times by prior appointment. Bus groups welcome. Rudolph the red nosed reindeer, had a very shiny nose, and if you ever saw it, you would even say it glowed.
Away in a manger, no crib for a bed, the little Lord Jesus laid down his sweet head, The stars in the bright sky looked down where he lay, the little Lord Jesus asleep on the hay.

FRESH IS BEST Get the best seafood for your table this festive season with these handy hints.
1. BUY RIGHT Fresh seafood on the table at Christmas has become a uniquely Australian tradition – but how can you make sure you are getting the best for your Christmas table? Michael and Paul at Pt Cartwright
Seafood have some helpful hints: • only select seafood that looks shiny and moist • eyes on fish should be clear and not sunken, while the scales should be shiny, not dry • oysters should look moist and plump and not dry and sunken in the shells • prawns should have a glossy appearance and plump eyes • be careful about purchasing from businesses that promise to have your seafood packed and ready to go at Christmas – you don’t know when it was packed, how old it was when it was packed, or what you are getting. Best to choose your own.
2. STORE RIGHT Christmas time is normally hot, everyone’s fridges are usually overloaded with Christmas cheer, and the fridge door is opened more frequently than normal – that can cause problems. At best, domestic fridges run at 4°C, but at this time of the year they usually operate at a warmer temperature, which is not good for storing seafood. Fresh seafood should be stored between zero and 4°C. The best way to hold large quantities of seafood is by keeping your seafood in an esky, sandwiched between two layers of ice. Place a
layer of ice about 100 millimetres thick on the bottom of an esky, if you have a handful of salt, sprinkle over the top as it will harden the ice. Place raw and cooked seafood into separate plastic bags and distribute evenly on top of the ice. Always place the cooked seafood on top of the raw seafood. Then fill the esky to the top with ice, ensuring it’s at least 150 millimetres thick. Filling the esky to the top removes any air gaps which can heat up and cause the ice to melt more quickly. Sprinkle some salt on top, seal, place in a cool spot, (often the laundry is good) and don’t open until you need it. Smaller quantities can be stored by

3. HOW MUCH? Nothing says Christmas like prawns. The question on most people’s lips is how many to buy? If prawns are not the main item of the dish being served for Christmas lunch or dinner, then Pt Cartwright Seafood Market suggests that 250g per person is a good guideline to follow. For those people who are looking to create a spectacular centrepiece dish, opt for a whole fish, red emperor, snapper or salmon.
By letting the oven or barbecue do all the work, and allowing about 20 minutes per kilo at 200°C, it gives you time to focus on getting the other dishes prepared. Be sure to test the flesh with a skewer about 30 minutes before it is due to be ready as some fish will cook faster. To do this, insert a skewer through the thickest part of the fish (usually the shoulder). If it goes in and out easily without any flesh grabbing the skewer it is cooked.
SMOKED SALMON, PEAR AND WALNUT SALAD Serves six. This is a great first course for summer dining. The bitterness of the rocket is balanced perfectly by the sweet pears.
Ingredients • 200g smoked salmon (cut into 30mm strips) • 2 small fennel bulbs • 3 medium firm pears • 2 cups baby rocket leaves • 1 cup mixed salad leaves • 2 small zucchini • 4 tbs walnut pieces • 4 tbs extra virgin olive oil • 2 tbs lemon juice • Freshly ground black pepper Method Trim away the outer layer from the

fennel bulbs, wash and thinly slice and place in a bowl. Wash, quarter and core the pears, slice thinly and add to the fennel. Wash the zucchini and cut into long ribbons using a vegetable peeler. BARRAMUNDI TACOS WITH LIME AIOLI Ingredients • 400g Australian barramundi fillets • 1 tbs smoked paprika • 2 tbs flour • Salt and pepper • Butter for cooking • 12 small tortillas • 100g carrot, shredded • 100g red cabbage, shredded • 40g red onion finely sliced • 30g lettuce mix For the salsa: • 100g tomatoes, finely chopped • 10g coriander, chopped • 1 tbs extra virgin olive oil For the aioli: • 100g quality mayonnaise • Juice of half a lime • 2 garlic cloves, crushed
Method For the aioli, combine the ingredients and season with a little salt. For the salsa, combine the ingredients and set aside for at least half and hour for the flavour to develop. Lightly toast the tortillas in a hot, dry pan for a few seconds each side and set aside. Combine the paprika and flour with a little salt and pepper. Heat butter in the pan, dust the fish in the paprika flour and pan fry for two to three minutes each side until done. Using a fork, break up the fish into chunks and spoon along each of the tortillas. Top with

CHRISTMAS ORANGE & COINTREAU BAKED HAM
For all your bulk food grocery items this Christmas
Ingredients • 7-9 kg ham Syrup mix: • 1 cup freshly squeezed orange juice • 1 lemon, juiced • 4 tbs orange marmalade • ½ cup maple syrup • ¼ cup Cointreau liqueur • 1 orange rind Garnish: • Handful of cloves • ½ cup fresh pomegranate seeds Method Preheat oven to 180°C. Mix syrup ingredients in a saucepan and bring to a simmer. It will take about five minutes. Use a sharp knife and gently peel skin off ham, making sure you leave the fat on the ham. Score fat in a diamond pattern and stud the centre of each diamond with a clove. Place ham on a baking tray and glaze with syrup mix.
Bake for 30 to 40 minutes, depending on size of ham. Baste every 10 minutes to caramelise the syrup glaze. For a festive look, finish with a sprinkling of pomegranate seeds. Remaining sauce can be served on the sliced ham.
