ear Readers, Spring is a time of rebirth as trees and flowers come to life. Spring gardens start producing much savored fruits and vegetables. The outdoors become busy with youth sports and other outdoor activities. In this part of Texas spring tends to come earlier than in other parts of the country but we are not complaining. We like the feel and smell of spring. In this issue of Discover 361 we celebrate spring. We offer tips for decluttering your home or living space without getting too stressed. If you are eager to get a jump on spring cleaning, you can even start decluttering now. If you are thinking about buying an old home to restore, the story on the Levi-Welder home’s newest makeover is a must read. The current owners, William Sager and Neal Clark, talk about the joy they had restoring the home, while keeping its historical character intact. For 40 years residents have celebrated spring with the annual Polo at McFaddin event to benefit the Nave Museum. After a two-year break, the popular event is back with the polo match, tailgating and the polo tradition of replacing of the divots. And what better way to prepare for it than spring fashions for the family? Business owner Lascena Lee Simmons opened her store Peaches and Tortilla Merchantile for this issue’s fashion spread – a spring tea party. A WANT TO GIVE BACK

bout 12 years ago, when David and Tammy Murphy got the opportunity to return to their hometown and run two Chick-fil-A restaurants , the duo began looking for ways to give back to the community that raised them. "It just seemed right to give back," said David Murphy, who is a Rockport resident and the owner and operator of the Chick-fil-A restaurants on Navarro Street and in the Victoria Mall. "We weren't sure what it was going to be at the time, but we knew we wanted to do something." Similar to how the Murphys’ careers in the chicken business began as a matter of happenstance, the idea that became their premier event — the Chick-fil-A Young Life 5K & 10K — came from a higher power, they said. “God definitely had a hand in it all,” said Tammy Murphy, who helped plan and market the event. The two first met while they both worked at the Victoria Mall Chick-fil-A. They left Victoria in 1998 to run franchise locations for the business in San Antonio, where they stayed for 10 years. Soon after they moved back and took the reins of the Victoria stores, David got a Facebook friend request from a fellow Parkway Church churchgoer. The man, Travis Yarbrough, was heavily involved with Young Life at the time and was looking for sponsors for a 5K, he said. "I had no clue what Young Life was. Not even the slightest inkling," he said with a laugh. "But, I replied back and asked some questions and said, 'Well, can you meet?'" There, he was introduced to Young Life, a nonprofit youth organization that has sought to introduce adolescents to Jesus Christ and help them grow in their faith, said Isabella Najus, area director. Victoria has had a local chapter since 2010. "They have built a strong relationship since," she said. "We are very thankful for Chick-fil-A and the Murphys." FROM PG. 9 The youth organization holds weekly gatherings on Mondays when between 80 to 120 kids come to "sing songs, have fun, play crazy games and hear scripture," she said. "We are all about being where the kids are … It is a great way for kids to just be kids and have a good influence in the room," she said. The 5K, which is marking its 12th year in 2022, was initially put together to engage with and support the community with the help of Young Life. Over the years, the event has grown to attract hundreds of participants every year, said Marina R. San Miguel, a Chick-fil-A spokeswoman. The 5K runs along parts of North Navarro Street, Salem Road, Loop 463 and John Stockbauer Drive, with Victoria police closing portions of the busy roads for the event to proceed. That decision, David Murphy said, was a result of one of the volunteers noticing that stretch was exactly the right distance to hold the 5K. “One day, he ran that distance and it was perfect. It was almost like it was made for that,” he said with a laugh. “It really is a great spot and it is the 10

only race that I know of that happens on Navarro.” To date, the Chick-fil-A event has raised more than $350,000, all of which has gone to helping fund the efforts of Young Life. Those funds go toward holding more events and sending participants to camp, Najus said. Najus said the Chick-fil-A Young Life 5K is one of their biggest fundraisers, only second to an annual banquet put on by the organization. The 5K, however, is the biggest in terms of scale. "A ton of our people come to help out, either helping with the set up, passing out water, or anything else that is needed," she said. "It's a great

group activity on top of everything else." Tammy Murphy said the annual event is an excellent showcase of a community coming together. "It is always a hoot seeing all the Young Life kids and volunteers come together and make it all happen," she said. "It is a sight to see." Calvin Simpson, the owner of Interstate Batteries in Victoria, has sponsored the event every year because of the good Young Life does. He said the opportunities offered by the youth group "go a long way to steering the next generation in the right direction." "The experiences I had in similar groups (to Young Life) made a huge

impact on me as a kid," he said. "The next generation can be hard to reach sometimes, and they do a good job at getting to them and teaching them about Jesus Christ." For him, sponsoring the event is a way to pay it forward for the youth groups he was a part of growing up. "I remember going to concerts, pizza parties and all sorts of stuff in youth groups, and they'd only charged us a buck or two. As I got older, I realized there was someone behind the scenes that was footing the bill," he said. "To be able to do that now through Young Life and help the next generation is a big deal to me."

