Mayor Tish Buroker shares restaurants that showcase the city’s expanding culinary scene.

R

iverton Mayor Tish Buroker refuses to play favorites when it comes to local restaurants. She knows that with nearly 120 businesses holding food licenses in the city, she has plenty of delicious reasons to keep her options open. “I would love to try them all,” she said. One place she visits often is Jim’s Family Restaurant because of its proximity to Riverton City Hall. When she’s there in the morning, the mayor enjoys a traditional breakfast with two eggs, two slices of bacon and homestyle potatoes. Beyond breakfast, Buroker enjoys exploring Riverton’s growing collection of international restaurants, trying everything from Vietnamese pho to the honey prosciutto pizza at Via 313 Pizzeria. “They have amazing pizza. There’s a little sweetness to it, a little hotness to it, and it’s wonderful,” she said. “They have great service and a great atmosphere.” She’s also a huge fan of Panera Bread. Buroker was ecstatic when Panera opened its first Utah location in 2023 in Riverton. When she lived in Denver, she ate at the restaurant frequently and was happy to reconnect with its comfort food.
