Terri Bullard, the co-owner of Lyf Country Kitchen, a Southern-inspired food truck, talks about the importance of family and community in running her business.

L

ove your food, love your family, love your friends. That’s the motto written on the side of Lyf Country Kitchen, a Southern homestyle food truck run by West Jordan resident Terri Bullard and her oldest son, Christopher Allinder. The motto, which forms the acronym LYF, is rooted in the deep bond that Bullard, her four kids and grandchildren all share. She, her family and their community are the foundation of their food truck. When starting their business, they wanted to make sure that connection was at the front of it. “If we are gonna have a new menu item, everybody’s at our house … and they’ll say ‘no, put more pepper,’ ‘change this,’ … that’s how we do everything with this food truck; it’s a family affair,” Bullard said. Bullard grew up in Axle, Texas, and although she was surrounded by the tasty aroma of Southern cooking, running a food truck never crossed her mind.

Instead, Bullard got her doctorate from the University of New Mexico College of Pharmacy in 2000. Bullard worked as a pharmacist for 21 years in retail and hospital pharmacy, specializing in cancer treatment. “I loved it. Most of the time. But after a while it just got to be corporate America, you know, do more with less, do more with less,” Bullard said. During this time, Bullard struggled with a string of tragic deaths in her family, including her husband. “Pretty soon I was trying to take care of three estates, and I was an oncology pharmacist, so I was taking care of cancer patients … and I just woke up, and thought, I just can’t do this anymore, this is too much for one person.” Starting the food truck was a new beginning for Bullard and her family. The idea emerged when Bullard’s friend came to her and suggested they retire and buy a food truck. Her friend had always loved food, and Bullard agreed to manage it. At the beginning, they called the truck Lyf Kitchen.