well-maintained, welcoming and attractive each property is. Keep Victoria Beautiful board members then compare notes before voting on which business will win the monthly beautification award. The award serves many purposes, says Byrd. It gives publicity to the winners, encourages people to notice businesses that meet the award's standards and provides an incentive to businesses to keep their property looking nice. Not all of Byrd's work is done as covertly as her beautification award judging. Most of it does occur behind the scenes, which means many community members likely have never met her yet. However, nearly everyone in the City of Victoria has probably, knowingly or unknowingly, been impacted by her work in the community. Byrd chairs the Keep Victoria Beautiful board, serves as the director of community engagement at the Food Bank of the Golden Crescent, and manages the Victoria Farmers' Market. She also played an active role in advocating for curbside recycling in Victoria and wrote a regular column in The Victoria Advocate for years that shared tips on how residents could be a little more earth friendly. "There's a humility about Meridith. She does not have to be the star of any show," said Christy Youker, who has worked with Byrd on the Keep Victoria Beautiful board. "Of course she always ends up being the star." People are drawn to Byrd, and her laughter isn't her only infectious quality. "Meridith brings people together in a very natural and positive way," said Youker. "She has a contagious energy about her." Both her friends and those she works with are quick to notice and point out that she genuinely cares about the Victoria community. Byrd was born and raised in Victoria, but left to pursue a degree and then career in marine biology at the Texas Parks and Wildlife Department. The decision was made in part out of a desire to raise their kids closer to family, but it was also made because Byrd wanted an opportunity to be more involved with the community in which she lived. "As much as we loved Austin and being up there, we did feel like we could come back home and have an impact locally," said Byrd. Byrd left Texas Parks and Wildlife to be a stay-at-home mom when her son was 3 and her daughter was 1. While she and Chad had always known they wanted to homeschool their kids, it had never been the plan for her to be the stay-at-home parent, she said. "Once I got my feet under me, though, then I really, really liked it," she reminisced. "It was great and hard at the same time." Eventually, however, she decided to return to the workforce, and Chad became the homeschooling dad. "We are unconventional in every way," laughed Byrd. "But Chad likes to challenge people's perceptions and prejudices, and he's not intimidated by not being the breadwinner." Byrd joined the Food Bank as a grant writer in 2016. "I didn't know what anything was going to look like for me after I left marine biology," said Byrd. "But I knew that whatever I did next, I wanted it to have a local impact." She said she has definitely found that working at the Food Bank. Soon after joining, she transitioned into her current role and began managing the farmers' market. Being involved with Keep Victoria Beautiful has also given her another avenue to have an impact on the city. "I'm from here. I grew up here. And it hurts to hear people complain about Victoria looking trashy or dirty," she said. Keep Victoria Beautiful has allowed Byrd to address those issues and help maintain and protect Victoria's natural beauty. "I know that not everyone has the time or ability to fit doing that sort 18

of service with their job and family requirements," she said. Ten years ago she wouldn't have been able to either. "But at this point, I have time to (do that)," said Byrd. "So if I can help fill a need that's there, then I like being able to do that." Despite her commitment to the local community, Byrd hasn't given up all her dreams of marine biology. She still tries to get to the coast as often

as she can. In fact, it was watching the dolphins on the ferry at Port Aransas as a kid that first sparked her interest in marine biology. "I do miss being a part of that and being up to date on the latest research," she said. "I've got dreams of retiring and moving to Port Aransas or Rockport or somewhere and just being immersed in that again." For now, however, Meridith Byrd is fully immersed in Victoria.

s the calendar shifts to spring, many will find themselves ready to do a deep clean of their homes. However, the act of decluttering one’s home can be stressful, says Art Calvo, owner of Calvo Janitorial. Calvo Janitorial has more than a century of experience cleaning residential and commercial buildings in the Crossroads. The company was founded in 1996 and Calvo runs the company with his wife Roxann and mother Gloria. “Commercial, residential, post construction — anything that has to do with building maintenance, we take care of,” Calvo said. Calvo has a three-step process to help would-be weekend warriors shake the dust and more out of their homes.

KEEP IT SIMPLE

One of the biggest stressors in Calvo’s eyes is the lack of planning people do when it comes to their spring cleaning.

He’s seen many people get overwhelmed thinking they have to clean their whole home at once. But they don’t. Calvo believes if the tasks of a spring cleaning are broken up into smaller pieces, it’ll make the work go by easier and faster. “You can start by dusting your ceiling fans and your high areas,” Calvo said. “Once you get all that dust down, then you can start disinfecting your windows and wipe everything down. Then you get to sweeping and mopping.” The best way to break up the process is to treat each room separately with its own checklist. The worst room for people to clean and declutter is the bathroom, he said. Due to the buildup of limescale and scum, many people can feel like it’s a near impossible task. “But if you get a good limescale remover and you let it soak, let the product do its job and break that stuff up, you can come back and scrub

it off. A lot of people will throw the chemical on there and scrub right away. They need to let it sit there, soak and do its job.” Another thing to help simplify the disinfecting process is to get one multi-purpose cleaner rather than multiple products for surfaces like wood floors and countertops. “Getting one multi-purpose product simplifies a lot of things,” Calvo said. “Sometimes people will buy disinfectant, cleaner and mopping solution. If you get a good all-purpose cleaner, that cuts down on a lot of confusion. That’s my number one suggestion, to keep everything nice and simple.” Calvo also recommends everyone reads the instructions on the cleaning product labels to make sure they avoid any dangers. “If you mix a toilet cleaner and bleach, that makes an acid mist and it can be really dangerous for a person’s lungs,” he said. | CONT. Once the basic cleaning is done, now you’re left with decluttering the winter’s mess. Calvo sees the most clutter in the wintertime, when people stay indoors more frequently. “A lot of times during the winter, you pile up clothes, blankets and things like that,” he said. “Usually you can wash those and put them up for the summer or coming spring. Much like the disinfecting process, he says you need to have a room-byroom plan so the tasks do not seem so daunting. You don’t have to clean and declutter the entire home in one day. “Take it one step at a time and don’t try to do the whole house in one day,” Calvo said. “That just seems overwhelming. So, take it a little bit at a time, that’s the best advice I can give on decluttering.”

WHERE TO DISPOSE THINGS W H E N YO U ’ R E D O N E Once you’ve gone through the cleaning and decluttering of your house, you’ve reached the light at the end of the tunnel. The end of the tunnel is also where the trash, recyclables and chemicals from your home’s deep clean are.

When you reach this point, Calvo said not to stress. The disposal process is pretty simple. Normal trash and recycling will go in their respective bins and the city will dispose of them. He added unwanted clothing should be taken to any donation dropoff bin. “Your paper, plastics and other things can go in your recycling. Your trash can go in your regular trash,” he said. But when it comes to disposing of things like chemicals and used batteries, that’s where things can get tricky, he said. The best thing to do is to contact

the city to find eco-friendly ways to dispose of the potentially harmful substances, he said. “You get into the chemicals that have been sitting around — the pesticides, old batteries — you want to be real careful how you dispose of those,” Calvo said. “You can contact the city and they will tell you the proper way to dispose of them.” You can contact the City of Victoria’s Solid Waste Services by calling 361-485-3220.

hen a structure has good solid bones, it will withstand centuries of use and living. The Levi-Welder home, 403 N. Main St. in Victoria, is a tribute to that. Built in 1865, the home in downtown Victoria is a living tribute to the early settlers of Victoria. It has survived hurricanes, droughts, the Great Depression and a series of smaller recessions. In its 160 years, it has had six owners, each giving it their personal touch of life. When the newest owners, William Sager and Neal Clark, bought the home in June 2020 they wanted to keep the home’s character while adding their personal modern touches. They kept the original windows, which add up to more than 50; sealed off the three fireplaces made of Italian marble to help with the heating and cooling of the home; refurbished the hardwood floors throughout the home; and kept the gold and black Italian tile flooring in the ballroom. They added a chandelier to the kitchen – because it didn’t fit in the bedroom; made the ballroom into the main living room; and kept the front two rooms as the formal living room and formal library. They adjusted the upstairs so the four bedrooms and

three bathrooms have more privacy. They kept the butler’s pantry and filled the built-in cabinets with Sager’s collection of dishes. They kept the formal dining room complete with a large custom-built dining table that is always set for dining. “The first time we looked at this house we knew there was no way we would buy it because we knew it needed a lot of work. But then the second time we looked at it, we spent hours in here making plans to restore it,” Sager said. On the day they signed the paperwork making it theirs, they went to the house with paint brushes in hand and started working on it. Three months later they were moved in. Clark and Sager have restored two other old homes and want to possibly restore more homes as the opportunity arises, but they want to keep their current home. The house has a long history. It was listed in the National Register of Historic Places in 1986. The house was built around 1865 by Abraham Levi, an Alsatian immigrant who founded A. Levi & Co., a wholesale grocery, and the A. Levi & Co. Bank (Later Victoria Bank & Trust), according to the national register entry. It was used as headquarters for federal troops during Reconstruction after the Civil War. The Levi family owned the home until 1910 when it was purchased by Mary O’Connor Hallinan. The parquet floors and several marble fireplaces were added. Hallinan died the following year, according to the national register entry. The house was purchased by John J. “Jay” Welder, a prominent rancher, who substantially enlarged the home, adding the neoclassical porch. The Welder family owned the home for many decades. The home had two more owners before Sager and Clark purchased it in 2020. “We wanted to keep the character of the home because it makes it feel more homey than new construction,” Sager said. | CONT. FROM PG. 27 furniture and decorated it with modern décor. They also added artwork some was theirs, some they purchased and other pieces were left in the home by previous owners. They also created artwork from things they found during the restoration work.While tearing out a wall to repair it, they came across crumpled up newspapers from 1927. They carefully unfolded it and used pieces of it to make a framed wall hanging and two smaller frames for the shelves in the formal library. Visitors to the home are greeted by steps outside that bear the Welder ranch’s 7H brand embedded in the concrete. The work they did to preserve the home has met the approval of one former resident, Kathleen Welder Carey, who was born and raised in the home. “I got very teary,” when she visited the home for the first time, Carey said. “They loved this house as much as we did growing up. They understood the history behind it and that is important to me,” Carey said. Carey recalled as a child having her group of girlfriends over and tap dancing in the ballroom; using a closet under the stairs to have private phone conversations and sitting on the upstairs back porch with her parents to watch television. The porch is now the master bedroom. She also likes that Sager and Clark want to share the home with the community. The couple enjoys entertaining. They made sure their home was designed to accommodate a lot of people. At Christmas, they hosted a historic home tour, sponsored by the Victoria Preservation Inc., where they entertained about 250 guests during the two-day event. While most of their effort in the restoration was focused on the house, they also began work on the carriage house behind the home. The fourcar garage also has a one-bedroom apartment, an open loft, a gym and storage. They also built a new fence that surrounds the property that covers a half-city block. The fence features wrought iron with large brick pillars. 28

o many, the kitchen is a sacred place in the home. It’s where we gather in the evenings, where we’re reunited with relatives, where we gossip with our siblings, debate life with our parents, and above all else, it’s where we make good food. Every culture has left its mark in the kitchen. Be it a Czech family’s kolaches or a Vietnamese family’s pho, every family has a homemade meal that’s been passed down for generations. But for the vendors at the Victoria Farmers’ Market, those families have taken their creations outside the protective family circle in order to spread awareness, a bit of history, and, simply put, good food to the community. Curtis Stange, of Schroeder, was no different. Farming and ranching has been his life ever since he was a teenager. Stange’s great-grandfather farmed watermelons and corn, and his father grew asparagus and apple trees. For Stange, everything changed about 10 years ago

when he grew dissatisfied with big stores like H-E-B and Walmart and how they artificially ripen their produce. So, pulling back on his family’s roots, Stange invested his time into his ranch and garden to create healthy produce that people wanted to buy. “I think the best thing about it is that you get a sense of fulfillment through what you do,” Stange said. “Not only are you able to do it for your family, you’re also able to do it for others as well.” Stange and his wife,

Dominique, — who says she never knew how to cook before meeting Curtis — set about creating produce to sell at the Schroeder Farmers’ Market. They make everything from jams and jellies to fresh vegetables and farm eggs to specialty cookies, specialty seasonings and salsas, among other items. “Most of the people out in Schroeder are all pretty much his kinfolk,” Dominique Stange said. “So we were like, ‘Oh, how can we help the | CONT. | CONT. FROM PG. 31 community there? How can we help y’all?’ And they were like, ‘Well, we would like to learn more about how to grow food naturally and raise animals too. Because for 10, 15, 20 years, your grandparents grew and raised their own animals and nowadays people don’t, they rely on the big stores.” It wasn’t long before the Stanges were recruited to the Victoria Farmers’ Market as the husband and wife team split shifts at the two different markets. But while most of these items met the Stange’s goal of selling healthy food and vegetables, free of synthetic fertilizers, Stange’s family didn’t have that one unique food or sauce that his family had passed down and that he could now sell to others.

That was until Stange found a unique cookbook in Schulenburg. Inside he discovered a 150-year old German kolache recipe that unknowingly was written by some of Stange’s distant relatives in the 1800s. The recipe — which Stange kept secret — became the basis for every bread-based product they sell. The cinnamon rolls, kolaches, bread and dinner rolls all maintain that same recipe that was written over 100 years ago. “The German recipes are few and far between,” Stange said. “There’s no local German restaurants, but there’s a lot of German heritage in this area. And if you can offer something different, let’s say if it’s an Austrian or a French recipe that not many people have, but you can bring it to the table, it’s well worth doing.”

I first encountered the Stanges at the Victoria Farmers’ Market. I noticed the toy dinosaurs placed among the breads and cinnamon rolls and vegetables, and learned it was Dominique’s way of thinking of their son, Trip, while he’s at school during the week. From there, I learned about their history, the 100-year old bread recipe and got to eat some delicious cinnamon rolls. But hearing their story made me think back on my own family. It made me think about all the hours spent cooking suga — what everyone else calls pasta sauce — and learning about how it was the same recipe that Italian-American families around Mumford had been passing down for generations. That same tiny taste of culture, from a community that continued to pass on traditions through food, were the exact same things I found at the Farmers’ Market. “I love that customers can establish a personal relationship and reap the health benefits of animals that aren’t raised being chock full of antibiotics and produce that’s not sprayed with chemicals,” said Victoria Farmers’ Market’ market manager Meridith Byrd. “I mean produce vendors are the hardest for me to get out here because so much is dependent on outside factors that you can’t control. You do everything you can to ensure a healthy crop, and then a historic freeze in February wipes you out, or 100 degrees for however many weeks straight in August wipes you out. But there’s a lot of value in being able to establish a relationship with the person who is providing your food.” You’ll find every vendor at the market has a story to tell.

alking into ParaVida Wellness in Victoria, the first adjective that might come to mind to describe it is a “health food” store. The store offers gluten, dairy and processed sugar free grab and go meals, smoothies, cold pressed juices and more. But for Erica Briggs, the store’s owner and founder, the word “healthy” is completely overused and often misused today. “There isn’t a healthy policing system that monitors food manufacturing to determine if a food is really healthy even if the marketing states ‘healthy’ on the packaging,” said Briggs. Instead Briggs focuses on what she calls clean eating. The goal of clean eating is to avoid overly processed foods while increasing the amount of fresh fruits and vegetables one eats. Born in Victoria, Briggs has always had a passion for cooking and healthy living, but it was years before she began to pursue a culinary career. When she was 19, she left Victoria to pursue college and then a career in advertising and marketing. That career took her all over the country working with National Basketball Association and National Hockey League arenas, musical artists like Kenny Chesney and Nickelback and the Los Angeles Dodgers. In 2011, she came back to Victoria, where she helped open Huvar’s Artisan Market. Once back in her hometown, Briggs decided to pursue a new career in nutrition and wellness. Briggs launched ParaVida Wellness in 2016 after completing an online course through the Institute for Integrated Nutrition. Her first client was her mother-in-law, who had just been put on a

B R E A K FA S T C H I A P U D D I N G PA R FA I T INGREDIENTS: ¼ cup chia seeds 1 cup non-dairy milk (almond, hemp, oat or soy) 1 tsp. vanilla 1 Tbsp. maple syrup Mix all the ingredients together. The pudding can be topped with a variety of different fruits and toppings. Some topping ideas are nuts, seeds (such as hemp, pepita or sunflower seeds), granola, and coconut flakes. You can also mix in a protein

powder (such as hemp, pea or whey) or an adaptogen powder (such as reishi, horsetail or chaga mushroom).

ANY FRUIT CRISP INGREDIENTS: 2 cups fruit sliced (apples, peaches, strawberries, blackberries, or blueberries) 1 cup gluten free granola 2 Tbsp. vegan butter (Miyoko is our favorite vegan butter), melted 2 Tbsp. maple syrup 2 tsp. cinnamon (not all fruits will need this, but apples and peaches for sure do) 2 Tbsp. Arrowroot flour or Cassava flour

Peel fruit and slice about ¼ inch thick. Toss with either Arrowroot or Cassava flour, maple syrup and melted vegan butter until well coated.

BUDDHA BOWL LUNCH FOR THE BOWL: ¼ cup cooked quinoa ½ cup cooked chickpeas / garbanzo beans (lightly seasoned with salt) 1 cup chopped & massaged kale (massaging the kale with a little olive oil and salt will break down the fibers in the kale, give it a richer flavor and make it easier to eat and digest) ¼ cup purple cabbage, thinly sliced ½ cup cherry tomatoes, halved ½ avocado

¼ cup red onion, diced ½ cup roasted sweet potatoes, diced FOR THE DRESSING: 1 cup fresh strawberries, halved 1 cup balsamic vinegar 2 Tbsp. extra virgin olive oil 1 cup Kevala coconut aminos 1 Tbsp. fresh rosemary Juice from 1 fresh lemon ¼ tsp. Himalayan pink sea salt 1 tsp ground black pepper

1 tsp. dijon mustard The dish can be made with a million different combinations of vegetables, but keep in mind that you want this bowl to be a rainbow of color, as with any plant based meal. To make the dressing combine all the ingredients in a blender and blend until smooth. You can also just use a smashed avocado for a very simple dressing.

SWEET & SOUR S T I R F RY D I N N E R INGREDIENTS: 2 cups chopped pineapple, small pieces (or buy canned pineapple tidbits in juice, not sugar syrup) 3 cups broccoli 2 cups carrots, sliced thin 2 cups sliced mushrooms 1 cup yellow onion, thin slice 2 cups fresh snow peas 4 cups brown jasmine rice, steamed FOR THE SAUCE: ½ cup pineapple juice ¼ cup coconut aminos 2 Tbsp. lime juice 2 Tbsp. maple syrup

2 Tbsp. / 6 cloves garlic, minced 1 Tbsp. fresh grated ginger 1 Tbsp. Arrowroot flour ¼ tsp. red chili pepper flakes Combine all the sauce ingredients in a bowl and set aside. Boil a large pot of water. Once boiling, blanch the carrots for 1-2 minutes until soft. Either put a metal colander over the pot of boiling water or use a steamer to lightly steam the broccoli, about 2-3 minutes. The broccoli should turn a bright green.

In a large skillet, saute the onion and mushrooms for about 4-5 minutes or until the onion begins to turn translucent. Add snow peas and cook 2-3 minutes. Add broccoli and carrots. Pour sauce over vegetables, add pineapple and cook 1-2 minutes longer or until sauce thickens. Serve over brown jasmine rice or, for a lower carb option, serve over cauliflower rice. Briggs quickly found more clients and their requests slowly shifted from looking for help with meal planning to asking her to help them prepare their food. In 2017, shortly after Hurricane Harvey, Briggs opened the brick and mortar shop on Airline Road. At the store she was able to offer more prepared meals and snacks, with a focus on high quality, organic ingredients. Briggs also assembled a team of health-minded people and cooks and a nutritionist, Meagan Massey. Alongside the food offered in the store, Massey offers nutritional counseling and custom meal plans, which take into account clients’ goals, preferences, allergies and other factors. Even with the pandemic, ParaVida’s client base has grown steadily over the past four years, said Briggs. “To my surprise, Victorians and folks from the surrounding counties have really embraced us,” she said. “I hear at least daily how much they

She hopes to be able to expand into a new, larger location soon, where she can offer in-house

dining and a drive through option. She also plans to add food trucks that will help ParaVida reach smaller communities, like Cuero, Goliad and Edna, where there are fewer healthy dining options.

ERICA BRIGGS’ TIPS FOR CLEAN EATING: Make ¾ of your plate plant-based. Plantbased foods include vegetables, potatoes, beans or rice (the best rice is organic, brown rice). Avoid heavily processed foods such as chips, sandwich meats, and frozen or canned foods. The fewer ingredients in a product the better. Choose lean meat and keep your serving sizes to 3-6 ounces. Control the amount of sugar in your diet, especially processed white sugars. If you’re craving sweets, cut back on your salt intake or try eating sweeter vegetables, such as sweet potatoes, acorn squash or carrots. Don’t drink soft drinks. They are loaded with sugars. Try the 80/20 rule. 80% of your daily food intake should be clean, not processed; 20% can be a little less healthy.

Tea party sets the mood for spring fashion and festivities

“Hey Google. What would Kate Middleton wear to a tea party?” This was my first thought when asked to write about a photo shoot themed around tea parties and polo matches.

remember as a young girl being captivated by Princess Diana’s fashion choices. Watching her on television and seeing her in magazines in the 90’s was really the first time I became familiar with the Royal family. Fast forward to my 30’s and I was watching in fascination as Kate Middleton became a modern-day princess. Much like Princess Di before her, Kate’s fashion choices are nothing short of impeccable. For me, these two women are the epitome of grace, beauty and iconic fashion. Walking into the soon-tobe new “Peaches and Tortilla Mercantile,” I knew what my fashion inspiration would be for the day, but I wanted to know everyone else’s take on it. Looking around, I realized how different each of us was. Lascena Lee Simmons, owner of P&T and our stylist for the day, is clearly a woman who is showing everyone that you can have it all. Peaches and Tortilla is full of unique, hand-picked women’s, children’s, home, gift and party items. When renovations of the old Rosebud building are complete, P&T will be home to tea parties, quaint gatherings, cookie baking classes, and private parties in what Simmons calls the “Cupcake and Champagne Room.” It is clear her inspiration comes from a deep desire to bring happiness and community to everyone who walks through her door. Painted across the outside wall of the building are the words “Love You to Peaches.” For Simmons, this is not just a mural, she truly means it. It would be hard to deny that one of her biggest sources of motivation is her daughter, Emmy Roan. Simmons was pregnant with Emmy when she opened Peaches, so she has been a part of the business since before she took her first breath. For Simmons, being a mom comes first so this fashionable duo spends as much time traveling, working and even modeling together as possible. When I asked McGrew how her girls felt about the photo shoot, she told me the first thing out of Maris’ mouth that morning was “we’re going to a tea party and we are going to be SO FASHION.” (I’m stealing this, BTW.) Both girls love to be well dressed, so “so fashion” has become one of their favorite compliments to each other. For these two, fashion is all about feeling fabulous. They love dresses, skirts and anything that twirls. “I look at what they’ve picked out and wish that I was as brave and bold with my patterns as they are,” their mother said. I think it’s safe to assume McGrew is raising some future girl bosses. For Tony Vasquez, a true fashionista in his own right, his inspiration comes from “thoughts of a carefree springtime.” White linens, pastel blazers and the lush flowers almost forgotten during the cold months of fall and winter. As someone who has attended tea parties and polo events throughout the country and across the pond in Merrie Olde England, Vasquez enjoys the truly unique, relaxed vibe of South Texas. For him, the combination of traditional linens and pastels with cowboy boots and hats makes events calling for such a dress code fun and personal. You don’t have to spend much time with Vasquez to know he has his own unique sense of style which is why he has an appreciation for events 46

When asked about his specific influences for this photoshoot, Wendel said when deciding on his outfits he referred back to this sense of balance. “I wanted to wear something that was comfortable yet well put together, something fun yet striking.” Vasquez and Wendel were the only two models who pulled their looks from their own closets. It was a true pleasure watching them work together to create various looks that spoke to each of their individual personalities yet coordinated with the rest of the shoot. With a nod of the head or a slight crack of a grin, it was clear these two understood the other’s personality and how to work 48

he drive from Victoria to Fredericksburg is a scenic trip passing through San Marcos and along the Blanco River to this Hill Country town of just over 10,000. Clocking in at just over three hours, it’s doable for a weekend getaway or even a one-night stay. Fredericksburg has long been a popular destination for weekenders from Houston, Dallas and San Antonio, said Sean Doerre, communications manager with the Fredericksburg Convention and

Visitor Bureau. In the last 15 years or so, the rise of “Texas Wine Country” — including the dozens of vineyards that have cropped up along U.S. 290 between Fredericksburg and Johnson City — has further elevated the town’s profile. Still, it’s possible to enjoy a tranquil stay in Fredericksburg, Doerre said, especially for those able to visit offweekends. “Our insider tip that we give people is if you can visit on a Sunday through Thursday, you’re more likely

to find a relaxed pace,” he said. “If it fits into your schedule, you can find some great perks around town, whether it’s a shorter wait at a restaurant or more value at a lodging or a more personal experience at a winery.” Whether or not you enjoy wine and charcuterie, there are ample reasons to take a trip to Fredericksburg, including tasty German food, outstanding museums and Hill Country hiking just outside of town. Here’s a road map for those looking to plan their own getaway:

1 P.M.: NATIONAL MUSEUM OF THE PACIFIC WAR Once you’ve pulled into town, done some window shopping, and gotten situated, take a stroll to the National Museum of the Pacific War — but make sure you leave plenty of time to do this museum justice. Fredericksburg is the hometown of Admiral Chester Nimitz, commander of the U.S. Pacific Fleet in World War II. When community members proposed erecting a museum in his honor, Nimitz insisted that it tell the history of all who had fought in the Pacific theater. The result is a world-class museum that humbled us with its historical depth and devotion to telling the whole story of the conflict between the United States and Japan, starting with the Japanese bombing of Pearl Harbor and concluding with the bombing of Hiroshima and Nagasaki. The exhibits in the George H.W. Bush Gallery include artifacts like one of the five Japanese submarines that torpedoed the USS Oklahoma during the attack on Pearl Harbor. No matter how well you know your history, a visit here will bring the conflict to life. We recommend leaving at least two hours for your visit.

3 P.M.: SIGNOR VINEYARDS It was difficult to choose among the dozens of vineyards lining U.S. 290 east of town, but we picked Signor Vineyards — a relative newcomer to the Texas wine circuit — and we were glad we did. Longhorn steers greeted us as we made our way to the tasting room, located a 15-minute drive from downtown, and the spacious patio proved to be the perfect place to soak in the afternoon sun. At $20, the tasting flight of four wines is a bargain. A knowledgeable sommelier guided us through a delightful variety of reds, starting with a Pinot Noir from Oregon’s Willamette Valley and concluding with a Tannat grown on-site. We also recommend the charcuterie board, which featured a delicious selection of cured meats and cheeses (the Drunken Goat was our favorite), as well as a local farm jelly with a peppery kick. We wish we could have stayed longer. 5 P.M.: LUCKENBACH Willie Nelson heads to this selfdescribed “backwoods Camelot” every Fourth of July for his annual picnic, so you might as well stop by, too. Make sure you check the music calendar in advance. Nearly every afternoon, you’re guaranteed to find an acoustic country jam to soak in or a twostepping session at the dance hall. 7 P.M.: DINNER AT DER LINDENBAUM Fredericksburg is proud of its German pioneer heritage — the signs at the city limits read “willkommen” on one side and “auf wiedersehen” on the other — so once you’re all danced out, where better to dine than this cozy German restaurant that sits right on Main Street, just a block away from the visitors center? Chef Ingrid Hohmann, who grew up in the Eifel Mountains of western Germany, serves up a hearty menu of German classics, from sausage to schnitzel, which can be accompanied by a German hefeweizen or Texas wine, depending on what you fancy. The jäger schnitzel, topped with a wild mushroom sauce and served with cabbage and potato salad, was the highlight of our meal, but the bürgermeister platte, which featured Polish sausage, bratwurst and knackwurst from Opa’s, a Fredericksburg meat market, was a close second. We didn’t have room for a slice of chocolate cake afterwards, but we wish we did.

FROM PG. 54 9 A.M.: ENCHANTED ROCK STATE NATURAL AREA After grabbing coffee and pastries in town — we recommend the Old German Bakery or Emma + Ollie — start your day off with a hike in Enchanted Rock State Natural Area. This park, located 20 minutes north of downtown, boasts scenic Hill Country views for those willing to undertake a steep but short hike up the pink granite dome that dominates the landscape. There are 11 miles of trails in all, which means no shortage of opportunities to stretch your legs. 11 A.M.: PIONEER MUSEUM End your visit with the story of where Fredericksburg began. The Pioneer Museum, located on Main Street, immerses visitors in the lives of the intrepid German settlers who built Fredericksburg in the mid-1840s. Those German origins, Doerre said, help give Fredericksburg its unique character, whether it’s the architecture, the food, or the hospitality of its residents. A tour of the grounds, which include a log cabin, schoolhouse, blacksmith shop and more, takes under an hour, but it provides a vivid window into the lives of the settlers who traveled from Indianola through Victoria along their way to Fredericksburg, according to local historian and archivist Evelyn Weinheimer. The museum hosts hands-on activities like bread-making and butter-churning for children and adults alike. Call ahead for dates and details. NOON: LUNCH You might want to stay a while longer and check out another winery or Altstadt Brewery, or maybe do a little more shopping along Main Street. he sun, obviously, hangs in the sky over a beach as the waves slowly roll in. Seagulls call out overhead while you lay on a towel, sipping on a tiki drink filled with two different rums, coconut, citrus and loads of sugar. Maybe there’s an umbrella in it. Little droplets of water form on the glass and slide down the side until they drip down into the parched sand. For most people, that’s what tanning is. It’s a trip to a tropical beach somewhere where the sun kisses their skin, bronzing it for a week or two before it returns to a pale, prevacation hue. That isn’t all tanning is, though. If people don’t want to wait to travel to Port Lavaca’s Lighthouse Beach, Port Aransas or — fingers crossed — South Padre Island a few times a year to get a bronze tan, there’s a wealth of

options for them to keep that yearround bronze. The year-round sun-kissed look is more accessible than ever as indoor tanning options have reached a point where they take no longer than a catnap. Two options available to those looking to tan indoors are tanning beds and spray tans, said Madison Wirtz, owner of Victoria’s Glo Sun Spa. Tanners should be wary about using the tanning beds, but spray tans are a great option, dermatologist said Dr. Melissa Erwin, an El Campo dermatologist. Tanning indoors is preferable to tanning outside because the tanner is in a controlled environment, Wirtz said. “You don’t know how much exposure you’re getting out there, so

when people go out there that first time for the summer and they’re out there for several hours, they burn,” she said. “They’re exposing fresh skin.” Instead of exposing themselves to the unknown, tanners can instead spend just a few short minutes in a tanning bed a couple of times a week, Wirtz said. Over the course of a few weeks, the tanner can gradually increase the amount of time spent in a bed up to the maximum. The beds at Glo Sun Spa have maximum tan times of 10, 12 and 15minutes. Because that 15-minute tanning session is so quick, many clients make use of the tanning beds during breaks in their workday, Wirtz said. Those who tan in a bed should be aware that there are still dangers, | CONT. ON PG. 60 Spring 2022 | Discover361.com

Using a tanning bed before you’re 35-years-old “increases your chances of developing the three types of skin cancer,” Erwin said. “But it also can accelerate the development of melanoma … so we really like to encourage people to avoid tanning.” In Texas, it is actually illegal for a person under 18-years-old to use a tanning bed, Erwin said. Other situations in which a person should avoid tanning include if their skin is already burnt or they are taking a medication that makes them more susceptible to sunburn, Wirtz said. Clients cannot tan more than once in a 24-hour period and “minimal outdoor exposure is advised on days that a client does indoor tans.” Spray tanning is a popular option for those who don’t want ultraviolet light harming their skin but still desire that bronze look. “If people aren’t wanting to do the beds and expose, then we have the option of spray tanning,” Wirtz said. Spray tans are temporary and last seven-10 days, Wirtz said. It’s important to properly prepare and care for a spray tan, Wirtz said. This involves exfoliating beforehand to rid yourself of dead skin, making sure you don’t wear lotion to the spray tanning session, waiting six-eight hours to shower after the session and making sure that you properly moisturize and don’t sweat the tan off of you. Erwin recommended spray tanning. “The self-tanning topical formulations or the spray tans are a great alternative,” she said. As an added bonus, spray tans provide a small amount of protection from the sun, Erwin said. Spray tans have the benefit of just being a stain on a person’s body and won’t leave any lasting damage compared to a tan that comes from laying out in the sun or in a bed, Erwin said. “A tan is just a sign of sun damage,” she said. 60

After a two-year break, Polo at McFaddin, benefitting the Nave Museum, is back for its 40th annual fundraiser. Julie McCan, this year’s event co-chair, is excited to bring back this fun event, which also serves as the largest fundraiser for the Nave Museum. You really don’t need to know much about polo to enjoy the afternoon. Polo was introduced to Victoria by Kerry McCan when he built the first polo field in 1976 in an open pasture in the San Antonio River Bottom. McCan discovered the sport of polo while attending Yale University. He passed along his passion for polo to his son, Bob McCan. The father-son duo played polo in South Texas tournaments. | CONT. ver the course of six decades, his name has become recognized in households throughout the U.S. and Latin America. He has received six Grammy awards and 16 nominations. He has played alongside countless superstars in the music industry from Johnny Cash to Gloria Estefan. But he is also an artist in his own right. He is Jose Feliciano. On March 26, he will treat music lovers to a concert at the Victoria ISD Fine Arts Center. The concert is presented by the Victoria Symphony.

around the world, and we just wrapped up our 50th anniversary of “Feliz Navidad,” worldwide. It’s so cool that this little song of mine has captured the attention of people of all ages and of all backgrounds for so long. It’s again in Billboard’s Top Ten in the Hot 100 this year, so I feel very blessed.

The times are different. The flavor, musically, is different. But being able to ride the wave for so long, I find people look at me differently — they know I love them, and I genuinely feel that affection in return.

It feels like it’s always felt, just more mature. Again, I’m blessed.

H O W D O YO U K E E P U P T H E ENERGY TO KEEP DOING W H AT YO U D O ?

I’m lucky that I love what I do … it’s not work for me. It’s my life’s blood, pumping through my veins.

ANY ADVICE FOR ASPIRING MUSICIANS?

I would advise any young artist to remain hopeful, honest and sensible. Unfortunately, one thinks it should happen right away. For me, my “right away” was something like 10 years, or

more. But that was 50 years ago … so, obviously, it was worth it.

I do enjoy performing after all these years. I love the music, but more, I love the people. That’s why I’m still here doing what I love so much.

W H AT K I N D O F M U S I C D O YO U L I S T E N T O T H E S E DAYS ? I try to get the opportunity to listen to a little bit of everything in order to remain informed. That doesn’t necessarily mean I like it all, but that’s the subjective aspect to music. In my mind, if it’s good music, and it has value to someone, then it has value. Period.

W H AT D O E S A N AV E R A G E DAY F O R YO U L O O K L I K E ? It’s always a bit different. But at home, my wife brings me coffee upstairs, where we go over the day ahead. It could include maybe a rehearsal or an interview or appointment of some kind, whatever. We connect throughout the day with each of our three children, business colleagues and friends. Then oftentimes, we’ll look forward to our little happy hour before dinner. Afterwards, we retire to, God willing, another day to do it all over again … On the road, it's a different thing altogether.

In that aspect, I was just being me. If I’d gone out there with an agenda aside from showing my music to the world, it wouldn't have happened for me, I don’t believe. I just took the path before me, and I stayed on it.

Millions served in the Pacific War. We have preserved thousands of their stories. In the face of enemy capture, three soldiers were ordered to burn the American flag that flew over a base on Mindanao in 1942. Before destroying the flag, the men removed the 48 stars and hid them for 3 1/2 years through several prisoners of war camps. In the days before their liberation, they sewed a new flag using a rusty nail, an old sewing machine, a parachute, and the stars they had so carefully saved. The new flag greeted American troops on 7 September 1945. The flag is on display at the Museum.
